푸드뱅크 조리기탁식품의 안전성 확보를 위한 위생관리 실태 평가 (Evaluation of the Perceived Performance on Sanitary Management of Cooked Foods in Foodbanks)

  • A survey was implemented to suggest basic data for assuring the safety of cooked foods in foodbank operations. A questionnaire consisted of total 48 items including general characteristics, basic inputs and perceived importance/performance of sanitary management. One hundred twenty-eight responses among the 267 nationwide foodbanks were used for the statistical analysis. About forty-one percent of foodbanks was operated a period of 1-3 years and 43.0% of them were managed by social welfare organizations. The number of staff was only 0.5 person per operation with the whole responsibility and 1.0 with additional work, and thus most of the work was managed by volunteers. Job satisfaction was shown to be moderate and was affected by specialty and salary mostly. The facilities and equipment in foodbanks were not enough to operate and freezers/refrigerators were the top priority to supplement. Most of the respondents attended a nationwide level sanitary education program (79.7%); but complained not enough frequency of education (90%). The sanitary status of the donated foods was considered as satisfactory but some safety practices had to be improved, including personnel expenses and operating costs in the district level, a sanitary awareness of the donors and a general management of the facilities arid equipment. An assessment on sanitary management resulted in an overall average of 4.45 out of 5 points in importance and 3.85 in performance showing the high level of sanitation perception in foodbank managers. From the IPA analysis, the fields found to be improved were sanitation management during cooking and temperature control as well as cleanliness and sanitation of both transport vehicle and refrigerator/freezer. To secure the food safety in foodbanks, consequently, personnel support, supplement of facilities and equipment, intense sanitation education and development of sanitation management program is needed.

집단급식소의 위생관리에 대한 실태 조사 (A Survey on the Sanitary Management in Food Service Institutions)

  • 전라북도내 사업체, 병원, 학교, 사회복지시설 등 집단급식소 설치 신고를 한 집단급식소 98개 업소를 대상으로 설문조사를 실시하여 집단급식소의 위생관리 실태에 대하여 조사하였다. 식기 기구 및 용품의 소독 방법은 식기, 수저, 행주의 경우 열탕 소독이, 주방기기, 냉장고, 냉동고, 도마, 칼의 경우 소독제 방법이 많이 사용되었다. 위생복(34.4%), 위생모(34.4%), 냉장고(32.6%), 냉동고(31.8%)의 순으로 소독을 하지 않는 경우가 많았다. 위생교육 횟수는 월 1회가 56.1%로 가장 많았고, 월 2-3회 12.2%, 주 1회 11.3%순 이었다. 집단급식소의 일지 작성율은 해동일지(73.8%), 창고 및 화장실 점검일지(60.5%), 기구 등의 세척 및 살균 일지(54.5%),등의 순으로 많이 작성되었고, 조리장 위생관리 점검표(9.5%), 조리 종사자 위생점검 일지(10.8%), 위생교육 일지(8.4%) 등은 작성율이 낮았다. HACCP 제조 도입시 급식시설과 설비의 부족(54.1%)과 HACCP 제도에 대한 이해 부족(17.3%)이 주요 장애 요인이었다. 주방기기 및 기구 취급, 개인위생, 급 배수 시설 및 쓰레기 처리, 건물의 구조, 배치 및 시설관리에 대한 위생관리는 잘 이루어지고 있지 않았다. 집단급식소의 영양사들은 종사자의 개인위생과 급 배수 시설 및 쓰레기 처리에 대한 위생관리에 대해서는 잘 인식하고 있었으나 주방기기 및 기구 취급과 건물의 배치 및 시설의 위생 관리에 대해서는 인식이 부족하였다. 따라서 발생률이 계속 증가하는 식중독의 발생을 감소시키기 위해서는 위생관리 체계의 도입과 위생관리에 대한 영양사 인식의 전환이 필요하였다.

의정부지역 간이상수도의 위생학적 조사 (A Sanitary Survey on the Simplified Water Supplies by Regional Groups in Uijoungbu)

  • This study was designed to investigate the quality of the simplified water supplies by regional groups in Uijoungbu. For this objective physicochemistric and microbiological experiment were performed. Simplified water in Uijoungbu(Howondong Darakwon, Singokdong Chudong, Songsandong Mangadae, Songsandong Gacbawe, Songsandong Gusungmal, Songsandong Baebul, Ganeung3dong) tested by this study physicochemistric elements suited the test. However, Songsandong Mangadae exceeded the minimum level suggested as $NO_3-N(10mg/{\ell})$. The population of general bacteria were exceeded the minimum level suggested as drinkable water(less than $100CFU/m{\ell}$). Some simplified water in Uijoungbu were proven to be contaminated.

폐기물 처리시설에 관한 소도시 시민의 의식 조사 (Citizen's Attitude to Treatment Facilities of Municipal Solid Waste in Small City)

  • A questionary survey was conducted to investigate citizen's attitude to treatment facilities of municipal solid waste in Miryang during 8. June of 1998 and 22 June of 1988. Collection effiencies was 86.7%, as 260 individuals of the 300 individuals. The survey showed that 43.0% of answers recognized seriousness of problem of the waste treatment and 33.1% of respondents concerned about recycle of organic waste. 40.8% of total answers said that they most hated landfill site among waste treatment facilities, and most citizens wanted as much distant as possible from waste treatment facilities. It was investigated that the greater part of respondents wanted the greatest compensation. About 58% of respondents was opposed to complete waste treatment facilities. 36.2$ among answers wanted establishment of waste treatment facilities in an industrial complex or an industrial area. The majority of respondents was willing to increase recycle rate and recognized seriousness of landfill site security. The majority of citizens do not trust environmental administration of Miryang City and they think that democracy and open of administration need for overcome MINBY.

매니큐어 중 Di-n-butyl Phthalate 사용실태 조사연구 (A Survey of Di-n-butyl Phthalate Used in Manicures)

  • This study was performed to survey and evaluate the contents of di-n-butyl phthalate(DBP) in manicures by GC/FID and GC/MSD. The tested samples were 61 domestic and 41 imported manicures circulating in Seoul and Kyonggi-Do area. DBP was detected respectively in the rate of 93.4% for domestic manicures and 43.9% for imported manicures. The contents of DBP in domestic and imported manicures were 11.6g/17g~74.7g/kg and 28.2g/kg~78.9g/kg respectively. DBP was used in domestic and imported manicures with the exception of Japan products. Therefore, the alternative material for DBP should be developed and used to ensure consumers' safety.

대구지역 Taxi 운전자의 신체자각증상 호소율 (The Complaining Rate of Taxi Drivers' Physical Self-Consciousness Symptoms In Taegu (Korea))

  • This paper investigated the symptoms of taxi drivers' physical self-consciousness. As the subjects for the study, 374 taxi drivers participated in the survey for three months, and its result showed as follows:1. In the items of the physical symptoms, the eye's fatigue was indicated as a greatest complaint, and the corporate-taxi drivers showed a higher complaint rate than the owner-taxi drivers. 2. The survey also indicated that taxi drivers over 50 years old showed the highest complaining rate of eye's fatigue, shoulder pain, loins pain, and severe headache. Feelings of burning on empty stomach was the highest complaint factor in the age group between 30 and 39 years old, and pain and burning feelings in eyes in the age group between 20 and 29 years old.3. In the study of the complaining rate of physical symptoms by working hours, the nighttime driers complained of their self-consciousness symptoms of leg and knee pain, shoulder pain, benumbed legs, and these drivers also showed a relatively high complaint rate resulting from the responsibility of living expenses.

태안 해안국립공원의 환경보전을 위한 환경현황조사 (A Survey on the Environmental Substances for Environmental Preservation of Tae- An Seashore National Park)

  • The objective of this study is to survey environmental substances for the preservation of the seashore national park. The sea water near Tae- An national park was clear but the water of the harbor was polluted with wastewater from ships and sewage. The sea water at the bathing resorts was clear but may be polluted by wastewater from near by sea water. The public environmental index containing air, water, noise, open space and land scape of Tae- An seashore national park was high The concentration of total suspended solids in the air was lower than that of standard levels. When the surroundings of the national park are developed, the effects of development will be estimated.

대전$\cdot$충남지역 학교급식의 위생관리 실태조사 (A Study on the Sanitary Management of School Foodservice Operations in Daejeon and Chungnam)

  • This study was conducted to evaluate the sanitary management status of school foodservice in Deajeon and Chungnam and to suggest basic data for sanitary improvement. A questionnaire was used in this study as a survey method. The subjects consist of 529 dietitians that are employed in the school ($primary{\cdot}middle{\cdot}high\;school$) foodservice. These results may be summarized as follows : $71.0\%$ of surveyed school foodservices managed separately place for contamination and uncontamination. $91.5\%$ didn't maintain adequate temperature at kitchen. A holding rate of hygiene utensils is lower in Chungnam than Daejeon. The dietitian group aged 30-34 showed significantly higher scores than other groups in personal hygiene of employees. The dietitian group graduated from a college showed significantly lower scores than other groups in purchasing & receiving, preparation, storage, food remains & waste, kitchen utensils and equipments and personal hygiene. It was significant to sowing, personal hygiene and facilities & structure by Daejeon and Chung-nam. In serving, Daejeon showed significantly lower scores than Chungnam. In personal hygiene, facilities and structure, Chungnam showed significantly lower scores than Daejeon. The foodservice group (started < 1990) showed significantly lower scores than other groups ($started{\ge}1990$) in preparation.

서울.경기지역 학교급식에서 과일류의 전처리시 세척 및 소독 방법에 대한 조사 (A Survey of Washing and Sanitizing Methods for the Pre-preparation of Fruits at a School Foodservice in the Seoul and Kyunggi Area)

  • The principal objective of this study was to evaluate the sanitary management status of chlorine sterilization methods used for raw fruits in a school foodservice, and to suggest basic data for sanitary improvements in the quality of raw fruits. A questionnaire form predicated on HACCP standards was developed and utilized for self-reported evaluations of dietitians regarding their sanitary management practices. The subjects consisted of 257 dietitians that were employed in school (elementary middle high school) foodservices. The collected data were analyzed with the SAS package. According to the results of this study, it was deemed necessary that optimized sterilization and washing methods for good microbiological safety and quality of strawberries and bananas in school foodservice should be determined. Some strategies for future improvement were also suggested. They included the following: (1) Improvement of policy for assuring the quality of raw fruits by designing some sanitation standards and specifications for raw fruits; (2) Strengthening the research and accumulation of background data regarding methods for the sanitation of raw fruits; (3) Enforced improvement of personal hygiene for dietitians and employees; (4) Use of a variety of methods in sanitary education and employee training.

분류식 오수관내 퇴적특성과 퇴적방지를 위한 설계법 고찰 (The Characteristics of Sediment and a Design Method for Preventing Sediment in domestic sanitary sewers)

  • This study is the result of a field survey of four sewer networks selected from in domestic sanitary sewers. The main purpose of this study is to understand the characteristics of sediment in domestic sanitary sewers and to verify sewer design criteria using minimum Shear Stess for preventing sedimnet. This investigation was carried out at a total of 22 points in the four areas. The characteristics of the sanitary solids that were sampled for suspended solids and bedload matter showed a specific gravity of 1.09, a median particle size of 1.26mm, and 88.9% organic contents. On the other hand, deposited sediment was found at 6 points out of the 22 monitoring points. The analysis results of disposed sediment showed a specific gravity of 2.16, a median particle size of 1.31mm, and 15% organic contents. In flow velocity, the majority of deposited sites have under 0.6m/s. However, one-site which was in large-diameter collector sewers, has recorded over 0.6m/s. The analysis results of tractive force showed that the ability of tractive force has to be $1.5{\sim}2.0N/m^2$ to prevent sediment in domestic Sanitary sewers. In conclusion, to prevent sediment it is necessary to apply a design velocity criteria higher than 0.6m/s in the large diameter collector sewer.
