반응표면분석법을 이용한 쌀과자의 제조 최적화 (Optimization of the Preparation of Rice Snack by Response Surface Methodology)

  • This study aimed at the optimization and development of rice snack by response surface methodology (RSM). The effect of rice soaking time and additional ratio of soybean milk on physicochemical properties and sensory evaluation of dried rice flour for non-fried snack was studied. After soaking for 0 to 12 days, Baekjinju rice was milled and then air-dried. A quadratic model was selected for weight, volume, hardness, taste and appearance. Two-factor interaction model was selected for expansibility, color and overall preference. A linear model was selected for yellowness and flavor. Weight, hardness and appearance were increased and decreased thereafter as rice soaking time increased, but the volume was reversed. Expansibility, color, taste and flavor were decreased as rice soaking time increased, but yellowness was reversed. Weight and overall preference decreased as additional ratio of soybean milk increased, but volume, expansibility and yellowness were reversed. Hardness, taste and appearance were increased after initial decrease as additional ratio of soybean milk increased, color and flavor were not changed by additional ratio of soybean milk. The optimum conditions of each factor were set to where the rice soaking time and additional ratio of soybean milk were at their minimum. Weight, volume, expansibility, yellowness, hardness, color, taste, flavor, appearance and overall preference were established at maximum level where the objective of the optimum was in level. Our data indicated the statistically predicted values of the highest desirability was 1.24 day of rice soaking time and 15.80% of additional ratio of soybean milk.

감장아찌의 제조중 이화학적 특성변화 및 최적제조조건 (Changes of Physicochemical Properties during the Preparation of Persimmon Pickles and its Optimal Preparation Conditions)

  • 떫은감 품종의 하나인 비단시를 숙성정도를 달리하여 수확하고 이들의 감장아찌 제조조건을 염농도, 침지 온도, 침지 시간, 된장첨가량을 달리하여 조사하였다. 침지액의 초기염도는 $7.5{\sim}15%$였고 침지 20일까지 급격하게 낮아져서 $6.0{\sim}12.0%$가 되었으며 초기염도나 침지 옥도가 높을수록 크게 감소하였고 된장 첨가시에는 염도의 변화가 상대적으로 적었으며 특히 침지 40일 이후에는 거의 변화가 없었다. 수용성 탄닌 함량은 염농도에 관계없이 침지 10일째까지 급격하게 감소하다가 그 이후에는 거의 변화가 없었으며 이러한 변화 경향은 된장 첨가량과 원료감의 숙성정도에 영향을 받지 않았다. 감장아찌 침지액의 pH는 영농도가 높을수록 침지 초기의 pH 감소폭이 컸으나 침지 후기에는 염농도에 관계없이 거의 비슷한 경향을 보였으며 된장을 첨가하면 전체적인 pH 감소 폭이 작아짐을 알 수 있었다. 침지 온도에 따른 pH 변화는 $5^{\circ}C$에서 아주 느리게 낮아졌으며 원료감의 숙성정도와는 무관하였다. 감장아찌중의 염분 함량은 침지중에 계속 증가하였고 침지액의 염도가 12.5% 이상일때 침지 30일째부터 급격하게 증가하였으나 된장 첨가량과 원료감의 숙성정도를 달리하여도 증가하는 경향은 거의 비슷하였는데, 특히 된장 첨가량이 많을수록 감장아찌중의 염분 함량은 낮은 것으로 나타났다. 색도는 침지시간이 경과됨에 따라 명도는 감소하고 색도는 적색이 강해지는 것으로 나타났으며 경도는 침지 15일째까지 증가하다가 침지 40일 이후에는 다시 감소하였는데 숙성된 감은 경도가 계속 낮아졌다. 이와같이 감장아찌 제조 과정에서의 이화학적 변화와 관능검사 결과를 종합해 볼때 감장아찌는 숙성이 약간 덜된 연한색 원료감을 염도 10.0%, 침지온도 $15^{\circ}C$에서 40일간 침지했을때 가장 좋은 제품을 얻을 수 있었고 된장을 20% 첨가했을때 감장아찌의 총기호도가 가장 높았다.

녹두발아시 항영양 과당류의 변화 (Effects of Germination on Antinutritional Oligosaccharides of Mung Beans)

  • 녹두발아중 항영양 과당류의 변화를 알아보기 위하여 실온에서 15시간 침지시킨 녹두(Phaseolus aureus)를 $25^{\circ}C$에서 7일간 발아시키면서 실리카박층크로마토그라피로 당의 패턴을 분석하였다. 녹두의 수분함량은 15시간 침지이후 발아 3일까지 65%로 유지되다가 4일째부터는 82%로 거의 안정하였다. 항영양 과당류인 raffinose와 stachyose는 박층크로마토그라피상에서 발아 $1{\sim}2$일째 급격히 감소하여 미량 존재 하다가 3일째부터는 거의 소멸되었다.

  • This study is part of research to develop the technology for managing major medicinal crops after harvest. We studied the optimal germination conditions of $Cynanchum$ $wilfordii$ (Maxim.) Hemsl. The mean germination time (MGT) of $C.$ $wilfordii$ seeds was higher after soaking for 4 days after storage at $5^{\circ}C$ for 8 weeks, than with germination at $25^{\circ}C$ (3 days). However, the germinative energy (GE) decreased as the number of days soaking increased. The greatest germination rate ($83.3{\pm}8.8%$) was at $25^{\circ}C$ with no soaking of seeds stored at $-20^{\circ}C$ for 8 weeks. Based on these results, we characterized the germination conditions of a major medicinal crop.

붉나무.참싸리.비수리 종자의 침지 처리가 발아에 미치는 영향 (The Influence of Germinations in Soaking Treatment of Rhus chinensis, Lespedeza cyrtobotrya and Lespedeza cuneata)

  • Herbs and shrubs are employed for environmental restoration purposes. Among common herbs and shrubs, few species with low germination rates were selected and studied for enhanced germination rates and decreased germination times via soaking treatment. Rhus chinensis, incubator grown samples treated with the bacterial solution for 72hrs followed by immediate seeding showed the highest germination rate of 26.7% and germination period of 5.7 days, 3 days decrease from the control. Treatment of distilled water (t=3.79, p<0.01), nutrient broth (t=4.44, p<0.00) and bacterial solution (t=4.42, p<0.00) showed highly significant difference. In the case of soil tests, treating in the nutrient broth for 72 hrs followed by immediate seeding yielded the the highest germination rate of 23.3% with 7.3 days to initial germination, a decrease of 14.7 days with respect to the control. All the samples followed by immediate seeding showed significant difference (t=2.13, p<0.05). Incubator grown samples of Lespedeza cyrtobotrya showed different results. The incubator samples suspended for 48 hrs in distilled water followed by immediate seeding and 1 day drying displayed the highest germination rate of 96.7%, surpassing that of the control by 33.4%. The incubator samples treated with the distilled water and nutrient broth showed enhanced germination. But only the samples treated with distilled water and nutrient broth for 48hrs showed the increased germination in soil tests. All the sample treated for 24 hrs followed by immediate seeding or dried for 1 day showed initial germination as early as 1 day in incubator. The initial germinations were shortened in the samples treated with distilled water and nutrient broth for 48hrs in soil tests. Lespedeza cuneata incubator sample treated with nutrient broth for 24 hrs and dried for 1 day exhibited the highest germination rate of 83.3%, a 31.1% improvement over the control. The incubator samples treated with distilled water for 48 hrs (t=4.20, p<0.01) showed effective increase of germination. The treatment of distilled water (t=2.96, p<0.05) and bacterial solution (t=2.24, p<0.05) showed significant difference. The germination rates in soil were less than those of incubator and the control. The incubator samples treated with distilled water and bacterial solution displayed 1 day germination period, shortened by 1.3 days compared to the control. For soil grown samples, the samples treated with distilled water showed delayed initial germination and those treated with nutrient broth for 48hrs and bacterial solution for 72hrs shortened initial germination.

  • This study evaluated the germination rate of $Rheum$ $palmatum$ L. in Korea as affected by storage temperature, germination temperature, and a soaking treatment. The germination rate of $R.$ $palmatum$ L. stored at various conditions for 8 weeks was > 60%. The highest germination rate occurred at $25^{\circ}C$. The germination point of $R.$ $palmatum$ L. with soaking was started 1 day after application, and non soaked seeds germinated in 2 days. When $R.$ $palmatum$ L. was soaked with water, the germination rate was lower, but mean germination velocity was the highest. These results may help our understanding of variations in germination characteristics for seeds treated under different germination conditions.

  • 1989년(年)에 건국대학교(建國大學校) 실습농장(實習農場)에서 재배(栽培)하여 채종(採種)한 참당귀(當歸) 종자(種子)를 재료(材料)로 하여 층적(層積), 침종(浸種) 및 Gibberellin처리(處理)한 후(後) 발아상(發牙床)에 넣어 발아율(發芽率), 발아세(發芽勢) 및 발아계수(發芽係數)를 조사(調査)하여 발아율제고(發芽率提高)를 위한 기초자료(基礎資料)로 활용(活用)하고자 수행(遂行)한 시험결과(試驗結果)를 요약(要約)하면 다음과 같다. 1. 층적처리(層積處理)에 의한 발아율(發芽率)은 무처리(無處理)보다 약(約) 30% 증가(增加)를 보였으며, 저온처리(低溫處理)의 효과(效果)는 인정(認定)되지 않았다. 2. 침종처리(浸種處理)에 의한 발아율(發芽率)은 $20^{\circ}C$, 4일(日) 침종구(浸種區)와 $10^{\circ}C$, 6일(日) 침종구(浸種區)에서 가장 높았으며 환수처리(換水處理)는 무처리(無處理)보다 발아억제물질(發牙抑制物質)의 추출효과(抽出效果)가 컸다. 3. Gibberellin처리(處理)에 의한 발아율(發芽率)은 무처리(無處理)보다 약(約) 20% 증가(增加)를 나타내었으며, 침종구(浸種區)에서 2ppm, 무침종구(無浸種區)에서 5ppm에서 발아율(發芽率)이 가장 높았다.

Effect of seed priming on germination and sprouting vigor of colored rice

  • The study was conducted to select optimal materials for promoting germination rate, high sprouting vigor by priming treatment using PEG 6000 (water potential -0.5 to 2.0 Mpa) and Azolla extracts (0.1, 1.0, and 10.0%) extracted by ethanol, distilled, and/or hot water in colored rice cultivars. Each rice seed (three black rice cultivars and two red rice cultivars) was soaked 24 and 48 hr including untreated control. In black rice, Joseongheugchal rice cultivar, azolla ethanol extract (0.1%) induced highest germination rate, germination speed was taken to 5 days in distilled water and to 3days in Azolla extracts extracted hot water. Otherwise, degree of bacterial inhibition (number of colony, $10^3cfu$) in dry seed, water soaking for 24hr, soaking with fungicide for 24hr and 48hr, soaking with fungicide and aeration for 24hr and 48 hr was 22, 500, 95, and 0.46, respectively. In order to minimize fungal inhibition, a method can be chosen to combination of soaking fungicide and aeration for 48 hr. In seed priming treatments using growth pouch, seed soaking with fungicide did not affect change of germination percentage and germination speed, it delayed only 2 or 4day in the Joseongheugchal rice cultivar. It differs from rice cultivars and priming materials, Azolla extract(0.1 to 1%) promotes seed germination percentage in the Ilpum, Hongjinju, and Joseonghuegchal, in addition, germination in Jeogjinju cultivar was only promoted by PEG solution(10 to 20%), otherwise, it showed much lower or inhibited on the germination in Heugjinju and Sinmyungheugchal rice cultivars. In a paddy field trial, seedling establishment rate by applying PEG6000 and azolla extract did not show significantly statistical difference. When it compared with untreated control, seedling establishment rate was increased over 50% in priming treatments. Interestingly, seedling establishment rate under azolla extract (0.1%) extracted with ethanol was promoted over 2.5 times compared to the control in a black rice, Joseongheugchal and red rice, Jeogjinju.

유색벼의 품종별 종자 비중, 발아 특성 및 기계이앙 육묘시 적정 파종량 (Seed Gravity, Germination, and Optimum Seeding Rate for Machine Transplanting in Colored Rice Varieties)

  • 최근 소비자들의 건강에 대한 관심이 증가함에 따라 건강기능성 성분이 다량 함유 되어 있는 유색벼 품종의 안전 육묘를 위한 종자의 발아특성, 적정 침종기간 및 적정 파종량을 구명하기 위한 시험결과는 다음과 같다. 1. 현미색이 흑색인 조생흑찰 및 신명흑찰은 비중이 1.0이하의 물에 뜨는 종자가 85.7~86.3%로 대부분을 차지하였고, 비중이 1.06이상 충실한 종자 비율은 1.0~1.3%로 다른 흑미에 비해 상대적으로 낮았다. 한편 신토흑미, 흑진주, 흑설, 흑남, 흑광은 비중이 1.0이하가 15.3~43.7%, 1.0~1.06이 24.6~39.4%, 1.0이상이 25.5~55.7%로 다양한 무게의 종자가 분포해 있었다. 그러나 적미인 홍진주, 적진주, 건강홍미는 일반벼인 일미벼와 같이 충실한 종자인 1.06이상의 비율이 84.0~86.6%로 높았고, 반면 비중이 1.0~1.06은 2.5~4.1%, 비중이 1.0이하의 물에 뜨는 종자의 비율은 9.3~12.1%로 낮았다. 2. 흑미는 일반적으로 물온도에 관계없이 발아율이 적미보다 낮았고 발아속도가 느렸으며 평균발아일수도 길었고 수분흡수율도 낮았다. 그 결과 80%이상 발아하기 까지 침종기간이 적미나 일반벼 보다 2~4일 가량 더 결렸다. 이것은 흑미는 비중이 1.0이하의 가벼운 종자가 적미보다 훨씬 높았기 때문이다. 3. 상자육묘시 흑미의 출아율은 10일묘에서 75.2~82.2%, 30일묘에서 85.3~90.9%로 적미보다 10일묘에서는 4.5~8.0%, 30일묘에서는 0~3.3% 낮았는데 이것은 미출아율 종자가 많았기 때문이었다. 4. 기계이앙 육묘시 유색벼의 안전 육묘를 위한 적정 파종량은 관행 일미벼 어린모 및 중묘의 상자당 성묘개체수를 기준으로 흑미의 경우 어린모는 200~220g, 중묘는 110~130g이었고 적미는 일반벼와 같이 어린모 220g, 중묘 130g이었다.

Seedling Stand Influenced by Water Management after Seeding and Seed Soaking with Plant Growth Regulators in Direct Wet Seeding Rice

  • Unstable seedling stand establishment of wet direct seeding culture of rice is one of the major elements preventing the extension of its culture area. In order to develop methods of seedling stand improvement in direct seeded rice on flooded surfaces, three field experiments were conducted on silty loam soil using a cultivar 'Donjinbyeo' for three years, mainly focusing on water management after seeding and seed soaking with plant growth regulators (PGRs). Under the condition of shallow flooding after seeding, seedling stand rate increased and floating seedling rate decreased in both early and normal season seeding compared to deep flooding. With earlier draining time after seeding, there was a tendency towards preferential growth of the seminal root, increase of seedling stand and decrease of the floating seedling rate. Therefore the highest seedling numbers per unit area and the lowest floating seedling numbers were found upon drainage at 1 day after seeding (DAS), while a contrary tendency was shown upon conventional drainage at 7 DAS. Seed soaking with PGRs such as Metalaxyl or mixing of Metalaxyl with gibberellic acid (GA$_3$) significantly increased the seedling stand. In addition the effects of PGR treatment on seedling stand and the early growth of plants were greater under flooded conditions than under drained conditions after seeding, although draining of water after seeding improved the seedling establishment rate more when compared with the PGR treatment. These results suggest that draining management after seeding or maintaining of shallow flooding for a week is the most effective method to improve the seedling stand rate in wet direct seeding.
