Effects of Jerusalem Artichoke Powder and Sodium Carbonate as Phosphate Replacers on the Quality Characteristics of Emulsified Chicken Meatballs

  • Today incorporation of natural ingredients as inorganic phosphate replacers has come into prominence as a novel research topic due to health concerns about phosphates. In this study, we aimed to investigate the quality of emulsified chicken meatballs produced with Jerusalem artichoke powder (JAP), either alone or in combination with sodium carbonate (SC) as sodium tripolyphosphate (STPP) replacers. The results showed that naturally dried JAP showed favorable technological properties in terms of water-oil binding and gelling. Emulsion batters formulated with JAP-SC mixture showed lower jelly and fat separation, higher water-holding capacity and higher emulsion stability than control samples with STPP. In final product, incorporation of JAP-SC mixture increased moisture and reduced lipid and energy values, and kept the pH value similar to control. Added JAP lead to increments in $b^*$ values whereas decreases $L^*$ values. Cook yield was similar to control in phosphate-free samples formulated with JAP-SC mix. Either low or medium ratios of JAP in combination with SC managed to protect most of the sensory parameters, while sensory scores tend to decrease in samples containing high levels of JAP. Addition of JAP to formulations presented samples that have equivalent behavior to phosphates in terms of lipid oxidation. In conclusion, our study confirms that utilization of JAP in combination with SC had promising effects as phosphate replacers by presenting natural solutions and providing equivalent quality to standard phosphate containing products.

  • Portland cement and sodium silicate are widely used as the main components of the injection, which are used to prevent flow and improve ground condition. The main problem of the injection material is the leaching of the sodium hydroxite and silicate due to the limited reaction with the cement. This paper studies the effect of cement hydration retarder on the compressive strength of the sodium silicate - cement gel. A series of tests, including digital-type testing machine, X-ray diffraction and scanning electron microscope are performed. Results clearly demonstrate that the sodium tripolyphosphate, which is the cement hydration retarder in the test, significantly improves the initial strength of the homogel.

The effect of additives on the reactions of sodium silicate solution and cement suspesion was investigated by various physical and chemical tests, such as Si-NMR, XRD, SEM uniaxial compression test. The additives were STPP(sodium tripolyphosphate), EDTA, SUGAR. The compressive strength of sodium silicate(No.3) - cement grout with additives was about $1.5{\sim}10$ times higher than that without additive in early age(72 hours).

  • The minimum concentrations of nonionic and anionic surfactants inducing phytotoxicity were investigated after spraying or flooding surfactant solutions to annual plants. Of the sufactants tested, LE, NP, SPSS, LN, PAAS and DBC induced phytotoxicity at the lowest concentrations through all treatments and Tween, Span, SP, SC, STPP and CLIS induced the least phytotoxicity even at high concentration. At flooded paddy field tests, anionic surfactants induced phytotoxicity at the lower concentration than nonionic, but showed similar tendencies with other treatments. In pre-emergence treatments of upland and dry paddy field tests, there was little phytotoxicity induced at over 10 percent, while phytotoxicity was induced at the lowest concentration among 6 treatments in flooded paddy field tests.

  • The tendency to renewables is one of the consequences of changing attitudes towards energy issues. As a result, solar energy, which is the leader among renewable energies based on availability and potential, plays a crucial role in full filing global needs. Significant problems with the solar thermal power plants (STPP) are the operation time, which is limited by daylight and is approximately half of the power plants with fossil fuels, and the capital cost. Exergy analysis survey of STPP hybrid with PCM storage carried out using Engineering Equation Solver (EES) program with genetic algorithm (GA) for three different scenarios, based on eight decision variables, which led us to decrease final product cost (electricity) in optimized scenario up to 30% compare to base case scenario from 28.99 $/kWh to 20.27 $/kWh for the case study. Also, in the optimal third scenario of this plant, the inner carbon dioxide gas cycle produces 1200 kW power with a thermal efficiency of 59% and also 1000 m3/h water with an exergy efficiency of 23.4% and 79.70 kg/h with an overall exergy efficiency of 34% is produced in the tetrageneration plant.

A Study on the Removal of Deposited Calcium on the Cotton Fabric. (직물에 침착된 Calcium의 제거에 관한 연구)

  • The purpose of this study was to investigate the effects of laundry variables and additives on the removal of deposited calcium on the cotton fabric. Samples of calcium deposited fabric was made by treating fabric with $CaC1_2$ and $Na_2CO_3$ solution subsequently. The experimental variables were: 1) NaOH concentration ($0.0001\%$, $0.0005\%$, $0.001\%$, $0.005\%$, $0.01\%$) 2) Alkaline builders(sodium carbonate, sodium meta silicate) 3) Sequestering agents(STPP and EDTA concentration: $0.02\%$, $0.04\%$, $0.06\%$, $0.08\%$, $0.1\%$, $0.15\%$, $0.2\%$) 4) Temperatures($25\pm1^{\circ}C$, $40\pm1^{\circ}C$, $60\pm1^{\circ}C$) 5) Edge-abrasion to the removal of deposited calcium on the cotton fabric. The fabric was washed for 15 minutes in a washing machine(Model: Gold Star WP-3007) or Launder-0-meter(40$\~$45 r.p.m., Toyo Rika Instrument Inc.) and rinsed 3 times per every rinsing time. The amount of calcium deposits on the fabrics was determined by EDTA-back titration methods and edge-abrasion was evaluated by ASTM D 3886 method. The results of this study were as follows: 1) pH of surfactant solution(NaOH concentration) did not influence on the removal of deposited calcium on the cotton fabric. 2) Added alkaline builders did not influence on the removal of deposited calcium on the cotton fabric. 3) It was shown that STPP and EDTA were effective to remove deposited calcium. The removal of deposited calcium on the cotton fabric was proportionally increased with increasing concentration of STPP and EDTA. At high concentration, however, the rate was rather decreased with increasing concentration. 4) The temperature of washing solution did not influence on the removal of dedosited calcium on the cotton fabric. 5) As the removal of deposited calcium on the cotton fabric was increased, the rate of edge-abrasion of the fabric was gradually increased.

  • Scale is agglomerate or thin film compounded of soluble salts in papermaking process. It causes many problems such as closing up pipelines, contaminating wire and felt, decreasing efficiency of additives and paper quality. In this study, physical factors related to forming scale in white water are determinated and optimum conditions are proposed. To control scale, ACP(Acrylacid Copolymer) was synthesized and compared with conventional chemicals such as EDTA, DTPA and STPP.

Different Effect of Sodium Chloride Replacement with Calcium Chloride on Proteolytic Enzyme Activities and Quality Characteristics of Spent Hen Samgyetang

  • Sodium chloride (NaCl) replacement with calcium chloride (CaCl2) effect on protein solubility, proteolytic enzyme and quality characteristics of a chicken soup prepared from spent hen (SH) chicken were investigated. By means of immerse marination prior to cooking, a total of 60 skinless SH breast meat were randomly allocated into ten groups admitted to treatments with marinade solution containing sodium tripolyphosphate (STPP) and reduced percentage of NaCl with CaCl2 at 0%, 25%, 50%, 75%, and 100% at 4±2℃ for 20 h. STPP was adjusted to 0.5% for all treatments and NaCl replacement at 0% was used as control. The different methods, particularly boiling at 100℃ and retorting at 121℃, 1.5 kgf/cm2 for 60 minutes, were applied following marination. An upregulation of cathepsin-B and caspase-3 enzymes were a consequences from a higher percentage of CaCl2 within meat environment. Accordingly, modified the protein solubility in particular the myofibrillar and total protein solubility. In addition, a significant increase in water holding capacity (WHC), pH value, myofibril fragmentation index (MFI), and moisture content was obtained due to salt replacement (p<0.05). Limited effect was observed for shear force value, collagen content and cooking yield. Eventually, this study implied that although protelytic enzyme and protein solubility was upregulated by the replacement of NaCl with CaCl2 at >75%, extensive effect on texture properties was not observed. Therefore, NaCl replacement at 75% could be a promising strategy for quality improvement of SH chicken soup.

DEVELOPMENT OF FILTERING SYSTEM OF LASER FLUORESCENCE FOR IMPROVEMENT OF THE DIAGNOSTIC SENSITIVITY FOR DENTAL CARIES (레이저 형광법의 치아우식증 진단감도를 증진시키기 위한 필터링 시스템 개발)

  • The objective of this study is to improve the optical sensitivity of laser fluorescence for detection of incipient enamel caries. An incipient carious lesion was formed in various stages by placing an enamel specimen of a bovine tooth in STPP demineralization solution. After measuring the optical density of the lesion surface by laser fluorescence induced by argon laser and various alter of yellow(500-520nm), amber(520-540nm), orange(540-560nm), and red(560-580nm), the specimen was cut vertically to measure the depth of the lesion using a polarizing microscope. SAS statistical program was used to analyze the relationship between the optical density of the lesion suface and the depth of the lesion. The results were as follows: 1. The optical density of early carious lesion, measured by laser fluorescence with amber and orange filter, and lesion depth observed by polarizing microscope, were increased as demineralization time increased. 2. The correlation coefficient between optical density of the lesion surface and the histological depth of the lesion was the highest in orange filter(r=0.49), followed by amber(r=0.32), yellow(r=0.13) and red(0.01). 3. Regression analysis showed that the most linear relationship between the optical density and the lesion depth was existed in orange filter group. In regard above results, laser fluorescence could be considered to be reliable for optical diagnosis of dental caries.

  • Starch phosphates were prepared from the corn starch mixed with 2% sodium tripolyphosphate by twin-screw extruder with a feed rate of 20 kg/hr and an extrusion temperature of $130^{\circ}C$, and the effects of extrusion variables on the physicochemical properties (target parameters) of starch phosphates were investigated. Interrelations of system parameters (specific mechanical energy and extrudate moisture) and rheological properities of starch was analyzed by using the response surface analysis. Degree of substitution (DS) was increased with increasing the feed moisture, and showed the maximum value at the screw of near 250 rpm, Degree of gelatinization was proportionally increased with increasing the screw speed and decreasing the feed moisture. Apparent viscosity of the paste was increased with increasing the feed moisture, but it was not significantly affected by the screw speed. It was found by scanning electron microscopy that the starch microgranules were much more degradaded, and as consequent result, the intrinsic viscosity was decreased, whereas, water solubility index was increased. The rate of retrogradation of the gels was retarded with increasing DS and decreasing viscosity.
