Effect of salt concentration of brined Chinese cabbage on the Kimchi fermentation was investigated. The salt concentration range was 1-5% and chemical characteristics of pH, acidity and ascorbic acid were measured during fermentation at $25^{\circ}C$. Fermentation rate was also calculated from the $CO_2$ production. It was found that the higher salt concentration caused a significant decrease in the maximum value of fermentation rate and pH reduction. Ascorbic acid content was rapidly decreased initially, followed by increase to maximum and slowely decreased thereafter. This change was more apparent at higher salt concentration.
The purpose of this study was to find the relationship between Achilles tendon angle, angular velocity from 2D cinematography utilized to easily analyze the functions of shoes, ankle joint moment, knee joint moment, and hip joint moment from 3D cinematography utilized to predict the injury. Also, this study was to provide the optimal standard to analyze the injury related to the shoes. Subjects in this study were 30 university male students and 18 conditions (2 types of running speed, 3 of midsole hardness, 3 of midsole height) were measured using cinematography and force platform. The results were as following. 1) Hip joint abduction moment was effected by many variables such as running speed, midsole height, maximum achilles tendon angle, ground reaction force. 2) Knee joint rotational moment in running was approximately 1/10 - 1/4 times of the injury critical value and eversion moment was approximately 1/4 - 1/2 times of the injury critical value. 3) Ankle joint pronation moment in running was 1/3 - 1/2 times of the injury critical value. 4) Knee joint rotational moment was found to be irrelevant with maximum achilles tendon angle or angular velocity. 5) Pronation from running was thought to be relevant to rather eversion moment activity than rotational moment activity of knee joint. 6) Plantar flexion abductor of ankle showed significant relationship with the ground reaction force variable. 7) When the loading rate for ground reaction force in passive region increased, extensor tended to be exposed to the injury. Main variables in biomechanical analysis of shoes were impact absorption and pronation. Among these variables, pronation factor was reported to be relevant with knee injury from long duration exercise. Achilles tendon angle factor was utilized frequently to evaluate this. However, as the results of this study showed, the relationship between these variables and injury relating variable of knee moment was so important. Studies without consideration on this finding should be reconsidered and reconfirmed.

This descriptive longitudinal study was done to identify the ethical value of nursing students and to compare the differences of results with one year interval. The data were collected twice in 1999 and in 2000, from the 82 first year and 64 second year nursing students who have been attending at C college in Chonnam province. The analysis of data was done by frequency, mean, paired t-test, t-test, and ANOVA. The results of data were summarized as follows: 1. The total ethical value score of the first year students was 3.48 (maximum : 5) and, one year later, the score was lowered to 3.26. Especially, the degree of their ethical value was significantly decreased in the sub-areas of human-life and nurse-nursing task. 2. The total ethical value score of the second year students was 3.24 and, one year later, the score was increased to 3.39. The degree of their ethical value was significantly increased in the subarea of nurse- client relationship. 3. In the subarea of human-life, the mean score of ethical value was 3.25 and, one year later, the score was 2.95. The degree of ethical value was significantly lowered among the first year students with an utilitarian position. 4. In the subarea of nurse-client relationship, the mean score of ethical value was 3.39 and, one year later, the score was 3.67. The degree of ethical value was significantly increased among the second year students with a deontological position. 5. In the subarea of nurse-nursing task relationship, the mean score of ethical value was 3.38 and, one year later, the mean score was 3.08. The degree of ethical value was significantly decreased among the first year students. 6. In the subarea of nurse-collaboration relationship, the mean score of ethical value was 3.96 and, one year later, the mean score was 4.08 in second year students. There was no statistically significant difference. 7. The ethical values of nursing students were significantly different depending on their religion, length of study, attitude toward nursing and the experience of dying during their clinical practice.
Objective: The purpose of this study was to quantitatively evaluate the Wii Balance Board (WBB)-based jump performance for the elderly and to confirm the difference in jump performance according to age. Design: Cross-sectional study. Methods: 40 young adults (aged 22.5±2.2 years) and 33 elderly (aged 75.1±5.2 years) without orthopedics disease participated in this study. Standing on the WBB then, with the signal "start," jump vertically to the maximum height at which you can jump, land on the force plate after jump and keep it standing on both feet. All subjects were required to practice the jump sufficiently before starting the measurement, each measuring three times, and the mean values were used. A one-minute break was provided between each trial. Evaluators waited within 1meter for every test to prepare for fall. Results: The vertical ground reaction force of elderly and young adults when jumping using WBB showed a significant difference (p<0.05) and demonstrated discriminant validity. Between two groups, there were significant differences in overall jump time (p<0.05), maximum value (p<0.05), minimum value (p<0.05), center of pressure (COP) pathlength (p<0.05), and flight time p<0.05). Conclusions: This study found that performing the vertical jump, the elderly showed longer jump time, lower vertical ground reaction force, COP pathlength and shorter flight phase than healthy young adults using WBB and demonstrated that as a measurement tool, WBB discriminated vertical jump performance between elderly and young adults.
Holding the longest observation data from April 1904, Busan is one of the essential points to understand the climate variability of the Korean Peninsula without missing data since implementing the modern weather observation of the South Korea. Busan is featured by coastal areas and affected by various climate factors and fluctuations. This study aims to investigate climate variability and changes in climatic variables, extremes, and several weather indexes. The statistically significant change points in daily mean rainfall intensity and temperature were found in 1964 and 1965. Based on the change point detection, 117 years were divided into two periods for daily mean rainfall intensity and temperature, respectively. In the long-term temperature analysis of Busan, the increasing trend of the daily maximum temperature during the period of 1965~2021 was larger than the daily mean temperature and the daily minimum temperature. Applying Ensemble Empirical Mode Decomposition, daily maximum temperature is largely affected by the decadal variability compared to the daily mean and minimum temperature. In addition, the trend of daily precipitation intensity from 1964~2021 shows a value of about 0.50 mm day-1, suggesting that the rainfall intensity has increased compared to the preceding period. The results in extremes analysis demonstrate that return values of both extreme temperatures and precipitation show higher values in the latter than in the former period, indicating that the intensity of the current extreme phenomenon increases. For Wet-Bulb Globe Temperature (effective humidity), increasing (decreasing) trend is significant in Busan with the second (third)-largest change among four stations.
Pressure ulcers are serious complications of tissue damage that can develop in patients with diminished pain sensation and diminished mobility. Pressure ulcers can result in irreversible tissue damage caused by ischemia resulting from external loading. There are many intrinsic and extrinsic contributors to the problem, including interface tissue pressure, shear, temperature, moisture, hygiene, nutrition, tissue tolerance, sensory and motor dysfunction, disease and infection, posture, and body support systems. The purposes of this study were to investigate the relationship between buttock interface pressure and seating position, wheelchair propulsion speed. Seated-interface pressure was measured using the Force Sensing Array pressure mapping system. Twenty subjects propelled wheelchair handrim on a motor-driven treadmill at different velocities (40, 60, 80 m/min) and seating position used recline ($100^{\circ}$, $110^{\circ}$, $120^{\circ}$) with a wheelchair simulator. Interface pressure consists of average (mean of the pressure sensor values) and maximum pressure (highest individual sensor value). The results of this study were as follows; No significant correlation in maximum/average pressure was found between a static position and a 40 m/min wheelchair propulsion (p>.05). However, a significant increase in maximum/average pressure were identified between conditions of a static position and 60 m/min, and 80 m/min wheelchair propulsion (p<.05). No significant correlation in maximum pressure were found between a $90^{\circ}$ recline (neutral position) and a $100^{\circ}$, $110^{\circ}$, or $120^{\circ}$ recline of the wheelchair back (p>.05). No significant difference in average pressure was found between conditions of a $90^{\circ}$ recline and both a $100^{\circ}$ and $110^{\circ}$ recline of wheelchair back. However, a significant reduction in average pressure was identified between conditions of a $90^{\circ}$ and $120^{\circ}$ recline of wheelchair back (p<.05). This study has shown some interesting results that reclining the seat by $120^{\circ}$ reduced average interface pressure, including the reduction or prevention in edema. And interface pressure was greater during dynamic wheelchair propulsion compared with static seating. Therefore, the optimal seating position and seating system ought to provide postural control and pressure relief. We need an education on optimal seating position and a suitable propulsion speeds for wheelchair users.

This study was conducted to investigate the effects of paprika juice on the quality characteristics of Jeung-Pyun (fermented and steamed rice cake). Jeung-Pyun was prepared with four different levels of orange paprika juice (0%, 10%, 25% and 50% replacement of water). The proximate composition analysis showed that moisture contents of Jeung-Pyun were 48.72∼49.36%, and crude protein, lipid and ash contents were 2.94∼3.13%,0.46∼0.63% and 0.60∼0.65%, respectively. The pH of Jeung-Pyun batters was decreased from 4.74∼4.83 to 4.27∼4.38 during 4 hours of fermentation at 35$^{\circ}C$. The maximum expanded volume was observed in control group, followed by 10% group, 25% group and 50% group and the volume expansion was decreased with the increased amount of paprika juice. The "L" value (lightness) was the highest in control group and decreased with paprika juice addition, while the "b" value (yellowness) was increased as the amount of paprika juice was increased. Rheology test showed that there were no significant differences in hardness an cohesiveness among four groups. Springiness and gumminess were the lowest in control group and increased with the increased amount of paprika juice. Results of sensory evaluation showed that there were no significant differences in scores of cell uniformity, sweetness, moistness and overall desirability between control and 10% group. Therefore. Jeung-Pyun prepared with 10% paprika juice was evaluated as the most acceptable one among test groups when compared to control.
The aim of this study was to observe the relationships between the amount of menstrual blood loss (MBL) and age, parity, number of pregnancy and induced abortion, and the iron nutriture in married Korean women. Fifty-one healthy women aged 26 to 48 years were tested for their MBL, hemoglobin(Hb) concentration, hematocrit (Hct) value, mean corpuscular hemoglobin concentration (MCHC), serum iron and ferritin concentrations. The results of this study are summarized as follows : 1) The mean value and standard error of mean of the MBL was $32.0{\pm}3.94ml$, and the range of MBL was 3.8-127.2 ml for total subjects. Maximum number (23.5%) of the subjects fell in the group with MBL of 10-l9ml, while 17.7% showed MBL above 50m1. 2) There were no statistically significant differences on the mean amount of MBL between the age groups 25-48 years. 3) The mean amount of MBL in 1-2 and 3-4 para groups were 28.5 and 36.1 ml, respectively, but the difference between two groups was not significant 4) It was observed that the mean amount of MBL was gradually decreased as the number of pregnancy and induced abortion were increased, but the significance was not observed. 5) The mean values of Hb concentration, MCHC and serum iron concentration were slightly decreased in subjects with MBL of more than 50ml but the statistical significance was not observed. The mean of Hct value was not influenced by the amount of MBL. While serum ferritin concentrations were markedly decreased and the prevalence rate of anemia was markedly increased as the amount of MBL was increased. There was significant difference (P<0.05) between the mean amount of MBL with respect to the serum ferritin concentration.

The purpose of this study was to provide a 360-degree video on intensive care unit admission guidance to family members admitted to the intensive care unit, and then to identify anxiety, safety perception, and satisfaction. This study was a single-group pre-post design, and the data collection period was from October 1, 2020 to August 30, 2021. The subjects of this study were 19 people who applied 360 degree hospitalization guide video. For data analysis, SPSS WIN 24.0 program was used, and real number, percentage, mean, standard deviation, minimum value, maximum value, and Wilcoxon signed rank test were used. The subjects' anxiety before intervention was an average score of 6.21±2.30 and the anxiety after intervention was an average score of 3.95±2.46, which was statistically significant (z=4.13, p<.001). The safety consciousness of the subjects before the intervention was an average of 4.08±0.39 and the safety consciousness after the intervention was an average of 4.54±0.48, which was statistically significant (z=5.00, p=.001). The highest level of satisfaction with the 360-degree hospitalization guidance image of the subjects was 4.58±0.51 and the lowest was 4.16±0.96. In this study, when 360-degree hospitalization guide video was applied, there was a difference in anxiety and safety perception, and satisfaction was high. Based on the research results, various programs for guardian education can be developed and utilized in the future.
Fresh ginseng of same grade was stored under the 4$\pm$1$^{\circ}C$ and 87~92% RH for 10 weeks. During the storage, an aliquot amount of the ginseng was drawn, freeze dried and chemical constituents and physicochemical parameters were measured. After 10 weeks of storage drying rate and shrinkage of ginseng were 1520% and 9.04%, respectively, mold growth was seen at week 5 and observed for 51.2% of the ginseng week 10. Amylase activity level was elevated at the early stage of storage and decreased to 5% of initial value at week 5. At week 5, the elevated amylase activity was inconcomitant with the appearance of the mold growth. Crude protein contents were increased and decreased, respectively 5 week post storage. No significant changes in crude fat, crude fiber, ash, total sugar, n-butanol extract and ginsenoside were observed. The content of water-extractable substance showed maximum at week 7 to 8. The value of pH was slightly elevated and reducing sugar was increased during the storage. Key words Ginseng storage, physicochemical properties, drying rate, shrinkage, amylase activity.
