Objective: The effect of pre-converted nitrites from natural sources (spinach, lettuce, celery, and red beet) on color development in raw and cooked pork sausage was investigated in this study. Methods: The pork sausage was manufactured with six treatments: NC (negative control, nitrite free), PC (positive control, 150 ppm sodium nitrite), FS (3.0% fermented spinach extracts), FL (3.0% fermented lettuce extracts), FC (3.0% fermented celery extracts), and FR (3.0% fermented red beet extracts). Results: The pH value of the pre-converted nitrites groups was lower than those treated with 150 ppm sodium nitrite (p<0.05). The color values of raw and cooked pork sausage added with pre-converted nitrite showed slightly lower and/or similar lightness, lower redness, and higher yellowness values than PC. Color development (redness values) of cooked samples added with FS was higher than those of the NC and other treatments (FL, FC, and FR). Additionally, treatments with FS and FL were most effective for reducing thiobarbituric acid reactive substances and volatile basic nitrogen than the NC. Conclusion: Effects of natural nitrites from fermented vegetables on shelf stability of raw and cooked pork sausages were investigated. Fermented spinach extract was much more useful for maintaining the color development, but also inhibiting lipid and protein oxidation of cooked pork sausage. Therefore, pre-converted nitrite from spinach as a natural nitrite could be used as another natural nitrite source for making processed meat products.
An on-line corrosion rate measurement system was developed using a personal computer, a data acquisition board and program, and a 2-electrode corrosion probe. Reliability of the developed system was confirmed with through comparison test. With this system, the effect of sodium nitrite ($NaNO_2$) as a corrosion inhibitor were studied on iron and aluminum brass that were immersed in sodium chloride (NaCl) solution. Corrosion rate was measured based on the linear polarization resistance method. The corrosion rates of aluminum brass and iron in 1% NaCl solutions were measured to be 0.290 mm per year (mmpy) and 0.2134 mmpy, respectively. With the addition of 200 ppm of $NO{_2}^-$, the corrosion rates decreased to 0.0470 mmpy and 0.0254 mmpy. The addition of $NO{_2}^-$ caused a decrease in corrosion rates of both aluminum brass and iron, yet the $NO{_2}^-$ acted as a more effective corrosion inhibitor for iron. than aluminum brass.
The objective of this study was to compare the effects of various salts on the physicochemical properties of pork emulsion sausages. Pork sausages were prepared using two different salts, sodium nitrite (SN) and sodium chloride (SC), and concentrated seawater (CSW). The CIE L*, CIE a*, and CIE b*, and chroma values of cooked and uncooked sausages with added CSW were significantly higher than those of the sausages with added SC (p<0.05). However, uncooked and cooked sausages with added SN and CSW had similar CIE a* values (p>0.05). The residual NO2- content of sausages with added CSW was significantly lower than that of sausages with added SN. Addition of CSW to sausages resulted in a higher cooking yield compared to the other treatments (p<0.05). Addition of SC resulted in significantly higher volatile basic nitrogen (VBN) and thiobarbituric acid (TBA) values compared to the other treatments. Furthermore, addition of CSW enhanced important physicochemical properties, including CIE a*, CIE b*, residual nitrite content, cooking yield, VBN, TBA, textural properties, and cross-sectional area.
The reaction of sulfhydryl groups in human serum ablumin with bacteriostatic and hypotensive notrosating agents such as sodium nitorprusside and sodium nitrite has been examined. The low reactivity of sodium nitroprusside to sulfhydral groups in albumin has been observed and the sterical inaccessilibility of the agent site which sulfhydryl group resides was implicated. The reaction of sodium nitrite with albumin was highly influenced by pH and little reactivity was observed at physiological pH. On the other hand, the reaction between albumin and S-nitrosoglutatione, an intermediate induced from the reaction of glutathione and nitrosating agents, resulted in the rapid decrease of free sulfhydryl groups in albumin. S-Nitrosylation of the sulfhydryl group by S-nitrosoglutathione and the subsequent production of mixed disulfide is the probable route of modification. In the physiological system, S-nitroso-glutathione may act as an active intermediate in expressing reacivity of nitrosating agents to sulfhydryl groups in albumin.
본 연구는 아질산염을 저감화 한 저지방 소시지를 개발하기 위해, 아질산염과 균질한 레드 비트의 첨가량을 달리하여 저지방 소시지(자비, 훈연)를 제조하였고, 품질특성과 냉장 저장 중 pH와 색도를 평가하였다. 레드 비트 첨가는 저지방 소시지의 품질에 유의적인 영향을 주지 않은 반면 레드 비트 1% 첨가가 저지방 자비 소시지의 적색도를 증진시키는 데 효과적이며, 특히 아질산염 저감화 조건에서 레드 비트의 첨가는 적색도 증진에 매우 효과적임을 알 수 있었다. 또한 아질산염 75 ppm 첨가구는 레드 비트의 첨가에 상관없이 대조구이상의 적색도를 보였으나, 레드 비트 함량이 1% 이상일 경우 황색도에서 차이를 보였다. 한편, 훈연소시지에서 레드 비트의 첨가는 아질산염 150 ppm 첨가 대조구에 비하여 명도를 감소시켰으나, 적색도는 유의적인 영향을 주지 않았다. 반면에, 저장기간 동안 색도의 변화에서는 레드 비트(1%)만 단독 첨가한 저지방 훈연 소시지의 적색도가 유의적으로 감소된 반면에, 아질산염(75 ppm)과 레드 비트(0.5%)를 조합한 처리구는 저장기간 동안 적색도를 유지하였으며, 아질산염 150 ppm 첨가 대조구의 적색도와도 유사하게 나타났다. 결론적으로 아질산염의 첨가는 저지방 소시지의 보수성과 색도에 영향을 주었고, 레드 비트의 첨가는 적색도와 발색안정성에 효과적이었다. 특히, 레드 비트 0.5%와 아질산염 75 ppm의 조합은 저장기간 중 저지방 소시지의 적색도를 유지함에 따라 아질산염을 저감화 한 저지방 소시지(훈연, 자비)의 제조를 위해서는 레드 비트 0.5%와 아질산염 75 ppm의 첨가 조합이 적당하다고 판단된다.
본 연구에서는 천연 손바닥선인장 색소 및 유산나트륨이 저 아질산나트륨 소시지에 미치는 영향을 조사함으로서 아질산염을 부분 대체(저감화)하고자 소시지를 제조하여 그 가능성을 검토하였고 천연 폴리페놀이 함유된 손바닥선인장 추출 색소 첨가에 따른 소시지의 혈액 특성을 확인하기 위해 동물실험을 실시하였으며 결과는 다음과 같다. 대조구와 처리구간에 유의적인 차이를 보이지 않은 항목은 소시지의 적색도(a*), 총세균수, pH, 보수력, 조직분석, 관능검사, 쥐의 증체량 및 혈당이었으나, 대조구와 처리구간에 유의적인 차이를 보인 항목은 TBA와 혈액 중의 콜레스테롤(total, LDL, HDL) 및 중성지방이었다. 즉 TBA 값은 대조구에서, 콜레스테롤 및 중성지방은 처리구에서 각각 낮은 수치를 보였다(P<0.05). 그러나 처리구 중에서는 T2(30 ppm of nitrite+2% of sodium lactate+0.2% Opuntia ficus indica pigment)가 가장 효과적인 것으로 나타났다. 결론적으로 30 ppm의 아질산나트륨, 2%의 유산나트륨, 0.2%의 손바닥선인장 색소의 혼합사용은 아질산나트륨의 통상 첨가량 100ppm(잔존량 70 ppm 이하)을 30ppm으로 줄여도 발색, 저장성 및 풍미에는 별문제가 없이 사용 가능한 것으로 나타났으며, 동시에 혈중콜레스테롤 및 중성지방이 감소하는 효과도 가질 수 있다고 사료되었다.
본 연구는 백년초 분말 첨가가 아질산염의 대체를 통한 소시지의 품질 특성에 미치는 영향을 조사하기 위하여 C(아질산염 및 백년초 분말 무 첨가구), T1(0.014% 아질산염 첨가구), T2(0.014% 아질산염 + 0.5% 백년초 분말 첨가구), T3(0.014% 아질산염 + 1.0% 백년초 분말 첨가구), T4(0.5% 백년초 분말 첨가구) 및 T5(1.0% 백년초 분말 첨가구)로 처리하며 소시지를 제조하였으며 $4^{\circ}C$에서 15일간의 저장을 통하여 실험을 실시하였다. 명도를 나타내는 CIE $L^*$값은 대조구가 다른 모든 처리구들에 비해 높게 나타났으며, 적색도를 나타내는 CIE $a^*$값은 T5 처리구가 T1과 T3 처리구의 중간 값인 10.84-11.30 범위를 나타내었다(p<0.05). 황색도를 나타내는 CIE $b^*$값과 보수력 및 조직감을 나타내는 응집성, 탄력성 그리고 씹힘성은 T5 처리구에서 다른 처리구들에 비해 유의적으로 높게 조사되었다(p<0.05). 이에 반하여, 수분함량, pH 및 백색도를 나타내는 W값은 T1 처리구에서 가장 높게 나타났다. 관능적 특성에서는 T1과 T5 처리구 간 유의적인 차이가 나타나지 않았다(p>0.05). 따라서 본 실험 결과에 의하면 0.014% 아질산염의 소시지내 첨가는 1.0%의 백년초 분말로 대체시 조직감에 부정적인 영향을 주지 않으면서도 적색도를 높일 수 있는 소시지 제조가 가능할 것으로 판단되며 이를 실용화하기 위해서는 제품의 유통기한 설정에 관한 추가 연구가 필요할 것으로 사료된다.
The individual and interactive effects of Schisandra chinensis powder (SCP) and sodium nitrite additions on color, pH, water holding capacity, residual nitrite, 2-thiobarbituric acid reactive substances (TBARS), volatile basic nitrogen, texture properties, fatty acids, amino acids and sensory evaluation of cooked pork sausages were investigated after 20 d of storage at $4^{\circ}C$. The powders (0, 0.5 and 1.0%) were added to sausages either alone or in combination with nitrite (0 and 100 ppm). SCP added-sausages showed lower $L^*$ (lightness) and W (whiteness) values, and higher $b^*$ (yellowness) values than sausage containing no nitrite, and exhibited the highest $a^*$ values at a 0.5% addition (p<0.05). Residual nitrite and TBARS values were found to be significantly reduced as the addition levels of SCP increased (p<0.05). As the addition of SCP increased, the sausage showed gradually decreased brittleness, cohesiveness, springiness, gumminess and chewiness, while adhesiveness increased. Polyunsaturated fatty acid, n-6 and n-6/n-3 fatty acid ratio concentrations were significantly higher in sausages containing SCP (p<0.05). The addition of SCP to sausage significantly (p<0.05) increased the ammonia content (by 0.5% SCP) and aromatic amino acid concentrations (by 1.0% SCP) (p<0.05). Inclusion of SCP in sausage meat resulted in a significant deterioration in quality characteristics of flavor, springiness, juiciness and overall acceptability (p<0.05). As expected, the observed changes in $a^*$, W, pH, shear force, texture property, TBARS, fatty acid, amino acid and sensory score of sausages, depended on the rate of addition of nitrite (p<0.05). These results suggest that SCP addition is not an effective way of improving the sensory evaluation of sausages, but may beneficially affect TBARS, nitrite scavenging activity, fatty acid and amino acid content in pork sausages.

Objective: This study was conducted to evaluate quality characteristics of cured pork loin with natural nitrite source from Swiss chard. Methods: Pork loin was cured in brine and the ratio of water and fermented Swiss chard (FSC) solution in the brine was changed by 4:0 (control), 3:1 (T1), 1:1 (T2), 1:3 (T3), 0:4 (T4), and pickled samples with 0.012% sodium nitrite (PC, positive control) and nitrite free brine (NC, negative control) were considered as the control. Results: The pH values of cured pork loins with FSC were decreased with increasing addition level of FSC. Cooking loss was not significantly different among all treatments. T4 had the lowest value in moisture content and lightness value and the highest value in curing efficiency. The redness value of T4 was not significantly different from that of PC in raw. After cooking, however, it was higher than that of PC. The yellowness value of cured pork loin added with FSC was increased with increasing level of FSC. Volatile basic nitrogen content of cured pork loin added with FSC was higher than PC and NC. Thiobarbituric acid reactive substance value of cured pork loin added with FSC was decreased with increasing FSC level. Residual nitrite level and shear force were increased with increasing FSC level. In the sensory evaluation, sensory score for flavor, off-flavor, chewiness, juiciness, and overall acceptability were not significantly different among all treatments. However, sensory score for color was increased when the concentration of FSC added to pork loin was increased. Conclusion: The FSC solution had a positive effect on redness and lipid oxidation. As shown by the results in protein deterioration and sensory, Swiss chard can replace sodium nitrite as natural curing agent.

The use of nitrite as a conventional curing agent is decreasing because of the negative consumer perception of synthetic compounds in foods. Therefore, this study was conducted to investigate the efficacy of dongchimi as an alternative to synthetic nitrite and its effect on the qualitative properties of emulsion-type sausages. Under all tested fermentation conditions, both nitrite and nitrate contents were the highest when dongchimi was fermented at 0℃ for 1 wk. The fermented dongchimi was powdered and added to the sausages. Emulsion-type sausages were prepared with 0.25% (treatment 1), 0.35% (treatment 2), 0.45% (treatment 3), or 0.55% (treatment 4) dongchimi powder, with 0.01% sodium nitrite-treated (control 1) and 0.40% celery powder-treated (control 2) sausages as controls. There were not different (p>0.05) in the pH, cooking yield, CIE L*, and CIE a* between the control 1 and treatments 2, 3, and 4. CIE b* was significantly higher (p<0.05) in the control 2 and lower (p<0.05) in the control 1 than that in the other groups. Treatment 4 and control 1 had similar contents of residual nitrite, nitrosyl hemochrome, and total pigment. Additionally, treatment 4 exhibited a significantly better (p<0.05) curing efficiency than the control 1. However, naturally cured sausages showed higher (p<0.05) lipid oxidation than the control 1. This study suggests that the use of more than 0.35% dongchimi powder could replace sodium nitrite or celery powder as curing agents for emulsion-type sausages.
