Fatty Acid Profiles of Supraspinatus, Longissimus lumborum and Semitendinosus Muscles and Serum in Kacang Goats Supplemented with Inorganic Selenium and Iodine

  • Fat and fatty acids in muscle and adipose tissues are among the major factors influencing meat quality particularly nutritional value and palatability. The present study was carried out to examine the effects of supplementing inorganic selenium (Se), iodine (I) and a combination of both on fatty acid compositions in serum, and supraspinatus (SS), longissimus lumborum (LL), and semitendinosus (ST) muscles in goats. Twenty-four, 7 to 8 months old, Kacang male goats with a mean live weight of $22.00{\pm}1.17kg$ were individually and randomly assigned into four groups of six animals each for 100 d of feeding prior to slaughter. The animals were offered the same concentrate (basal) diet as 1% of body weight with ad libitum amount of fresh guinea grass. The four groups were as follows: T1 (control) - basal diet without supplementation; T2 - basal diet with 0.6 mg Se/kg DM; T3 - basal diet with 0.6 mg I/kg DM; T4 - basal diet with combination of 0.6 mg Se/kg DM and 0.6 mg I/kg DM. The major fatty acids (FAs) detected in the serum were palmitic (C16:0), stearic (C18:0), oleic (C18:1n9) and linoleic (C18:2n-6), while the major FAs in the selected muscles were C16:0, C18:0 and C18:1n9 acids. The main polyunsaturated fatty acids (PUFA) detected in muscles and serum were (CI8:2n-6), linolenic acid (C18:3n-3), and arachidonic acid (C20:4n-6). No significant differences (p>0.05) were observed in the concentration of total saturated fatty acids (SFA) among the four groups. PUFA concentrations in the goats supplemented with Se (T2) were significantly higher (p<0.05) than the goats of the control group (T1). The PUFA: SFA ratio was significantly higher in the animals supplemented with dietary Se (T2) than those of control ones (T1). It is concluded that dietary supplementation of inorganic Se increased the unsaturated fatty acids in muscle. The supplementation of iodine with or without Se had negligible effects on muscle fatty acid content of Kacang crossbred male goats.

Carcass Characteristics and Meat Quality of Korean Native Ducks and Commercial Meat-type Ducks Raised under Same Feeding and Rearing Conditions

  • This study was conducted to compare carcass characteristics and physico-chemical meat quality in two different genotype ducks raised under identical feeding and rearing conditions. A total of ninety 1-d-old Korean native ducks (KND, n = 45) and commercial meat-type ducks (Grimaud, n = 45) were fed same experimental diets during 56 d and 42 d, respectively to obtain similar slaughter weights. The experimental diet for starter period contained 20% crude protein (CP) and 2,900 kcal nitrogen corrected true metabolizable energy (TMEn)/kg of diet and that for grower period contained 17% CP and 3,050 TMEn/kg of diet. Average daily gain and feed efficiency of KND were inferior to those of commercial meat-type ducks (p<0.05). Carcass weight was not different between two genetically different ducks, but carcass yield of KND was significantly higher (p<0.05) than that of commercial meat-type ducks. There were no significant differences in cooking loss and pH of breast meat between two genetically different ducks, but water holding capacity of KND was significantly higher than that of commercial meat-type ducks. The linoleic acid and total polyunsaturated fatty acid of breast meat from KND were significantly higher (p<0.05) than the corresponding part from commercial meat-type ducks. Significant differences were detected in water holding capacity and the content of linoleic acid and polyunsaturated fatty acid, which were significantly higher in KND, whereas growth performance tended to be superior in commercial ducks. At the market weight, the meat from KND was judged to have better qualities with regard to higher water holding capacity and greater content of polyunsaturated fatty acid compare with meat from commercial meat-type duck.

  • 본 연구는 우리나라 재래돼지의 고유 특성을 살린 우수한 품종을 개발하기 위하여 수행하였으며, 도체특성은 DK1이, 육질특성과 지방산조성은 DK2가 두록과 비교하여 차이가 없거나 우수한 것으로 나타나 재래돼지를 활용한 우수한 육질의 돼지 품종 개발이 가능할 것으로 사료된다.

삼계용 신품종 토종닭의 육질특성 비교분석 (Comparative Analysis of Meat Quality Traits of New Strains of Native Chickens for Samgyetang)

  • 기존의 삼계용 토종닭 품종과 GSP 육종을 통해 개발 중인 신품종 토종닭 후보라인의 도체 및 육질 특성을 비교하기 위해, 동일 조건에서 사육한 5주령의 한협3호(H), 백세미(W), 토종닭 후보라인 3계통(A, C, D)으로 구성된 250수를 도축하여 도체형질을 측정하고, 가슴육을 이용하여 육질성분과 특성을 분석하였다. 도체중은 W가 875.10 g으로 가장 높았고, 후보라인A 가 537.54 g으로 가장 낮았다(P<0.05). W는 브로일러의 특성인 가슴살의 비율이 높고, 가슴살의 지방함량도 높았다. 후보라인 3계통은 H와W 보다 linoleic acid(C18:2)의 함량이 높았다. 특히 후보라인 중 A와 D는 토종닭에서 특징적으로 많이 함유되어 있는 arachidonic acid(C20:4) 함량이 C에 비해 높았다. 전반적인 지방산 조성에서 후보라인 A와 D는 대조구 H 와 유사하였으며, 후보라인 C는 W와 유사한 경향을 보여 흥미로웠다. 백세미(W)보다는 시중 토종닭(H)과 유사한 지방산 조성을 보인 후보라인 A와 D의 관능평가 점수가 우수한 것으로 나타났다. 이 연구 결과를 바탕으로 기존의 삼계용 토종닭과 백세미를 대체하는 새로운 품질특성을 지닌 삼계용 토종닭 개발의 기초자료로 활용 가능할 것이다.

Effect of Medicinal Plant By-products Supplementation to Total Mixed Ration on Growth Performance, Carcass Characteristics and Economic Efficacy in the Late Fattening Period of Hanwoo Steers

  • This study was conducted to evaluate the effect of medicinal plant by-products (MPB) supplementation to a total mixed ration (TMR) on growth, carcass characteristics and economic efficacy in the late fattening period of Hanwoo steers. Twenty seven steers (body weight [BW], $573{\pm}57kg$) were assigned to 3 treatment groups so that each treatment based on BW contained 9 animals. All groups received ad libitum TMR throughout the feeding trial until slaughter (from 24 to 30 months of age) and treatments were as follows: control, 1,000 g/kg TMR; treatment 1 (T1), 970 g/kg TMR and 30 g/kg MPB; treatment 2 (T2), 950 g/kg TMR and 50 g/kg MPB. Initial and final BW were not different among treatments. Resultant data were analyzed using general linear models of SAS. Average daily gain and feed efficiency were higher (p<0.05) for T1 than control, but there was no difference between control and T2. Plasma albumin showed low-, intermediate- and high-level (p<0.05) for control, T1 and T2, whereas non-esterified fatty acid was high-, intermediate- and high-level (p<0.05) for control, T1 and T2, respectively. Carcass weight, carcass rate, backfat thickness and rib eye muscle area were not affected by MPB supplementation, whereas quality and yield grades were highest (p<0.05) for T1 and T2, respectively. Daily feed costs were decreased by 0.5% and 0.8% and carcass prices were increased by 18.1% and 7.6% for T1 and T2 compared to control, resulting from substituting TMR with 30 and 50 g/kg MPB, respectively. In conclusion, the substituting TMR by 30 g/kg MPB may be a potential feed supplement approach to improve economic efficacy in the late fattening period of Hanwoo steers.

중학생의 간접적 비만판정과 에너지섭취 및 소비량과의 관계 (Indirect Assessment of Obesity and Correlation between Energy Intake and Energy Expenditure of Middle School Students)

  • 에너지 섭취량은 남학생이 권장량의 89.7%, 여학생이 100% 섭취하고 있었다. 남학생의 열량 섭취량이 권장량 및 활동량에 비해 많은 양이 부족하게 섭취되고 있었다. 반면, 여학생은 섭취열량, 권장량, 활동량 간의 균형이 잘 이뤄지고 있는 것으로 조사되었다. 권장량에 비해 남학생은 총열량, 칼슘, 철의 섭취량이 약간 부족하였고, 여학생은 철의 섭취량이 미달되는 것으로 나타나 이 부분에 대한 영양교육이 이루어져야 할 것이다. 그러나 전반적으로 영양소의 섭취상태는 양호한 것으로 나타났다. 탄수화물과 단백질, 지방의 열량에 대한 구성비는 남학생이 64 : 16 : 20, 여학생이 62 : 16 : 22로 나타나 이상적인 섭취비율과 비슷한 비율을 보였다. 조사대상자의 평균 신장은 남학생이 160.0cm, 여학생이 155.5cm였고, 평균 체중은 남학생이 49.4kg, 여학생이 48.9kg으로 구미지역 중학생들의 발육상태가 양호한 것으로 나타났다. 상완위 둘레는 남학생이 23.1cm 여학생이 22.6cm로 평균적인 발육상태를 보였다. Caliper로 측정한 상박부 전 후면, 좌측 견갑골, 장골절, 종아리 부위의 피하지방 두께는 남학생이 7.3mm, 13.9mm, 11.4mm, 15.4mm, 21.2mm 여학생이 11.2mm, 18.4mm, 16.7mm, 18.4mm, 21.6mm로 나타났다. 비만으로 판정된 학생은 RBW는 남학생 5%, 여학생 6%, BMI는 남학생 4%, 여학생 10%였고, RI는 남학생 7%, 여학생 13%로 나타났으며, OI는 남학생 4%, 여학생 9%로 나타나 체격지수에 의한 비만판정에는 여학생이 남학생 보다 높은 비만율을 보였다. 상박부후면의 피부두겹 두께에 의한 비만판정은 남학생이 16mm, 여학생이 20mm 이상으로 이에 해당하는 남학생은 43명(24%), 여학생은 66(34%)명으로 나타나 체격지수에 의한 비만 보다 훨씬 높게 평가되는 경향을 보였다. Slaughter의 방법으로 비만으로 판정된 학생은 남학생이 105명(59%), 여학생이 58명(30%)으로 판정되었다. BMI를 이용한 Deurenberg의 방법에 의한 비만학생은 남학생이 27명(15%) 여학생이 13명(7%)으로 판정되었다. Siri의 방법에 의한 비만학생은 남학생 24명(14%), 여학생 2명(1%)으로 판정되었다. 체격지수와 부위별 피지후와의 상관관계에서 RBW는 네부위의 합과 가장 높은 관련 (.6776)을 보였고, BMI(.7542), RI(.7669), OI(.7675), %fatII(.8007)는 모두 견갑골과 가장 높은 상관관계를 보였다.

Effects of the Low-Crude Protein and Lysine (Low CP/lys) Diet and a Yeast Culture Supplemented to the Low CP/lys Diet on Growth and Carcass Characteristics in Growing-finishing Pigs

  • The present study was performed to investigate long-term effects of the low-crude protein and lysine (low CP/lys) diet and a yeast culture supplemented to the low CP/lys diet on growth and carcass characteristics in growing-finishing pigs. Forty-five gilts and 45 barrows weighing approximately 25 kg born to Yorkshire ${\times}$ Landrace dams and Duroc sires were allocated to nine pens, with five gilts and five barrows assigned per pen. Every three pens received CP/lys-rich grower and finisher diets (control), low CP/lys grower and finisher (basal), or the low CP/lys grower and finisher supplemented (2%) with a yeast culture providing $3.2{\times}10^8$ Saccharomyces cerevisiae cells/kg diet (yeast) for 31 and 79 days, respectively. The ADG was less in the low CP/lys (basal + yeast) group than in the control group (P<0.01) during both grower (0.59 vs. 0.70 kg) and finisher (0.75 vs. 0.89 kg) phases. However, marbling score was greater (P<0.05) in the low CP/lys group vs. control (3.86 vs. 3.12) at slaughter, which resulted in a twice percentage of the $1^+$-quality grade carcasses in the former compared with that for the latter. Supplementation of the yeast culture to the basal diet caused a decrease in ADG during the grower phase (P<0.01), but not during the finisher phase (0.64 vs. 0.53 kg and 0.73 vs. 0.77 kg for the basal vs. yeast group during the grower and finisher phases, respectively), without influencing the marbling score or percentage of the $1^+$-quality grade carcasses. In conclusion, results indicate that long-term provision of the low CP/lys diet has a beneficial effect on marbling and carcass quality grade as well as a negative effect on weight gain and that the yeast culture supplemented to the low CP/lys diet has no beneficial effect on weight gain or carcass quality.

Effect of Feeding Complete Rations with Variable Protein and Energy Levels Prepared Using By-products of Pulses and Oilseeds on Carcass Characteristics, Meat and Meat Ball Quality of Goats

  • Thirty six pre-weaned Barbari kids at 4 months age were reared on four rations computed using coarse cereal grains and by-products of pulses and oil seeds with Crude Protein (CP) and Total Digestible Nutrients (TDN) of 12 and 55% (Low protein Low energy); 12 and 60% (Low protein High energy); 14 and 55% (High protein Low energy); and 14 and 60% (High protein High energy), respectively. After 180 days on feed, male animals ($4{\times}5=20$) were slaughtered to study the effect of diet on carcass characteristics and meat quality. To asses the effect, if any, of such diet on product quality, meat balls were prepared and evaluated for quality changes when fresh as well as during storage ($-20{\pm}1^{\circ}C$). Feeding a ration with CP12 and TDN 60% (LH) to kids produced animals with highest slaughter weight (20.3 kg) yielding higher carcass weight and dressing percentage, lean (65.6%) and fat (6.6%) contents with low bone and trim losses. Although total variety meat yield was markedly higher in HL, the non-carcass fat deposition was relatively higher in LH carcasses. The water activity ($a_w$) of fresh goat meat ranged from 0.994-0.995 and total cholesterol 72.8-90.5 mg/100 g meat. The pH was high in HL and HH meat resulting in decreased ($p{\leq}0.05$) extract release volume (ERV). Meat balls were prepared using meat obtained from goats fed different rations (treatments) and stored at $-20{\pm}1^{\circ}C$. They were evaluated on day 0 and months 1, 2, 3, 4 for physicochemical, microbiological and organoleptic changes. Overall moisture (%), $a_w$, TBA number and pH value were 67.9, 0.987, 0.17, 6.6 respectively and were not affected by treatments except pH that was significantly ($p{\leq}0.01$) lower on LH. As the storage period advanced moisture, pH, $a_w$ and TBA number increased irrespective of treatments. Feeding various diets had no marked effect on microbial load of meat balls but with increasing storage period Standard Plate Count (SPC) and psychrotrophs declined ($p{\leq}0.01$). Treatment LL and LH produced meat balls with better flavour.

Effect of Postmortem Metabolic Rate on Meat Color

  • The current study was conducted to evaluate carcass characteristics, objectives and sensory meat qualities of Hanwoo longissimus muscle as affected by ultimate pH. Twenty-four steers and bulls ($556{\pm}53$ kg and $0.63{\pm}0.32$cm for live weight and backfat thickness, respectively) were used. As there was a linear relationship (r = 0.77) between lean meat color and ultimate pH, cattles were thus segregated into normal $pH{\leq}5.8$, Normal, n = 13) and DFD (pH>5.8, n = 11) groups. Normal pH group had significantly (p<0.05) higher carcass weight, marbling score and backfat thickness than those for high pH group, while fat color and lean meat color were inverse. In principle component analysis for co-ordinates of DFD and normal meats, fat color, lean meat color, texture, time to pH 6.2 and pH at 24 h postmortem were associated with the positive range of the first factor (67.5%) while backfat thickness marbling score and temperature at 24 h were placed in negative values. The rate constant of decline in pH (pH k) did not differ between the two groups, implying that initial pH (i.e., pH at slaughtering) differed between two groups. Contour mapping of pH k between pH at 1 and 24 h postmortem indicated that high pH k was related to lower pHs at 1 and 24 h postmortem. This suggested that the high pH cattles (i.e., DFD cattle) resulted from their own potential. Although the time to reach pH 6.2 was significantly (p<0.05) shorter for normal meat (i.e., 3.2 h) than that for DFD one (i.e., 19.8 h), there were no significantly differences in both WB-shear force and sensory attributes. Given that the experimental animals were sampled from a similar group, which implies a similar myoglobin pigment content, the current data suggested that pre- and post-slaughter animal handling likely had a significant effect on ultimate pH and consequently meat color of Hanwoo longissimus muscle, and also small animals with lower marbling score and backfat thickness had a higher risk for DFD meat.

Sire-maternal Grandsire Model and Sire Model in Estimation of Genetic Parameters for Average Daily Gain and Carcass Traits of Japanese Black Cattle

  • The objectives of this study were to estimate genetic parameters and sire breeding values for average daily gain (ADG) and carcass traits using sire-maternal grandsire model with REML approach, sire model with REML approach, sire model without relationships among sires and with REML and ANOVA approach, and to investigate advantages and disadvantages of these methods. Data were collected from 42,325 Japanese Black steers and heifers finished and slaughtered from 1991 to 2004. Traits analyzed in this study were average daily gain (ADG) during the fattening period, live weight at slaughter (LW), cold carcass weight (CW), estimated lean yield percentage (LYE), longissimus muscle area (LMA), subcutaneous fat thickness (SFT), rib thickness (RT), and marbling score (BMS). Bivariate analyses were also performed to obtain genetic and phenotypic correlation coefficients among traits. Estimated breeding values were obtained from each model, and simple and rank correlations among breeding values from each model were calculated. Estimates of heritability using the four models ranged from 0.25 to 0.31 in ADG, from 0.21 to 0.24 in LW, from 0.23 to 0.27 in CW, from 0.10 to 0.17 in DP, from 0.40 to 0.42 in LYE, from 0.19 to 0.31 in LMA, from 0.31 to 0.34 in SFT, from 0.26 to 0.33 in RT, and from 0.18 to 0.44 in BMS. The differences in heritability estimates using the four models seemed to be feasible in ADG, CW, DP, LMA, RT, and BMS. Genetic correlation coefficients of ADG with CW, SFT, RT and BMS were moderate to high and positive while the genetic correlation coefficients between ADG and LYE was low and negative. Correlation coefficients of BMS with SFT were negligible for both genetic and phenotypic correlations. The correlations of estimates evaluated from sire models with those from sire-maternal grandsire model were not large enough to convincing that breeding values using a sire model were corresponding to those using a sire-maternal grand sire model. If information of maternal grand sires are not available, the sire model with incomplete pedigree information included only sire of sire (Model 2) is optimal among the sire models evaluated in this study.
