This study was performed to investigate the biochemical status of iron, zinc and copper for 125 preschool children (Males : 69, Females : 56) residing in a low-income area of Seoul. The number of subjects aged, 3, 4, 5 and 6 were 19, 41, 41 and 24, respectively. The hemoglobin level of the children aged 3 was 11.8 g/dl and was lower thant hat of the other groups(p<0.05). Similar results were found for hematocrit and serum zinc. The percentage of children with an iron deficiency assessed by Hb(3-5) years : <11.0g/dl, 6 years: <11.5g/dl), Hct(3-6 years : 33%, 6 years : <35%), serum transferrin(<16%) and serum ferritin(<10ng/ml) were 4.3%, 9.5%, 8.2% and 17.7%, respectively. The mean serum zinc was 67.9$\mu\textrm{g}$/dl and urinary zinc was 0.1300mg/day. Low serum zinc (61.0$\mu\textrm{g}$/dl) occurred in 28.0% of the children. The mean serum copper was 110.5$\mu\textrm{g}$/dl and urinary copper was 0.0126mg/day. The prevalence of children with elevated serum copper($\geq$ 130$\mu\textrm{g}$/dl) was 54.8%, which was higher than 7.4%, the prevalence of low serum copper(<70$\mu\textrm{g}$/dl). Children with higher status, more weight, larger girth of chest, or larger midarm circumference showed higher values of Hb. The height and weight of children also showed a positive crrelation with serum zinc(P<0.001-P<0.05).

Pigs have been used widely in biomedical research owing to their physiologic and anatomic similarities to humans. Analysis of the hematologic and biochemical values in pigs is an important basis for biomedical research and veterinary clinical diagnosis, but research on transgenic pigs has been sparse. This study was conducted to obtain basic data on transgenic pigs and to describe and compare the reference values for hematologic and biochemical parameters in human tissue plasminogen activator (htPA) transgenic pigs vs normal pigs. Blood samples were obtained from 7 normal LY (Landrace-Yorkshire crossbred) pigs and 8 transgenic pigs and 16 hematologic and 15 serum biochemical parameters were tested. Among the hematologic parameters tested, significant differences were observed in the red blood cells (RBC), mean red blood cell hemoglobin (MCH), and lymphocytes (LYM), between the non-transgenic and transgenic pigs. Among the biochemical parameters tested, the blood urea nitrogen (BUN), total protein (TP), cholesterol (CHOL), alanine aminotransferase (ALT), creatinine (CREA), gamma glutamyl transpeptidase (GGT), globin (GOB), and amylase (AMYL) showed significant differences between the two groups. Thus, the values determined in this study can be used as basic reference values for transgenic pigs and will contribute to their use in biomedical research.
Objective: To understand the characteristic of non-alcoholic fatty liver disease (NAFLD) and non-alcoholic steatohepatitis (NASH), and study the traditional Korean medicine (TKM)-based strategies or therapeutics for them. Methods: A male patient with NASH was treated with only Oriental therapies, and then the clinical outcome was evaluated by serum biochemical parameters and radiographs. Result: The clinical and biochemical values of the patient fluctuated over three years according to the treatments and cessation of herbal medicines. Conclusion: NASH or NAFLD are now prevalent and these disorders could be targets of TKM, and this case report would provide useful information.

Deoxynivalenol (DON) is a common food borne mycotoxin and occurs predominantly in grains such as wheat, barley, oats, etc. DON induces systemic health problems such as loss of appetite, emesis and diarrhea in both human and farm animals. Reliable diagnostic parameters for DON intoxication are needed to prevent deep health impact. In order to establish useful diagnostic parameters, we investigated clinical signs, hematological values, serum biochemical values, gross-, histo- and toxico-pathological findings in B6C3F1 male mice after oral administration of DON (0.83, 2.5 and 7.5 mg/kg) for 8 days. Body weight gain was significantly decreased at the highest dose of DON. Anorexia, ataxia, for crudness and lack of vigor were observed at the highest dose DON group. In hematological values, the numbers of WBC and platelets and hemoglobin content were reduced with decreased neutrophil and monocytes by 7.5 mg/kg DON. Prothrombin time (PT) and activated partial thromboplastin time (aPTT) were prolonged in a dose-dependent manner and the content of fibrinogen was elevated at high dose of DON. Of serum biochemical values, total protein, globulin, BUN, cholesterol and test-osterone were reduced but total bilirubin and albumin/globulin ratio increased. The enzyme activity of alkaline phosphatase was decreased while that of alanine aminotransferase was elevated. Relative organ weights of thymus, seminal vesicle/prostate and testes were dose-dependently reduced but those of liver and left adrenal gland increased with dose dependency. As for pathological findings, atrophy of thymus, seminal vesicle/prostate and testes and submucosal edema and ulceration in stomach and depletion of lymphocytes in thymus cortex were observed. In conclusion, these clinical, hematological, blood biochemical and patholgical parameters obtained in the present studies can be used for diagnosis of DON-mycotoxicosis, especially, low WBC, platelets, protein, BUN and testosterone and delayed prothrombin time can be available as for reliable diagnostic parameters.
This experiment was conducted to explore the efficacy of lacquer (Rhus verniciflua) supplementation on growth performance, nutrient digestibility, carcass traits and serum biochemical values in commercial broilers. Eight hundred and forty Hubbard broiler chicks (1d old) were randomly distributed and allotted to four dietary treatments for five weeks. Each treatment had 5 replicates with 42 birds each. The dietary treatments were (1) control (2) 1% lacquer, (3) 2% lacquer and 4) 4% lacquer supplied as meal in the diet. Supplementation with lacquer improved weight gain (p = 0.0960) showing a linear trend during the starter phase (0-3 wk), but weight gain, feed intake and feed conversion ratio remained unaffected at the finisher phase (4-5 wk) and overall (0-5 wk). The nutrient digestibility studies conducted after 18 and 35 days of experimental feeding showed a linear (p<0.05) increase in digestibility of CP and ether extract at both measurement timess. The carcass studies were conducted on two birds per replicate (10 per treatment) at the end of both 3 and 5 wk. The dressing percentage, liver weight, heart weight, abdominal fat and the breast meat expressed as a percentage of live weight, did not differ significantly due to treatments at both phases. The serum cholesterol and high-density lipoprotein (HDL) showed a linear decrease (p = 0.0683 and p = 0.0322, respectively) as the level of supplementation increased at 3 wk; at 5 wk serum cholesterol, HDL and triglyceride levels decreased significantly showing a positive linear effect of lacquer on fat metabolism. The meat color values such as lightness, redness and yellowness did not reveal any significant trend. Overall, it could be concluded that lacquer supplementation at higher levels did not affect growth performance, but had a positive impact on fat metabolism by influencing fat digestibility and reducing serum cholesterol and triglyceride.

This study investigated the effects of dietary phyate reduction on the apparent absorption and biochemical parameters of iron status in young Korean women. Fourteen healthy, young women consumed low and high phytate diets for ten days of each experimental period. Duplicate diet samples, a fasting blood sample on day 9, and complete fecal samples for five consecutive days starting from day 5 of each diet period were collected. The iron content of diet and fecal samples were analyzed to calculate apparent absorption. Serum samples were analyzed for iron, ferritin, transferrin receptor and TIBC; transferrin saturation was also calculated. The apparent absorption of iron tended to increase in the low phytate period (32.51%) compared to the high phytate period (17.91%), but the difference was not significant (p=0.06). Serum ferritin decreased and serum transferrin receptor increased significantly during the low phytate diet although the mean values were within the normal range. Serum iron and transferrin saturation did not change significantly. In conclusion, the results indicated that reducing dietary phytate for ten days negatively affected iron nutritional parameters, but it moderately and positively affected apparent iron absorption in young Korean women. Further research on the long-term effects of a low phytate diet with an adequate iron content for vows Korean women is necessary.
The hematology and clinical chemistry data based on the well defined normal data are essential in the safety assessment. It is important that normal values of cliniclal pathology parameters would be optimized to be accurate. So the purpose of this experiment was to compare the ranges of normal data in hematology value and serum chemistry between both sexes of F344 and Wistar rats at 5, 10, 20, 40 and 90 weeks. of age. The neutrophils eosinophils and monocytes increased with age in male Wistar rats. And serum total bilirubin and potassium were highest and alkaline phosphatase was lowest at 90 weeks in Wistar rats. As compared with Wistar rat the serum aspartate aminotransferase of F344 rats increased with age in both sexes but inorganic phosphorus decreased with age. The serum alkaline phosphatase decreased with age and potassium was highest at 90weeks. These normal data would be useful in improving the accuracy of clinical pathology value in the safety assessment.
This study was conducted to investigate the effect of a 3 week low calorie diet (LCD) and a 9 week of behavior modification (BM) program on the weight loss, mineral and vitamin status in 22 obese women. The subject were healthy, obese (PIBW> $120\%$) women aged 20 - 50 Yr and not taking any medications known to influence body composition, mineral or vitamin metabolism During the LCD program, subjects were provided commercial liquid formulas with 125 kcal per pack and were instructed to have a formula for replacement of one meal and at least one regular meal per day within the range of daily 800 - 1200 kcal intake. During the BM program the subjects weekly attended the group nutrition counseling session to encourage themselves to modify their eating behavior and spontaneously restrict their energy intakes. The BM program focused on stimulus control, control of portion sizes and modification of binge eating and other adverse habits. The initial mean energy intake of subjects was 2016.9 $\pm$ 129.8 kcal ($100.8\%$ of RDA) and dropped to 1276.5 $\pm$ 435.7 kcal at the end of a 3 week of LCD program and elevated to 1762 $\pm$ 329.3 kcal at the end of a 9 week of BM program. Carbohydrate, protein and fat intakes were significantly decreased at the end of the LCD but carbohydrate was the only macro nutrient that showed significant decrease (p < 0.05) at the end of the BM program compared to baseline. Calcium and iron intakes decreased significantly (p < 0.01, respectively) with no significant changes in other micronutrients at the end of the LCD. The mean weight of the subjects decreased from 73.8 $\pm$ 8.0 kg to 69.2 $\pm$ 7.7 kg with LCD and ended up with 67.7 $\pm$ 7.1 kg after 9 weeks of BM. The 3 weeks of LCD reduced most of the anthropometric indices such as BMI, PIBW, fat weight, wast-to-hip ratio and subscapular and suprailiac skinfold thickness. The 9 weeks of behavior modification showed slight change or maintenance of each anthropometric measurements. Weight loss and decreased WHR with the diet program induced significantly decreased systolic blood pressure. SGOT, SGPT and serum insulin levels with improved serum lipid profiles. Biochemical parameters related to iron status such as hemoglobin, hematocrit were significantly decreased (p < 0.01) at the end of the LCD. But their mean values were within normal range. The mean serum 25 (OH) vitamin $D_3$ level significantly increased after whole diet program. Serum folate level significantly decreased after 12 weeks of diet program. In conclusion 3 weeks of LCD brought 4.6 kg reduction in body weight without risk of iron, zinc or vitamin D deficiency and 9 weeks of the BM was effective to maintain nutritional status with slightly more weight reduction (1.5 kg). However calcium intake and serum folate should be monitored during the LCD and BM because of increased risk of deficiencies.

BACKGROUND/OBJECTIVES: Enteral nutrition formulas with immune-enhancing nutrients, such as n-3 fatty acids, may manage patients' nutritional status and pathophysiological processes. The aim of our study was to investigate natural killer (NK) cell activity alterations and related cytokine changes resulting from feeding with soybean oil-containing enteral nutrition formula (control group) and plant-derived n-3 fatty acid-enriched enteral nutrition formula. SUBJECTS/METHODS: Subjects participated for 14 consecutive days and consumed enteral formula containing canola and flaxseed oil (n3EN, test group) in nonsurgical patients hospitalized for rehabilitation. Blood samples were collected on the first day and 14 days after the consumption of each formula daily, and anthropometric parameters were collected. Hematology and biochemical values were analyzed, and NK cell activities and serum cytokine concentration were measured. A total of sixty subjects were included in the analysis, excluding dropouts. RESULTS: No significant differences were found in biochemical parameters. The n3EN group's NK cell activities at effector:tumor cell ratios of 10:1, 5:1, 2.5:1 and 0.625:1 were significantly higher than those of the control group after two weeks (P < 0.05). However, there were no statistically significant differences in serum cytokine interleukin (IL)-12, $interferon-{\gamma}$, $IL-1{\beta}$, IL-6 and tumor necrosis $factor-{\alpha}$ values between the two groups. CONCLUSIONS: In conclusion, this study elucidates the beneficial effects of plant-derived n-3 fatty acid supplementation in enteral formula on NK cell activity.
