Bacteriocidal Effect of Calcium oxide (CaO, Scallop-shell Powder) on Natural Microflora and Pathogenic Bacteria in Sesame Leaf (Calcium oxide(CaO)를 활용한 깻잎 중 존재하는 자연균총 및 주요 식중독균의 제어)

  • Bacteriocidal effect of calcium oxide (CaO, scallop shell powder) on reduction of microorganism in sesame leaf was evaluated through comparison with chemical sanitizers such as chlorine, ethanol, and hydrogen peroxide. CaO showed 0.55-1.49, 0.85-2.56, 0.16-1.08, 0.30-1.14, and $0.19-1.07\;log_{10}$ CFU/g reductions of total aerobic bacteria, total coliforms, Escherichia coli, Listeria monocytogenes, and Salmonella typhimurium respectively, indicating possible use of CaO as effective natural sanitizer.

In Vitro Antioxidative Activity and Polyphenol and Tocopherol Contents of Bugak with Lotus Root, Dried Laver, or Perilla Leaf (연근, 김, 깻잎 부각의 산화방지 활성, 폴리페놀 화합물과 토코페롤 함량)

  • In vitro antioxidative activities and antioxidants of the lotus root, dried laver, and perilla leaf bugak, Korean traditional fried cuisine, were evaluated. The bugak was prepared with fermented glutinous rice batter and unroasted sesame oil for use in the pan-frying. The perilla leaf bugak showed the highest radical scavenging activity and reducing power, with the lowest in the lotus root bugak. The antioxidative activity of the blanched lotus root was lower than the dried laver or the perilla leaf. Polyphenol content was higher in the perilla leaf bugak than the lotus root or the dried laver bugak, and tocopherols were mainly derived from frying oil. The antioxidative activity of bugak was correlated well with polyphenol contents, but there was no correlation between tocopherol contents and the antioxidative activity.

A survey on the actual state in kimchi in Kyung-nam(I) - The study of the preference of kimchi and actual amounts of kimchi intake - (경남지역 주민의 김치 섭취 실태조사(I) - 김치에 대한 선호도 및 섭취량조사 -)

  • A survey on the preference of kimchi and actual amounts of kimchi intake conducted from july to october 1999 to get basic information needed for the augmentation of kimchi intake. Total 1,241 of women and men aged $10{\sim}60$ in kyung-nam area participated in this survey. Except people aged $20{\sim}30$, all of subjects, especially in people aged 60 and over, liked fresh prepared kimchi best, and then fermented kimchi. But all of subjects disliked over fermented kimchi.(p<0.001) And women$(4.3{\pm}0.9)$ liked better fresh prepared kimchi than men$(4.2{\pm}1.0)$, men$(4.0{\pm}0.9)$ liked better fermented kimchi than women$(3.9{\pm}1.1)$.(p<0.05) In subjects aged above 40, as age grow up, the preference of fermented kimchi and over fermented kimchi grew lower. All of subjects best liked chinease cabbage kimchi, and then chonggak kimchi, kakdugi, yeulmu kimchi, dongchimi in order. And women liked better nabag kimchi, yeulmu kimchi, sesame leaf kimchi, bek kimchi, cucumber kimchi, godulppegi kimchi than men and men liked better chinease cabbage kimchi, kakdugi, dongchimi than women.(p<0.05) People aged $10{\sim}20$ and above 60 disliked chonggag kimchi. The preference of kakdugi were high in people aged $10{\sim}20$, but as age grow up, the preference of kakdugi became lower.(p<0.001) The preference of nabak kimchi and dongchimi with juice were significantly high in people aged 60 and over but people aged $10{\sim}20$ disliked. Also subjects aged $10{\sim}20$ disliked significantly yeulmu kimchi, sesame leaf kimchi, green onion kimchi, bek kimchi, cucumber kimchi, mustard leaf kimchi and godulppegi kimchi and subjects aged $20{\sim}30$ disliked significantly yeulmu kimchi, mustard leaf kimchi, godulppegi kimchi(p<0.001). But subject aged 30 and older liked all kinds of kimchi. The amounts of kimchi intake in Kyung-nam area were same level of average amount(100g) of korean intake but the amounts of kimchi intake of men$(106.4{\pm}74.0)$ were more than women$(96.9{\pm}69.5)$(p<0.05)

Growth Characteristics as Affected by Polyethylene Film-Mulching in Sesame

  • This study was carried out to investigate varietal differences on growth characteristics under the conditions of PE film-mulching and non-mulching in sesame. At maturing stage from 76 to 95 days after sowing, Yangbaeckkae, non-branching plant type, under non-mulching showed larger leaf area index (LAI) than that of film-mulching, while plant height and the number of capsules per plant were similar to those of film-mulching. LAI of Ahnsankkae, branching plant type, under non-mulching was similar to film-mulching, while plant height and the number of capsules per plant were smaller than those of film-mulching. Net assimilation rate (NAR) of two varieties under non-mulching was lower at seedling stage from 25 to 35 days after sowing but higher at flowering stage from 45 to 55 days after sowing. At maturing stage from 66 to 77 days after sowing, NAR and crop growth rate (CGR) of Yangbaeckkae under non-mulching were greater than those of film-mulching, whereas those of Ahnsankkae under non-mulching were lesser than those of film-mulching. Yield under non-mulching was decreased by 7 % in Yangbaeckkae and 33 % in Ahnsankkae compared with that of film-mulching, therefore Yangbaeckkae was more adaptable for non-mulching than Ahnsankkae. Main factors decreasing yield of Yangbaeckkae under non-mulching were small LAI, NAR, and CGR at the stage of young seedling, and small number of capsules at early maturing stage from first flowering to 20 days after first flowering.

Changes in the Contents of Sugar, Organic Acid, Free Amino Acid and Nucleic Acid-Related Compounds during Fermentation of Leaf Mustard-Kimchi (갓김치 숙성중 당, 유기산, 유리아미노산 및 핵산관련 물질 함량의 변화)

  • Changes in the contents of sugar, organic acid, free amino acid and uncleic acid-related compounds of leaf mustard-Kimchi during fermentation at 5~7$^{\circ}C$ were investigated. The leaf mustard-Kimchi was formulated with 4kg leaf mustard, 120g garlic, 80g ginger, 540ml salted anchovies, 1kg green onion, 200g red pepper powder, 200g ground red pepper, 60g whole sesame and 600ml glutinous rice paste. Changes in pH and acidity were relatively slow. Major free sugars were glucose(0.13%) and maltose(0.42%), and residual sugars(0.03-0.04%) were also detected after 32 days of fermentation. Major free amino acids containing more than 26.5mg% were proline, glutamic acid, alanine and histidine. Contents of total free amino acids increased from 244.8 to 397.2mg% by 24 days of fermentation. Of non-volatile organic acid, lactic acid was the most abundant(119.3mg%), and its content increased markedly after 10 days of fermentation. Other organic acids(below 53.1mg%) observed were malic, oxalic and citric acid. Contents of nucleic acid-related compounds were high in the order of hypoxanthine(22.8mg%), IMP(8.3mg%) and GMP(6.9mg%). Hypoxanthine content increased by 10 days(27.3mg%) and decreased thereafter, while the others decreased gradually during the overall period of fermentation.

Quality Characteristics of Fresh Noodles With Perilla Leaves (들깻잎을 첨가한 생면의 품질특성)

  • This study investigates the optimal application of perilla leaves to fresh noodles in terms of a variety of beneficial effects and functions such as the anti-microbial function of the leaves. First, we measured the water contents of the fresh noodles and found that the ones added with 7% lyophilized perilla leaf extract showed the maximum water contents whereas the control noodles without perilla leaf extract the minimum. Increasing amount of raw perilla leaf extract or lysophilzed perilla leaves in the fresh noodles elevated the L value and significantly reduced the A value. The mass and volume of the fresh noodles were gradually decreased with raw perilla leaves added. Addition of raw perilla leaf extract and lyophilized perilla leaves decreased the turbidity of the fresh noodles. Hardness of the fresh noodles was increased by the addition of lyophilized Perilla leaves. Next, we tested the effect of the addition of sesame leaves on microbial growth. No microbes were found in the fresh noodles in the absence or presence of sesame leaves at day 0. When the noodles were stored for 3 days, the greatest number of bacteria was detected in the noodles without perilla leaves while addition of perilla leaves lowered the amount of bacteria in the noodles. We then performed the sensory test. For the raw perilla leaf extract addition, the noodles with 9% of extract exhibited the highest in appearance, flavor, color (6.47), texture (6.60), and overall acceptability (7.67). Texture was the highest in the ones with 3% (6.87) and 5% (6.20) of extracts added. Overall acceptability (7.07) was the best when 3% perilla leaves were added. Overall, 9% addition of raw perilla leaf extract or 3% addition of lysophilized perilla leaves showed optimal tastes.

Antifungal Activity or Coptis japonica Root-stem extract and Identification of Antifungal Substances (황련추출액의 항균활성과 항균성물질의 동정)

  • Crude extract of Coptis japonica root-stem was evaluated for antifungal activity against Phytophthora capsici, Fusarium oxysporum, Colletotrichum dematium, Colletotrichum truncatum, Botrytis cinerea, Botryosphaeria dothidea and Alternaria porri, and antifungal active compound from the extract was identified. In addition, the usefulness of the extract for some plants disease control was investigated. Crude extract of C. japonica root-stem exhibited antifungal activity against P. capsici, F. oxysporum, C. dematium, B. cinerea, B. dothidea and A. porri. Antifungal activity of the substance isolated from C. japonica root-stem was similar to a standard chemical berberine-Cl. Red-pepper fruit rot, sesame stem rot and welsh-onion alternaria leaf spot were effectively controlled by the crude extract of C. japonica root-stem. Phytotoxicity was not observed in the red-pepper and welsh-onion leaves and red-pepper and strawberry fruits with exogenous foliage application of the crude extract. Seeds germination and radicle growth of red-pepper and sesame were inhibited by the crude extract of C. japonica root-stem. 4.24g of yellowish compound per 100g of C. japonica root-stem was obtained. The compound was identified as berberine-Cl by HPLC.

Studies on the Natural pH Adjusters for Kimchi (김치용 천연 pH 조정제 연구)

  • The buffer activities of 72 species of natural pH adjusters in Chinese herb medicine materials of food materials by 100% acetic acid$({\mu}{\ell})$ titration until pH 4.0 in the $100m{\ell}$ of 1 % solution of the pH adjuster were evaluated for their abilities to retard acidification of Kimchi. There were 14 species above 100 of buffer activity such as Glycerehizae Radix(150), Siler divaricatum Benthan et Hooker etc. among selected Chinese herb medicine materials. In selected Chinese herb medicine materials, the buffer activities of Erillae Herba+Glycyrehizae Radix, Erillae Herba+Dioscoreae Rhizoma, Erillae Herba+Glycyrehizae Radix, Erillae Herba+Dioscoreae Rhizoma, Erillae Herba+Puerariae Radix, Chrysanthenum sinense+Puerariae Radix, Alismatis Rhizoma+Angelicae gigantis and Dioscoreae Rhizoma+Puerariae Radix were above 150 by same amount blending each other. Species and buffer activities of natural pH adjusters, which are higher buffer capabilities in mushroom, bean and vegetable classes were mungbean(207). soybean(160), pease(190), fungus(225), Garland chrysanthemum(200), amaranth(175), wild sesame leaf(200), parsley(202) and green pepper(257) etc. Species and buffer activities of higher buffer capabilities of natural pH adjusters of natural blending pH adjusters which is synergistic effect or natural blending pH adjusters which is synergistic effect mixing with radish juice were mung bean+peas(272), mung bean+soy bean(282), fungus+parsley(302), Garlan chrysanthenum+amaranth(300), Garland chrysanthenum+wild sesame leaf(277), amaranth+green pepper(300) and amaranthe+parsley(280) etc and those mixing with cabbage juice were peas+fungus(202), Garland chrysanthenum(207) and fungus+parsely (205) etc.

Influences of Water-logging Period at Different Growth Stages on Agronomic Characters in Sesame (참깨 생육기별 침수기간이 주요형질에 미치는 영향)

  • This study was conducted to find out the improvement of water-logging injury which is an important factor of yield loss in sesame. Water-logging was treated at 10, 25, 40, 55 and 70 days after emergence for 24, 48 and 72 hours in sesame variety 'Ansanggae'. Some important agronomic characters were investigated after treatment. The important agronomic characters such as plant height, leaf area, dry matter weight, capsule setting stem length, number of capsules per plant, ripenning rate and 1,000 grain weight were most susceptible at 55 days after emergence by the water-logging treatment, and the longer period of water-logging, the more susceptible. Allmost of the useful agronomic characters were able to get over injury of water-logging only within 25days after emergence, but could not get it over since 40days. Grain yield was decreased due to the water-logging treatment by 69 to 86% in 55 days after emergence that is most susceptible stage for water-logging as compared with the untreated control which is 13g per pot, and the longer period of water-logging induced the lower yield. Oil content of grain showed significant decrease only in 55 days after emergence but the composition of fatty acid did not influenced by the water-logging.

Effects of Seed Sterilization on Seedling Blight in Sesame (Sesamum indicum L.) (참깨 입고병에 대한 종자 소독제의 효과)

  • Seedling blight of sesame (Sesamum indicum L.) is one of the most serious diseases in Korea. This study was performed to control seedling blight in the field where sesame has been cultured for 4 years of Industrial Crop Division at the Crop Experiment Station. The pathogenic fungi of seedling blight which is known Fusarium oxysporum f. vasinfectium and Rhizoctonia solani was inoculated to the wheat media and it was spreaded on the experimental field in the concentration of 109 of wheat media mixed with 10g of fine soil. Seed sterilization was the most effective method for seedling blight control for two year experiment. Seed sterilant Benlate-T was highly effective for con trolling seedling blight with infection rate of 4% and yield of 40.7kg per 10a comparing to the control with infection rate of 96% and grain yield of 6.4kg per l0a, the other chemicals, Busan 30, Vitathiram, Captan showed good effect to control seedling blight, but less effect to the Benlate-T. The spraying treatments on leaf surface 25 days after sowing were not effective to seedling blight.
