Fatty Acid Composition and Mineral Content of Marketed Mackerels (시판 고등어의 지방산 조성 및 무기질 함량)

  • We investigated the general composition, fatty acid composition and mineral content of ten kinds of marketed(3 domestic and 7 imported) mackerels. The moisture contents of domestic mackerels ranged from $62.9{\sim}67.8%$, and those of imported mackerels ranged from $61.1{\sim}74.7%$. Ash content was less than 2% in all mackerels. Crude protein content was greatest in Oman mackerel(24.1%) and lowest in UK mackerel(19.7%). Lipids contents ranged from 1.4%(Chile mackerel) to 19.7% (UK mackerel); mackerels with high lipid content tend to have low moisture content. Saturated fatty acids ranged from 18.2% to 31.1% of the total fatty acids content. The mackerel imported from Chile(26.8%) contained the least monoenes, while UK mackerel monoene content(48.7%) was highest. Polyenes were lowest in Tong-yeong mackerel(30.9%) and highest in Chile mackerel(50.0%). DHA content was highest in Chile mackerel(36.4%) and lowest in USA mackerel(14.6%). The mineral content of mackerels were in increasing order; K, Na, Mg, Ca, Fe, Zn and P. The K, Na, Mg and Ca content ranged from $261{\sim}420$, $261{\sim}420$, $37{\sim}176$, $34{\sim}49$ and $5{\sim}22mg/100g$, respectively.

Effect of Feeding Dietary Tangerine Byproduct for a Long Time on Chemical Compositions of Loin for Crossbred Pig (감귤 부산물 첨가 사료를 장기간 급여한 교잡종 돼지고기의 성분 특성)

  • The purpose of this research was to study the chemical compositions of pork for crossbred pig (female, 198 days old $102{\sim}118kg$) that were fed with tangerine byproduct from pregnancy through the whole rearing period. The samples for this study consisted of the pork from give the number of control pigs not fed with tangerine byproduct($T_0$), and the pork from give the number of study pigs fed with 8% tangerine byproduct during the whole breeding period, from the early pregnancy through the young, growing and finishing periods ($T_1$). Backfat thickness of the crossbred pigs was significantly decreased by feeding tangerine byproduct (p<0.05). The proximate composition, minerals, total amino acid, saturated fatty acid vs. unsaturated fatty acid and vitamin $B_2$ contents of loins were not significantly different among $T_0\;and\;T_1$, (p>0.05). Although those differences were not significant statistically, the tangerine byproduct tended to increase the amount of vitamin $B_1$, and decrease the crude fat and cholesterol contents.

Nutrient Composition and Antioxidative Effects of Young Barley Leaf (보리순의 영양성분과 항산화 효과)

  • This study was conducted to investigate the proximate composition and antioxidative activities of young barley leaf(YBL). YBL powder(all w/w) was 2.98% moisture, 17.13% crude protein, 4.00% crude fat, 10.72% crude ash, and 65.17% carbohydrate. The contents of total, insoluble, and soluble dietary fiber were $36.62{\pm}2.33$, $19.05{\pm}1.04$, and $17.57{\pm}1.01g/100g$, respectively. The essential and non-essential amino acids contained in the YBL powder accounted for 46.56% and 53.44% of the total amino acids, respectively. The major unsaturated fatty acid was linolenic acid. The ratio of polyunsaturated fatty acids to saturated fatty acids was 4.84. Only tartaric acid was detected. The contents of vitamins A, C, and E were 0.761, 398.05, and 0.936 mg%, respectively. The mineral contents of YBL powder were in the order of Na$IC_{50}$ value for the DPPH radical scavenging of the YBL ethanol extract was $365.74{\pm}6.98mg/mL$. The antioxidative index was high and was similar to that of t-butylated hydroxytouene. These results suggest that YBL can be recommended as a baby vegetable of high nutritional quality and antioxidative properties.

Effect of cold plasma treatment on the quantitative compositions of silkworm powder

  • Atmospheric-pressure plasma technique is a technology for sterilizing agricultural product. In this study, dielectric barrier discharge plasma was applied to silkworm powder for 1 to 5 h with less than 2 ppm of $O_3$ and $NO_2$. Quantitative compositions including proximate contents, mineral and heavy metal contents, fatty acids, vitamins, and DNJ contents were measured. Proximate contents of silkworm powder were protein (57.2%), fat (9.9%), fiber (4.6%), ash (10.1%), and moisture (5.7%). These compositions were not affected by the treatment of plasma. Silkworm powder has 5 abundant minerals potassium (K), phosphorus (P), sulfur (S), calcium (Ca), and magnesium (Mg). Among these minerals, plasma treatment decreased the contents of P and S sharply from 732.3 to 176.8, and 492.7 to 185.2 mg/100g, respectively. Heavy metal contents including lead (Pb), cadmium (Cd), arsenic (As), and mercury (Hg) were not detected in the silkworm powder. Five vitamins such as ascorbic acid (13.6 mg/100g), riboflavin (5.4 mg/100g), ${\beta}$-carotene (1.8 mg/100g), niacin (0.6 mg/100g), and thiamine (0.4 mg/100g) were not significantly changed by plasma treatment. Silkworm powder is composed of 30 parts saturated fatty acids and 70 parts unsaturated ones. The fatty acid composition was not significantly changed by plasma treatment. The DNJ content of silkworm powder (3.72 mg/g) was also nearly constant within the experimental condition of plasma treatment.

  • The purpose of this study was to investigate the effect of frying methods of chickens ; deep-fat frying with raw chickens(A), with pre-cooked chickens(B) on the physicochemical properties of frying oil and fried chickens in the school foodservice. Acid, peroxide and TBA value of frying oil were significantly increased by increasing the number of frying times and those of method A were higher than those of method B. On the contrary, Iodine value was decreased significantly with increasing the number of frying times but there is no significant difference between method A and B. In fatty acids, the content of saturated fatty acid increased while that of unsaturated fatty acid decreased as the frying times increased. Also viscosity, yellowness and redness increased significantly by increasing the number of frying times. The content of vitamin $B_1 $, of fried chicken by the frying methods was not significantly different, but vitamin $B_2 $the method A was higher than by the method B. Ca, P, Na, K and Fe contents of fried chickens by the method A were higher than those by the method B.

The Quality Improvement of Emulsion-type Pork Sausages Formulated by Substituting Pork Back fat with Rice Bran Oil

  • The effects of pork back fat (PBF) substitution with various concentrations of rice bran oil (RBO) (50%, 45%, 40% and 35%) on the physicochemical characteristics and sensory attributes of emulsion-type pork sausages were studied. The modified pork sausages were compared with control sausages produced using PBF only. The sausages with RBO had significantly lower (p<0.05) moisture content than the control sausages. Sausages made from PBF substituted with 40% RBO showed the lowest cooking loss. Substitution of PBF with RBO had no significant effect on the emulsion stability of pork sausages. All sausages with RBO showed significantly lower (p<0.05) hardness values than control sausages. Sausages with RBO also had significantly higher values (p<0.05) of unsaturated fatty acid and polyunsaturated to saturated fatty acid contents than the controls. RBO substitution had no effect on the flavor intensity of sausages, but it improved the tenderness and produced a softer texture.

Fatty Acid Composition and Oxidation of the Lipids in Sweetfish Cultured in Korea (국내 양식 은어 지방의 지방산 조성 및 저장 중 지방 산화)

  • The purpose of the study was to determine fat contents and fatty acid compositions of the lipids in sweetfish cultured in Korea and lipid oxidation during storage at refrigeration temperature ($2^{\circ}C$). Whole or minced sweetfish were vacuum-packaged or treated with ascorbic acid. Changes in thiobarbituric acid (TBA) values, peroxide values (PV) and free fatty acid (FFA) in the fish were determined. Sweetfish contained 72.5% moisture, 5.3% lipid and 1.1% ash. Palmitic acid was the highest (27.4% (w/w) of the total fatty acids) among the saturated fatty acids. Total monounsaturated fatty acids (MUFA) were 33.9% and oleic acid (21.0%) was the highest, followed by palmitoleic acid (7.8%). Total PUFA were 28.2%. Predominant PUFA were linoleic acid (8.1%), EPA (5.7%) and DHA (12.1%). TBA values and PV of the whole sweetfish treated with ascorbic acid and vacuumpackaged were not different from the control. TBA values of the minced sweetfish treated with ascorbic acid were significantly lower than the other groups (p<0.05). PV of the fish treated with ascorbic acid and vacuum packaging were significantly lower than the other groups (p<0.05). The result of this study suggests that cultured Korean sweetfish may be a good source of unsaturated fatty acids including EPA and DHA, and vacuum packaging and addition of ascorbic acid may protect lipids from oxidation.

Fatty Acid Composition of Fry Mirror Carp (Cyprinus carpio) Fed Graded Levels of Sand Smelt (Atherina boyeri) Meal

  • The effect of replacement of fish meal (FM) in diets with sand smelt meal (SSM) on fatty acid composition of carp fry, Cyprinus carpio, was examined. Five isonitrogenous and isoenergetic (38% crude protein, $15.75\;kJ\;g^{-1}$) diets replacing 0, 25, 50, 75, and 100% FM protein by SSM protein were formulated. Each diet was randomly allocated to triplicate groups of fish in aquaria, and each aquarium was stocked with 20 fish (initial average weight of $0.300{\pm}0.65\;g\;fish^{-1}$). Fish were fed twice daily to apparent satiation for 13 weeks. Results indicated that final weight, specific growth rate and feed efficiency ratio of fish fed with different SSM replacement diets did not differ significantly (p>0.05) from fish fed the control diet, except for 100% SSM level. No significant differences were noted among experimental treatments on dry matter, protein, lipid and ash contents of the fish body composition (p>0.05). Fatty acid analysis showed that saturated fatty acids in fish muscle significantly decreased, but monounsaturated fatty acids (MUFA) and polyunsaturated fatty acids (PUFA) did not change with increasing dietary SSM. However, some changes also could be observed for some particular fatty acids in experimental fish. For example, the amounts of 15:0, 17:0, 18:1n-7, 18:2n-6 and 22:5n-3 significantly increased, but 16:0, 18:1n-9, 18:3n-3 and 20:1 n-9 significantly decreased with increasing dietary SSM. Total n-6 PUFA increased with increasing dietary SSM, but total n-3 PUFA were not changed in muscle of fish fed the experimental diets. The ratio of n-3 to n-6 was not affected significantly in muscle of fish fed the experimental diets containing different proportions of SSM, including the control diet.

Fractionation and Quantitative Analysis of Lipid Components in Korean Yam (Dioscorea) Tubers (한국산 마의 지질 성분의 분리 및 분석)

  • Using the lipids extracted from Korean yam(Dioscorea) tubers, D. batatas, D. aimadoimo and D. japonica, fractionation and identification of lipid components and their fatty acid compositions were analysed. Lipid contents determined by Folch's method in D. batatas, D. aimadoimo and D. japonica were 11.0 mg/g, 11.4 mg/g and 6.6 mg/g, respectively. Lipids extracted were fractionated into neutral lipid, glycolipid and phospholipid by silicic acid column chromatography. The content of neutral lipid was over about 60% in lipid. Neutral lipid was composed of sterol ester, triglyceride, 1,3-diglyceride, 1,2-diglyceride and monoglyceride. Main constituents of glycolipid were acylsterylglycoside, monogalactosyldiglyceride, sterylglycoside, digalactosyldiglyceride and sulfolipid, and phospholipid contained phosphatidylethanolamine, phosphatidylcholine and phosphatidylinositol. The fatty acids of the total lipid and its three lipid fractions were analyzed by GC. The major fatty acids were palmitic and linoleic acids. Content of the saturated fatty acids was less than that of the unsaturated fatty acids.

Proximate and Fatty Acid Compositions of Commercial Domestic and Imported Melania Snails Semisulscospira sp. (시판 국내산 및 수입산 다슬기(Semisulscospira sp.)의 일반성분 및 지방산 조성)

  • The proximate, fatty acid and dimethyl acetal (DMA) compositions of domestic and imported melania snails Semisulcospira sp. being sold commercially were studied. The protein content ranged from 8.09% (China) to 11.3% (North Korea). The lipid content ranged from 0.84 (China) to 2.36% (North Korea). Domestic melania snail had protein (10.5%) and lipid (1.02%) contents intermediate between those of the two imported melania snails. The prominent fatty acids were 16:0 and 18:0 saturated fatty acids, 16:1n-7, 20:1n-11, 18:1n-9, 18:1n-7 and 16:1n-9 monounsaturated fatty acids, and 20:4n-6, 20:5n-3 (eicosapentaenoic acid, EPA), 22:2 non-methylene-interrupted diene (NMID), 18:3n-3, 18:2n-6 and 22:5n-3 (docosapentaenoic acid, DPA) polyunsaturated fatty acids (PUFA). The percentage of n-3 PUFA was higher in domestic (19.6%) and North Korean (imported, 19.5%) snails than in that from China (imported, 16.8%), while the n-6 PUFA level was higher in snails from China (21.2%) and domestic snails (14.7%) than in that from North Korea (9.87%). The total DMA, i.e., 18:0 DMA, 16:0 DMA and 18:1 DMA was 7.30, 7.27, and 4.86% domestic snail and those from China and North Korea, respectively. These results suggest that melania snail is a source of n-3 PUFA, and DMA derived from plasmalogen.
