Effects of refrigeration temperature and its fluctuation range on the growth of psychrotrophic microorganisms and the quality of refrigerated foods such as apple, fish and oyster were evaluated to find optimum storage conditions for a domestic refrigerator. Refrigeration temperature was $2^{\circ}C$ or $4^{\circ}C$, and fluctuation ranges were varied: ${\pm}0.3,\;{\pm}1.0,\;{\pm}1.2,\;or\;{\pm}4.0^{\circ}C$. Changes in hardness of apples stored at $2{\pm}0.3^{\circ}C$ were much slower than those of apples stored at $4{\pm}1.2^{\circ}C$. Freshness of fish and oyster also lasted much longer at low temperature such as $2{\pm}0.3^{\circ}C$. The growth of Listeria monocytogenes inoculated on sliced ham was inhibited for 1 month at $2{\pm}0.3^{\circ}C$, but the cells at $4{\pm}1.2^{\circ}C$ began to grows as time elapsed. Therefore, it was expected that shelf-life of certain food stored in a domestic refrigerator could be extended by lowering temperature to $2^{\circ}C$ and by reducing fluctuation range of refrigerator.
The raw milk produced in Korea was heated at $70^{\circ}C$, $75^{\circ}C$, $80^{\circ}C$, $85^{\circ}C$, $90^{\circ}C$, $95^{\circ}C$ and $100^{\circ}C/15sec.$. The changes in chemical composition and microbiological aspects of the milk were summarized as following results: 1. In high temperature pasteurized milks as the heat treatment increased, pH value decreased but protein, fat, lactose and ash did not show significant changes in their contents while casein nitrogen and non-protein nitrogen increased but non-casein nitrogen and filterable nitrogen decreased in their contents. 2. Calcium content of raw milk decreased from 119.79mg/100g to 111.86mg/100g at $75^{\circ}C$ and to 106.24mg/100g at $100^{\circ}C$. Vitamin C decreased from $1.37mg/100m{\ell}$ of raw milk to $1.15mg/100m{\ell}$ at $75^{\circ}C$ and $0.94mg/100m{\ell}$ at $100^{\circ}C$. Artificial digestibility increased as the heat treatment got higher. 3. Viable bacteria counts decreased from $9.0{\times}10^3/m{\ell}$ at $75^{\circ}C$ to $3.4{\times}10^2/m{\ell}$ at $100^{\circ}C$. Coliforms were not found at $70^{\circ}C$ and thermoduric bacteria, thermophiles, psychrotrophic bacteria, mould and yeast decreased rapidly as the heat treatment increased. 4. The results of Keeping quality test for high temperature pasteurized milk showed that the' milks preserved at $25^{\circ}C$ and $37^{\circ}C$ were clotted just after 1 day but the milk preserved at $4^{\circ}C$ showed good shelf life which did not have any deterioration in titratable acidity, microorganisms and com positions.
The analysis of wide-angle seismic reflection and refraction data plays an important role in lithospheric-scale crustal structure study. However, it is extremely difficult to develop an appropriate velocity structure model directly from the observed data, and we have to improve the structure model step by step, because the crustal structure analysis is an intrinsically non-linear problem. There are several subjective processes in wide-angle crustal structure modelling, such as phase identification and trial-and-error forward modelling. Because these subjective processes in wide-angle data analysis reduce the uniqueness and credibility of the resultant models, it is important to reduce subjectivity in the analysis procedure. From this point of view, we describe two software tools, PASTEUP and MODELING, to be used for developing crustal structure models. PASTEUP is an interactive application that facilitates the plotting of record sections, analysis of wide-angle seismic data, and picking of phases. PASTEUP is equipped with various filters and analysis functions to enhance signal-to-noise ratio and to help phase identification. MODELING is an interactive application for editing velocity models, and ray-tracing. Synthetic traveltimes computed by the MODELING application can be directly compared with the observed waveforms in the PASTEUP application. This reduces subjectivity in crustal structure modelling because traveltime picking, which is one of the most subjective process in the crustal structure analysis, is not required. MODELING can convert an editable layered structure model into two-way traveltimes which can be compared with time-sections of Multi Channel Seismic (MCS) reflection data. Direct comparison between the structure model of wide-angle data with the reflection data will give the model more credibility. In addition, both PASTEUP and MODELING are efficient tools for handling a large dataset. These software tools help us develop more plausible lithospheric-scale structure models using wide-angle seismic data.

In order to identify the Pb pollution and its sources in continental shelf and slope areas, Pb concentration and Pb isotope ratios ($^{207}Pb/^{206}Pb\;and\;^{208}Pb/^{206}Pb$) were determined far 6 box corer sediments collected from the southern East/japan Sea. Pb concentration, and $^{207}Pb/^{206}Pb\;and\;^{208}Pb/^{206}Pb$ ratios were constant at around $25\pm5 ppm$ and 0.842 and 2.092 from 1700 to 1930 year, respectively and increased steadily up to $40\pm5 ppm$ and 0.867 and 2.123 at the beginning of 1990s', respectively. The increase of concentration and isotope ratios in the labile fraction (leached by 2M HC1+0.5M $HNO_3$) explains their increase in bulk sediments, while Pb concentration and isotope ratios in the residual fraction were nearly constant during 300yrs. Temporal variation of Pb isotope ratios was explained by simple two end-members mixing of geo-genic and anthropogenic sources because isotope ratios and the inverse of Pb concentration showed the good linear relationships. Using Pb isotope ratios, we can constrain two Pb sources in the study area. The one is atmospheric particulates, compared with mean values of isotope ratios in atmospheric particulates collected at Jeju and Oki ;stands, based on the history of Pb emmission in Korea and China, and judged by oceanographic processes capable of homogenizing many sources. The other is local sources related to iron mills, refineries of Pb ore and of petroleum located at the coast of the study area. Isotope ratios of anthropogenic Pb can be estimated using two end-members mixing equation and were $0.879\pm0.005\;and\;2.144\pm0.008$ before 1950s' while they increased up to $0.900\pm0.008\;and\;2.162\pm0.011$ after 1980s', respectively.

This study was carreid out to investigate present comsuming behavior and consumer preference of SEAFOODS as a stuff in KIMCHI making, adopting a questionaire survey for 500 housewives living in Korea except Chejudo Province. Frequency distribution and percentage of preferences were measured. Out of total housewives responded, 65.5% consider, THEY SHOULD EAT KIMCHI DAILY. Which conforms, kimchi is still an important side dish at most of the households On the other hand, some others consider EATING KIMCHI EVERY DAY is not neccesary(6.0%) or dislike it(0.5%). This result might suggest that kimchi may or may not be an essential sidedish for every households in the future. 96.3% of Housewives used fermented salited fish and 45% used seafoods as a staffing in making kimchi. Major reasons for adding seafoods in kimchi were: it improves teste and flavor(79.5%) and nutritional value(54.2%). Reasons for rejecting seafoods as a stuffing in making kimchi were: it worsens taste and flavor(13.5%), hygenic treatments of seafoods are below the necessary level(13.5%) and shelf life become shorter(12.8%), respectively. Among the fermented salted sauces, 84.9% and 69.1% of house wives responded as anchovy and shrimp sause were most favorite(base) material in Kimchi making, respectively. Out of total seafoods utilized in making kimchi,76.4%, 54.7% and 31.4% of housewives responded as oyster, small shrimp and sea-staghorn as the favorite seafoods in Kimchi making(raw material). Majority of housewives responded to develop it's taste and flavor to meet that of international one(86.5%) and that hygienic level(treatments) should be upgraded(50.9%).
The purposes of this study were to develop Hazard Analysis Critical Control Point plan applicable to cook/chilled Pork Bulkogi (broiled sliced pork with sauces) in school foodservice operations and to establish reasonable shelf-life limits by assessing food quality during chilled storage period of 5 days. During the product flow, time-temperature profile was recorded and microbiological analyses including mesophilic and psychrotrophic total plate counts, coliform, and fecal coliform and qualitative analyses of Salmonella and Listeria monocytogenes were done. Chemical analyses (pH, acid value, total volatile basic nitrogen), sensory evaluation, and quantitative analysis of thiamin were conducted for 5 days of chilled storage. The number of mesophiles in raw pork ($4.26{\pm}0.11\;Log\;CFU/g$), seasoning mixture ($5.97{\pm}O.04\;Log\;CFU/g$) and marinated pork ($5.56{\pm}0.21\;Log\;CFU/g$) were below the microbial standards for "requires further cooking" food items. Listeria monocytogenes was detected in seasoning mixture. After heating, the number of mesophiles ($5.17{\pm}0.04\;Log\;CFU/g$) were slightly reduced but it did not meet the microbial guidelines of $5\;Log\;CFU/g$ for "ready-to-eat" foods. No other microbes including pathogens were detected. By reheating the menu item after chilled storage, the number of mesophiles were reduced in every phase of 1st day ($4.62{\pm}0.22\;Log\;CFU/g$), 3rd day ($4.55{\pm}0.20\;Log\;CFU/g$) and 5th day ($4.25{\pm}0.16\;Log\;CFU/g$) of chilled storage, and the number of microbes was below the standard limits for "ready-to-eat" foods. At the fifth day of chilled storage, pH (p<0.05), acid value (p<0.01) and TVBN (p<0.05) showed significant increases. Sensory evaluation results did not show any significant change for 5 days of chilled storage. Thiamin content showed a decrease for 5 days of chilled storage. Consequently, the ideal shelflife recommended for Pork Bulkogi was within 3 days of chilled storage. CCPs for Pork Bulkogi were purchasing and receiving of raw meat and some seasoning ingredients, heating, chilling, chilled storage, reheating, and distribution.
To prolong the shelf-life of domestic peaches, samples were treated with 30 ppm of aqueous chlorine dioxide ($ClO_2$) for 0~15 minute, after which the spoilage rate, changes in physico-chemical and sensory properties of treated samples were investigated. The control showed spoilage at day 4, and then 31.25% of control showed spoilage at day 8. However, samples treated with aqueous $ClO_2$ had no spoilage at day 4. On day 6, only 6.25% of samples treated with aqueous $ClO_2$ for 5 min showed spoilage. After 8 days, no spoilage was observed for samples treated with aqueous $ClO_2$ for 10 and 15 min. The weight change of the control was higher than that of aqueous $ClO_2$ treated samples for 8 days of storage. There were no differences in pH of samples among the treatments, but they were increased by storage time. Although there were no initial differences in the firmness of samples among the treatments, firmness of the control sample was decreased faster than those of the aqueous $ClO_2$ treated samples for 8 days of storage. No significant changes in lightness, redness and yellowness of the samples by aqueous $ClO_2$ treatment were observed during storage. The sensory parameters including taste, flavor, color, texture and overall acceptance at the initial period were not different among treatments. However, all scores of the control were decreased faster than those of aqueous $ClO_2$ treated samples during storage.
This study investigated the microbial contamination levels of raw meats used for short-ripened salami and changes in the microbial and physico-chemical properties of the product during storage at 10 and $25^{\circ}C$ for up to 120 days. The microbial counts of raw meats ranged between 2 and 4 Log CFU/g. Frozen-thawed sow meat showed higher total aerobe and Enterobacteriaceae counts than fresh chilled pork and pork back fat. Staphylococcus aureus was found in all raw materials except fresh chilled pork samples, and Clostridium perfringens was detected in a sample stored for 21 days at $25^{\circ}C$. The counts of total aerobes, lactic acid bacteria and Staphylococcus spp. decreased more rapidly at $25^{\circ}C$ than at $10^{\circ}C$ when the storage time was extended. The growth of Enterobacteriaceae, Pseudomonas spp., Clostridium spp., yeast, and mold were restricted to levels below 2 Log CFU/g during storage. The contents of salt, water, crude protein, crude fat, and ash of salami samples were 3.4, 33.4, 30.8, 32.7, and 4.3%, respectively, which were not affected by storage time or temperature. The pH value of the salami was initially 4.79 and increased to 5.02 and 5.26 after 120 days of storage at 10 and $25^{\circ}C$, respectively, whereas the water activity values decreased from an initial value of 0.91 to 0.90 and 0.88 after 120 days at 10 and $25^{\circ}C$, respectively. The TBA and VBN values increased slowly during storage. The redness value of the salami samples stored at $25^{\circ}C$ decreased more significantly than the samples stored at $10^{\circ}C$. With increased storage time, the values for the rheological characteristics of the salami in terms of hardness, brittleness, elasticity, cohesiveness, gumminess, and adhesiveness tended to decrease more remarkably at $25^{\circ}C$ than at $10^{\circ}C$. Based on sensory evaluation scores, it appears that short-ripened salami is no longer acceptable after 90 days at $10^{\circ}C$ and 30 days at $25^{\circ}C$.
Purpose: Recently, a method of forming a slot in the prosthesis lingual has been introduced to solve the occlusal and aesthetic disadvantages of screw-retained prosthesis in the manufacture of implant-fixed prosthesis and to ensure retrievability in cement retained prostheses. The purpose of this study is to investigate the effect of the internal gap on the removal of the prosthesis in the preparation of cement-retained implant prostheses with lingual slots. Materials and methods: Titanium abutment and internal gap of the zirconia prosthesis to be attached to the upper part were set to 30, 35, and $50{\mu}m$, respectively. Three for each type total 15 were produced for each type. The zirconia prosthesis formed a retrievable cement-type slot with a space of 1 mm at the location where the titanium abutment meets the shelf area. Autocatalytic resin cement was used for bonding of abutment and zirconia prosthesis, and the maximum removal stress value was measured in units of Ncm by using the customized equipment of the cemented specimen. The Kruskal-Wallis test was used to compare the three groups by statistical analysis (${\alpha}=.05$), modified by post hoc test the Mann-Whitney U-test and the Bonferroni correction method were used to compare the two methods (${\alpha}=.017$). Results: There was no statistically significant difference in removal stress between the $30{\mu}m$ group and the $35{\mu}m$ group in the internal gap (P = .032), and there was a significant difference between the $30{\mu}m$ group and the $50{\mu}m$ group, between the $35{\mu}m$ group and the $50{\mu}m$ group (P < .017). Conclusion: Thus, the internal gap of computer-aided design affected the retention between the zirconia prosthesis and the titanium abutment.
The key for cultivating Lentinula edodes in sawdust bags with an appropriate strain and medium is to encourage the mushroom growth, while discouraging contaminating fungi by controlling environment, especially temperature and relative humidity (RH). To investigate the daily and seasonal fluctuation of temperature and RH in two L. edodes cultivation sheds types, HOBO data loggers was set and the collected data were analyzed. In a Taiwan type L. edodes cultivation shed, temperature and humidity changes were divided into five characteristic periods: mycelium growing winter, mushroom fruiting spring, mushroom fruiting early summer, mushroom nonfruiting summer and mushroom fruiting autumn. First, the mycelium growing winter was December to early March with daily mean temperature of $-1{\sim}8^{\circ}C$. Second, mushroom fruiting spring was mid March to late May with daily mean temperature of $8{\sim}21^{\circ}C$ and day-night temperature difference of $15^{\circ}C$. Third, the Mushroom fruiting early summer was early June to early July with 17 to $25^{\circ}C$. Fourth, nonfruiting summer was mid July to mid August with daily mean temperature of $25{\sim}28^{\circ}C$. Lastly, mushroom fruiting autumn was late August to October with daily mean temperature of $10{\sim}23^{\circ}C$ and with cyclic temperature change by $7^{\circ}C$ decrease and 5 increase every 5 to 7 days. In a Chinese type shed, temperature ranged $-1.9{\sim}5.0^{\circ}C$ during winter and $15{\sim}32^{\circ}C$ during June to October. Temperature and relative humidity changed $12{\sim}30^{\circ}C$ and 40~100%, respectively, depending on 0~150 cm shelf heights of by positions in the shed. In conclusion, to grow L. edodes but to discourage contaminating fungi, that is, not to be too high in temperature and RH, the growers changed temperature and RH by adjusting shading, aeration and insulation in the shed.
