The Color-Developing Methods for Cultivated Meat and Meat Analogues: A Mini-Review

  • Novel meat-inspired products, such as cell-cultivated meat and meat analogues, embrace environmental sustainability, food safety and security, animal welfare, and human health, but consumers are still hesitant to accept these products. The appearance of food is often the most persuasive determinant of purchasing decisions for food. Producing cultivated meat and meat analogues with similar characteristics to conventional meat could lead to increased acceptability, marketability, and profitability. Color is one of the sensorial characteristics that can be improved using color-inducing methods and colorants. Synthetic colorants are cheap and stable, but natural pigments are regarded as safer components for novel food production. The complexity of identifying specific colorants to imitate both raw and cooked meat color lies in the differences in ingredients and methods used to produce meat alternatives. Research devoted to improving the sensorial characteristics of meat analogues has noted various color-inducing methods (e.g., ohmic cooking and pasteurization) and additives (e.g., lactoferrin, laccase, xylose, and pectin). Additionally, considerations toward other meat components, such as fat, can aid in mimicking conventional meat appearance. For instance, the use of plant-based fat replacers and scaffolds can produce a marked sensory enhancement without compromising the sustainability of alternative meats. Moving forward, consumer-relevant sensorial characteristics, such as taste and texture, should be prioritized alongside improving the coloration of meat alternatives.

Sustainable animal agriculture in the United States and the implication in Republic of Korea

  • Agriculture has played a significant role in the national economy, contributing to food security, driving economic growth, and safeguarding the dietary habits of the population. Korean agriculture has been compelled to focus on intensive farming due to its limited cultivation area, excessive input costs, and the limitations of agricultural mechanization. In the Republic of Korea (R.O.K), the concept of environmentally friendly animal agriculture began to be introduced in the early 2000s. This concept ultimately aims to cultivate sustainable animal agriculture (SAA) through environmentally friendly production practices, ensuring the healthy rearing of animals to supply safe animal products. Despite the government's efforts, there are still significant challenges in implementing environmentally friendly agriculture and SAA in the R.O.K. Therefore, the objective of this review is to establish the direction that the animal agriculture sector should take in the era of climate crisis, and to develop effective strategies for SAA tailored to the current situation in the R.O.K by examining the trends in SAA in the U.S. The animal agriculture sector in the U.S. has been working towards creating a SAA system where humans, animals, and the environment can coexist through government initiatives, industry research, technological support, and individual efforts. Efforts have been made to reduce emissions like carbon, and improve factors affecting the environment such as the carbon footprint, odor, and greenhouse gases associated with animal agriculture processes for animals such as cattle and pigs. The transition of the U.S. towards SAA appears to be driven by both external goals related to addressing climate change and the primary objectives of responding to the demand for safe animal products, expanding consumption, and securing competitiveness in overseas export markets. The demand for animal welfare, organic animal products, and processed goods has been increasing in the U.S. consumer market. A major factor in the transformation of the U.S. animal agriculture sector in terms of livestock specifications is attributed to environmentally friendly practices such as high-quality feed, heat stress reduction, improvements in reproductive ability and growth period reduction, and efforts in animal genetic enhancement.

  • Withe increased North Korea's security threats, the South Korean navy has been faced with deteriorating security environment. While North Korea has increased asymmetric forces in the maritime and underwater with the development of nuclear weapons, and China and Japan have made a large investment in the buildup of naval forces, the power of the Pacific fleet of the US, a key ally is expected to be weakened. The biggest threat comes from China's intervention in case of full-scale war with North Korea, but low-density conflict issues are also serious problems. North Korea has violated the Armistice Agreement 2,660 times since the end of Korean War, among which the number of marine provocations reaches 1,430 times, and the tension over the NLL issue has been intensifying. With tension mounting between Korea and Japan over the Dokdo issue and conflict escalating with China over Ieo do Islet, the US Navy has confronted situation where it cannot fully concentrate on the security of the Korean peninsula, which leads to need for strengthening of South Korea's naval forces. Let's look at naval forces of neighboring countries. North Korea is threatening South Korean navy with its increased asymmetric forces, including submarines. China has achieved the remarkable development of naval forces since the promotion of 3-step plan to strengthen naval power from 1989, and it now retains highly modernized naval forces. Japan makes an investment in the construction of stat of the art warship every year. Since Japan's warship boasts of its advanced performance, Japan's Maritime Self Defense Force is evaluated the second most powerful behind the US Navy on the assumption that submarine power is not included in the naval forces. In this situation, naval power construction of South Korean navy should be done in phases, focusing on the followings; First, military strength to repel the energy warship quickly without any damage in case of battle with North Korea needs to be secured. Second, it is necessary to develop abilities to discourage the use of nuclear weapons of North Korea and attack its nuclear facilities in case of emergency. Third, construction of military power to suppress armed provocations from China and Japan is required. Based on the above naval power construction methods, the direction of power construction is suggested as follows. The sea fleet needs to build up its war potential to defeat the naval forces of North Korea quickly and participate in anti-submarine operations in response to North Korea's provocations. The task fleet should be composed of 3 task flotilla and retain the power to support the sea fleet and suppress the occurrence of maritime disputes with neighboring countries. In addition, it is necessary to expand submarine power, a high value power asset in preparation for establishment of submarine headquarters in 2015, develop anti-submarine helicopter and load SLAM-ER missile onto P-3C patrol aircraft. In case of maine corps, division class military force should be able to conduct landing operations. It takes more than 10 years to construct a new warship. Accordingly, it is necessary to establish plans for naval power construction carefully in consideration of reality and future. For the naval forces to safeguard maritime sovereignty and contribute to national security, the acquisition of a huge budget and buildup of military power is required. In this regard, enhancement of naval power can be achieved only through national, political and military understanding and agreement. It is necessary to let the nation know that modern naval forces with improved weapon system can serve as comprehensive armed forces to secure the command of the sea, perform defense of territory and territorial sky and attack the enemy's strategic facilities and budget inputted in the naval forces is the essential source for early end of the war and minimization of damage to the people. If the naval power construction is not realized, we can be faced with a national disgrace of usurpation of national sovereignty of 100 years ago. Accordingly, the strengthening of naval forces must be realized.

The Evaluation of Crime Prevention Environment for Cultural Heritage using the 3D Visual Exposure Index (3D 시각노출도를 이용한 문화재 범죄예방환경의 평가)

  • Strengthening surveillance, one of the most important factors in the crime prevention environment of cultural heritages, has difficulty in evaluating and diagnosing the site. For this reasons, surveillance enhancement has been assessed by modelling the shape of cultural heritage, topography, and trees digitally. The purpose of this study is to develop the evaluation method of crime prevention environment for cultural heritage by using the 3D visual exposure index (3DVE) which can quantitatively evaluate the surveillance enhancement in three dimensions. For the study, the evaluation factors were divided into natural, organizational, mechanical, and integrated surveillance. To conduct the analysis, the buildings, terrain, walls, and trees of the study site were modeled in three dimensions and the analysis program was developed by using the Unity 3D. Considering the working area of the person, it is possible to analyze the surveillance point by dividing it into the head and the waist position. In order to verify the feasibility of the 3DVE as the analysis program, we assessed the crime prevention environment by digitally modeling the Donam Seowon(Historic Site No. 383) located in Nonsan. As a result of the study, it was possible to figure out the problems of patrol circulation, the blind spot, and the weak point in natural, mechanical, and organizational surveillance of Donam Seowon. The results of the 3DVE were displayed in 3D drawings, so that the position and object could be identified clearly. Surveillance during the daytime is higher in the order of natural, mechanical, and organizational surveillance, while surveillance during the night is higher in the order of organizational, mechanical, and natural surveillance. The more the position of the work area becomes low, the more it is easy to be shielded, so it is necessary to evaluate the waist position. It is possible to find out and display the blind spot by calculating the surveillance range according to the specification, installation location and height of CCTV. Organizational surveillance, which has been found to be complementary to mechanical surveillance, needs to be analyzed at the vulnerable time when crime might happen. Furthermore, it is note that the analysis of integrated surveillance can be effective in examining security light, CCTV, patrol circulation, and other factors. This study was able to diagnose the crime prevention environment by simulating the actual situation. Based on this study, consecutive researches should be conducted to evaluate and compare alternatives to design the crime prevention environment.

Open IPTV Platform using Overlay Multicast and Content Delivery Network (오버레이 멀티캐스트 및 콘텐츠 전달 네트워크를 적용한 개방형 IPTV 플랫폼)

  • Recently, the importance of IPTV providing multimedia service over IP based networks managed to provide the required level of quality of service and experience, security, interactivity and reliability has been gradually increasing by the commercialization of its service. However, the original purposes of IPTV service - contents are produced and consumed anytime, anywhere, and over any device at the same time - have not been satisfied by service providers because most services offered by service providers depend on closed IPTV platform. In this paper, we propose an open IPTV service platform that an individual or small company can easily produce contents and offer IPTV service independently from the existing closed IPTV platform.. The proposed IPTV platform exploits overlay multicast scheme to offer reasonable service under the environment where network bandwidth and processor resource are limited. It also uses CDN-like scheme to ensure the quality of transmitted contents. The performance evaluation shows that the proposed IPTV platform has the possibility of being an open IPTV platform considering its results such as the quality of transmitted contents, the transmission rate, the channel zapping time, and so on. It also shows that proposed IPTV platform could be applied to real IPTV service with continuous enhancement of its functions and user interfaces.

Performance Enhancement Method Through Science DMZ Data Transfer Node Tuning Parameters (Science DMZ 데이터 전송 노드 튜닝 요소를 통한 성능 향상 방안)

  • In an environment with a large network bandwidth, maximizing bandwidth utilization is an important issue to increase transmission efficiency. End-to-end transfer efficiency is significantly influenced by factors such as network, data transfer nodes, and intranet network security policies. Science DMZ is an innovative network architecture that maximizes transfer performance through optimal solution of these complex components. Among these, the data transfer node is a key factor that greatly affects the transfer performance depending on storage, network interface, operating system, and transfer application tool. However, tuning parameters constituting a data transfer node must be performed to provide high transfer efficiency. In this paper, we propose a method to enhance performance through tuning parameters of 100Gbps data transfer node. With experiment result, we confirmed that the transmission efficiency can be improved greatly in 100Gbps network environment through the tuning of Jumbo frame and CPU governor. The network performance test through Iperf showed improvement of 300% compared to the default state and NVMe SSD showed 140% performance improvement compared to hard disk.

A Reliability Enhancement Technique of Mobile Payment (모바일 결제의 신뢰성 향상 방안)

  • A variety of services for mobile payments by the activation of FinTech have been developed. Various payment methods were developed, and an authentication method was developed to improve the reliability of the payment. On the other hand, when mobile easy payment services are used, they have weak security because the authentication by phone number. Therefore, this paper proposes a technique for increasing the reliability of the authentication process using the unique device ID of the mobile device to improve the authentication process based on the telephone number. The core research contents are the architecture and process for the authentication of mobile payments based on the mobile device ID. The mobile payment architecture consists of a mobile device, authentication service, and mobile payment application. The mobile device consists of mobile device ID and phone number, and the authentication server consists of authentication module and encryption module. The mobile payment service consists of a pre-authentication module and decryption module. The process of mobile payment service is processed by the encrypted authentication information (device ID, phone number, and authentication number) among mobile devices, authentication server, and mobile payment application. The mobile device sends the telephone number and the device ID to the authentication server and the authentication server authenticates the user through an authentication process and encryption process. The mobile payment application performs the pre-authentication process by decrypting the received authentication number. This paper reports a difference that can prevent the risk of leakage of the authentication number in existing payment services through the authentication process of the authentication server and the pre-authentication process of the mobile payment service of this paper.

Emotional Labor and Human Rights Protection in the case of airlines (감정노동과 인권보호 - 항공사를 중심으로)

  • Recent examples of abuse by black consumers (including air travellers) against emotional laborers have become a serious social issue in Korea in that they are likely to violate human rights of those laborers. Emotional labor is a form of emotion regulation that creates a publicly visible facial and bodily display, and also emotional management within the workforce that creates a situation in which the emotion management by workers can be exchanged in the marketplace. Example professions that require emotional labor are: nurses, doctors, waiting staff, and television actors. However, as the economy moves from a manufacturing to a service-based economy, many more workers in a variety of occupational fields are expected to manage their emotions according to employer demands when compared to the past. One of symptoms deriving from emotional labor is smile mask syndrome abbreviated SMS, which is a psychological disorder proposed by professor Makoto Natsume where subjects develop depression and physical illness as a result of prolonged, unnatural smiling. And higher degree of using emotion regulation on the job is related to higher levels of employees' emotional exhaustion, and lower levels of employees' job satisfaction. In most part, emotional laborers are more abused and hurt by so called black consumers who are raising complaints relating to products and services purchased against service providers for the purpose of maliciously getting compensation. Against this background, the Korean Government abolished "the Consumer Protection Act" and instead promulgated "the Basic Consumer Act" in September 2006 which stipulates that consumers are expected to have protection as well as responsibility and duty. The Aviation Security Act cites the examples of prohibited behaviors (unruly passengers) while they are travelling. In addition, human rights of emotional laborers could be more protected by the enhancement of etiquettes and cavalry and improvement of culture and working environment.

Comparative Study of the Effects of the Intermodal Freight Transport Policies (인터모달 추진 정책과 효과에 관한 비교연구)

  • Purpose - The Korean government has devised intermodal transportation policies and granted subsidies to shippers and logistics companies that made a conversion of transportation means through the policies. This provides support by expanding the complex uniform railroad transportation and overhauling the deteriorated railroad facilities. As for 2013, however, the freight transportation percentage of railroad was 4.5% in tons and 8.5% in ton kilometers. Meanwhile, since the 1990s, developed countries such as the U.S. and Europe have been trying to expand intermodal freight transport with a legal and institutional support to build a logistics system corresponding with social and economic environmental changes. In this study, I set out to examine the effects of the intermodal freight transport policies in the EU and the U.S., and to explore the direction of setting up a rail intermodal transport system in South Korea. Research design, data, and methodology - The paper used a qualitative research methodology through the literature review. First, was an overview of Intermodal transportation in the EU, U.S. and UN. Second, it describes the development of transport in Europe and the U.S. with particular emphasis on intermodal freight transport. Third, it explores the direction of setting up a intermodal freight transport in South Korea. The last section contains concluding remarks. Results - As for the EU, it has been promoting integration between transport and intermodal logistics network designs while utilizing ITS or ICT and supports for rail freight intermodal by giving reduction to a facilities fee or subsidizing for rail freight in order to minimize the cost of external due to freight transport. On the other hand, as for the U.S., it has been made up of an industrial-led operating project and has been promoting it to improve accessibility between intermodal hubs and cargo terminals through intermodal corridor program, and an intermodal cargo hub access corridor projects, etc. Moreover, it has tried to construct intermodal transport system using ITS or ICT and to remove Barrier. As a result, in these countries, the proportion of intermodal freight transport is going to be the second significant transport compared with rail and maritime transport. An Effective rail intermodal transport system is needed in South Korea, as seen in the case of these countries. In order to achieve this object, the following points are required to establish radical infrastructure policy; diversify investment financing measures taken under public-private partnerships, legal responsibilities, improvement of utilization of existing facilities to connect the railway terminal and truck terminal, and enhancement service competitiveness through providing cargo tracking and security information that combines the ITS and ICT. Conclusions - This study will be used as a basis for policy and support for intermodal freight transport in South Korea. In the future, it is also necessary to examine from the perspective of the shipper companies using the rail intermodal transport, ie, recognition of shipper, needed institutional supports, and transportation demand forecasting and cost-effective analysis of the railway infrastructure systems improvement.

Comparison of 'Militarism' and 'Normal state' through the Concept of Regional Hegemony: Focus on Imperial Japan before and after the Navy Disarmament Treaty and Modern Japan after Abe Shinzo's 2nd Cabinet (지역 패권 개념을 통한 '군국주의'와 '보통국가' 비교: 해군 군축조약 전·후 일본제국과 아베 2기 내각 이후 현대 일본의 사례를 중심으로)

  • The study started with the question, "Is Japan's normalization of nationalization a return to militarism?" Therefore, in order to analyze this, the characteristics of the international system after the inauguration of the Japanese Empire during World War I and World War II and the Abe's 2nd Cabinet in contemporary Japan were compared. Through this, there were some differences in the characteristics of the international system of the two periods, and as a result, it was intended to derive the differences between the two examples. During the prewar period of World War I, the militaristic Japanese Empire suffered great damage from the national pride of being the only power in Asia through the Paris Enhancement Conference, the Washington Navy Treaty, and the London Navy Treaty. However, the Western powers with colonies in Asia still existed in the region, so it was not possible to turn them into immediate power expansion. Meanwhile, World War II broke out in Europe. As a result, the Western powers had to focus on the whole of Europe, and the militaristic Japanese empire became a regional hegemony without missing the international system characteristic of "the hegemony." Unlike in the past militarism, Japan's case of pursuing common nationalization since 2012 has been carried out in the order of Northeast Asia in the composition of the "cold war" new cold war. In particular, Japan is attempting to transform itself into a normal state to strengthen the US-Japan alliance on a self-reliant level due to the lack of quantitative military power compared to the neighboring countries.
