Effects of porcine blood plasma on the emulsion stability, physicochemical characteristics and textural attributes of emulsified pork batter

  • This study was conducted to determine the effects of addition of porcine blood plasma (PBP) to the emulsified pork batter as a substitute for the soy protein isolate (SPI) or sodium caseinate (SC) on the emulsion stability and physicochemical and textural properties of the emulsified pork batter. A total of 10 treatments were no addition and 0.5%, 1.0%, and 1.5% addition with each of SPI, SC, and PBP. The moisture and fat losses of the pork emulsion after cooking decreased with increasing percentage of any of SPI, SC, and PBP (p < 0.05). Further, moisture loss was less for the PBP treatment than for SPI and SC (p < 0.05). The lightness, redness, and whiteness of the emulsified pork batter decreased (p < 0.05) due to any of the SPI, SC, and PBP treatments whereas the yellowness and the chroma and hue values increased. The lightness, redness, yellowness, and chroma and hue values differed also among the SPI, SC, and PBP treatments (p < 0.05); however, the numerical difference between any two types of substitutes was less than 8% of the two corresponding means in all of these variables. Textural properties, including the hardness, cohesiveness, springiness, gumminess, chewiness, and adhesiveness, were not influenced by any of the SPI, SC, and PBP treatments (p > 0.05), except for greater gumminess and chewiness for the PBP treatment than for SC. The present results indicate that PBP is comparable or even superior to SPI or SC in its emulsion-stabilizing effect and therefore could be used a substitute for the latter as a non-protein ingredient of pork emulsion batter.

  • 정보통신 보호기술은 컴퓨터와 컴퓨터 통신망의 이용시에 발생할 수 있는 정보의 불법적인 사용 및 파괴를 방지하는 기술이다. 최근 컴퓨터범죄가 빈번하게 발생함에 따라 보안기술에 관한 관심 및 연구, 개발이 크게 증대되고 있으며 이에 따라 정보기술의 국제표준화 작업을 수행하는 ISO/IEC JTC1내에 정보기술 관련 보안기술 표준화를 담당하는 SC27을 새로이 발족하였다. 본 고에서는 SC27의 설립 배경, 설립 목적, 조직 구성. 표준화 분야, 주요 표준화 활동현황 등에 대해 최근에 개최되었던 세 차례의 SC27 총회결과를 중심으로 정보통신 보호기술 표준화에 대한 전반적인 현황을 살펴보았다.

Direct Numerical Simulation of Mass Transfer in Turbulent Flow Around a Rotating Circular Cylinder (II) - Effect of Schmidt Number - (회전하는 원형단면 실린더 주위의 난류유동 물질전달에 대한)

  • In this paper, mass transfer in turbulent flow around a rotating circular cylinder is investigated by Direct Numerical Simulation for Schmidt numbers Sc=1 and 1670. Correlation between Sherwood and Reynolds number predicted agrees well with other experimental results over both Sc. Reynolds analogy identified at Sc=1 definitely causes a strong correlation between concentration fluctuation and streamwise velocity. For Sc=1670, it is found that positive small values of concentration fluctuations are observed more frequently than the case of Sc=1 particularly out of the range of Nernst diffusion layer in the viscous sub-layer. This fact is fully confirmed by detailed statistical study using a probability density function of concentration fluctuations.

Effects of Schisandra Chinensis on Human Breast Cancer Cells (오미자의 유방암 세포사멸과 TRPM7 관련성에 관한 연구)

  • Fruits of Schisandra chinensis (SC) Baill are considered a traditional herbal medicine for the treatment and alleviation of various diseases. The purpose of this study was to investigate the anti-cancer effects of SC extract in human breast adenocarcinoma cells (MCF-7). We used human breast adenocarcinoma cell line, MCF-7 cells. We examined cell death by MTT assay and caspase 3 and 9 assay with SC extract. To examine the inhibitory effects of SC extract, cell cycle (sub G1) analysis and mitochondrial membrane depolarization was done the MCF-7 cells after one day with SC extract. In addition, to investigate the transient receptor potential melastatin 7 (TRPM7) currents, we used the whole cell patch clamp techniques. Furthermore, TRPM7 channels were overexpressed in human embryonic kidney (HEK) 293 cells to identify the role of TRPM7 channels in MCF-7 cell growth and survival. SC extract inhibited the growth of MCF-7 cells in a dose-dependent fashion. Also we showed that SC extract induced apoptosis in MCF-7 cells by MTT assay, caspase 3 and 9 assay, sub-G1 analysis and mitochondrial membrane depolarization. SC extract inhibited the TRPM7 currents in MCF-7 cells and in TRPM7 overexpressed HEK 293 cells. Furthermore, TRPM7 channel overexpression in HEK 293 cells exacerbated SC extract-induced cell death. Our findings provide insight into unraveling the effects of SC extract in human breast adenocarcinoma cells and developing therapeutic agents against breast cancer.

Compression Behavior of Steel Plate-Concrete Structures with the Width-to-Thickness Ratio (폭두께비에 따른 강판콘크리트구조의 압축거동)

  • This study was conducted to understand the characteristics of the compression behavior of steel plate-concrete(SC) structures with a width-to-thickness ratio under axial loading. SC structures are structural systems where concrete is poured into steel plates to which headed stud bolts had been attached inside. The specimens were classified according to the two width-to-thickness (W/T) ratios of 1.60 and 3.56. Through these experiments, the following conclusions could be arrived at. The fracture pattern of the specimens showed that steel plate buckling occurred between the stud lines, and that a crack occurred at the concrete spalling from the sides of the concrete before the system reached the maximum compressive strength. The maximum compressive strength of the specimens was larger than that of the existing equations (AISC 2005, ACI 318-05, and KBC 2005). With the increased W/T ratio of the specimens, the strength of the concrete core was decreased to account for the confinement effects from the steel plates.

Modification of the ASME Code Z-Factor for Circumferential Surface Crack in Nuclear Ferritic Pipings (원전 페라이트 배관내의 원주방향 표면균열에 대한 ASME Code Z-Factor의 수정)

  • The purpose of this paper is to modify the ASME Code Z-Factor, which is used in the evaluation of circumferential surface crack in nuclear ferritic pipings. The ASME Code Z-Factor is a load multiplier to compensate plastic load with elasto-plastic load. The current ASME Code Z-Factor underestimates pipe maximum load. In this study, the original SC. TNP method is modified first because the original SC. TNP method has a problem that the maximum allowable load predicted from the original SC. TNP method is slightly higher than that measured from the experiment. Then the new Z-Factor is developed using the modified SC. TNP method. The desirability of both the modified SC. TNP method and the new Z-Factor is examined using the experimental results for the circumferential surface crack in pipings. The results show that (1) the modified SC. TNP method is good for predicting the circumferential surface crack behavior in pipings, and (2) the Z-Factor obtained from the modified SC. TNP method well predicts the behavior of circumferential surface crack in ferritic pipings.

Determination of Set Point of Streaming Current for Optimum Coagulation (최적 응집을 위한 Streaming Current의 기준값 설정에 관한 연구)

  • The objectives of this study were to investigate the affecting factors on streaming current(SC) and to evaluate set point(SP). For the study, a pilot scale apparatus with a capacity of 12 L/min was operated at Guui water intake of Seoul. SC was monitored with varying poly aluminium chlorides(PACs) dose and water quality parameters like conductivity, turbidity, temperature, and pH. The removal efficiencies were evaluated in terms of turbidity and dissolved organic carbon(DOC) with varying coagulation conditions. The effects of affecting factors on SC and SP were also estimated. According to the result observed from the variation of SC with water quality parameters during the experimental period, tendencies of SC and conductivity were very similar, and SC and conductivity had a strong linear relation. At the optimum condition of coagulation, SP decreased as the rainy season changed to the dry season, during the experimental period. Especially, in condition of low turbidity, conductivity had relatively more effect on SC than turbidity. As conductivity increased, SP decreased and coagulant dose per unit increase of SC gradually increased. In view of the results so far obtained, it may be possible to determine the SP range considering the real time variation of water quality, especially conductivity.

Biological Control of the Black Cutworm, Agrotis ipsilon (Lepidoptera: Noctuidae) with the Korean Entomopathogenic Nematode, Steinernema carpocapsae GSN1 Strain (Rhabditida: Steinernematidae) in Turfgrasses (잔디에서 한국산 곤충병원성선충, Steinernema carpocapsae GSN1 계통을 이용한 검거세미나방의 생물적 방제)

  • The black cutworm, Agrotis ipsilon (Hufnagel) is a major insect pest of economic crops including turfgrasses on golf courses. The entomopathogenic nematode, Steinernema carpocapsae GSN1 strain (ScG), a Korean isolate, is an effective biological control agent for soil dwelling and greenhouse insect pests in Korea. In addition, ScG is commercially produced in Korea. We conducted laboratory, greenhouse, and field trials to evaluate efficacy of ScG against black cutworms in turfgrasses. A rate of 63 infective juveniles (Ijs) per larva killed >90% of $3^{rd}$ instars feeding in cups of artificial diet within 3 days. In greenhouse trials against cutworms feeding in pots of turfgrass, efficacy of ScG was higher against $4^{th}$ instars than against $2^{nd}$ instars (90.0 vs 81.2% mortality, respectively, at $2,000Ijs\;pot^{-1}$) in perennial ryegrass, and higher against $3^{rd}$ instars in creeping bentgrass, Agrostis palustris than in zoysiagrass, Zoysia japonica (96.7 vs 52.5% mortality at $100,000Ijs\;m^{-2}$) in pot. The corrected mortality of $4^{th}$ instar was 79.9% at the rate of $100,000Ijs\;m^{-2}$ in the creeping bentgrass in the field. So ScG could be used as biological control agent against black cutworm in turfgrass of golf courses.
