Study on the Texture and Staling of Breads with Addition of Various Hydrocolloids (Hydrocolloids를 첨가한 식빵의 텍스쳐와 노화에 관한 연구)

  • The principal objective of this study was to assess the effects of hydrocolloids(xanthan gum, guar gum, sodium alginate, k-carrageenan, carboxy-methyl cellulose) on the suppression of retrogradation in the bread. The pasting properties of the doughs and the sensory properties were determined in the bread samples, to which xanthan gum, guar gum, sodium alginate, k-carrageenan, and CMC, were added at different ratios(0.2%, 0.6%, 1%). CMC and k-carrageenan with 0.6% level were selected for the further retrogradation studies. Changes in the firmness of the bread samples at room temperature for 15 days were assessed using a texture analyzer, and the type of retrogradation was calculated via the Avrami equation. The thermal properties of the samples were also determined via differential scanning calorimetry (DSC). The addition of hydrocolloids was shown to increase the viscosities of the doughs. Setback and breakdown viscosity were reduced significantly via the addition of CMC(0.6%, 1%), xanthan gum(1%), and k-carrageenan(1%). Sensory hardness was significantly increased when 1% hydrocolloids were added. Our textural analysis showed that the addition of CMC reduced the firmness of the bread, whereas k-carrageenan didn't. However, the retrogradation rate was reduced via the addition of k-carrageenan, as was also demonstrated in the results of our DSC analysis.

  • This study is a descriptive research study to identify osteoporosis knowledge and osteoporosis prevention activities among care providers in nursing home. The subjects were 142 care providers in S and Y city. The Data were collected from July 1 to July 20, 2019, and analyzed SPSS 24.0 Version. The result showed that the osteoporosis knowledge of among care providers was moderate. It showed differences in educational status, osteoporosis management training experience, residents number and importance awareness of elderly bone health. And prevention activities differed according to osteoporosis management training experience and importance awareness of elderly bone health. There was a positive correlation between knowledge and prevention activities of osteoporosis. Therefore, it is necessary to develop education programs for the management of elderly osteoporosis and to raise importance awareness of elderly bone health among care providers in nursing home. Further studies are needed to evaluate the effects of the program.

Optimization of Multi-Atlas Segmentation with Joint Label Fusion Algorithm for Automatic Segmentation in Prostate MR Imaging

  • Purpose: Joint label fusion (JLF) is a popular multi-atlas-based segmentation algorithm, which compensates for dependent errors that may exist between atlases. However, in order to get good segmentation results, it is very important to set the several free parameters of the algorithm to optimal values. In this study, we first investigate the feasibility of a JLF algorithm for prostate segmentation in MR images, and then suggest the optimal set of parameters for the automatic prostate segmentation by validating the results of each parameter combination. Materials and Methods: We acquired T2-weighted prostate MR images from 20 normal heathy volunteers and did a series of cross validations for every set of parameters of JLF. In each case, the atlases were rigidly registered for the target image. Then, we calculated their voting weights for label fusion from each combination of JLF's parameters (rpxy, rpz, rsxy, rsz, β). We evaluated the segmentation performances by five validation metrics of the Prostate MR Image Segmentation challenge. Results: As the number of voxels participating in the voting weight calculation and the number of referenced atlases is increased, the overall segmentation performance is gradually improved. The JLF algorithm showed the best results for dice similarity coefficient, 0.8495 ± 0.0392; relative volume difference, 15.2353 ± 17.2350; absolute relative volume difference, 18.8710 ± 13.1546; 95% Hausdorff distance, 7.2366 ± 1.8502; and average boundary distance, 2.2107 ± 0.4972; in parameters of rpxy = 10, rpz = 1, rsxy = 3, rsz = 1, and β = 3. Conclusion: The evaluated results showed the feasibility of the JLF algorithm for automatic segmentation of prostate MRI. This empirical analysis of segmentation results by label fusion allows for the appropriate setting of parameters.

  • The most common symptoms of COVID-19 are high fever, cough, headache, and fever. These symptoms may vary from person to person, but checking for "fever" is the government's most basic measure. To confirm this, many facilities use thermographic cameras. Since the previously developed thermographic camera measures body temperature one by one, it takes a lot of time to measure body temperature in places where many people enter and exit, such as multi-use facilities. In order to prevent malfunctions and errors and to prevent sensitive personal information collection, this research team attempted to develop a facial recognition thermographic camera. The purpose of this study is to compensate for the shortcomings of existing thermographic cameras with disaster safety IoT integrated solution products and to provide quarantine systems using advanced facial recognition technologies. In addition, the captured image information should be protected as personal sensitive information, and a recent leak to China occurred. In order to prevent another case of personal information leakage, it is urgent to develop a thermographic camera that reflects this part. The thermal imaging camera system based on facial recognition technology developed in this study received two patents and one application as of January 2022. In the COVID-19 infectious disease disaster, 'quarantine' is an essential element that must be done at the preventive stage. Therefore, we hope that this development will be useful in the quarantine management field.

Optimization of Dual Layer Phoswich Detector for Small Animal PET using Monte Carlo Simulation

  • As a basic measurement tool in the areas of animal models of human disease, gene expression and therapy, and drug discovery and development, small animal PET imaging is being used increasingly. An ideal small animal PET should have high sensitivity and high and uniform resolution across the field of view to achieve high image quality. However, the combination of long narrow pixellated crystal array and small ring diameter of small animal PET leads to the degradation of spatial resolution for the source located at off center. This degradation of resolution can be improved by determining the depth of interaction (DOI) in the crystal and by taking into account the information in sorting the coincident events. Among a number of 001 identification schemes, dual layer phsowich detector has been widely investigated by many research groups due to its practicability and effectiveness on extracting DOI information. However, the effects of each crystal length composing dual layer phoswich detector on DOI measurements and image qualities were not fully characterized. In order to minimize the DOI effect, the length of each layer of phoswich detector should be optimized. The aim of this study was to perform simulations using a simulation tool, GATE to design the optimum lengths of crystals composing a dual layer phoswich detector. The simulated small PET system employed LSO front layer LuYAP back layer phoswich detector modules and the module consisted of 8${\times}$8 arrays of dual layer crystals with 2 mm ${\times}$ 2 mm sensitive area coupled to a Hamamatsu R7600 00 M64 PSPMT. Sensitivities and variation of radial resolutions were simulated by varying the length of LSO front layer from 0 to 10 mm while the total length (LSO + LuYAP) was fixed to 20 mm for 10 cm diameter ring scanner. The radial resolution uniformity was markedly improved by using DOI information. There existed the optimal lengths of crystal layers to minimize the variation of radial resolutions. In 10 cm ring scanner configuration, the radial resolution was kept below 3.4 mm over 8 cm FOV while the sensitivity was higher than 7.4% for LSO 5 mm : LuYAP 15 mm phoswich detector. In this study, the optimal length of dual layer phoswich detector was derived to achieve high and uniform radial resolution.

The Mediating Effect of Regimen Distress in the Relationship between Medication Adherence and Glycemic Control in Men with Type 2 Diabetes Mellitus (제2형 당뇨병 성인 남성 환자의 약물치료 이행과 혈당 조절 수준 간에 치료 스트레스의 매개효과)

  • Purpose: The purpose of this study was to examine the mediating effect of regimen distress in the relationship between medication adherence and glycemic control in men with type 2 diabetes. Methods: A total of 116 patients with type 2 diabetes was recruited for the cross-sectional survey design. Data were analyzed using descriptive statistics, independent t-test, ANOVA, Pearson's correlation coefficient, and multiple regression using Baron and Kenny steps for mediation. Results: The mean score for medication adherence was 6.32, and the mean glycemic control level (HbA1c) was 7.47%. The mean score was 2.37 for regimen distress. There were significant correlations among medication adherence, regimen distress, and HbA1c. Regimen distress had a partial mediating effect (${\beta}$=.22, p=.005) in the relationship between medication adherence and HbA1c (Sobel test: Z=2.47, p=.013). Conclusion: Regimen distress was found to be associated with glycemic control in men with type 2 diabetes. Based on the findings of this study, nursing intervention programs focusing on decreasing regimen distress are highly recommended to improve level of glycemic control in patients with type 2 diabetes.

Effects of Isoleucine Supplementation of a Low Protein, Corn-Soybean Meal Diet on the Performance and Immune Function of Weanling Pigs

  • This experiment was conducted to investigate the effects of crystalline isoleucine supplementation of a low protein, corn-soybean meal diet on the performance and immune function of weanling pigs. Forty-five crossbred ($Duroc{\times}Landrace{\times}Large\;White$) piglets, weighing an average of $11.00{\pm}0.07kg$, were assigned to either a control diet containing 20% crude protein (0.64% isoleucine), a 16% crude protein diet without isoleucine supplementation (0.41% isoleucine) or a 16% crude protein diet supplemented with isoleucine (0.64% isoleucine). Reducing the crude protein content of the diet from 20 to 16% significantly (p<0.05) reduced both average daily gain and feed intake. Feed conversion also tended (p=0.07) to be poorer for a low protein diet without isoleucine supplementation. Isoleucine supplementation of the 16% crude protein diet increased both gain and feed intake to a level similar to that obtained by pigs fed the 20% crude protein diet (p>0.05). Blood urea nitrogen, serum total protein and serum globulin were significantly (p<0.05) higher for pigs fed the unsupplemented 16% crude protein diet than for pigs fed the isoleucine-supplemented diet or the control. Egg albumin antibody titre decreased significantly (p<0.05) in pigs fed the diet with isoleucine supplementation, whereas the antibody titre of pigs fed the low protein and low isoleucine diet was similar to that of pigs fed the diet containing 20% crude protein and 0.64% isoleucine. It was suggested that crystalline isoleucine supplementation of a low protein and low isoleucine diet improved pig performance but suppressed humoral immune function.

A Preliminary Study on the Psychopathological protocols of the Vietnam War Agent Orange Patients and Korean Civil War Wound Soldier -Focus on Rorschach Tests- (베트남 참전 고엽제 환자와 한국전쟁 참전 상이군인의 심리적 특성에 관한 예비 연구 -로샤 반응을 중심으로-)

  • This study was carried to examine overall psychopathological patterns of the Vietnam Civil War Veterans(Agent Orange patients)and Korean Civil War veterans(wounded soldier) using Rorschach tests. Test protocols of were compared with those of twenty Vietnam Civil War Veterans group and twenty-one Korean Civil War veterans. Rorschach protocols were administrated, scored, analysed according to the Exner's comprehensive system. Specifically, each Rorschach variable was divided into 3 clusters(e.g., core section, response determinants, and several special indices. The results of t-tests between the Vietnam Civil War Veterans group and the Korean Civil War veterans showed that Vietnam Civil War Veterans group were characterized as 1)cognitive rigidity, 2) ineffective problem solving, 3)emotional represion, 4)hypervigilance, 5)anxiety and 6) depressive tendency. These patterns suggest that still Vietnam Civil War Veterans experience the past trauma and lasting psychological seguela. Other implications and limitations of this study were discussed.

Cloning, Expression, and Characterization of Endoglucanase Gene egIV from Trichoderma viride AS 3.3711

  • Endoglucanase gene egIV was cloned from Trichoderma viride AS 3.3711, an important cellulose-producing fungus, by using an RT-PCR protocol. The egIV cDNA is 1,297 bp in length and contains a 1,035 bp open reading frame encoding a 344 amino acid protein with an estimated molecular mass of 35.5 kDa and isoelectronic point (pI) of 5.29. The expression of gene egIV in T. viride AS 3.3711 could be induced by sucrose, corn straw, carboxymethylcellulose (CMC), or microcrystalline cellulose, but especially by CMC. The transcripts of egIV were regulated under these substrates, but the expression level of the egIV gene could be inhibited by glucose and fructose. Three recombinant vectors, pYES2-xegIV, $pYES2M{\alpha}$-egIV, and $pYES2M{\alpha}$-xegIV, were constructed to express the egIV gene in Saccharomyces cerevisiae H158. The CMCase activity of yeast transformants $IpYES2M{\alpha}$-xegIV was higher than that of transformant IpYES2-xegIV or $IpYES2M{\alpha}$-egIV, with the highest activity of 0.13 U/ml at induction for 48 h, illustrating that the modified egIV gene could enhance CMCase activity and that $MF{\alpha}$ signal peptide from S. cerevisiae could regulate exogenous gene expression more effectively in S. cerevisiae. The recombinant EGIV enzyme was stable at pH 3.5 to 7.5 and temperature of $35^{\circ}C$ to $65^{\circ}C$. The optimal reaction condition for EGIV enzyme activity was at the temperature of $55^{\circ}C$, pH of 5.0, 0.75 mM $Ba^{2+}$, and using CMC as substrate. Under these conditions, the highest activity of EGIV enzyme in transformant $IpYES2M{\alpha}$-xegIV was 0.18 U/ml. These properties would provide technical parameters for utilizing cellulose in industrial bioethanol production.

The Dependences of Magnetoresistance and Exchange Biasing on Annealing temperature in Top and Bottom Type Specular Spin Valves with Nano-oxide Layers (나노 옥사이드 층을 가진 스펙큘라 스핀밸브의 자기저항 특성 및 교환바이어스의 열처리 온도 의존성)

  • We investigated magnetoresistance(MR) and exchange bias properties by annealing in top and bosom type spin valves (SV) with nano-oxide layers (NOL). In top SVs with NOL, MR ratio of 9.2% is obtained after postdeposition annealing at 250$\^{C}$. In bottom SVs with NOL, MR ratio of 10.1 % is obtained after postdeposition annealing at 250$\^{C}$. Therefore, specular reflection of the NOL in bottom SVs is higher than that of the NOL in top SVs. Exchange biasing of bottom SVs with NOL is 28% higher than that of bottom SVs without NOL after annealing. This enhancement of exchange biasing is thought to be due to the reduced magnetic moment of the pinned layer with NOL and enhanced (111) FeMn texture.
