용인지역 고등학생의 식품표시제에 대한 인식도 (Recognition of Food Labeling of High School Students in Yongin Region)

  • This study investigated recognition of food labeling of high school students (males 94 and females 85) in Yongin region. Recognition of food labeling was very high at 81.6%. For checking food labeling at the time of purchasing, 53.6% of the respondents always checked and the main reason was healthier food choice (49.2%). Satisfaction of food labeling was very low at 18.4%. In spite of very low satisfaction, 70.9% of respondents recognized necessity for education of food labeling. In terms of education method, respondents preferred 'school lecture' the most with 48.6%, which are in the following order: TV/newspaper/journal/book (37.4%) > internet lecture (10.1%) > education from parents (3.9%). Moreover, 83.2% of respondents answered 'positive change (ex. checking food labeling)' after getting education. Consequently, high school students had low level of utilization of food labeling at the time of purchasing. However, they showed high level of perception and educational need of food labeling as well as possibility of positive change after receiving education. Therefore, appropriate school education for food labeling may be able to lead a healthy eating habit of high school students.

고등학생의 학교급식 만족도와 메뉴 선호도 - 전북 익산시를 중심으로 - (School Food Service Satisfaction and Menu Preferences of High School Students - Focused on Iksan, Cheonbuk -)

  • The purpose of this study was to investigate school food service satisfaction and menu preferences of high school students in Iksan, Cheonbuk area. Self-administered questionnaires were completed by 692 high school students. Data was analyzed by SPSS 11.5 statistical software. Significant differences between genders were tested by the $X^2$ -test or t-test. The mean satisfaction score with school food service were 2.8 points out of 5 points. The satisfaction scores for menu (2.8 points) and food temperature (3.1 points) were low, but satisfaction with hygiene and facilities (2.7 points) and service (2.6 points) were lowest. The reason that high school students left food was 'the food taste is not good' (65.3%). The school food service areas needing improvement according to the subjects were food taste (39.3%), hygiene (24.3%). The mean score for menu preference was 3.7 points. The highest menu preference menu for the rice category was stirfried rice (bokeumbap), for the soup was meat soup, for the kimchi was Korean cabbage kimchi. Based on the results we made the following suggestions: To increase the satisfaction with school food service, changes in the school food service policies are needed at the government and school levels. Efforts should be made to improve the taste of school food. The school food service menu should be improved by taking into account the preferences of the users. There is also a need for the development of nutrition programs like nutrition consulting linking students and family, and nutrition camps that will encourage correct dietary habits.

한국전통음식의 계승·발전을 위한 초등학생의 인지도, 기호도와 개선 요구도 (Recognition, Preference and Improvement Requirement of Traditional Korean Food of Elementary School Students in Seoul)

  • This study focused the recognition and preference of Korean traditional food of elementary school students, in order to make effective educational materials about Korean traditional foods for the elementary school students. According to the responses of 356 elementary school students participating in this research, they understood the concept of traditional Korean food and recognized positively, but did not have much interest. However, the more they liked Korean food, the higher their interest in Korean traditional foods and the higher utilization rates of Korean traditional foods. Most elementary school students enjoyed Korean traditional food occasionally, especially soup, jjigae, tang and jeongol. Elementary school students suggested that complicated recipes should be improved for the succession of Korean traditional foods and that the class for cooking traditional foods in schools should be expanded.

학교급식 영양(교)사의 경험에 따른 로컬푸드 이용에 대한 인식 및 발전방향에 관한 질적 연구 (A Qualitative Research on Self-Awareness and Improvement in Local Food Utilization depending on the Experience of School Dieticians and Nutrition Teachers)

  • In the present study, we conducted in-depth interviews with school dieticians and nutrition teachers to determine the local foods they were aware of and their experiences with local foods. We also aimed to obtain more detailed measures for local food vitalization and suggestions for improvements. In-depth interviews were performed with 8 school dieticians and nutrition teachers, who stated that local food vitalization was needed for school food services, because it could be a foundation for securing safefood products, student healthi mprovements, environmental protection, and the establishment of a general consumption market. However, they were aware of a higher number of disadvantages than advantages in school situations and indicated the deterioration of the quality of food products as the biggest disadvantage. The most-suggested measurement items for local food vitalization in schools included improvement of the food distribution system, expansion of education, information sharing, prevention of monopolies, improvement of food-product quality, and mass production. In addition, it was suggested that school dieticians and nutrition teachers should invest efforts in the development of excellent recipes and varied diets utilizing local foods. Therefore, system supplementation is urgently required in order for school food service officials, and consumers, to efficiently introduce and vitalize local foods. It is also necessary to foster an environment that encourages trust-based relationships with producers to maximize the effect of system supplementation. This would be the foundation for improving the health of students, improving food-service quality, nutrition management, and vitalization of the regional economy in the future, and will positively affect students' food consumption patterns even after they become adults.

학교 급식에서의 중학생들의 식품 기호도 조사 (A Survey on the Food Preference of Middle School Studentsin School Food Service System)

  • A survey on meal preference from 287 middle school students was conducted with objective to enhance the quality of the school food service. In case of preference about cookery methods, snacks(15%) and fried food(15%) were ranked the highest while vegetable food showed the lowest. The component ratios of food items were 60.5% of vegetable food and 39.5% of meat food. The most preferred foods were 'Samkeybsal(49%)', 'pizza(41%)', 'spaghetti(33%)', 'pork cullet(31%)', and 'fried chicken (30%)'. In boiled rice, 'fried rice' and 'Bibimbab' were preferred most. The best choice of noodle was spaghetti. The highest ranked soup and stews were 'mandu and soup' and 'Kimchi stew'. Also, 'Galbijjim' and 'Sam-keybsal' showed high preference. In vegetable food, Kimchi was the lowest preference. In 'snacks', the highest preference was 'pizza'. The female students were more in favor of food items than males were except 'grilled foods' and 'steamed foods'. Above all, it is needed to do surveys about food preference periodically and active nutrition education for establishing proper eating habits for middle school students.

Impact of Brand-Name Fast Food Service on Students' Participation in School Lunch

  • The purpose of this study was to examine the impact of offering brand-name fast food at schools on student participation in school lunch. Two studies were conducted in Indiana, USA. In the first study, daily participation rate of 42 Indiana schools were compared between the days when brand-name fast food were offered and when they were not offered. The impact of brand-name fast food service on school lunch participation differed depending on the types of service offering brand-name fast food. Offering brand-name fast food solely as part of reimbursable meals or a-la-carte items was shown to induce students to the lunch option where brand-name fast food was offered. The second study examined the relationship of brand-name fast food service to monthly participation rate by analyzing secondary data of 1,282 Indiana schools using multiple regression analysis. Offering brand-name fast food was associated with monthly participation rate in school lunch only when schools offered them solely a-la-carte. Based on the results of two studies, it was concluded that offering brand-name fast food induced students from other lunch options to the options where brand-name fast food was offered on the day of service. However, increased or decreased participation in school lunch only on a few days could have not impacted average school lunch participation over a month. It is recommended that schools planning to offer brand-name fast food should make it available as part of reimbursable school lunches so that usual school lunch eaters would not be distracted to a-la-carte lines. Hepatoprotective Effects of Waxy Brown Rice Fermented with Agrocybe cylindracea

  • The methanol extract of waxy brown rice fermented with Agrocybe cylindracea was prepared. The extract was then freeze dried and fed to rats at the level of 0.5, 1.0, 2.0 g/kg body weight for 14 days, followed by the treatment with carbon tetrachloride for three consecutive days to induce hepatotoxicity. After sacrificing the rats, the enzyme activity of aspartate aminotransferase (AST), alanine aminotransferase (ALT), alkaline phosphatase (ALP), lactate dehydrogenase (LDH), and ${\gamma}$-glutamyl transpeptidase (${\gamma}$-GTP) in serum was determined. Biochemical analysis on serum for albumin, total protein, triglyceride, and total as well as HDL-cholesterol were carried out along with a histopathological study of liver tissues. Based on these data, we suggest that the waxy brown rice cultured with A. cylindracea may exert hepatoprotective activity against hepatotoxicity caused by chemicals such as carbon tetrachloride.

경남 사천지역 고등학생들의 학교급식 잔반에 영향을 미치는 요인에 관한 연구 (Factors related to School Food Waste in High School Students in Gyeongnam)

  • This study was undertaken to identify factors affecting school food waste generation using a questionnaire. The subjects were 254 high school students (male; 156, female; 98) in Sacheon, Gyeongnam divided into three groups of low (${\leq}1/week$), moderate (2~3/week), and high (${\geq}4/week$) according to the frequencies of food waste. The questionnaires consisted of general characteristics, anthropometric values, dietary habits, health-related behaviors, self-perceptions of food waste, snacking patterns, and nutrition knowledge. The main reasons behind food waste were 'too much food' in the low (20.9%) and moderate (32.2%) groups, and 'no appetite' in the high group (p<0.01). The main types of food waste were rice (44.2%) > fish (18.6%) > vegetables (14.0%) in the low group, rice (54.2%) > Kimchi/vegetables (15.3%) in the moderate group, rice (56.0%) > vegetables (20.0%) > Kimchi (16.0%) in the high group (p<0.01). School food waste was significantly affected by age, gender, monthly allowance, school grade, weight, BMI, regularity of meals, time of meals, type of breakfast, starting age of smoking, and cost for snacking.

수원지역 초등학교 고학년 아동의 급식 위생지식과 수행수준의 평가 (Evaluation of Food Hygiene Knowledge and Health Practice for Elementary School Students in Suwon)

  • The purpose of this study was to examine food hygiene knowledge and health practice levels of elementary school students at foodservice in the Suwon area. Of the 500 upper graders from three elementary schools, 486 students (97.2%) participated in the study. The questionnaire was composed of general characteristics including experience of serving food at school, food hygiene knowledge (25 questions), and health practice (18 questions). The results were as follows: The education experiences of food hygiene were below 40% though most students (88.1%) participated in providing food at foodservice. The percentage of correct answers in food hygiene knowledge was over 70% in most questions, but relatively lower in food preservation temperature (44.7%) and food poisoning bacteria (43.2%). When we examined food hygiene behavior of elementary school students in 5scales, the level of personal hygiene management was 4.04, sanitary management in food product was 3.62, environmental hygiene was 3.92, and foodborn disease and food microorganism was 3.81. Each level in each subarea was significantly related in the frequency of hygiene education experiences. Finally, the food hygiene knowledge was positively correlated with its behavior level in elementary school foodservice. These results suggested that the knowledge of food hygiene may affect its behavior, and therefore, regular education of food hygiene at home and school would be needed to improve food safety in foodservice.
