This study was conducted to investigate the antioxidant activity of Jeolpyeon containing lotus seed powder. Original Jeolpyeon and Jeolpyeon with BHT (butyl hydroxy toluene) werecompared. Antioxidant activities were measured based ontotal polyphenolic contents, total flavonoid contents, DPPH radicalscavenging activity, reducing power, and SOD-like activity. Total polyphenolic and total flavonoid contents of Jeolpyeon containing lotus seed powder were estimated at $37.81{\pm}0.45$ mg GAE/g and $26.35{\pm}0.13$ mg QE/g respectively. DPPH radical scavenging activity increased upon addition of lotus seed powder. Further, reducing power was higher in Jeolpyeon containing lotus seed powder than original Jeolpyeon or Jeolpyeon with BHT. The antioxidative effect of Jeolpyeon significantly increased uponaddition of lotus seed powder.

This study was worked out to investigate antioxidant activity of solvent extracts from wild grape skin by measuring electron donating ability (EDA), reducing power, superoxide dismutase (SOD)-like activity, thiobarbituric acid reactive substances (TBARS) and nitrite scavenging ability. Total phenolic compound and flavonoids contents were the highest in ethyl acetate extract, $54.4{\pm}1.18\;mg/100\;g$ and $645.1{\pm}5.05\;mg/100\;g$, respectively. The EDA and reducing power of solvent extracts from wild grape skin were proportionally increased with concentration and ethyl acetate extract $(79.2{\pm}0.06%)$ showed the stronger than BHT $(74.1{\pm}0.15%)$ at concentration of $100\;{\mu}g/mL$, especially. SOD-like ability of ethyl acetate $(25.1{\pm}0.41%)$ and butanol $(20.2{\pm}0.13%)$ extracts were stronger than other extracts at concentration of $100\;{\mu}g/mL$. TBARS of ethyl acetate extract was higher than ascorbic acid. Nitrite scavenging ability of solvent extracts from wild grape skin (pH 2.5, $1000\;{\mu}g/mL$) were in order of ethyl acetate $(90.5{\pm}0.75%)$>butanol $(65.9{\pm}2.16%)$>hexane $(58.1{\pm}1.74%)$>chloroform $(55.4{\pm}1.02%)$>water $(40.9{\pm}0.35%)$. Antioxidant activity of solvent extracts from wild grape skin was the highest in ethyl acetate extract from the results of our experiments.

When extracts of KMG (Korean mountain ginseng) leaf tea and fermented KMG leaf tea were compared, the fermented KMG leaf tea extract showedhigher activity at each stage of density. Among the material groups, the KMG extract hadthe least profound SOD-like activity, and similar SOD-like activities were noted in the fermented KMG, KMG leaf tea, and fermented KMG leaf tea extracts. With regard to nitrite scavenging ability at a pH of 1.2, the KMG, fermented KMG, and KMG leaf tea groups exhibited similar results, and at pH 3.0, the KMG and KMG leaf tea extract groups exhibited more profound nitrite scavenging ability compared to the fermented groups. In the case of HeLa cell treatments, the KMG and fermented KMG leaf tea extracts exhibited cancer cell propagation restraint rates in excess of 30%, at a density of 1 mg/mL. And MCF-7 cells treated with fermented KMG and KMG leaf tea showedsimilar propagation restraint rates at more than 27% of cancer cells, at a density of 1 mg/mL. Among the materials, the KMG extract hadthe lowest cancer cell propagation restraint rate at 21%, and the fermented KMG leaf tea extract had the highest rate at more than 70%.

This study was carried out to compare the physiological activities of the extracts from Korean and Chinese Viola mandshurica W. Baker. The water extract from leaves of Chinese V. mandshurica exhibited the highest extraction yields of 30.45 g/100 g and the highest content of total flavonoids as 102.30 mg/g. Also, its ethanol extract showed the best content of polyphenol compounds as 136.16 mg/g. The leaf extract of Korean V. mandshurica produced higher electron donating abilities (EDA) of 92.69% (KLW) and 93.61% (KLE) than the other fractions. The strongest SOD-like activity was shown in the ethanol extract from Korean leaves of 17.28% at the concentration of 1.0 mg/mL. The nitrite scavenging abilities (NSA) of the leaf extracts of V. mandshurica from China were intense over 50% at pH 1.2 and 3.0. In the results of inhibitory rates of xanthine oxidase (XO), both ethanol extracts from Korean and Chinese leaves were higher than the other fractions as 98.67% and 93.80% respectively. Effect of tyrosinase inhibition was the highest in the water extract (45.04%) of Chinese leaves, followed by its ethanol extract (31.36%). The results of EDA, SOD-like activity and XO inhibition of the leaf extracts from Korean V. mandshurica were higher than those of Chinese, on the other hand, determinations on total polyphenol contents, NSA and tyrosinase inhibition were higher in those of Chinese.

Extraction characteristics of solid Cheonggukjang and the functional properties of corresponding extracts were monitored by the response surface methodology (RSM). The maximum extraction yield of 12.08% was obtained under the specific extraction conditions, such as microwave power of 132.40 W, ratio of solvent to sample content of 7.57 g/mL and extraction time of 14.11 min. The maximum electron donating ability (EDA) was found as 33.53% at the conditions of 113.26 W microwave power, 16.39 g/mL of ratio of solvent to sample content and 12.67 min extraction time. The maximum superoxide dismutase (SOD) -like activity was 89.62% under the extraction conditions of 61.82 W, 17.06 g/mL and 9.03 min. Based on superimposition of three dimensional RSM with respect to extraction yield, electron donating ability and SOD-like activity obtained under the various extraction conditions, the optimum ranges of extraction conditions were found to be microwave power of $75{\sim}140W$, ratio of solvent to sample content of $3{\sim}12g/mL$ and extraction time of $1{\sim}11min$, respectively.

Extraction characteristics of pumpkin (Cucurbita moschata Duch.) and the functional properties of the corresponding extracts were monitored by the response surface methodology (RSM). The maximum electron donating ability was found as 24.57% at the conditions of 33.13 watt microwave power, 53.67% ethanol concentration and 3.76 min extraction time. The maximum tyrosinase inhibition was 96.59% at 56.21 watt, 68.02% and 7.97 min. The SOD-like activity was 45.57% at 36.00 watt, 71.51% and 5.28 min. The total polyphenol content was 85.02% at 127.39 watt, 76.18% and 2.68 min. Based on superimposition of four dimensional RSM with respect to electron donating ability, tyrosinase inhibition, SOD-like activity and total polyphenol contents obtained under the various extraction conditions, the optimum ranges of extraction conditions were found to be microwave power of 72~144 watt, ethanol concentration of 0~38% and extraction time of 6~9 min.

Extraction characteristics of onion (Allium cepa) and the functional properties of corresponding extracts were monitored by the response surface methodology (RSM). The maximum extraction yield of 44.02% was obtained under the specific extraction conditions, such as microwave power of 143.13 W, ethanol concentration of 61.77% and extraction time of 3.39 min. The maximum electron donating ability (EDA) was found as 45.85% at the conditions of 143.55 W microwave power, 27.52% ethanol concentration and 4.86 min extraction time. Onions cultivated with (SY) or without (SN) sulfur application were stored for up to 36 weeks at $4^{\circ}C$ since harvest, after which they were analyzed for chemical composition and antioxidant activity in relation to sulfur (S) application and storage duration. Compared with SN onions, SY onions showed lower moisture and higher protein, soluble solids, and flavonoid contents at the time of harvest, and moisture and protein contents remained the same until 20 weeks of storage. However, soluble solids decreased while antioxidant activities, including flavonoids content, total reducing capacity, and superoxide dismutase (SOD)-like activity, appreciably increased as storage time increased to 20 weeks, which could be attributed to onion respiration and protective response to environmental stresses, respectively. There were abrupt decreases in flavonoid content and SOD-like activity at 36 weeks, presumably due to severe deterioration. Interestingly, all phenomena observed depending on storage time were independent of S application of onions. The results show that the critical factor influencing the chemical composition and antioxidant activity of onions during storage was postharvest storage duration rather than S application during onion cultivation.

This study was conducted to investigate the functional biological effects of hot water and ethanol extracts from Taraxacum mongolicum (TM). Then, the hot water and ethanol extracts of TM were measured for total flavonoids content, total phenolics content, electron donating ability, nitrite-scavenging ability, SOD-like activity, tyrosinase inhibitory effect, and elastase inhibitory effect. Total flavonoids contents of hot water and ethanol extracts from TM were 7.80$\pm$0.97 mg/g and 9.12$\pm$0.51 mg/g, respectively, and total phenolics contents were estimated as 54.20$\pm$1.95 mg/g for water extract and 79.43$\pm$4.44 mg/g for ethanol extract. The $RC_{50}$ values for electron donating ability of hot water and ethanol extracts were 943.98 $\mu$g/mL and 309.41 $\mu$g/mL. SOD-like activity and nitrite-scavenging ability were dependent on concentration of hot water and ethanol extracts, and the activity of ethanol extract was higher than that of hot water extract. However, hot water and ethanol extracts from TM showed no inhibitory activities on the elastase and tyrosinase inhibitory activities. Based on the above results, the ethanol extract of TM seems to be the most pertinent for use as functional food and cosmetic.

This study was conducted to investigate antioxidative and physiological activities of ethanol extracts from different parts (flower, leaf, root, and the whole plant) of Taraxacum officinale. The ethanol extracts from different parts were measured to examine total flavonoids content, total polyphenol content, elect ron donating ability,superoxide dismutase (SOD)-like activity, nitrite-scavenging ability and tyrosinase inhibition effects. Total flavonoids content in leaf extract (41.66 mg/g) and total polyphenol content in flower extract (71.91 mg/g) were higher than those of other parts. All assays were conducted at concentrations of 0.1, 0.3, 0.5, and 1 mg/mL ethanol extracts. The electron donating abilities of leaf, flower, the whole plant, and root extracts were 92.25%, 88.18%, 84.55% and 83.40%, respectively, at a concentration of 1 mg/mL. The activities were concentration dependent. The SOD-like activity of ethanol extracts from different parts was 8.40~11.20% at a concentration of 1 mg/mL. The nitrite-scavenging abilities of flower and leaf extracts measured at pH 1.2 were 47.37% and 47.18%, respectively, at a concentration of 1 mg/mL, which were higher than those of the whole plant and root extracts. Tyrosinase inhibition activity of the leaf extract at a concentration of 1 mg/mL was the highest (34.22%) and that of the whole plant and root extracts was shown to be more than 20%. These results suggest that ethanol extracts from different parts of Taraxacum officinale could be used as antioxidative functional food sources.
