경북 일부지역 중학교 점심급식의 소금 및 나트륨 함량 분석 - 삼삼급식소 적용을 위한 기초조사를 중심으로 - (Study on the Salt and Sodium Content of Middle School Lunch Meals in Gyeongsangbuk-do Area - Focus on Application of 'SamSam Foodservice' -)

  • 본 연구는 경북지역 남녀공학 중학교에서 제공된 점심급식의 소금 및 나트륨 함량에 대해 알아보기 위해 칠곡지역 4개 중학교를 대상으로 한 끼당 총 소금 및 나트륨 함량과 한끼 소금 함량 기여도를 조사하였으며 그 결과는 다음과 같다. 조사대상 학교의 한 끼당 전체 평균 소금 함량은 4.41g이며, 전체 평균 나트륨 함량은 1,736.02 mg이다. 4개 학교에서 제공한 총 40개의 식단 중 1개 식단을 제외한 39개(97.5%) 식단이 식약처에서 권고하는 중학교 '삼삼급식소' 나트륨 함량 기준(1,000 mg)을 초과하는 것으로 나타났다. 특히 조사기간 동안 제공된 점심급식 중 나트륨 함량이 가장 높은 식단은 2,827.56 mg으로 나타났다. 점심급식에서 제공된 메뉴를 총 16개 군으로 분류하여 음식군별로 제공량, 염도, 소금 및 나트륨 함량을 조사한 결과 전체 평균 염도는 1.06%이며, 전체 평균 소금 함량은 0.74 g이다. 조사대상 학교에서 점심급식으로 제공된 음식을 밥류, 일품밥 면류, 국 탕 찌개류, 주찬, 부찬, 김치류, 후식류 등의 7개 메뉴 유형별로 구분하여 한 끼 소금 함량 기여도를 조사한 결과 일품밥 면류(40.56%), 국 찌개류(23.23%), 김치류(20.30%), 주찬류(18.13%), 부찬류(11.36%) 순으로 높게 나타났다. 조사기간 동안 제공된 학교별 국 탕 찌개류의 염도는 전체 평균 0.75%이며, 38개 국 탕 찌개 중 12개(32.0%)가 식약처 국염도 권고기준 0.8%를 초과하는 것으로 나타났다. 일품밥 면류와 주찬류 중 나트륨 함량이 높은 메뉴를 살펴본 결과 일품밥 면류는 쌀잔치국수(1,056.49 mg), 자장볶음밥(976.48 mg), 오므라이스(821.33 mg), 굴소스야채볶음밥(791.00 mg), 비빔밥(744.46 mg) 등의 순으로 높게 나타났으며, 주찬류는 오징어미더덕찜(1,120.88 mg), 돈육버섯볶음(626.84 mg), 김치돈육볶음(563.28 mg), 매운어묵조림(498.01 mg), 떡볶이(497.45 mg) 등의 순으로 조사되었다. 이상의 연구 결과를 통해 중학교 급식 이용자의 중식을 통한 나트륨 섭취량 감소를 위해서는 한 끼 총나트륨 함량을 1,000 mg 이하 수준으로 제공하는 것을 목표로 하는 '삼삼급식소' 사업에 학교급식이 적극적으로 참여하여 학교급식에 나트륨 저감화가 정착되도록 힘써야 할 것으로 생각한다.

환자의 상태에 따른 병원급식 서비스 평가 (The Evaluation of Hospital Foodservice with Patients' Condition)

  • The purpose of this study was to measure hospitalized patients' satisfactions with hospital foodservices, and thereby identify areas for improvement and provide basic data for the introduction of total quality management with hospital foodservices. This survey was carried out questionnaires by 382 hospitalized patients into 7 hospitals in Deagu, Busan, Changwon. The subjects were 50.5% male and 49.5% female. Sixty-two percent of the subjects were over 40age, 31.4% were only educated to middle school or below, 28.3% were hospitalized for 7-14 days. The result of evaluation for hospital foodservice during the length of hospitalization are as follows : Taste, seasoning, temperature, apperance of foods were higher in the short hospitalized patients than in the long hospitalized patients, especially kind and combinazation of food were significantly higher(p<0.001). The result of the foodservice with appetite status was significantly higher score(3.33) in the good appetite patients than in the bad appetite patients score(2.00)(p<0.001). As the hospitalization rooms were the significantly difference in the taste(p<0.05), seasoning(p<0.001), apperance(p<0.01) of the foods, amount of service(p<0.01), variety of menu(p<0.05), combinazation of foods(p<0.01) and opinion of patients(p<0.05).

병원급식 서비스에 대한 환자만족도와 요구도에 관한 조사 (The Study of Patients Satisfaction and Expectation of Hospital Foodservice)

  • The purpose of this study was to measure patients satisfaction and expectation with hospital foodservices, and thereby identify areas for improvement and provide basic data for the introduction of total quality management with hospital foodservices. This survey was carried out on 383 hospitalized patients of 7 hospitals in Deagu, Busan, Changwon with 350 beds to determine the quality satisfaction with foodservices. The subjects were 50.5% male and 49.5% female. 62.6% of the subjects were over 40 age, 31.4% were only educated to middle school or below, 28.3% were hospitalized for 7-14 days. The mean score for taste of diet was 2.79, temperature 3.23, appearances 2.96. Most subjects agreed with following foodservice characteristics that meals of movement (4.03), dress of employees (3.84), kindness of employees and meals arrived exactly the same time every day (3.47) and cleanliness of foods (3.34) and dishes (3.33). The unsatisfied quality attributies were information provide (2.82), variety of the meals (2.91), mixing of meals (2.95), the opportunity to meet with a dietitian (2.97) and prompt dealings with meal complaints (3.01). Most subjects expectation that the decrease the multiple of menus, increase provide of fruits in hospital meals and selective menus in hospital foodservices operations. In conclusion, it would seem to be desirable that hospital foodservices departments introduce selective menus, quality assurance, and increase the meal rounding of dietitians in the patient foodservice.

전국 초등학교 영양교육 실태 및 영양교사의 영양교육 실시를 위한 학교에서의 인식도 조사 (A Survey on Practice of Nutrition Education and Perception for Implementing Nutrition Education by Nutrition Teacher in Elementary Schools)

  • The purpose of this study was to investigate the practice of nutrition education and perceptions for implementing nutrition education in elementary schools. In this survey, 833 dietitians, 808 principals and 3,141 teachers across the country were asked about the present status and problems as well as necessity, methods, education time, education subjects and the proper nutrition educator ratio. The results of the survey showed that only 4.2% of dietitians implemented nutrition education during regular school hours or through special activities. Many subjects responded that the reasons for not practicing nutrition education were systematic problems of lack of time due to too much food service work. Especially, many rural area dietitians responded that the reason was lack of time due to joint management and cooking. Many dietitians, principals and teachers responded that the placement of one nutrition teacher in every school is needed to resolve these problems. Other solutions suggested were the introduction of a dietitian internship, and the modernization of foodservice facilities for principals and teachers. Of those surveyed 98.4 percent of principals and 95.5 percent of teachers responded that nutrition education is urgently needed. Many subjects also responded that the first three years of elementary school are the most proper time for nutrition education and it is best that these lessons are reinforced at least once a month through discretional or special activities. Survey participants responded that the proper ratio for nutrition educators is 400-800 persons for dietitians compared to less than 400 persons for principals. In conclusion, it is hoped that this study will be able to provide a foundation of data for implementing a systematic nutrition education program by nutrition teachers in elementary school.

저장 중 머스크멜론의 품종별 품질 특성 비교 (Chemical Components of Muskmelon(Cucumis melo L.) according to Cultivars during Storage)

  • 국내산 머스크 멜론의 품종(Thankyou, Beauty, Picnic와 Sympony) 차이에 따른 $7^{\circ}C$ 저장 중 품질 변화를 조사하였다. Thankyou, Beauty, Sympony 품종은 28일, Picnic 품종은 21일까지 저장 실험이 가능하였다. Picnic 품종이 4.70%로 가장 큰 중량 감소율을 보였으며, Sympony 품종은 1.02%로 저장 중 중량이 가장 잘 유지되는 품종으로 나타났다. Thankyou와 Sympony 품종은 Beauty와 Picnic 품종에 비하여 저장 중 가용성고형물량과 산도가 높았다. 경도는 Sympony와 Beauty 품종이 저장 초기에 높았으나 저장 중 크게 감소하였던 반면, Thankyou와 Picnic 품종은 저장 중 경도 변화율이 적었다. 또한 Thankyou 품종은 저장 중 멜론 고유의 노란빛이 가장 잘 유지되었을 뿐만 아니라, 미생물 증식도 가장 적어서 저장 중 품질변화가 적었다. 하지만 소비자들이 상품성을 판단할 때 가장 먼저 보게 되는 꼭지의 수분손실은 저장 중 다른 품종들에 비하여 큰 것으로 나타났다.
