Studies on Antioxidant Activity of Ethanol Extracts from Defatted Perilla Flour (탈지들깨박 Ethanol 추출물의 항산화 효과)

  • The antioxidant activity of ethanol extracts from defatted perilla flour was investigated by measuring peroxide value of perilla oil during storage at $45^{\circ}C$. The antioxidant activity of ethanol extracts was also compared with BHA, BHT and tocopherol. Anti-oxidant activity of ethanol extracts was also examined in corn oil and lard. The ethanol extracts contents of defatted perilla flour and the original perilla seed were 7.69 and 4.56% respectively. The antioxidant activity of ethanol extracts was superior to that of 0.02% BHT, BHA and tocopherol in the perilla oil substrate, merely in concentration of one-twentieth as much as that contained in original perilla oil seeds. The fractions of non-polar solvent (hexane and chloroform) obtained from silicic acid column chromatography are less effective than that of polar solvent as an antioxidant. Antioxidant activity of partially purified ethanol fraction is slightly inferior to that of original crude ethanol extracts. Ethanol extracts were also effective in corn oil and lard almost same as in perilla oil. The total phenolic compound contents of crude ethanol extracts and partially purified ethanol fraction were 9.3, 6.4%, respectively.

Effect of including n-3/n-6 fatty acid feed sources in diet on fertility and hatchability of broiler breeders and post-hatch performance and carcass parameters of progeny

  • Objective: The present trial was conducted to determine the influence of different dietary fatty acid (omega-3 and omega-6) sources on reproductive performance of female broiler breeders and growth performance and carcass traits of their progeny. Methods: Two hundred and twenty, 25 weeks old Ross-308 male (20) and female (200) broiler breeders were used in the experiment for the period of 6 weeks. All birds were randomly divided into four dietary treatments (containing 2% soybean oil, 2% sunflower oil, 2% flaxseed oil, and 2% fish oil) each with five replicates of one male and ten females. Throughout this experiment hatching performance of broiler breeders, progeny growth performance and carcass parameters were recorded. Results: The results showed that the inclusion of different fatty acid sources in female broiler breeders diet had no significant effects (p>0.05) on number of fertile eggs, post-hatch mortality, and fertility rate. The soybean oil supplemented group had significantly (p<0.05) higher late embryonic mortality compared to other three treatments. Conclusion: It was concluded that inclusion of 2% of different sources of omega-3 and omega-6 fatty acids (especially 2% flax seed oil) in broiler breeders' diet can reduce late embryonic mortality. The other reproductive characteristics of parents and growth and carcass characteristics of progeny remained unaltered by dietary sources of omega-3 and omega-6 fatty acids.

  • The allelopathic effects of Artemisia lavandulaefolia were studied using several test plants and microbes. Aqueous extracts and volatile compounds of A. lavandulaefolia inhibited seed germination, seedling and root growth of the test species such as Achyranthes japonica. Lactuca sativa, Artemisia princeps var. orientalis. Oenothera odorata, Plantago asiatica. Aster yomena, Elsholtzia ciliata, and Raphanus sativus var. hortensis for. acanthiformis. The root growth of test species was more affected than shoot growth by allelochemicals of A. lavandulaefolia. Essential oil of A. lavandulaefolia had antibacterial and antifungal effects. However, the antimicrobial activity of the essential oil was dependent upon the microbial species and concentrations. Callus growth of Oryza sativa, Brassica campestris subsp. napus var. pekinensis and Achyranthes japonica was sensitive by the essential oil of A. lavandulaefolia. Twenty three chemicals were identified from A. lavandulaefolia essential oil by gas chromatography. Primary allelochemicals among them were 1, 8-cineole, 1-$\alpha$-terpineol, $\alpha$-terpinene. camphor, 2-buten-1-ol and azulene. We concluded that aqueous extract and essential oil of A. lavandulaefolia were responsible for allelopathic effects.

Gas Chromatography를 이용한 식물성 유지의 지방산의 정량 정성 및 산화안전성 평가

  • 본 연구에서는 현재 우리나라에서 식용으로 많이 쓰이는 식물성 유지인 콩기름, 올리브유, 고추씨기름을 Gas Chromatography를 이용해 각 유지별 지방산의 정성, 정량하였으며 이들 유지의 산화 안정성 평가를 위하여 산화적 반응의 기작의 생성물인 휘발성 분해 산물인 Pentanal 생성을 비교하여 분석하였다. 1. Soybean oil의 지방산 조성은 불포화 지방산은 87.79%, 포화지방산은 12.21%를 차지했으며 Olive oil의 지방산 조성은 불포화 지방산은 82.77%, 포화지방산은 17.23%를 차지했다. Hot pepper oil의 지방산 조성은 불포화 지방산은 85.42%, 포화지방산은 14.58%를 차지했다. 2. 콩기름, 올리브기름, 고추씨기름의 pentane의 함량은 43.4, 30.4, 19.7nL로 측정되었다. 따라서 고추씨기름이 다른 유지에 비해 산화에 대하여 안정함을 알 수 있다. 이상의 결과로부터 실험에 선택된 콩기름, 올리브유, 고추씨기름에는 포화 지방산보다 불포화 지방산의 함량이 많은 것을 알 수 있었고, 특히 체내에서 합성이 불가능해 식품으로 섭취해야만 하는 필수 지방산의 함량이 높아 체내 생체 활동에 유용한 것으로 판단되었다. 산패도 비교 평가에서는 hot pepper seed oil이 olive oil이나 soybean oil보다 낮은 산패도를 나타내어 다른 유지보다 산화 안정성이 뛰어난 것으로 나타났다.

  • Exogenous lipid pneumonia is a rare disease resulting from the aspiration or inhalation of vegetable, animal, or mineral oils. In Korea, the most frequently implicated agent is squalen, which can be obtained from shark liver oil. Lipid pneumonia by aspiration of the vegetable oil is very rare. We experienced a 77-year-old man with a history of ingestion of green perilla oil. His clinical course was favorable; after exposure to the oil was stopped, the patient's symptoms improved.

  • Peanut seeds are characterized by high oils and proteins with good quality, and are utilized as an edible oil source and a protein-rich food products. The end products, being peanut butter, salted seed, confections, roasting stock and other by-products are favored in world-wide because of their unique roasted peanut flavor. As with many other foods, interest in the composition and chemistry of peanut is largely a result of thier use as human food. Thus, a more complete knowledge of thier chemical and food quality and flavor properties is desired. Literatures are reviewed mainly focucing on the physicochemical properties and nutritional quality of oil, protein and flavor in peanuts. Chemical properties of protein and oil, and volatile flavor component in peanut seeds are studied extensively in view point of chemical and food nutritional value. But in crop base, the synthesis and genetic studies of the chemicals could not provide valuable informations on the breeding for quality improvement. Some essential amino acids are limiting in peanut seeds and the tocopherols are very important in oil stability and for dietary adequacy ratio in high linoleic acid peanut oil, but it is thought to be quite difficult to improve by breeding technique as their lack information of gene actions. However, the selections of high protein and oil, and some essential amino acids and linoleic acid rich genotypes could be helpful for the quality improving. Research studies are also needed to elucidate the relationships between flavor components and consumer perception of peanut flavor.

Soybean Ecological Response and Seed Quality According to Altitude and Seeding Dates

  • This experiment was carried out to examine ecological response and soybean quality as affected by environmental cultivation for producing high seed quality in domestic soybean variety. The results are as follows: Under equal cumulative temperature condition, soybean plants grown in Muju showed longer days to flowering, which was an effect of the long day-length on high latitudes, and longer duration of reproductive stage as a result of low temperature within that period. Considering apparent seed quality, 100 seed weight of soybeans grown in Muju was heavier than Miryang. Ratio of seed crack and disease-damaged seeds was lower in Muju, and these parameters decreases as planting was delayed. The protein contents did not show significant difference in terms of altitude and planting date, however, crude oil contents were higher in Miryang. An opposite trend was observed in C18:1 and C18:3. In the fatty acid composition, the proportion of C18:1 decreased as seeding date was delayed, and was higher in Miryang. Opposite observations were obtained from C18:3. The anthocyanin contents were highest on June 10 planting and higher in Muju than in Miryang. Isoflavone content was higher as seeding date was delayed and is similar accross seeding dates in Muju. As a summary, for high seed quality production the optimum planting date was June 10, and Muju was more suitable region than Miryang.

Selection of coating materials to leafy perilla seed for reducing endosulfan residue in greenhouse soil (시설재배지 토양중 잔류농약 경감을 위한 잎들깨 종자코팅제 선발)

  • In order to select the coating materials to perilla seed for reducing endosulfan residue greenhouse soil, this study was conducted to develop seed coating method and materials and also to evaluate the effects of seed coating on germination and color contrast between soil and perilla seed for convenient sowing work. Talc and kaoline were selected as seed coating materials because easy coating and better color contrast than shell powder or lime. Water was more effective on germination compared to alcohol, com oil and spray sticker as adhesives for seed coating.

The Study on the Oxidative Stability of Mixed Rapeseed oil with Palm oil (팜유 혼합유채유의 산화안정성에 관한 연구)

  • Two kinds of simple and interesterfying mixed rapeseed oil were prepared according to add 30%, 50% and 70% of coconut and palm oil, then the physicochemical propecties such as the tedency of oxidation, foaming activity were Investigated. The initial AV and POV of interesterifyung mixed rape-seed oils were higher than those of simple mixed oils, but the tendencies of oxidation were similar. The intial value of IV interesterfied rapeseed oils was added in simple mixed rapeseed oil, Induction period were increased about 2.4~4 times. Induction period of intereterifyng mixed oils added palm ell increased about 2~3.2 times. While the foaming Buantity of interesterifing mixed rapeseed oils with palm oil were lower about 28~40% than those of the simple mixed rapeseed oils.

The Effects of Increased Temperature on Seed Nutrition, Protein, and Oil Contents of Soybean [Glycine max (L.)] (온도 상승에 따른 콩 종실의 무기영양과 단백질 및 지방 함량 평가)

  • The content of nutrients, proteins, and oils of crop seeds is affected by global climate change due to the increase in temperature. Information regarding the effects of increased temperature on soybean seed nutrition is limited despite its vital role in seed quality and food security. The objective of this study was to determine the effect of increasing temperature on seed nutrient, protein, and oil content in two soybean [Glycine max (L.) Merr] cultivars (Daewonkong and Pungsannamulkong during the reproductive period in a temperature-gradient chamber. Four temperature treatments, Ta (near ambient temperature), $Ta+1^{\circ}C$ (ambient temperature+$1^{\circ}C$), $Ta+2^{\circ}C$ (ambient temperature+$2^{\circ}C$), $Ta+3^{\circ}C$ (ambient temperature+$3^{\circ}C$), and $Ta+4^{\circ}C$ (ambient temperature+$4^{\circ}C$), were established by dividing the rows along the temperature gradient. At maturity, increased temperature did not significantly affect the concentration of P, K, Ca, and Mg. The protein and oil content was significantly correlated with temperature. At maturity, the protein content of DWK and PSNK was reduced at $Ta+4^{\circ}C$. The oil content was the highest at $Ta+4^{\circ}C$ in DWK, whereas it decreased in PSNK at $Ta+4^{\circ}C$. Consequently, the biochemical composition of soybean seeds changed with the increase in temperature. These results illustrate the effects of temperature on soybean seed nutrient, protein, and oil content, which can help improve soybean quality at different temperatures. Thus, the biochemical composition of crop seeds can be changed in accordance with nutritional requirements for the benefit of human health in the future.
