  • This study were carried out for investigation of microbiological characteristics, and establishment of shelf-life of Korean vacuum packaged chilled pork hams for export. The samples were stored at 0$\pm$1$^{\circ}C$ (A and B companies) and 2$\times$1$^{\circ}C$ (C and D companies). In the analysis of microorganisms, the numbers of total plate counts were 3.72$\times$103~1.15$\times$104CFU / $\textrm{cm}^2$ at initial time. After 30 days, total plate counts were over 1$\times$106CFU / $\textrm{cm}^2$ in samples. Anaerobic counts were over 1$\times$106CFU / $\textrm{cm}^2$ in samples excluded one of A company after 30 days. Using regression equations, the estimation of shelf life were made : 32~37 days in storing at $0^{\circ}C$ and 27 days at 2$^{\circ}C$. In this case, the determination coefficients were 0.8624~0.9515 and 0.8236~0.8565, respectively.

  • The objective of this study was to investigate the color development and shelf-life effect of low-fat sausages (LFS) during refrigerated storage according to the additions of sodium lactate (SL), chitosan, and lac pigment. The LFS samples had $73{\sim}76%$ moisture, $3{\sim}4%$ fat, and $13{\sim}16%$ protein with a pH range of 6.4-6.6. The addition of chitosan ($MW\;=\;30{\sim}40\;kDa$) to LFS increased most textural properties. Hunter a (redness) values were increased by the addition of 0.05% lac pigment. The microbial growth of Listeria monocytogenes increased with increasing storage time. The addition of 2% SL and 0.3% chitosan with MW higher than $30{\sim}40\;kDa$ effectively inhibited the growth of L. monocytogenes. The microbial growth of L. monocytogenes was further reduced with increasing chitosan MW. These results indicated that the combination of SL with chitosans (MW > 30 kDa, 0.3%) and lac pigment (0.05%) improved shelf-life and color development in LFS during refrigerated storage.

  • The purpose of this study was to investigate the effects of the addition of various amounts (0, 1, 3, 5%) of Mokdanpi(P. suffruticosa) powder on the shelf life and the physicochemical, sensory characteristics of rice cakes and noodles to examine the possibility of using Mokdanpi as a natural food preservative for food products. The decrease in the moisture content of rice cake and noodle samples during storage was much less in Mokdanpi-added groups than the control group. The color L value increased and a and b values decreased in the rice cake samples, and color L value, b value decreased and a value increased in the noodle samples during storage. The microbial growth was less in Mokdanpi-added groups than the control group. In sensory evaluation, there were no significant differences among the control and 1, 3%-added groups in terms of color, flavor, taste, moistness, cohesiveness and overall quality; however, 5%-added groups received significantly less score than others (p<0.05). As the storage time increased, the sensory scores decreased significantly in the control and 1 %-added groups of both rice cakes and noodles (p<0.05), but no changes were observed in 3, 5%-added samples. The results suggested that Mokdanpi is effective in increasing the shelf life and inhibiting the staling of rice cakes and noodles.

  • Recently, in distribution market, demand for electronic shelf label system is increasing gradually to provide the accurate price immediately and detailed product information to consumers and reduce operation costs. Most of electronic shelf label system companies develop the full-graphic display device to display a wide variety of product information as well as the exact price. Our system had introduced Go-Back-N retransmission method in the early. However, we encountered performance problems that it delayed updating of the electronic shelf label system and exhausted the battery life time. Proposed adaptive image retransmission technique based on the selective scheme is that tags of electronic shelf label system recognize idle time of transmission cycle and require partial image retransmission to sever by itself. As a result, it can acquire much more opportunities of partial image retransmission within the same period and increase reception rate of full image for each tags. The experimental result shows that adaptive image retransmission technique's reception rate of full image for each tags is approximately 4% higher than existing previous works. And total battery life time increases 30 hours because tag reduce wake-up time as it receive only lost data instead of whole data.

  • The purpose of this study was to examine the food labelling system and its regulations based on Food Hygine Law in Korea and to compare them with those of USA and JAPAN. This study was carried out to suggest desirable direction for improvement of food labelling system in Korea by reviewing literatures and regulations related to the subject of this study. The results are as follows: 1. The indication of shelf-life in Korean lavelling system appeared ineffective from the point of view of consumer protection and resource preservation compared with dual system of indicating shelf-life in USA and Japan. 2. The standard of labelling general food in Korea does not give sufficient nutritive information to the consumers, compared with that in USA and Japan. 3. Only five ingredients including additives are to be listed on the food label in Korea whereas all the ingredients and additives are in the USA and Japan. 4. The way of Listing food additives on food label is neither specifically required nor standardized in Korea and, food additives are classified into only 7 groups in Korea while 18 in the USA. Based on the above results of literature review, the followings are suggested to improve food labelling system in Korea. 1. Indication of shelf-life should have dual system, in which perishable food should not be permitted to be sold after its shelf-life while the processed food or dried food to be preserved for a long time should be indicated with more or less flexible term about shelf-life. 2. Standard of labelling general food should include calorie, fat, protein, and the content of major vitamins and minerals. 3. All ingredients and their contents, including food additives should be listed on the food labels. 4. The standard of indication of food additives in Korea should include the name, usage and content of all additives used in foods.

  • We conducted a study to select a suitable natural antioxidant from tocopherol, rosemary extract, and green tea extract to be added to commercially-available palm oil to extend the shelf life of non-dairy cream. The green tea extract (400 ppm added) was the most effective of the 3 antioxidants added to the palm oil, increasing OSI time by a factor of 2.3. By examining the correlation coefficients among parameters for storage period, the sensory score indicated that the non-dairy cream was suitable. The shelf life of the TE (green tea extract, 400 ppm) and TEA (TE plus 0.002% ascorbic acid) oils was extended to 24% and 51% more than that of the control at $25^{\circ}C$, respectively. At $20^{\circ}C$, the shelf life of the TE oil was 2.5 months and that of the TEA oil was 5.5 months, increases of 28% and 62.5%, respectively, over the control.

  • The cartridges used for illuminating a desired point or area are virtually limited in tests and evaluations because of limitations, such as noise during launch, the possibility of fires caused by illuminant charge, and the annual testable quantity. Therefore, to solve these problems, a ground fixed test, which replaces the firing test, or an evaluation method to perform limited tests, can be applied more efficiently. In this paper, the results of an 81mm illuminating cartridge, KM series performed in 2019 were analyzed comprehensively to identify the trends in reliability and quality characteristics and to estimate the shelf life. The shelf life was estimated to be at least 10 years based on the time when the lower confidence level reached 80% at a confidence level of 90%. Considering only major defects, the shelf life can be estimated to be approximately 23 years. On the other hand, the shelf life was estimated to be approximately 11 to 15 years and 25 to 28 years according to the effective illuminating time. Finally, an assessment plan of illuminating cartridges for the mortars was also presented as an improvement plan for an assessment method in the future.

  • Objectives: Chitosan has been widely investigated and used. However, the literature does not refer to the shelf life of this solution. This study evaluated, through the colorimetric titration technique and an analysis of dentin micro-hardness, the shelf life of 0.2% chitosan solution. Materials and Methods: Thirty human canines were sectioned, and specimens were obtained from the second and third slices, from cemento-enamel junction to the apex. A 0.2% chitosan solution was prepared and distributed in 3 identical glass bottles (v1, v2, and v3) and 3 plastic bottles (p1, p2, and p3). At 0, 7, 15, 30, 45, 60, 90, 120, 150, and 180 days, the specimens were immersed in each solution for 5 minutes (n = 3 each). The chelating effect of the solution was assessed by micro-hardness and colorimetric analysis of the dentin specimens. 17% EDTA and distilled water were used as controls. Data were analyzed statistically by two-way and Tukey-Kramer multiple comparison (${\alpha}=0.05$). Results: There was no statistically significant difference among the solutions with respect to the study time (p = 0.113) and micro-hardness/time interaction (p = 0.329). Chitosan solutions and EDTA reduced the micro-hardness in a similar manner and differed significantly from the control group (p < 0.001). Chitosan solutions chelated calcium ions throughout the entire experiment. Conclusions: Regardless of the storage form, chitosan demonstrates a chelating property for a minimum period of 6 months.
