Effects of High Pressure Treatment on Cured Colour Development and Residual Nitrite Level in Model System

  • In low nitrite level, treatment of combined with pressure and thermal processing improved cured meat colour comparing with that of only thermal processing. However, visual colour of only pressurised treatment could not be improved at low nitrite level. Pressure treatment could develop cured meat colour when high nitrite level was added. Moreover, pressurisation combined with thermal processing decreased nitrite residuals compared to thermal processing. Therefore the results indicated that pressurisation combined with thermal processing had potential benefits in appearance of cured meat products, promising improved food safety.

Physical, Chemical Properties and Structural Changes of Zaodan Pickled by Vacuum Decompression Technology

  • To shorten the production cycle of Zaodan, this study first pickled Zaodan by a novel technology - vacuum decompression technology. Vacuum decompression technology could reduce the pickling time of Zaodan from 20 wk to about 9 wk. The protein content, moisture and pH of the Zaodan egg white gradually decreased with a concomitant increase in salt during the pickling process. The total sulfhydryl group (SH) group content of the egg white proteins was increased to $2.43{\times}10^{-3}mol/L$ after being pickled for 30 d, whereas the content of disulphide bonds (SS) was reduced to $23.35{\times}10^{-3}mol/L$. The surface hydrophobicity was lowest after pickling for 30 d. In addition, great changes occurred in the secondary structure of the egg white proteins after pickling for 20 d. The disappearance of ovomucin was noticeable based on sodium dodecyl sulfate-polyacrylamide gel electrophoresis analysis.

  • In the current study, ohmic combined with brine immersion thawing increased thawing time than plate contact type ohmic thawing even at low voltage. Moreover, rapid thawing resulted in high WHC and improved meat tenderness. The result indicated if the problems in safety would be solved, brine immersion type ohmic thawing could reduce processing time in industrial application promising both improved meat qualities and successful application in meat industry, and further works were needed.

종 특이 프라이머를 이용한 동물성 식품원료의 진위 판별법 개발 (Development of Species-Specific PCR to Determine the Animal Raw Material)

  • 본 연구에서는 식품 중 동물성 사용원료의 진위 판별을 위하여 분자생물학적 기법을 이용한 시험법을 개발하였다. 동물성 식품원료의 종 판별을 위한 유전자로는 미토콘드리아 DNA에 존재하는 COI, Cytb, 및 16S rRNA 유전자를 대상으로 하였으며, 가공식품에 적용하기 위하여 PCR 산물의 크기는 200 bp 내외가 되도록 종 특이 프라이머를 설계하였다. 대상종으로는 가축류 2종, 가금류 6종, 민물어류 2종, 해양어류 13종 및 갑각류 1종, 총 24종을 선정하였으며 종 특이 프라이머를 이용하여 예상되는 PCR 산물의 생성 유무를 확인하였다. PCR을 수행한 결과 토끼, 여우, 꿩, 집비둘기, 멧비둘기, 메추리, 참새, 제비, 메기, 쏘가리, 날치, 열빙어, 청어, 까나리, 멸치, 참조기, 넙치, 조피볼락, 홍어, 가오리, 말쥐치, 농어, 성게 및 바닷가재에 대하여 각각 156, 204, 152, 160, 113, 163, 167, 152, 165, 121, 136, 151, 178, 178, 146, 188, 177, 166, 179, 218, 188, 185, 127 및 172 bp에서 PCR 증폭 산물을 확인하였다. 그리고 프라이머 별로 비교종에서는 비특이적 PCR 산물(non-specific PCR product)은 생성되지 않았다. 본 연구에서 개발된 유전자 분석법을 이용하여 동물성 식품원료가 사용된 식품 원료 및 가공식품의 진위 판별에 활용이 가능할 것이며, 불량식품 근절에 크게 기여할 것으로 기대된다.

Effects of Dietary Supplementation with the Combination of Zeolite and Attapulgite on Growth Performance, Nutrient Digestibility, Secretion of Digestive Enzymes and Intestinal Health in Broiler Chickens

  • This study was designed to investigate the effects of basal diets supplemented with a clay product consisting of zeolite and attapulgite (ZA) at 1:1 ratio on growth performance, digestibility of feed nutrients, activities of digestive enzymes in small intestine and intestinal health in broiler chickens. In experiment 1, 112 one-day-old male chickens were randomly divided into 2 groups with 8 replicates of 7 chickens each. In experiment 2, 84 one-day-old male chickens were randomly allocated into 2 groups consisting 6 replicates of 7 chickens each. The experimental diets both consisted of a maize-soybean basal control diet supplemented with 0% or 2% ZA. The diets were fed from 1 to 42 days of age. The results showed that ZA supplementation could increase body weight gain (BWG) and feed intake (FI), but had no significant effect on feed conversion ratio. The apparent digestibility values of crude protein and gross energy were significantly increased (p<0.05) by ZA from 14 to 16 d and 35 to 37 d. Dietary ZA treatment significantly increased (p<0.05) the activities of amylase, lipase and trypsin in jejunal digesta and the activities of maltase and sucrase in jejunal mucosa on days 21 and 42. The ZA supplementation also significantly increased (p<0.05) the catalase activity, reduced (p<0.05) the malondialdehyde concentration in the jejunal mucosa. In addition, a decrease of serum diamine oxidase activity and an increase (p<0.05) in concentration of secretory immunoglobulin A in jejunal mucosa were observed in birds treated with ZA on 21 and 42 days. It is concluded that ZA supplementation (2%) could partially improve the growth performance by increasing BWG and FI. This improvement was achieved through increasing the secretion of digestive enzymes, enhancing the digestibilites of nutrients, promoting intestinal health of broiler chickens.
