광주와 전라남도의 음식문화 연구 (I) - 일상식 - (Traditional Food Use of Frequency of Gwangju City and Chollanamdo Area - In food everyday -)

  • This study was investigated traditional food utilization actual conditions of Gwangju and Chollanamdo. Frequency of main meal ice plain white rice, boiled rice and cereals, bean-mixed rice, gruel Dakjuk, winter squash porridge, sesame porridge, noodles by noodles cut out with a kitchen knife, noodles with assorted mixtures, soup with dough flakes order frequency much have. Soup ate much beanpaste soup, soup cooked with dried radish leaves, seaweed soup, broth by power-pot soup, hot shredded beef soup, loach soup order. Pot stew soybean paste stew and kimchi stew, beef casserole bean curd beef casserole and small octopus beef casserole often eat. Kimchi ate much cabbage kimchi, radish kimchi, radish cube kimchi, dish of dried slices of radish by sesame leaf dish of dried slices of radish, pickled garlics, Maneuljjong dish of dried slices of radish order. Salted sea foods that eat often were salted anchovies, tiny salted shrimps, Gejang order, and soy sauce were toenjang, korean hot pepper paste, bean-paste soup prepared with around fermented soy beans order, and laver fried kelp, tangle fried kelp, green perilla leaf fried kelp order to fried kelp, and it was bean sprouts, bracken herbs, fragrant edible wild aster herbs order to herbs. It is Ssukgatmuchim, squid debt saliva, Jabanmuchim's order that season, hard-boiled food is beef boiled in soy sauce, mackerel radish hard-boiled food, order of bean curd hard-boiled food, panbroiling ate often by order of Kimchi panbroiling, red pepper anchovy panbroiling, pork panbroiling. Steamed dish is egg steamed dish, fish steamed dish, steamed short-ribs order, fried fish egg speech, by Gimchijeon, Pajeon order, meat roasted with seasoning ate often by laver meat roasted with seasoning, hair-tail meat roasted with seasoning, mackerel meat roasted with seasoning order. Minced raw meat are small octopus raw that live, beef dish of minced raw beef, Hongeohoe order, rice cake is cake made from g1u1ions rice, Seolgitteok, songpyon order, dessert ate often by fermented rice Punch, cinnamon flavored persimmon punch, Kangjung order.

단백질 분해효소를 이용하여 제조한 속성 멸치 액젓의 펩티드 특성 2. 멸치 액젓 및 Actomyosin의 가수분해 펩티드의 특성 (Peptide Properties of Rapid Salted and Fermented Anchovy Sauce Using Various Pretenses 2. Characterization of Hydrolytic Peptides from Anchovy Sauce and Actomyosin)

  • 멸치 액젓의 고유한 풍미를 유지하면서 신속한 발효를 진행시키기 위해 멸치, 오징어간 및 내장에서 추출한 조효소에 의한 멸치 actomyosin의 가수분해 특성과 생성된 펩티드의 분자량 분포를 조사하였다. 아울러 멸치를 마쇄하여 제조한 액젓, 멸치에 오징어간 및 내장에서 추출한 조효소와 상용효소인 Protamex를 첨가하여 제조한 멸치 액젓을 70일 숙성시킨 후 가수분해에 의해 생성된 펩티드의 성상을 gel chromatography 및 아미노산 분석을 통해 비교하였다 멸치, 오징어 간 및 내장에서 추출한 조효소의 최적 활성온도는 각각 $55^{\circ}C$, $40\~45^{\circ}C$$45\~60^{\circ}C$였으며, 오징어 간 및 내장에서 추출한 조효소의 멸치 actomyosin에 대한 비활성은 멸치에서 추출한 조효소에 비하여 약한 것으로 나타났으나, 오징어 간 조효소는 멸치 조효소에 비하여 NaCl에 의한 영향을 덜 받는 것으로 나타났다. 멸치 actomyosin을 멸치 및 오징어간에서 추출한 조효소 용액으로 30분 동안 가수분해했을 때, 분자량 10,800, 5,800 및 2,600 dalton의 펩티드가 다량으로 생성되었으며, 분해 형태는 거 의 비슷하였다 멸치를 마쇄하여 제조한 액젓, 멸치에 오징어 간 및 내장에서 추출한 조효소와 Protamex를 첨가하여 제조한 멸치 액젓을 70일 숙성시킨 경우 분자량 300$\~$l,000 dalton의 저분자 펩티드가 다량 생산되었다. 이들 펩티드의 아미노산 조성은 액젓의 맛 성분과 밀접한 관계를 가진 glutamic acid, glycine 및 alanine의 함량이 많았으며, 오징어간을 첨가한 액젓이 마쇄한 멸치 액젓과 가장 비슷한 것으로 나타났다. Protamex의 경우는 glutamic acid의 함량이 상대적으로 낮은 반면, 쓴맛을 나타내는 isoleucine과 leucine의 함량은 높은 것으로 나타났다. 이 같은 결과는 오징어간의 첨가가 멸치 육의 신속한 가수분해에 보완적인 수단으로 활용될 수 있다고 판단된다.

감마선 조사된 저염 오징어젓갈 발효의 미생물균총 특성 (Microbiological Characteristics of Gamma Irradiated and Low-Salted Fermented Squid)

  • 염 농도와 감마선 조사 선량을 달리한 오징어젓갈의 미생물 균총 변화를 살펴보았다. 총균, Lactobacillus spp., Staphylococcus spp.는 발효기간에 따라 지속적으로 생장하여 발효 40일째에 염도 5%와 10%에서는 $10^8\;CFU/mL$까지, 염도 20%에서는 $10^7\;CFU/mL$까지 생장하였으며 5 kGy 이상 감마선 조사구는 초기 균수 감소로 발효 후기의 미생물 밀도가 낮아졌다. 염도가 증가할수록 감마선 조사가 미생물 생장에 미치는 영향이 컸으며, 감마선 조사에 의한 오징어젓갈 관련 발효 미생물의 생장억제는 염도 10%에 10 kGy의 감마선 조사 조건이 적합하였다. 발효미생물의 동정 결과, L. plantarum이 전 실험구에 걸쳐 가장 일반적인 발효균으로 분리되었으며 Lactobacillus sp. 2, Mic. varians, Streptococcus sp. 1 등은 염도 5%의 실험구에만, Mic. morrhuae 등은 20%의 염농도에서만 분리되어 염도에 따른 microflora의 차이를 나타내었다. 또한, L. brevis, Ped. halophilus, Pse. diminuta 등은 방사선 감수성이 큰 미생물군이었으며, L. plantarum, Mic. morrhuae, Pseudomonas sp. 3 등은 방사선에 대한 저항성이 높았다. 전체적으로 보아 염도 20% 실험구에서의 분리 미생물이 15종으로 가장 다양한 분포를 보였으며 염도가 낮아질수록, 감마선 조사선량이 높아질수록 종의 다양성은 낮았다.

학교급식 김치에 대한 인식과 김치응용요리 선호도 - 광주지역 고등학생을 중심으로 - (Perception of kimchi and Preference of foods using kimchi in School Meals - Focused on High School Students in Gwangju -)

  • This study was conducted to improve the kimchi intake for high school students of various kimchi sub-ingredients and foods using kimchi. The students believed that kimchi is good for health. The overall satisfaction, baechu quality and the taste and degree of fermentation of kimchi was high, but there was a low preference for offered kimchi kinds, kimchi subingredient, foods using kimchi. The types of kimchi preferred and often offered in school meals were baechu-kimchi and kkakdugi. The common kimchi sub-ingredients were radish and welsh onion in vegetables, squid and oyster in sea foods, saeu-jeot and myeolchi-jeot in salted fish, and pear and apple in fruits. The preference for kimchi sub-ingredients were high for sesame leaf and yeolmu in vegetables, saeu-sal and squid in sea foods, saeu-jeot and nakji-jeot in salted fish, and pear and apple in fruits. The foods using kimchi preferred and often offered with school meals were kimchi-jjigae, bokkeumkimchi, kimchi soup, kimchi-bokkeum-bap, and kimchi-jeon. The kimchi sub-ingredient for which students had the greatest preference was meats. Among the foods using kimchi with meats, the most preferred were kimchi-pyeonyuk bossam, doejigogi kimchi duruchigi, and kimchi galbi-jjim. Among the foods using kimchi with noodles, the most preferred were kimchi- bibimmyeon, kimchi -naengmyeon, and kimchi-cheese spaghetti. Among the foods using kimchi with vegetables, the most preferred were kimchi-pa-jeon, kimchi- deopbap and kimchi- goguma gui. Of the foods using kimchi with processed foods, the most preferred were kimchi-mandu, kimchi-bacon jumeok-bap and kimchi- cheese omelet. Among the foods using kimchi containing sea food, kimchi-haemul bokkeum-bap, kimchi-hoe-deopbap, and kimchi-saeu-jjim were most preferred. Overall, these results suggest that various kimchi sub-ingredients and foods using kimchi should be improved for kimchi intake of school meals.

춘천지역 주부들의 제례음식 준비에 관한 연구 (The Survey on the Practice of Ancestral Service Food in Chuncheon Area)

  • The survey on the practice of the memorial ceremonial food in Chuncheon area showed it varied according to social position of officiator, location(inland or seaside town) , and personal condition. The study included the foods prepared for the memorial services on the memorial day. New Year's Day and Chusok. 1. 40.4% of the subjects were in the thirties at their age, 46.6% were high school graduates, 57.3% were the first daughter-in-law, 40.4% had no religion, 30.9% were working at public administration and earned less than 1 to 1,5 million won monthly. 2. 71.7% of the subjects who replied that the ancestor worship service had to be kept were Buddhists. 55.4% of them were high school graduates, and 58.8% of them ran independent businesses. They learned how to practice the ancestor worship service from their mother before marriage or from their parents-in-law after marriage. 3. The older the officiators, the better they wanted to keep the traditional format of the service, but the Christians and Catholics wanted to change the format to western style in the future. 4. 92.7% of them served cooked milled rice. They prepared the soup in the order of beef soup, radish soup and dried Alaskan pollack soup. 5. Among cooked vegetable dishes, bracken was used the most and balloonflower root, mung bean sprout and spinach followed. Among jeon(pan-fried foods). frozen Alaskan pollack was used the most and buckwheat, mung bean and meatball followed. 6. They served san-juk(beef kebab) mostly on the ceremony. Among the grilled foods, tofu was the favorite, and croaker followed. 7. Among the fried foods. squid was the favorite, and sweet-potato and shrimp followed. Among the dried foods. they used in the order of dried Alaskan pollack, dried beef and squid. 8. Among the rice cake and traditional confectionery, they used in the order of Yak-sik(sweet rice cake), Gang-jeong(fried glutinous rice cookie), Jeol-pyun and In-jeol-mee. Among a beverage, they served Sik-hye(fermented rice drink) mostly. 9. Among fruits, apples. jujube, chestnut and dried persimmon were served. Aong a liquor, Cheongju was served mostly. 10. Soy sauce, salt and salted fermented fish were served, too.

대구지역 요양병원 입원노인의 식품선호도 및 영양소 섭취 실태 조사 (Survey of the Food Preferences and Nutrient Intakes of Elderly People Hospitalized in a Nursing Hospital in Daegu)

  • The number of elderly in care facilities is increasing in parallel with a rapid increase in the elderly population in Korea. We analyzed the meal satisfaction ratings, food preferences, and nutritional intakes of 74 patients aged ≥65 years living in a nursing hospital in Daegu. Food preferences were high for cooked rice, rice gruel, meat soup, soybean paste stew, beef, frozen pollack, squid, egg, spinach, sea mustard, cabbage kimchi, apple, peanut, drinking yogurt, pickled perilla leaves, and salted squid. Preferences for duck (P<0.01) and vegetable (P<0.01) cooking method were significantly different for men and women, and preference for soybean paste stew increased with age (P<0.05). Regarding nutrient intakes, men had higher energy (P<0.01), carbohydrates (P<0.05), and zinc (P<0.05) intakes than women, while women had higher vitamin C (P<0.05) intake than men. Furthermore, energy (P<0.001), carbohydrates (P<0.001), protein (P<0.05), dietary fiber (P<0.01), vitamin B6 (P<0.01), phosphorus (P<0.05), and zinc (P<0.001) intakes significantly decreased with age. Men had a significantly higher nutrient adequacy ratios (NARs) for carbohydrates (P<0.05) and cal- cium (P<0.01) than women, while women had a significantly higher NARs for protein (P<0.05), vitamin A (P<0.01), vitamin C (P<0.05), thiamine (P<0.01), riboflavin (P<0.001), iron (P<0.001), and zinc (P<0.01). Mean adequacy ratios were 0.69 for men and 0.75 for women. In particular, NARs for carbohydrates (P<0.01), vitamin B6 (P<0.01), and calcium (P<0.05) decreased significantly with age. In summary, the study shows that supplementing vitamin C, vitamin B6, calcium, and iron, reducing sodium, and providing meals that reflect preferences will improve the nutritional statuses of elderly residents in a nursing hospital.

고도 호염성 Halobacterium sp.에 의한 protease의 생산 (Production of protease by the extreme halophile, Halobacterium sp.)

  • 오징어 젓갈로 부터 분리한 protease를 생산하는 H5-2 균주는 Halobacterium 속 균으로 동정되었으며 NaCl 2.0M 이하의 배지에서는 생육하지 못하는 고도 호염성균이었고, 이 균의 protease 생산은 Nan 4.5M, yeast extract 0.4%, gelatin 1.5%를 첨가한 pH7.0의 Norberg & Hofsten 배지에서 $38^{\circ}C$$4{\sim}5$일간 배양했을 때 가장 양호하였다.

살균고춧가루를 이용한 오징어젓갈 제조 I. Ohmic heating에 의한 고춧가루 살균 (Preparation of Squid-Jeotkal with Pasteurized Red Pepper I. Pasteurization of Red Pepper Powder by Ohmic Heating)

  • 전기저항열을 이용한 식품의 가열처리방법인 ohmic heating에 의한 고춧가루의 살균효과를 살펴본 결과, 전계강도를 500 V/m과 700 V/m으로 고정하고 일정온도에 도달할 때까지 ohmic heating으로 열처리하였을 때 5$0^{\circ}C$에서 7$0^{\circ}C$가지는 균수의 변화가 없었고 8$0^{\circ}C$ 이상에서 약 1-log-unit이 감소하였다. 그러나 온도를 9$0^{\circ}C$로 고정하고 holding time을 주었을 때는 40분 이상 열처리하였을 때 초기생균수가 8.5$\times$$10^{6}$CFU/g에서 2.1 $\times$ $10^2$CFU/g으로 약 4.6-log-unit이 감소하였다. Ohmic heating으로 살균시 holding time에 따른 고춧가루의 색도변화는 미미한 변화가 있었으나, 9$0^{\circ}C$에서 40분 열처리하였을 때도 $\Delta$E값이 1.5 이하로 색도 변화는 미약하였다. 살균고춧가루를 이용하여 오징어젓갈을 제조한 결과 생균수가 8.4$\times$$10^3$CFU/g으로 일반고춧가루사용 오징어젓갈의 1.6$\times$$10^{6}$CFU/g 보다 적었으며, 효모 및 곰팡이는 거의 검출되지 않았다. 이러한 결과는 고춧가루에서 대부분의 미생물이 혼입된다는 사실을 반영하는 결과이며, 특히 유통중 변패의 주요항목인 곰팡이 발생이 고춧가루로부터 기인된다는 것을 알 수 있었다.

건조 수산물의 미생물학적 안전성 확보를 위한 감마선 조사 기술의 이용 (Application of Gamma Ray Irradiation to the Microbiological Safety of Dried Seafood Products)

  • This study evaluated the effects of gamma ray irradiation on the safety of dried seafood products. Dried salted squid, Engraulis japonica, Hizikia fusiformis, Mytilus coruscus, and Porphyra tenera were gamma-irradiated at doses of 0, 1, 3, and 5 kGy. The total bacterial populations were then enumerated on total plate count agar, and bacteria isolated from the samples were identified by 16S rDNA sequencing. In addition, the isolated strains were inoculated in the products to determine $D_{10}$ values. The total bacterial populations in the dried seafood products ranged from 3.40 to 6.59 log CFU/g, and those of yeasts and molds ranged from 2.21 to 4.56 log CFU/g. The sequence analysis identified Staphylococcus sp. as the most common species in the dried seafood products, except for dried P. tenera. The $D_{10}$ values of the contaminating bacteria were lower than 0.7 kGy, except for Deinococcus sp., which had a value of 1.39 kGy. This study demonstrated that gamma irradiation could be used to improve the safety of dried seafood products.

  • I have studied historical transition process of fisheries industries, fisheries Institute in abreast of developing fisheries industries of west coast of Korea since 1910 year with regard to the Gogunsan Is. The results were summarized as follows. In 1910 year, fishery industry has been carried out shifting fishing gear e.g set-net in shallow waters, small stow net, small seine net adapting to the tophorgrapical feature, shape of coast, oceanic condition, however, the fishing gear and fishing method were undeveloped, so that, Japanese fishermen had been exploited fisheries resources penetrating the fishing ground. Most important species were lot of captured croaker, cod, spanish mackeral, sea abream, herring in coastal sea. nowaday, squid, anchovy, shrimp, crab, pompret were much captured. The species were captured in 18 century were not captured. It is rarely than that period. Fishereis aquatic culture had been not farmed till 1960 year, but sea laver, shrimp, crab, had been breeded 1970 year also, the fresh water fish e.g. eel, cat-fish had been breeded activately. The fisheries processing industry were composed of salt. icing, dry, method. the salted fish industry had been prevailed at Gangyng, Kwangchon, Kunsan, Julpo comparatively. The fisheries institute had been established at Kunsan at first, but institute established in other region had been abolished in a short time. This phenomenon was related with development of fisheries resources. The western coast fisheries industries had been wasted of decreasing of fisheries resources, variation of environment. Accordingly, the study of preserving the marine resources. educated man power who engaged in fisheries field have to accomplish. Sea was dying with reason of loss of mud in west coast factory waste, waste of life the increase of accident of sea polluted, each illegal fishing industry physical and chemical reason etc. in this respect, Kusan maritime college, fisheries developing agency, institute have to take important role for developing fishing industry.
