Chemical compositions and antioxidant characteristics of Korean maize hybrids in different cropping seasons

  • The climate change impact has facilitated double cropping system on maize production in Korea. The objectives of this study were to investigate the chemical composition changes according to the sowing dates on double cropping in 8 dent type, 2 intermediate type, and 4 semiflint type of Korean maize (Zea mays L.) hybrids and evaluate its antioxidant characteristics. Fourteen maize hybrids were sown on April 5 and July 5 of 2015. The average crude protein contents in dent and semiflint type maize sown on April 5 were higher than those sown on July 5 (p<0.05). There was no significant difference in average of total amino acid contents in all types of maize according to the sowing dates. Major amino acid in maize hybrids were glutamic acid followed by proline, alanine, and aspartic acid, which has no significant difference according to the sowing dates. The average crude fat contents in semiflint and intermediate type maize sown on April 5 were higher than those sown on July 5 (p<0.05). The average composition of saturated fatty acid in dent type maize sown on April 5 was higher than those sown on July 5. However, the average unsaturated fatty acid composition showed the opposite result (p<0.05). Fatty acids were mainly composed of linoleic acid (C18:2) and oleic acid (C18:1) in maize hybrids. The average oleic acid percentage of dent and semiflint type maize sown on April 5 were higher than those sown on July 5, while the average linoleic acid was lower. The average amylose content of all types of maize sown on April 5 was higher than those sown on July 5. On the other hands, the average carotenoid contents had the opposite result (p<0.05). There were no significant differences in total average of polyphenol contents and DPPH and ABTS radical scavenging activities in all types of maize based on the sowing date. Total polyphenol contents had positive correlation with DPPH (r=0.33, p<0.01) and ABTS (r=0.50, p<0.0001) radical scavenging activities. In conclusion, the kernel composition affects maize quality. These data are useful for maize breeding program and cultivation and food processing industry.

Effect of lighting regimes on amino acid and fatty acid contents of broiler chicken meat (점등체계가 육계 닭고기의 아미노산과 지방산 조성에 미치는 영향)

  • The study was carried out to investigate the effect of lighting regimes on performance and meat quality of broiler. A total of 912 chicks was divided into 2 groups with male (3 replications/group, 34 heads/replication) and female (3 replications/group, 42 heads/replication). Treatments were control (C, natural lighting), T1 treatment (24L), and T2 treatment (1~2d, 24L; 2~4d, 23L+1D; 4~16d, 16L+8D; 16~21d, 18L+6D; 21~42d, 23L+1D) by lighting regimes. Lysine content of male chicken meats at T2 treatment was lower compared to that of other treatments (p<0.05). There was no significant difference in all nonessential amino acid (AA) among treatments. Methionine content of female chicken meats at T2 treatment was lower compared to that of other treatments (p<0.05). The rate of C16:0, C16:1n7, and C18:1n9 of male chicken meat at T2 treatment was higher than that of other treatments (p<0.05), while C18:2n6 was lower at T2 treatment than other treatment (p<0.05). Mono-saturated fatty acid was the highest at T2 treatment, however, polysaturated fatty acid was the lowest at that treatment (p<0.05). There was no considerable difference in fatty acid composition of female chicken meat among treatments. Finally, lighting regime didn' affect on amino acid and fatty acid contents, and used possibly on energy reduction.

Physicochemical Composition of Baked Garlic (구운 마늘의 이화학적 성분)

  • This study was conducted to investigate the major chemical components of dried baked garlic powder. The proximate compositions of baked garlic powder as a dry-matter basis were 5.30% moisture, 36.89% crude protein, 12.60% crude fat, 4.36% crude ash, 2.88% dietary tiber, and 37.97% carbohydrate, respectively. The major free sugars were identified as fructose and galactose. In the analysis of the total amino acids, 18 kinds of components were isolated from baked garlic powder. The essential amino acid contained in baked garlic powder accounted for 36.60% of total amino acids, while the non-essential amino acids accounted for 63.40%. The major unsaturated fatty acids of total lipids were linoleic acid. The ratio of polyunsaturated fatty acids to saturated fatty acids (P/S ratio) was 5.77. Oxalic acid was the major organic acids. The contents of vitamin A, C, and E were 0.064, 1.452, and 0.037 mg%, respectively. The mineral contents of baked garlic powder were greater, in order of K>Mg>Ca>Na>Zn>Fe. The total polyphenol, flavonoids and thiosulfates contents of baked-garlic ethanol extract were $2.85{\pm}0.05$ mg/100 g, $0.97{\pm}0.04$ mg/100 g and $0.61{\pm}0.02$ OD/g, respectively.

Quality Comparison of Loin Muscles from Carcass of Grade B2 and D (상등급과 등외등급 우육의 품질특성 비교)

  • The experiments were carried out to investigate the aging effect between loin muscles from Hanwoo and Helstein. Two kinds of loin samples were prepared from the carcasses of grade B2 from Hanwoo and D from Holstein. The carcasses were chilled for 24 hours after slaughter. The carcasses was obtained by chilling the loin fort 1 day after wrapping it. On the other hand. was obtained divided by 500g and stored at 2$^{\circ}C$ for 11 days after air packing. In the case of fresh beef pH and lactic acid of grade B2 were lower than that of grade D. Hardness and chewiness of grade B2 were lower than that of grade D, but myofibrillar fragmentation index(MFI) of glade B2 were higher than that of grade D. Total concentrations of free amino acid of grade B2 were higher than those of D. The contents of monounsaturated fatty acid of grade B2 was lower than grade D, and monosaturated fatty acid/saturated fatty acid(MUFA/SFA) of grade B2 were higher than grade D. The contents of nonprotein nitrogen of the aged beef was higher than the fresh beef, and beef of grade B2 was higher than that of grade D. In case of aging beef. cooking loss of grade B2 was lower than grade D.

Chemical Composition of Perilla frutescens Britton var. Crispa Decaisne Cultivated in Different Areas of Korea -Part 1. Characteristics of Lipid and Fatty Acid Composition- (자소(紫蘇)의 산지별(産地別) 화학조성(化學組成) -제일보(弟一報) 지질(脂質)의 특성(特性) 및 지방산조성(脂肪酸組成)-)

  • Perilla (Perilla frutescens Britton var. Crispa Decasne) cultivated in three geographical areas of Korea, Gwangju, Taegu and Jeju, was analyzed for carbohydrate, lipid, protein, inorganic components and fatty acid composition. Carbohydrate, lipid and protein content of perilla seed ranged from 40 (Taegu) to 44% (Jelu), from 28 (Jeju) to 34% (Taegu) and from 15 (Gwangju) to 16% (Jeju), respectively. The overage contents of potassium, silicate, calcium, phosphate, iron, zinc, magnesium and mangane in the perilla seed varied between $426{\sim}446$, $197{\sim}229$. $124{\sim}136$, $46{\sim}56$, $30{\sim}49$, $42{\sim}45$, $40{\sim}45$, and $30{\sim}36mg%$, respectively and those variations different cultivation areas were not significant except iron. Saponification number, iodine value and acid value of the perilla oil were between $194{\sim}198$, $196{\sim}200$ and $4{\sim}5$, respectively. Those variations among the cultivation areas were not significant. The composition of the perilla oil was observed to be composed of $92{\sim}95%$ of triglyceride, $1.2{\sim}1.3%$ of phospholipid, $1.7{\sim}1.9%$ of unsaponifiables, $0.7{\sim}0.9%$ of free fatty acid, and $1.1{\sim}1.4$ linolenic, linoleic and oleic acid as $55{\sim}56$, $16{\sim}18$ and $16{\sim}20%$ of total fatty acids, but in phospholipid, the content of saturated fatty acids, $12{\sim}24$ of total fatty acid, was higher than that in triglyceride, $8{\sim}19%$ of total fatty acids. The content of saturated fatty acids in sterylester $(14{\sim}19%)$ was higher than that in sterylglycoside ($6{\sim}7%$ of total fatty acids). The variation in fatty acid composition was not significant in the composition of total fatty acid but a significant difference was observed in the composition of phospholipid, in which the content of palmitate ranged from 11.8%(Taegu) to 24%(Gwangju) of total fatty acids. No significant variation was found in the fatty acid composition among the cultivation areas, while a significant difference was observed in phospholipid.

Lipid Content of Different Section and Fatty Acid Composition of Mackerel, Pacific Saury and Sardine (적색육 어류의 부위별 지질 조성 및 지방산 함량)

  • Mackerel(Scomber japonicus), pacific saury (Cololabis saira) and sardine(Sardinops melanosticta) is widely distributed in coastal seawater of Korea, these fishes are not effective utilization as processing material cause by rapid lipid oxidation and off flavour. This study was attempted to lipid distribution in body section, whole body, meat, viscera, skin and head, and fatty acid composition of the oils obtained from these body section. The content of total lipid of mackerel, pacific saury and sardine were 12.48%, 12.79% and 13.81% respectively, and lipid contents in different body section of mackerel was muscle 2.31%, viscera 3.54%, skin 1.43% and head 5.20%, while in cause of sardine was muscle 4.17%, viscera 3.15%, skin 1.72%, and head4.77%. The major saturated fatty acids of mackerel, pacific saury and sardine oil were C$\_$16:0/(palmitic acid), C$\_$18:0/(stearic acid), C$\_$14:0/(myristic acid), and monoenoic acids was C$\_$18:0/(oleic acid), C$\_$16:1/ (palmitolic acid), C$\_$22:0/(erucic acid) and C$\_$20:1/(gadoleic acid), in cause of polyenoic acid was C$\_$22:6/(DHA, docosahexaenoic acid), C$\_$20:0/(EPA, eicosapentaenoic acid), C$\_$22:4/(behenic acid), C$\_$18:2/(linoleic acid) high quantity in order. When fresh oil extracted from mackerel, pacific saury and sardine was stored for 20 days at 5$\^{C}$, carbonyl and acid value of oil increased with storage day, but peroxide value decreased after 15 days.

Changes of Lipids in Flint Corn by a Growth Process I. A Study on the Non-Polar Lipid (경립종 옥수수의 성장과정에 따른 지질변화 I. 비극성 지질에 대한 연구)

  • In order to investigate the changes of lipid ingredient and fatty acid content in flint corn by a growth process, total lipids from flint corn(Zea may l.) were extracted, purified and fractionated into three lipid classes (neutral lipid ; NL, glycolipid ; GL, phospolipid ; PL) by silicic acid column chromatography (SACC). Non-polar lipid ingredients and fatty acid contents were determined by thin layer chromatography (TLC) and gas chromatography (GC). And non-polar lipid ingredients were quantitatived by TLC scanner. The crude oil among proximare composition increased 2.74% to 4.43% and NL and PL were fractionated by SACC increased 48.5% to 86.02%, 1.01% to 2.73%, respectively. But GL decreased 50.4% to 11.25%. Neutral lipid ingredients identified monoglyceride, were 1.1~3.7%, 11.9~16.1%, 2.3~4.2%, 16.7~21.5% and 58.5~63.6%, respectively. The major fatty acids of NL were linoleic (48.9~61.0%), oleic(22.3~34.2%), palmitic (10.3~11.7%) acids and stearic, linolenic acids were also detected as minor components. The ratio of total unsaturated fatty acid to total saturated fatty acid presented a higher percentage of 5.87~6.34. The physico-chemical characteristics of flint corn lipids were presented as specific gravity presented 0.920, refractive index 1.468, saponification value 191.2, unsaponificable matter 0.97%, acid value 0.58 and iodine value 124.6, respectively.

Carcass Characteristics and Chemical Composition of the Longissimus Muscle of Puruna and 1/2 Puruna vs. 1/2 Canchin Bulls Meat Quality of Bulls

  • This work was conducted to study the performance, carcass characteristics, chemical composition and fatty acid profile of the Longissimus muscle (LM) of first-generation Purunã (n = 7, PUR1), second-generation Purunã (n = 9, PUR2), and 1/2 Puruna vs. 1/2 Canchin (n = 13, PUCA) bulls finished in a feedlot. The animals averaged 18 months of age at the beginning of the experiment. The animals were kept in a feedlot from 18 to 22 months of age. They were fed twice a day with corn silage ad libitum, along with soybean meal, cracked corn, urea, limestone and mineral salt. PUR1 bulls had greater (p<0.05) final weight (496.0 kg) than PUCA bulls (449.2 kg). However, there was no difference (p>0.05) between PUR1 and PUR2 (472.0 kg), and between PUR2 and PUCA. Hot carcass weight was similar (p>0.05) among the different genetic groups. Hot carcass dressing percentage was similar (p>0.10) between PUR1 (50.4%) and PUCA (53.8%), and higher (p<0.10) than PUR2 (48.6%). Cushion thickness was greater (p<0.05) in PUCA bulls (27.12 cm). The other parameters were similar (p<0.05) among the three genetic groups. Total lipid and cholesterol contents were higher (p<0.01) in PUR2. Moisture, ash and crude protein contents were similar (p>0.05) among the three genetic groups. Saturated fatty acid (SFA) levels were higher (p<0.10) in PUR1 and PUR2 (51.58% and 50.41%, respectively). Polyunsaturated fatty acid levels were higher (p<0.05) in PUR1 and PUCA (6.50% and 8.29%, respectively). N-6, n-3 and PUFA/SFA ratios were higher (p<0.05) in PUCA. MUFA and n-6/n-3 ratios were similar (p>0.05) among the different genetic groups.

Sthdies on the Adaptability for Frozen fish Meat Paste Processing of the Fishes Cought in korean coastal Off-Shore Sea (냉동연육 원료로서연근해산 어류의 가공적성 검사연구)

  • Alaska Pollack (Theragramma), Mackerel (Socomber japonicus), yellow corvenia (Pseudosc iance manchurica) were dressed, and then meat was separated from the other parts through a fish meat separator. After dehydration, the meat was ground with a silent cutter, packaged in polyethylene bags, and stored at -15。C for days. Samples were taken at regular intervals throughout the storage period and investigated for changes in puality characteristics such as the amounts of nitrogenous compounds, degree of lipid oxidation, fatty acid composition, and organoleptic factors. The resrlts obtained in this study were as follows; 1. The volatile basic nitrogen[VBN] contents of Alaska pollack, and yellow corvenia meat pastes increased from 14.4, 11.2 and 10.8mg% to 41.6, 38.3 and 40.6mg%, respectively during a 120 day storage period, whereas the trimethylamine oxide nitrogen [TMAO-N] contents decreased from 117.2, 12.8 and 17.2mg% to 40.3, 2.6 and 7.1mg% during the same period. 2. The TBA value of the mackerel meat paste showed a maximum peak after 60 days, and then decreased gradually, whereas the TBAvalues of the alaska pollack and yellow corvenia meat pastes increased steadily during the same period. The acid values of the meat pastes increased during the storage period, while the iodine values decreased. 3. The fatty acid composition of the total lipid of the meat pastes changed considerably during ghe 120 days storage period : saturated fatty acids in the total lipid such as myristic, palmitic, and stearic acid increased, while unsaturated fatty acids such as linoleic, gadoleic, eicosapentaenoic, erucic and docosahexaenoic acid decreased steadily. The initial percentage contents of the unsaturated fatty acids in the total lipid of the Alaska pollack, mackerel, and yellow corvenia meat pastes were 87.2%, 63.9%, and 75.9% respectively. However, the contents decreased to 46.0%, 42.5% and 51.3% after the 120day storage period. 4. The color of the meat pastes changde gradually into dark brown. L values of the meat paste measured with a thistimulus colorimeter decreased steadily during the storage period, while a and b values increased during same period. 5. Judging from the results of organoleptic evaluation on the fish odor, color and overall acceptability, significant difference were found between the odor and color of the mackerel and those of the yellow corvenia meat pastes. Overall acceptability score of yellow corvenia was higher than that of Alaska pollack or mackerel meat pastes.

Effect of Simulated Acid Rain on Fatty Acid Composition and Antioxidant System in Garden Balsam(Impatiens balsamina L.) (인공산성비가 봉선화(Impatiens balsamina L.)의 지방산 구성 및 항산화 작용에 미치는 영향)

  • The effects of simulated acid rain (SAR) on fatty acid composition and biochemical defense responses of plant was investigated. Garden balsam (Impatiens balsamina L.) was exposed to four pH levels (5.6, 4.0, 3.0, 2.0) of SAR and placed in the growth chambers for 2 weeks. SAR drastically inhibited chlorophyll content of garden balsam. The level of $H_2O_2$ was significantly increased by SAR. As pH levels decreased from 5.6 to 2.0, the ratio of unsaturated to saturated fatty acids of garden balsam was increased. Changes of three major polyamines (putrescine, spermidine and spermine) of garden balsam leaves were observed. All of the polyamine contents were increased with SAR. Catalase activities of the plant affected by SAR were increased as the pH decreased. The results indicate that the application of SAR generates oxidative stresses from the garden balsam and retards the plant growth significantly. A biochemical protect mechanism might be activated to neutralize the oxidative stresses generated through SAR.
