To understand the effects of adding different gums (guar, xanthan, and locust bean gums) on naked barley flour (NBF), the rheological and pasting properties of NBF-gum mixtures were measured at different gum concentrations (0, 0.3, and 0.6% w/w). Steady shear rheological properties were determined by rheological parameters for power law and Casson models. All samples showed a clear trend of shear-thinning behavior (n=0.16~0.48) and had a non-Newtonian nature with yield stress. Consistency index, apparent viscosity, and yield stress values increased with an increase in gum concentration. Storage modulus values were more predominant than loss modulus values with all concentrations of gums. There is a more pronounced synergistic effect of elastic properties of NBF in the presence of xanthan gum. Rapid visco analyser pasting properties showed that the addition of gums resulted in a significant increase in the peak, breakdown, setback, and final viscosities, whereas the pasting temperature decreased.
Flow behaviors of sweet potato starch (SPS) pastes (5% w/w) were studied in the presence of various sugars (xylose, glucose, fructose and sucrose) and sugar alcohols (xylitol and sorbitol). The flow properties of SPS-sugar mixtures were determined from the rheological parameters of power law model. The vane method was also employed for determining yield stresses of SPS-sugar mixtures directly under a controlled low shear rate. At $25^{\circ}C$ all the samples showed shear-thinning behaviors ($n=0.35{\sim}0.44$) with yield stress. The consistency index (K) values of SPS-sugar mixtures increased in the following order: sorbitol> xylitol> control (no sugar)> sucrose> fructose> glucose> xylose, showing that the addition of sugar alcohols enhanced the K values. The yield stress values were reduced in the presence of ugars and sugar alcohols and they also increased with an increase in swelling power of starch granules in the SPS-sugar mixture systems.
The effect of acetic acid concentration on the qualities of mayonnaise was studied. The rheological properties, emulsifying stability and color of the mayonnaise were determined by rotary viscometer, rotary shaker and centrifuge, and color and color difference meter, respectively. The rheological behavior of mayonnaise showed plastic behavior with yield stress and that of shear thinning. The yield stress and consistency index increased as the acetic acid concentration increased. The emulsion stability was lowest at 4% acetic acid concentration and highest at 1% acetic acid concentration. With the increase of the acetic acid concentration, lightness increased and yellowness decreased.
The rheological measurement of polypropylene (PP) has been performed using a rheometer, an intrinsic viscometer, and an MI machine to predict the molecular weight and the molecular weight distribution. Also, GPC has been used for the determination of the molecular structure. The distribution broadness parameter using modified Carreau model has been used to make the correlation between the rheological parameter and the molecular structure instead of the rheological PI (polydispersity index) which is determined from the cross of modulus from the dynamic oscillatory measurement. Even though the rheological PI is useful to determine the molecular weight distribution of the PP using controlled rheology, which has narrow and uniform molecular weight distribution, but not suitable to determine the molecular weight distribution of the PP made from direct polymerization which has broad and various molecular weight distribution. However the distribution broadness parameter which determined from the index of the shear thinning of the PP melt well predicts the molecular weight distribution of PP.
Flow and dynamic rheological properties of thickened waters prepared with commercial food thickeners were investigated at different pH levels (3, 4, 5, 6, and 7). The commercial xanthan gum (XG)-based thickener (thickener A) and starch-based thickener (thickener B), which have been commonly used in a domestic hospital and nursing home for patients with swallowing difficulty (dysphagia) in Korea, were selected in this study. Thickened samples with both thickeners at different pH levels showed high shear-thinning flow behaviors (n=0.08~0.22). Thickened samples at pH 3 showed higher n values and lower consistency index (K) values when compared to those at other pH levels. The K values of thickener A increased with an increase in pH level, while the n values decreased, showing that the flow properties greatly depended on pH. There were no noticeable changes in the K values of thickener B between pH 4 and 7. At pH 3, the thickened water with thickener A showed a higher storage modulus (G') value, while that with thickener B showed a lower G'. These rheological parameters exhibited differences in rheological behaviors between XG-based and starch-based thickeners, indicating that the rheological properties of thickened waters appear to be greatly influenced by the acidic condition and the type of food thickener. Appropriately selecting a commercial food thickener seems to be greatly important for the preparation of thickened acidic fluids with desirable rheological properties for safe swallowing.
Flow and dynamic rheological properties of hot thickened soups for consumption by the elderly people with swallowing difficulty (dysphagia) were investigated at a serving temperature of $60^{\circ}C$. In this study, sea mustard soup (SMS) and dried pollock soup (DPS), which have been widely known as favorable hot soups provided in a domestic hospitals and nursing homes for dysphagic patients, were thickened with four commercial xanthan gum (XG)-based food thickeners (coded A~D) marketed in Korea. Thickened soups prepared with different thickeners showed high shear-thinning flow behaviors (n=0.15~0.21). Apparent viscosity (${\eta}_{a,50}$), consistency index (K), storage modulus (G'), and loss modulus (G") demonstrated differences in rheological behaviors between the XG-based thickeners. The magnitudes of (G') were much higher than those of (G") over the entire range of frequency (${\omega}$) with the high dependence on ${\omega}$, showing the rheological behavior similar to a weak gel. In general, all rheological parameter values of thickened DPS samples were higher when compared to the thickened SMS samples. These results indicate that flow and dynamic rheological properties of hot thickened soups containing commercial XG-based thickeners are strongly dependent on the type of thickener and soup.

The objective of the present study was to investigate the rheological properties of potato starch cross-linked with different concentrations (0, 0.125, 0.25, and 0.5%, w/v) of cross-linking agents (10 g of adipic acid and 40 g of acetic anhydride). Cross-linked potato starch dispersions showed shear-thinning behaviors (n=0.43~0.63) at $25^{\circ}C$. Apparent viscosity (${\eta}_{a,100}$), consistency index (K), and yield stress (${\sigma}_{oc}$) significantly increased with an increase in the concentrations of cross-linking agents from 0.125 to 0.5% (w/v). Storage modulus (G') and loss modulus (G'') increased, whereas complex viscosity (${\eta}^*$) was reduced with increasing frequency (${\omega}$) from 0.63 to 62.8 rad/s. Magnitudes of G' and G'' for cross-linked potato starch were significantly increased with an elevation in the concentrations of cross-linking agents. G' values of cross-linked potato starches were significantly higher than G'', indicating that the starches had more elastic properties than viscous properties. Cox-Merz rule was not applicable to potato starch dispersions.

The effects of seven commercial gums (xanthan gum, guar gum, pectin, gum arabic, gellan, locust bean gum, and sodium alginate) at different concentrations (0, 0.3, and 0.6%) on flow properties of sweet potato starch (SPS) pastes were investigated. Flow behavior characteristics were adequately described by power law flow model, and yield stress was also measured by vane method. SPS-gum mixtures (5% w/w) at $25^{\circ}C$ were found to have high shear-thinning flow behavior with yield stress, and their consistency index (K) and apparent viscosity ($\eta_{a,100}$) increased with elevated gum concentration, except for pectin and sodium alginate. Vane yield stress ($\sigma_o$) value of SPS-pectin mixture was lower when compared to other mixtures while that of SPS-gellan mixture was much higher. Most of the gums, except for pectin, gum arabic, and sodium alginate, showed a synergistic effect on the elastic properties of SPS-gum mixtures. In general, the flow properties of SPS-gum mixtures appeared to be strongly influenced by the addition of gum, and dependent on the type and concentration of gum.

Thermoplastic starch (TPS) was prepared by mixing starch with glycerol as a plasticizer. The glycerol content ranged from 20 to 35 wt. % and TPS was prepared in a twin screw extruder. The shear viscosity, thermal and mechanical properties of the TPS were investigated. The viscosity of TPS exhibited typical shear thinning behavior: decreasing viscosity with increasing shear rate. The power index, n, increased with increasing glycerol content. This is because as the content of glycerol, a Newtonian fluid, increases, the viscosity behavior of the TPS becomes closer to that of a Newtonian fluid. The thermal behavior of TPS showed that starch and glycerol are miscible. In addition, when TPS was aged for more than one day at room temperature, TPS showed a partially miscible phase structure. The moisture absorbed into the TPS was assumed to change the phase behavior. The mechanical properties of TPS were found to be strongly dependent on the content of the plasticizer. Both the toughness and stiffness increased with increasing plasticizer content. DSC showed that this unusual result was due to the combined effect of humidity and the high amylose content in starch.
Emulsions were prepared with the inversion emulsification method which adopted the agent-in-oil method-dissolving the mixed surfactants composed of the glycerin monostearate, polyoxyethylene(100) monostearate, and polyoxyethylene(20) sorbitan monostearate into mixtures of liquid paraffin and beeswax, and adding the aqueous solution of propylene glycol, gradually-and then their phases and viscosities behaviors in the emulsifying process were investigated. The fine and homogeneous o/w emulsions were formed in the HLB region (HLB 10.1~12.3), showing liquid crystalline phase and white gel phase in the emulsifying process. The phase inversion steps in the emulsifying process appeared as follows, i.e., oil continuous phase${\rightarrow}$liquid crystalline phase${\rightarrow}$white gel phase${\rightarrow}$o/w emulsion. Shear rate-shear stress curves of the prepared emulsions had the yield values which pointed out the existence of inner structure between emulsion particles, and the hysteresis loop which showed that the inner structure wasbroken irreversibly by the shear. The area of hystersis loop, an index of breakdown of inner structure, was increased with the decreasing of the HLB value of emulsifier, Shear time-shear stress curves showed the time dependence of plastic viscosity, and the relaxation time in time thinning behavior(${\lambda}$) indicated that the stability of emulsions prepared with the inversion emulsification method was decreased with the increasing of HLB values of emulsifier and was higher than that of emulsions prepared by homomixer.
