모짜렐라 치즈의 신전성 향상에 관한 연구 (A Study on the Improvement of Stretchability of Mozzarella Cheese)

  • 모짜렐라 치즈의 신전성에 영향을 미치는 요인들 중 스타터 종류, 지방함량, 식염함량, 신축 시 온도에 변화를 주어 이러한 조건들이 어떠한 영향을 미치는지를 알아보기 위하여 치즈를 직접 제조한 후 4$^{\circ}C$ 냉장고에 저장하면서 10주 동안 2주 간격으로 신전성, 융해성, 지방유출 및 수용성 질소 화합물의 변화에 관한 실험을 실시하였다. L. bulgaricus를 스타터로 사용한 치즈의 신전성이 우수하였고, 융해성은 수용성 질소화합물의 함량이 저장기간초기에 높거나 그 증가율이 높은 L. bulgaricus 와 L. bulgaricus : Str. thermophilus = 1:2로 스타터를 사용한 치즈가 좋은 경향을 나타냈으며 지방 유출은 L. bulgaricus : Str. thermophilus = 1:3을 스타터로 사용한 치즈가 가장 좋았다. 지방 함량에서는 원유의 지방 함량을 2.0%로 조절하여 제조한 치즈의 신전성이 우수하였으며 융해성과 지방 유출은 원유의 지방 함량이 2.5와 3.0%가 좋은 결과를 나타냈다. 식염 함량이 0.5%일 때 신전성, 융해성과 지방 유출이 약 5주 후부터 저하되어 급격한 품질저하의 결과로 나타났다. 수용성 질소 화합물 함량 변화에서는 식염이 수용성 질소 화합물 억제 효과가 있음을 알 수 있었다. 신전성은 신장 시 온도가 7$0^{\circ}C$인 치즈가 우수하게 나타났으며, 융해성은 신장 시 온도가 6$0^{\circ}C$인 치즈가 우수하게 나타났다. 지방유출은 시료치즈 원 넓이의 2배인 52$\textrm{cm}^2$가 적정 범위로 나타났다.

  • 참깨박에 함유되어 있는 불용성 형태의 단백질을 가용성 형태의 단백질로 용출시키기 위하여 Bacillus sp. CW-1121이 생성하는 효소를 작용시켰다. 이때 참깨박의 단백질 용출을 위한 최적 pH는 7.5였으며, 최적 온도는 $40^{\circ}C$였고 최적 조건하에서 2시간의 소화로 약 60%의 용해도를 보였다. 단백질의 용해도는 참깨 단백질이 pH4.5에서 가장 낮아 등전점을 보였고, pH3.0과 pH6.0 이상에서는 크게 증가하였다. 효소처리 참깨박 단백질을 전기영동한 결과 수용성 단백질은 4개, 염용성 단백질은 2개의 밴드가 관찰되었다. 분리 단백의 아미노산 조성은 수용성 단백질의 경우 serine이 17.24 mg/g, 염용성 단백질은 glutamic acid가 10.77 mg/g, 유리아미노산은 glutamic acid가 6.55 mg/g으로 가장 많이 함유되어 있었으며 특히 필수아미노산의 조성도 상당히 좋은 편이었다.

Change in Nitrogen Fractions and Ruminal Nitrogen Degradability of Orchardgrass and Alfalfa during the Ensiling Process and the Subsequent Effects on Nitrogen Utilization by Sheep

  • In order to determine the extent of change in nitrogen fractions and in vitro ruminal degradability of forage protein during ensilage and the influence on nitrogen utilization by sheep, orchardgrass (Dactylis glomerata L.) and alfalfa (Medicago sativa L.) were ensiled in separate 120 L silos for 5, 21 and 56 days. With respect to nitrogen fractions, fraction 1 (buffer solution soluble nitrogen), fraction 2 (buffer solution insoluble nitrogen-neutral detergent insoluble nitrogen), fraction 3 (neutral detergent insoluble nitrogen-acid detergent insoluble nitrogen), and fraction 4 (acid detergent insoluble nitrogen) were determined. Fractions 1 and 2 accounted for more than 80% of total nitrogen in orchardgrass and 90% of that in alfalfa. The proportion of fraction 1 in orchardgrass increased from 33.0% at day 0 to 52.0% after day 56 of ensiling. In the case of alfalfa silage it was 41.7% and 62.9%, respectively. Seventy percent of this increase occurred within the first 5 days of ensiling. A similar change of in vitro ruminal degradability of total nitrogen was also observed in both forages. Nitrogen retention in sheep tended to decrease as the length of ensiling increased, with a significantly positive correlation between urinary nitrogen and fraction 1, and in vitro ruminal degradability of total nitrogen.

Characterization of Acid-soluble Collagen from Alaska Pollock Surimi Processing By-products (Refiner Discharge)

  • The study was carried out to examine on the refiner discharge from Alaska pollock as a collagen resource by characterizing biochemical and functional properties of collagen. The refiner discharge from Alaska pollock surimi manufacturing was a good resource for collagen extraction according to the results of total protein, heavy metal, volatile basic nitrogen, collagen content, amino acid composition, and thermal denaturation temperature (TDT). TDT of acid soluble collagen from refiner discharge showed $20.7^{\circ}C$, which was similar to that of collagen from Alaska pollock muscle and was higher than that of collagen from Alaska pollock skin. TDT of acid-soluble collagen from refiner discharge was, however, lower than those of skin collagens from warm fish and land animal. Acid-soluble collagen from refiner discharge of Alaska pollock could be used as a functional ingredient for food and industrial applications according to the results of water and oil absorption capacities, and emulsion properties. In addition, if the thermal stability of the acid-soluble collagens is improved, collagen from refiner discharge from Alaska pollock could be more effectively used.

질소시비 수준이 Italian Ryegrass의 질산염 축적에 미치는 영향 (Effects of Nitrogen Fertilization on Nitrate Accumulation in Italian Ryegrass)

  • This study was conducted to investigate the effect of levels of nitrogen fertilizer on the nitrate accumulation in Italian ryegrass. Italian ryegrass was grown at the experimental field, College of Agriculture, Chonnam National University, Kwangju from September, 29, 1987 to June, 24, 1988. The experiment was arranged as a randomized complete block design with three treatment(2.5, 7.5 and 15kg-NIlOa). The results obtained are summarized as follow; Nitrate nitrogen content of the stem, leaves and whole was increased as increasing nitrogen fertilizer(P< 0.05). Total nitrogen content in the leaves was much higher than that of stem, and not significance among the levels of nitrogen fertilizer. Total water soluble carbohydrate content in stem was higher than that in the leaves and decreased after cutting as increasing nitrogen fertilizer(P < 0.05)

비음과 질소시비가 Orchargrass의 건물생산에 미치는 영향 (the Effects of Shade and N Fertilization on the Dry Matter Production of Orchargrass)

  • The purpose of this experiment was to evaluate the effects of shade and levels of N fertilization on the dry matter yield and chemical compositions of orchardgrass grown under floor of chestnut tree. Shading conditions consist of $S_0$, (full light), $S_1$, (about 6OC4 shade) and $S_2$, (about 70% shade). And, nitrogen fertilizer was applied at 3 levels, O($N_0$), 12($N_1$), and 30($N_2$) kg per 10a, respectively. The results are may be summarized as follows: 1. Maximum total dry matter yield of $S_0$, was obtained about 1.28 ton/lOa at $N_2$, level. But, total dry matter yields of N levels in $S_1$, and $S_2$, were decreased about 42-45% compared with $S_0$. 2. The response of the dry matter yield to N fertilization were differences between shading and levels of N. Thus, the dry matter yield of $S_1$, increased almost linear up to about 30 kg/l0a level, while the dry matter yield of S, was increased slightly up to 30 kgIl0a. But. $S_2$, was increased up to 12 kg/lOa and then decreased slightly with N fertilization over the 12 kg/l0a. 3. Average increase in total dry matter yield to N fertilization were 23.85 kg, 7.97 kg and 5.08 kg DM for $S_0$, $S_1$, and $S_2$, respectively. 4. The level of 12 kg N/lOa is the limiting N level to obtain dry matter production under 60-709 shading conditions. 5. The contents of crude protein arid nitrate nitrogen were increased with shading and incremental N fertilization up to 30 kg/l0a. But, water soluble carbohydrate content was decreased greatly with high shading and high levels of N. 6. Nitrate nitrogen content indicated highly significant positive correlation with crude protein, but significant negative correlation with water soluble carbohydrate content. 7. At 30 kg N level with $S_1$, was necessary to exceed the potentially toxic nitrate nitrogen level of 0.20%.

가염 및 분해기간에 따른 멸치의 가수분해 (Hydrolysis of Anchovy (Engraulis Japonicus) Homogenate with Salting and Digestion Time)

  • 멸치를 마쇄하여 자가소화시킬 경우 무염상태에서 20시간까지는 $50^{\circ}C$, pH 4라 최적조건이었고, 식염을 20% 첨가하였을 때는 $50^{\circ}C$, pH 6에서 가수분해가 가장 잘행해졌다. 한편 식염을 첨가하여 8 일동안 가수분해시킬 경우 최적조건이 $40^{\circ}C$, pH 6으로 변화하는 것으로 밝혀졌다. 상기한 최적조건에서 20시간동안 자가소화 시켰을 때 무염상태에서는 총질소중 60.5%가 TCA-가용성 질소를 가수분해되었으나 식염을 20% 첨가하였을 때는 49.8%로 낮아졌다. 그리고 가염상태에서 8 일간 가수분해 시킨 결과 총질소중 83.1%가 TCA-가용성질소로 분해되었고 계속하여 실온에서 52일간 숙성시킨 결과 총질소중 89.6%가 분해되었다.

임간초지 개발에 관한 연구 XII. 차광조건하에서 질소시비수준이 계절별 , 생육시기별 목초의 질산태질소함량과 수용성탄수화물함량에 미치는 영향 (Studies on the Grassland Development in the Forest XII. Effect of nitrogen fertilization on nitrate nitrogen concentration and water soluble carbohydrate content of grasses by growing season and growth stage under shading condition)

  • This experiment was carried out to determine the effects of nitrogen(N) fertilization levels(0. 120, 240 and 360 kg/ha/y) on seasonal nitrate nitrogen($NO_3$-N) concentration and water soluble carbohydrate (WSC) content of grasses grown under shading condition. The plants were sampled on 7. 14, 21, 28 and 35 days after harvesting in spring(May), summer(July) and autumn(September), 1988. respectively. Shading degree was controlled artificially ca. 45-50%, and each annual level of N was distributed 5 times equally. The $NO_3$-N concentration of grasses was very low(0.064 %) in spring, high in summer(O.l98 %) and autumn(0.234%), and NO,-N was slightly decreased with growing of grasses. Also the NO,-N concentration of grasses was increased significantly with increasing level of N. In spring, the $NO_3$-N of grasses was very safety(less than 0.1 %), regardless of plant height and N level. In summer and autumn, however, plant heights of below 40 cm(summer) and 44 cm(autumn), and N levels of over 210 kg(summer) and 140 kg(autumn) were over toxic level to animals, respectively. The WSC content of grasses was slightly decreased with grass growth. and significantly decreased with high level of N. From the above results, it is suggested that 200 kg/ha of N in this experiment is effective for forage quality. Also a little more amount of N(50-70kgltimes) in spring. and low level of N(20-30 kgltimes) in summer and autumn season may be desirable on woodland posture.

소금과 인산염 첨가에 따른 산란노계육의 단백질 추출성, Thiobarbituric Acid 및 Volatile Basic Nitrogen의 변화 (Changes in Protein Extractability, Thiobarbituric Acid and Volatile Basic Nitrogen of Spent Layer Meat Treated with Sodium Chloride and Phosphates)

  • This study was conducted to investigate the effects of the addition of varied levels of NaCI and phosphates to the breast meat of spent layers(2 \pm 0.2 kg), which were stabilized for over 24 h before slaughter, on the protein extractability, thiobarbituric acid(TBA) and volatile basic nitrogen (VBN). Within 1 h after slaughter, breast meat was removed and treated with NaCI(0, 1, 2, 3%) and phosphates(0.25% and 0.5%) using a hot-salted method. The breast meat samples were stored at 4\pm$1^{\circ}C$ for 3 d. The results obtained were summarized as follows. 1. Soluble protein contents of salt-treated groups were significantly higher than that of control (P<0.05) and showed a positive relationship with the levels of salt. At a constant level of NaCI, the soluble protein content was proportionately elevated by the levels of phosphates (P<0.05). It decreased significantly in both control and salt-treated groups during storage (P<0.05). 2. TBA values of salt-treated groups were significantly higher than that of control(P<0.05) and showed a positive relationship with the levels of salt. At a constant level of NaCI, TBA values in 0.5% phosphates treatment groups were significantly lower than that in 0.25%(P<0.05). It increased significantly in both control and salt-treated groups during storage(P<0.05). 3. VBN values of salt-treated groups were significantly lower than that of control(P<0.05) They increased significantly by the salt treatment for the first day of storage(P<0.05), but not from the second day of storage. VBN values in both control and salt-treated groups were significantly increased during storage(P<0.05). After the first day of storage and at the same level of NaCI, no significant difference in VBN value was observed between the two levels of phosphates.

Synthesis and Properties of Polybenzoxazole Copolymers Having Non Linear Units

  • A series of poly(hyroxyamide)s (PHAs) was prepared by direct polycondensation reaction of 4,4'-(2,3-pyridinedioxy)dibenzoic acid and/or isophthalic acid with 3,3'-dihydroxybenzidine. The yield percentages of the products were high, and the inherent viscosities of the polymer in DMAc solution at 35℃ were 0.31-0.59 dL/g. All PHA polymers were found to be soluble in polar aprotic solvents such as DMAc, DMSO, NMP, and DMF. On the other hand, LiCl was required to dissolve IPHA-1 in aprotic solvents. Poly(benzoxazole)s (PBOs) were partially soluble in conc-H2SO4; IPBO-4, -5, and -6 were partially soluble in NMP only when LiCl was added to the solution, and the solution was heated. The PBO polymers showed a maximum weight loss in the temperature range of 654-680℃, and the char yields at 900℃ under nitrogen atmosphere exceeded 63%.
