Change of sugar and starch content in unripened grain of Jinheung and IR667 rice during ripening (진흥(振興)과 IR667벼의 미등숙립중(未登熟粒中) 당(糖) 및 전분(澱粉)의 시기별(時期別) 변화(變化))

  • The weekly change of sugar and starch content in unfilled grain of Jinheung (temperate rice var.) and IR667-Suweon 214 (tropical rice var.) and of filled grain ratio (less than specific gravity 1.06 for Jinheung and 1.03 for IR667), filled grain weight and unfilled grain weight from flowering and the relationship among them were as fallows. 1. Total sugar content in unfilled grain was twice in Jinheung than in IR667 and starch content was higher (about 2.5 to 3.5%) in Jinheung but starch/sugar ratio was greater in IR667. Thus IR667 that was classified as high sugar type in leaf sheath and internode appears to be high starch type in sink (grain). 2. Under the favorable condition the weight of unfilled grain reached to minimum value and followed by maximum filled grain ratio and lastly by maximum weight of filled grains per ear. 3. Sugar and starch content gradually increased and then decreased during ripening and the maximum values reached prior to maximum filled grain ratio (6 weeks). Sugar content reached to maximum much earlier than starch content did and increased again from 8 weeks later. 4. Starch/sugar ratio reached to maximum value earlier than maximum starch content and earlier in IR667 than in Jinheung. 5. Maximum starch content of unfilled grain in Jinheung was 51.1%.

pH, Acidity, Color, Reducing Sugar, Total Sugar, Alcohol and Organoleptic Characteristics of Puffed Rice Powder Added Takju during Fermentation (팽화미분 첨가에 따른 탁주의 양조 중 pH, 산도, 색도, 환원당, 총당, 알코올 그리고 관능 성질 변화)

  • The pH, acidity, color, reducing sugar, total sugar, alcohol, and organoletic characteristics of Takju containing puffed rice powder (0, 25, 50 and 75%) were investigated during fermentation for 10 days. After drastic decrease at Day 1, the pH increased gradually until Day 5 and then tended to decrease after Day 6. A lower concentration of puffed rice powder resulted in a greater pH reduction (p<0.05). Acidity increased quickly with days, especially for the 0% after Day 6 (p<0.05). After a sudden rise at Day 1, the Hunter ‘L’ value tended to decrease with days of fermentation. At the same day, the 75% showed the lowest Hunter ‘L’ value, however, it had the highest Hunter ‘a’ value except on Days 0, 3 and 10 (p<0.05). After a rapid reduction in reducing sugar on Day 3, no differences were observed in the samples (p<0.05). The 75% tended to be higher in reducing sugar. Total sugar decreased rapidly at Day 2, and then either remained unchanged or decreased after Day 3. With the exception of Day 4, the 75% had higher amounts of total sugar than the others at the same day (p<0.05). The Highest alcohol contents [13.0-16.4% (v/v)] occurred on Day 6. Higher alcohol concentrations were observed with higher puffed rice powder (p<0.05). In the sensory evaluation, no differences were detected between the 0% and those with puffed rice powder added (p<0.05).

The Influences of Addition of Sugar with or without L. buchneri on Fermentation and Aerobic Stability of Whole Crop Maize Silage Ensiled in Air-stress Silos

  • The whole plant of crop maize was chopped and ensiled in double-layered polyethylene bags to determine the influence of residual sugar on the fermentation of lactic acid and aerobic stability by L. buchneri in whole crop maize silage made in airstress condition. There were a total of six treatments used in this experiment as follow: added 25 g de-mineralised water per kg chopped maize serving as control (con), 37.5 g glucose solution containing 12.5 g glucose ($g_1$), 75 g glucose solution containing 25 g glucose ($g_2$), 25 g, L,.buchneri suspension intended for $10^6$ cfu $g^{-1}$ (L.b.), $g_1$+L.b. and $g_2$+L.b. All silos were opened at day 91 after ensiling for measuring the pH values, microbiological enumeration, fermentative products and aerobic stability. The dry matter loss increased significantly (p<0.01) due to inclusion of sugar or L. buchneri. The lower lactic acid concentrations were observed (p<0.01) in silages inoculated with L. buchneri only or in combination with sugar addition than the correspondent uninoculated silages. Compared with control silage, ethanol production was about 3 or 6-fold higher due to addition 12.5 or 25 g glucose per kg chopped maize at ensiling. The silages added with sugar contained less acetic acid concentration (p<0.01) than control, but silages inoculated with L. buchneri showed the contrary effects (p<0.01) at different sugar levels. No butyric acid was found in uninoculated silages, silages inoculated with L. buchneri. producted more propionic acid, 1-propanol and butyric acid. Lactic acid bacteria counts increased markedly (p<0.01) due to inoculation with L. buchneri, whereas it was reduced (p<0.01) by added sugar. No significant difference was observed in count of yeast, but inoculation with L. buchneri shows a decreasing trend. Mould count in all silages was less than 2 (log cfu $g^{-1}$). The added sugar had negative effects on aerobic stability of maize silage made under air-stress conditions, whereas inoculation with L. buchneri improves (p<0.01) the aerobic stability.

Sensory and mechanical characteristics of Seosokbyung by Different ratio of Ingredient (서속병의 재료배합비에 따른 관능적, 텍스쳐 특성)

  • This study aimed for exploring the best recipe of Seosokbyung with different ingredient ratios of glutinous millet flour, sugar, and water added to rice flour. The most desirable recipe was determined by sensory evaluation and mechanical test for measuring texture, moisture content and colorimetry. The best score for each sensory item was obtained in the following condition: Color-245g(70%) of glutinous millet flour, 50g of sugar with 10$m\ell$ of water in 105g of rice flour. Flavor-l75g(50%) of glutinous millet flour with a 80$m\ell$of honey in 175g of rice flour. Graininess and Moistness-245g(70%) of glutinous millet flour with 70$m\ell$ of honey in 105g of rice flour. Chewiness-2I0g(60%) of glutinous millet flour, 60g of sugar with 20$m\ell$ of water in 140g of rice flour. Sweetness-l75g (50%) of glutinous millet flour 7g of sugar with 25$m\ell$ of water in 175g of rice flour. As a result of mechanical examination, the best score for springiness, cohesiveness, chewiness, gumminess, adhesiveness was obtained in the recipe of 175g (50%) of glutinous millet flour with 80$m\ell$ of sugar in 175g of rice flour, and that for hardness in the one of 245g (70%) of glutinous millet flour with 70$m\ell$ of honey in rice flour As the less amount of glutinous millet flour was added, the scores for springiness, cohesiveness, chewiness, gumminess and adhesiveness were increased, and the addition of honey gave higher scores than sugar or oligosaccharide(P<0.05) The best recipe of Seosokbyung was 140g of rice flour, 2 l0g of glutinous millet flour, 60g of sugar, 20$m\ell$ of water and 3.5g of salt. The moisture contents of rice flour and glutinous millet flour were 31.6% and 13.3%, respectively. The content of moisture in the best recipe of the Seosokbyung is approximately 36.101%. The moisture content higher than 36% gave better sensory scores in chewiness and moistness. As a result of colorimetry, the most bright ‘L’value(Lightness) was obtained from 175g of rice flour mixed with 175g (50%) of glutinous millet flour, 70g of sugar and 25$m\ell$ of water. The highest ‘a’ value(Redness) was gained from 175g of rice flour mixed with 175g (50%) of glutinous millet flour and 80$m\ell$ of honey. The best ‘b’ value(Yellowness) was obtained from 140g of rice flour, 210g (60% of rice flour) of glutinous millet flour, 60g of sugar and 20$m\ell$ of water.

Variation of Sugar Content and Its Relationship with Some Major Characteristics in Collection of Colored-Soybean (유색대두 수집계통의 당함량 변이와 주요 특성과의 관계)

  • This study was conducted to obtain the fundamental information on the relationship between sugar content variation and other major characteristics in colored-soybean strains collected in Korea. Sugar content varied from 8.3% to 12.1%, and averaged to be 10.1% in collected colored-soybean strains. On the basis of maturity, soybean growth types were distributed 0.5%, 1%, 5.7%, 16%, 19%, 22%, 14%, and 19% in maturity group 0 (less then 115 days), group I(116 to 123 days), group II (124 to 131 days), group III (132 to 139 days), groupIV(140 to 147 days), group V (148 to 155 days), group Ⅵ(156 to 163 days), and group Ⅶ(over 164 days), respectively. Most of colored-soybean strains were in the middle and late maturity group(maturityIII group toⅦ). Sugar content was tended to be higher in soybean seeds of late than early maturity group. Difference in sugar content was not present according to the seed coat color, whereas strains with bloom seed was higher in sugar content than those with non-bloom seed. Higher seed sugar content was shown in green seed embryo than yellow one. Total sugar content was correlated negatively with protein content (-0.29$^{**}$), positively with oil content (0.21$^{**}$) and growth period(0.36$^{**}$) in all collected colored-soybean strains, and within respective maturity group except early maturity group strains, total sugar content was correlated significantly with protein, oil, ADV, and other characteristics.stics.

  • Looking at the current status of beverages sold from vending machines in subway stations in Seoul, it was found that carbonated beverages accounted for the highest percentage of beverages on sale in vending machines, representing 36 % of all beverages sold. Survey respondents purchased carbonated drinks or sports drinks containing high levels of sugar to quench their thirst. Investigation of the sugar content of beverages frequently sold in vending machines showed that a serving of carbonated beverage contained an average of 30.4 g of sugar, or as much as 50.1 g of sugar (equivalent 10 to 17 cubes; 1 cube = 3 g of sugar). This amount corresponded, on average, with 60 % of the WHO recommended daily sugar intake (50 g). Surprisingly, with certain carbonated beverages, drinking a single can is equivalent to consuming the total recommended daily sugar intake of 50 g.

Selection Scheme of Radish Varieties to Improve Storage Stabilities of Fermented Pickled Radish Cubes with Special Reference to Sugar Content (김치류의 저장기간 연장을 위한 무우품종 선발에 있어서 발효성 당함량의 역할)

  • A study relating the sugar contents of radishes to the final titratable acidities(TA) after complete fermentation was conducted to get an idea of selecting radish varieties to improve storage stabilities of fermented pickled radish cubes. Thirty six varieties of spring-sowing and thirty four varieties of autumn-sowing radishes were chosen to ferment to measure their final TA in relation to their sugar contents. The sugar contents of spring-sowing radishes were in the range from 2.40 to $3.71^{\circ}\;Brix$ and the final TA ranged from 1.15 to 1.65%. The sugar contents of autumn-sowing radishes were in the range from 4.00 to $5.53^{\circ}\;Brix$ and the final TA ranged from 1.45 to 2.00%. The final TA obtained after complete fermentation were found to be directly proportional to the sugar contents of radishes, showing that TA equals to 0.29x+0.4428, where x is sugar content of radish. From the equation, since a properly aged fermented pickled vegetable is believed to have a TA range from 0.6 to 0.8%, a radish of a sugar content ranging from 0.6 to $1.3^{\circ}\;Brix$ will make fermented pickled radish cubes which will not be overacidified during the prolonged storage period.

Mass Transfer during Osmotic Dehydration of Carrots and Its Effect on Browning Reaction (당근 삼투압 건조시 물질 이동과 갈색화 반응에 미치는 효과)

  • Internal mass transfer during osmotic dehydration of carrots in sugar solutions was examined as a function of concentration, temperature and immersion time of those solutions using moisture loss, sugar gain, molality and rate parameter. Influence of osmotic dehydration and blanching on browning reaction of vacuum dried carrots(3% MC: wet basis) was also evaluated. Increasing the concentration and temperature of sugar solutions increased moisture loss, sugar gain, molality and rate parameter. Water loss and sugar gain were rapid in first 4 min and then levelled off. The rate of sugar gain and molality changes on temperature was significant in lower concentration$(20^{\circ}\;Brix)$ compared to higher concentration$(60^{\circ}\;Brix)$. The changes of rate parameter were affected by concentration than by temperature of sugar solutions. Moisture loss during osmotic dehydration using a sugar solution $(60^{\circ}\;Brix,\;80^{\circ}C)$ with 20min immersion time was 55.7%. Effect of osmotic dehydration and blanching before vacuum dried to 3% MC(Wet basis) on browning reaction was significant. Minimum browning reaction during vacuum drying was carried out using pretreatments such as osmotic dehydration in sugar solution$(40^{\circ}\;Brix,\;80^{\circ}C)$ with 16 min immersion time(O.D.=0.09) and blanching with 12 min immersion time at $80^{\circ}C$(O.D.=0.31) compared to control(O.D.=1.59).

Effect of sweeteners on the quality characteristics of ginger (Zingiber officinale Rosc) Jungkwa (감미료가 생강정과의 품질특성에 미치는 영향)

  • In this study the physicochemical properties and antioxidant capacities of ginger (Zingiber officinale Rosc) Jungkwa with different kinds of sweeteners were determined. Jungkwa made with different sugars (sugar, xylitol, honey or oligosaccharides) were compared in aspect of physiochemical properties, antioxidant activities, total phenolic contents and sensory evaluation. Moisture contents Jungkwa treated different kinds of oligosaccarides showed highest value, in the order of honey, xylitol and sugar. $L^*$ value of Jungkwa treated with xylitol was the highest, $a^*$ value of Jungkwa treated with honey, sugar JungKwa were higher then others. Free sugar contents of Jungkwa treated with sugar showed the highest value in sucrose, glucose and galactose. Jungkwa with xylitol showed lowest value in all free sugar contents. Hardness and chewiness of Jungkwa treated with xylitol showed the highest value. The antioxidant activity measured by DPPH and ABTS radical scavenging activity and total penolic content were the highest in Jungkwa treated with honey, followed by Jungkwa treated with xylitol, oligosaccharides and sugar. Appearance and color of oligosaccarides and honey treated Jungkwa were preferred. In ginger taste, sweetness, chewiness were highest in sugar treated Jungkwa (not significant difference in treatments). As a result, honey treated Jungkwa has higher antioxidant activity and quality than other sugar treatments.

  • A strategy for the automation of glutamic acid fermentation has been developed by the use of $CO_2$ analyzer together with a controller. It was found that a linear relationship existed between growth and $CO_2$ level in the exit gas. Therefore penicillin addition at an appropriate biomass concentration to excrete glutamate could be achieved automatically. In addition, an automatic batch feeding method (fed-batch culture) provided a means of overcoming substrate inhibition effects on growth and glutamic acid production in batch culture, thereby increasing productivity and product yield.
