곡류와 두류의 침지 및 건조 특성 (Soaking and Drying Characteristics of Grains and Legumes)

  • 혼합곡의 식미를 높이고 쌀과 함께 취반이 용이하게 하고자 찹쌀, 현미, 현미찹쌀, 찰보리, 서리태, 흑태, 팥 7가지 곡류와 두류를 대상으로 침지와 건조 전처리 조건을 검토하였다. 각 곡류와 두류의 수분흡수량은 서리태와 흑태가 가장 높게 나타났고, 보리, 찹쌀, 멥쌀, 현미찹쌀, 현미, 팥 순서를 보였다. 침지온도별 수분흡수량은 온도가 높을수록 수분흡수량이 증가하였고 수분흡수평형에 도달하는 시간이 단축되었다. 두류의 분쇄별 수분흡수량은 분쇄가 많이 될 수록 수분흡수량이 증가하였고 수분흡수평형에 도달하는 시간이 단축되었다. 침지한 시료를 실온, 열풍 $30^{\circ}C,\;50^{\circ}C$와 마이크로파 300 W, 700 W, 1000 W 출력으로 건조하였다. 그 결과 마이크로파 700 W 건조가 실온과 열풍, 마이크로파 300W에 비하여 시료의 손상없이 가장 단시간 내에 건조할 수 있었다. 따라서 혼합곡의 전처리 조건은 $30^{\circ}C$에서 1시간 침지한 후 마이크로파 700W에서 건조하는 것이 가장 적합한 것으로 사료되었다.

Effect of seed priming on germination and sprouting vigor of colored rice

  • The study was conducted to select optimal materials for promoting germination rate, high sprouting vigor by priming treatment using PEG 6000 (water potential -0.5 to 2.0 Mpa) and Azolla extracts (0.1, 1.0, and 10.0%) extracted by ethanol, distilled, and/or hot water in colored rice cultivars. Each rice seed (three black rice cultivars and two red rice cultivars) was soaked 24 and 48 hr including untreated control. In black rice, Joseongheugchal rice cultivar, azolla ethanol extract (0.1%) induced highest germination rate, germination speed was taken to 5 days in distilled water and to 3days in Azolla extracts extracted hot water. Otherwise, degree of bacterial inhibition (number of colony, $10^3cfu$) in dry seed, water soaking for 24hr, soaking with fungicide for 24hr and 48hr, soaking with fungicide and aeration for 24hr and 48 hr was 22, 500, 95, and 0.46, respectively. In order to minimize fungal inhibition, a method can be chosen to combination of soaking fungicide and aeration for 48 hr. In seed priming treatments using growth pouch, seed soaking with fungicide did not affect change of germination percentage and germination speed, it delayed only 2 or 4day in the Joseongheugchal rice cultivar. It differs from rice cultivars and priming materials, Azolla extract(0.1 to 1%) promotes seed germination percentage in the Ilpum, Hongjinju, and Joseonghuegchal, in addition, germination in Jeogjinju cultivar was only promoted by PEG solution(10 to 20%), otherwise, it showed much lower or inhibited on the germination in Heugjinju and Sinmyungheugchal rice cultivars. In a paddy field trial, seedling establishment rate by applying PEG6000 and azolla extract did not show significantly statistical difference. When it compared with untreated control, seedling establishment rate was increased over 50% in priming treatments. Interestingly, seedling establishment rate under azolla extract (0.1%) extracted with ethanol was promoted over 2.5 times compared to the control in a black rice, Joseongheugchal and red rice, Jeogjinju.

  • 대표적(代表的)인 건축내장재료(建築內裝材料)인 합판(合板)은 가연성(可燃性)이 매우 커서 각종(各種) 대형화재(大型火災)의 요인(要因)이 되고 있다. 따라서 내화합판(耐火合板) 제조(製造)의 필요성(必要性)이 절실(絶實)히 요구(要求)되고 있으며, 이와 관련(關聯)하여 우선적(優先的)으로 해결(解決)해야 할 과제(課題)로서 DAP 처리합판(處理合板)의 재건조(再乾燥)에 관(關)한 연구(硏究)를 수행하였는 바 5.25mm두께의 Meranti합판(合板)을 제2인산(第二燐酸)암모늄(DAP) 20% 수용액(水溶液)에 온냉욕법(温冷浴法)으로, 즉 각각 3, 6, 9 및 12시간(時間) 온냉처리(温冷處理)한 다음 공(共)히 3시간(時間) 냉액침지처리(冷液浸漬處理)하였으며 그 때의 약액흡수량(藥液吸收量)과, 이들 처리합판(處理合板)을 130, 145, 160 및 $175^{\circ}C$의 열판온도(熱板温度)로 건조(乾燥)함으로써 건조곡선(乾燥曲線)과 건조속도(乾操速度)를 고찰(考察)하였다. 그 결과(結果), 온냉욕법(温冷浴法)에 의한 합판(合板)의 약액흡수량(藥液吸收量)은 침지시간(浸漬時間)이 증가(增加)함에 따라 꾸준히 증가(增加)하였고, 수분(水分)의 흡수량(吸收量)이 DAP의 흡수량(吸收量)보다 더 많았으며 DAP 약제보유량(藥劑保有量)은 최단침지처리시간(最短浸漬處理時間)의 경우에도 최저보유량(最低保有量)[$1.125kg/(30cm)^3$]을 상회(上廻)하였다. 한편 내화처리합판(耐火處理合板)의 건조곡선(乾操曲線)은 모든 처리시간(處理時間)에서 수분처리합판(水分處理合板)의 건조곡선(乾操曲線)이 DAP약제처리합판(藥劑處理合板)의 그것보다 경사가 급했으며 열판온도(熱板温度)가 상승(上昇)할수록 건조(乾操)가 급속(急速)히 진행(進行)되어 $160^{\circ}C$를 적용(適用)했을 때는 2.5~4분(分)에 건조(乾操)가 완료(完了)되었다. 건조속도(乾操速度)에 있어서도 대체(大體)로 열판온도(熱板温度)가 증가(增加)할수록 그 값이 증가(增加)하였으며 DAP처리(處理)의 경우는 $175^{\circ}C$ 적용시(適用時), 그리고 수분처리(水分處理)의 경우는 $160^{\circ}C$부터 10%/min 이상(以上)의 건조속도(乾操速度)를 나타내었다.

건자재활용을 위한 축열용 다공성 미립자 상변환 물질 흡착 특성 (Charateristics on the PCM absorbed porous media as thermal storage applicable for construction material)

  • Purpose: Both silica gel and activated carbon black particles were adopted for use as PCM absorbed porous media applicable as construction materials. To investigate usable methods for absorbing PCM into the media, they were soaked into PCM and also tested for enhancement of PCM absorption into them. Method: To test PCM absorption into some porous media such as both ${\varphi}1{\sim}2mm$ and $10{\mu}m$ silica gels, and $50{\mu}m$ activated carbon black, $43^{\circ}C$ PCM was used as a laten heat material. The method, soaking into PCM was applied to this study, and the media were moderately rotated by centrifuge to have the extra PCM flow out. DSC analysis was conducted to investigate the melting and solidifying of the PCM absorbed into the porous media. Result: It was found that PCM was absorbed into the porous media by over 85 wt% of all particles. In addition, it was noted that the ultrasonic vibrator was accelerating the PCM absorption into the particles to three times higher speed than simple soaking. Centrifuge was adopted to remove extra PCM sticking on the particle surfaces and extra PCM was moderately removed from the surfaces of the particles. DSC analysis indicated that the latent heat of the absorbed PCM particles was 160 J/g, and the melting temperature was approximately $40^{\circ}C{\sim}50^{\circ}C$.

유과 품질향상을 위한 첨가물의 효과와 공정 단순화 시도 (Effect of Some Additives for Yukwa (Popped Rice Snack) Quality Improvement and Process Modification Trials)

  • 유과 품질향상을 위한 몇 가지 첨가물의 효과와 공정개선을 위한 수침시간 단축 및 쌀가루에 의한 유과제조 시험을 수행하였다. 불린 콩을 첨가(3%, w/w)한 유과는 팽화도가 높았고 물리적 조직특성도 우수하였으며 관능검사 결과도 이들 경향과 일치하였으나 baking powder, 변형녹말과 막걸리, 소주, 청주 등 주류는 첨가효과가 인정되지 않았다. 그러나 주류는 유과의 외형적인 조직이 치밀해지는 경향을 보였다. 쌀전분의 호화근접 온도인 $60^{\circ}C$의 고온수침에서 3시간 정도면 충분한 수화가 이루어져 저온 장시간($12{\sim}14$시간) 수침한 경우와 차이가 없었으며 고온수침시간의 연장(12시간)에서는 품질개선 효과가 인정되기 않았다. 그리고 건식제분한 쌀가루로 유과를 만드는 경우 100mesh가 팽화도 및 경도에서 우수하였으나 습식제분보다 품질이 떨어져 제분방법과 제분기의 별도연구가 필요하였다.

Seedling Stand Influenced by Water Management after Seeding and Seed Soaking with Plant Growth Regulators in Direct Wet Seeding Rice

  • Unstable seedling stand establishment of wet direct seeding culture of rice is one of the major elements preventing the extension of its culture area. In order to develop methods of seedling stand improvement in direct seeded rice on flooded surfaces, three field experiments were conducted on silty loam soil using a cultivar 'Donjinbyeo' for three years, mainly focusing on water management after seeding and seed soaking with plant growth regulators (PGRs). Under the condition of shallow flooding after seeding, seedling stand rate increased and floating seedling rate decreased in both early and normal season seeding compared to deep flooding. With earlier draining time after seeding, there was a tendency towards preferential growth of the seminal root, increase of seedling stand and decrease of the floating seedling rate. Therefore the highest seedling numbers per unit area and the lowest floating seedling numbers were found upon drainage at 1 day after seeding (DAS), while a contrary tendency was shown upon conventional drainage at 7 DAS. Seed soaking with PGRs such as Metalaxyl or mixing of Metalaxyl with gibberellic acid (GA$_3$) significantly increased the seedling stand. In addition the effects of PGR treatment on seedling stand and the early growth of plants were greater under flooded conditions than under drained conditions after seeding, although draining of water after seeding improved the seedling establishment rate more when compared with the PGR treatment. These results suggest that draining management after seeding or maintaining of shallow flooding for a week is the most effective method to improve the seedling stand rate in wet direct seeding.

잠아 인공사료에 대한 연구 제1보 사료장기저장에 대한 기초연구 (Studies of Artificial Diets for Silkworm( I )(Basic Studies of the diets by wet storing))

  • 본 연구는 잠아인공사료의 연구적일환으로서 사료저장에 대한 기초연구를 한것이며 실험결과는 다음과 같다. 1. 사료를 침적저장할 목적으로 Defarmentizer C.를 조성하였다. 2. 본 저장제는 호기성균을 억제할수 있으나 호기성균은 억제하지 못하였다. 3. 본 저장제는 사료를 무계절처리하여 동계 잠아사육이 가능하였다. 4. 본 사료저장법에서는 사료엽성숙도가 중요하며 완전히 성숙한 것이 안전하였다. 5. 완전히 성숙한 사료도 저장중 연화되어 잠아사료로서의 경도를 유지한다. 6. 본 저장제용액은 단백질등전점에 근접한 pH를 유지하여 사료단백질추출 억제되었다. 7. 본 저장제는 그 처리비용이 경제성을 유지하였다. 8. 인공사료재료로 사용할 야생식물엽의 조성분석결과는 그 사용가치가 인정되었다.

푸른 방울토마토로 제조한 저염 장아찌의 저장 중 품질 특성 변화 (Quality Changes of Immature Green Cherry Tomato Pickles with Different Concentration of Soy Sauce and Soaking Temperature During Storage)

  • The principal objective of this study was to develop and standardize a preparation method for low-sodium tomato jangachi (traditional Korean pickle) via short-term fermentation with immature green cherry tomatoes. In order to determine the preferred concentrations of soy sauce and soaking temperatures of immature cherry tomato pickles in different stages of storage, we conducted an analysis of physico-chemical characteristics and microbiological properties, and also performed a preference test on samples of immature green cherry tomato pickles. Immature cherry tomatoes were prepared in three different soy sauce concentrations --20, 40, and 60%-- and three different soaking temperatures --60, 80, and 100$^{\circ}C$-- and then stored for 28 days at 5$^{\circ}C$. As a result, the pH increased significantly with increases in the amount of soy in the dipping solution (p<0.05). The saltiness was maintained at levels of approximately $0.17{\sim}0.28%$ (20% group), $0.32{\sim}0.67%$% (40%group), $0.48{\sim}1.00%$ (60% group) during storage periods. These results show that the saltiness of immature cherry tomato pickles was substantially lower than that of commercial pickles. The contents of reducing sugar and lightness decreased significantly with increasing concentrations of soy dipping solution. The redness and yellowness values of the tomatoes decreased significantly with increasing concentrations of soy sauce. Additionally, the lower the concentration of soy sauce used, the more rapidly the hardness of the immature cherry tomato pickles was reduced at 100$^{\circ}C$. PME activity moved within a narrow range, and then stabilized during the storage period. With regard to the results of the consumer preference test, 20%-100$^{\circ}C$ was the most preferred condition overall, 40%-80$^{\circ}C$ was the condition in which the texture was most preferred, and 40%-80$^{\circ}C$ was the condition that yielded the highest color scores.

Characteristics Changes of Floury-type Rice depending on Water Immersion and Heat Treatment Time

  • In the production of rice flour, wet milling is a method of milling rice after soaking it in water, and it takes a lot of time and cost from milling to drying. To overcome this problem, the floury type rice was developed for dry milling and it is known to have round starch granules, low content of damaged starch after milling, and a starch structure similar to wheat. Because of its unique properties different from normal rice, it is necessary to research on processing and characteristics of floury-type rice to expand its utility in the food industry. Therefore, this study aimed to prepare the pregelatinized floury type rice (Baromi2) by autoclave and investigate their physicochemical properties. As the heat treatment time increased, the brightness decreased from 83.8 to 76.8, however, both redness and yellowness increased from 0.57 to 4.5 and from 14.58 to 21.13, respectively. Despite of same treatment time, soaking in water (10 min) before autoclaving increased the solubility and swelling power of Baromi2 over 2 times. The peak viscosity of native Baromi2 was over 2000 RVU, on the other hand, there was a significantly decrease to less than 1000 RVU of pregelatinized Baromi2. Heat treatment without immersion caused partial gelatinization of starch, resulting that some starch granules maintaining their integrity. Whereas there were no starch granules in heat treatment with soaking in water due to complete gelatinization. This study would be helpful to the suggestion of using heat-treated floury-type rice as an intermediate material in the food industry in the future.

효과적인 효소 소화율을 위한 볏짚 전처리 (Pretreatment of Rice Straw for Efficient Enzyme Digestibility)

  • Rice straw was pretreated with aqueous ammonia in order to enhance enzyme digestibility. Soaking in ammonia aqueous (SAA) was conducted with 15% ammonia, at $60^{\circ}C$. for 24 h. Optimization of both saccharification conditions and enzyme loading of SAA rice straw was carried out. Especially enzyme loading test was performed using statistical method. Moreover proton beam irradiation (PBI) was also performed to overcome the problem which inhibit the enzyme digestibility at 1-25 kGy doses with 45 MeV of beam energy. Optimal condition for enzymatic saccharification was follows; pH 4.8, $50^{\circ}C$, 60 FPU of enzyme activity, 1:4 ratio of celluase and ${\beta}$-glucosidase. Also, optimal doses of PBI on rice straw and SAA-treated rice straw for efficient sugar recovery were found to be 3 kGy, respectively. When saccharification was performed with optimal condition, glucose conversion yield was 89% of theocratical maximum in 48 h, and 3 kGy of PBI was applied to SAA-treated rice straw, approximately 90% of the theoretical glucose yield was obtained in 12 h. The results of X-ray diffractometry (XRD) support the effect of both SAA and PBI on sugar recovery, and scanning electron microscopy (SEM) images unveiled the physical change of the rice straw surface since rugged rice straw surface was observed.
