  • The effect of high carbon dioxide and ethylene treatment on postharvest ripening regulation of red kiwifruit (Actinidia melanandra) was investigated during cold storage. Physio-chemical properties such as weight loss, firmness, SSC, acidity, and market quality were analysed in red kiwifruit held at $10^{\circ}C$ compared to the fruit treated with carbon dioxide and ethylene during 75 days of storage. No significant weight loss was detected in red kiwifruit treated with carbon dioxide until 75 days of storage while the most rapid loss was found in fruit treated with ethylene. In ethylene-treated fruit, the firmness was dramatically reduced from 4.2kg on the first day to 1.2 kg after 27 days of storage at $10^{\circ}C$. However, the firmness of the carbon dioxide-treated fruit was 1.8kg after 54 days of storage. The highest level of SSC(%) was investigated within the 27 storage days at $10^{\circ}C$ for fresh red kiwifruit treated with exogenous ethylene, whereas the carbon dioxide-treated fruit exhibited a greatly increased SSC after 64 days. The carbon dioxide-treated red kiwifruit maintained statistically(p<.01) higher levels of acidity compared to the control and the exogenous ethylene-treated ones during 41 days of storage at $10^{\circ}C$. The SSC/Acid ratio of fruit treated with carbon dioxide was significantly lower (p<.01) maintained than the other two treatments (ethylene-treated and control fruit)throughout the 75-day experiment. Based on the quality characteristics of postharvest red kiwifruit, it could be concluded that the carbon dioxide treatment significantly delayed the ripening process and maintained the market quality of harvested red kiwifruit, which can be a potential application for commercial use in the kiwi industry.

  • Changes in chemical components caused by the degree of ripening and harvesting factors in Korean single-harvested peppers (SR211 vs. SR213 varieties) were analyzed. The ASTA color values of SR211 and SR213 were 104.23 and 189.66, respectively. Capsaicinoids contents of red, mixed, and green peppers of SR211 were 174.89, 157.00, and 192.01 mg/100 g, respectively. However, those in SR213 contanined <5 mg/100 g. Free sugar contents of red, mixed, and green fruits were 15.99%, 14.85%, and 8.03% in SR211 and 21.44%, 19.43%, and 8.10% in SR213, respectively, and those in SR211 and SR213 increased positively with the degree of ripening. L-ascorbic acids contents of red, mixed and green fruits were 11.41, 11.04, and 6.71 mg/g in SR211, respectively and 7.47, 7.16, and 3.66 mg/g in SR213, respectively and those in SR211 and SR213 increased positively with the degree of ripening. Changes in ASTA color values, capsaicinoids and free sugars in two varieties were monitored for 3 years. The characteristics of pungency and high redness were maintained in two varieties. Most notably, capsaicinoid contents of SR211 harvested in 2004 were above 250 mg/100 g in both red and green fruits.

  • 10 of Korean domestic recommended varieties(all of them are determinate type) and 10 of introduced varieties from U.S.A.(All of them are indeterminate type) are grown in replicated field in order to clarify the varietal differences in the days from planting to blooming to ripening. The results are summarized as follows; 1. Domestic varieties showed remarkable shortday sensibility for the days from planting to blooming. The difference in sensibility between domestic and introduced was significant while within the domestic group the differences were not significant. 2. The days from planting to blooming were linearly shortened in accordance with the delayed planting from the late April through the late June. 3. Annual variation in days from planting to blooming was not noticeable in the domestic varieties while the introduced ones showed remarkably. 4. The days from blooming to ripening were significantly shortened for the introduced varieties but not significantly for the domestic varieties accordingly with the delayed planting. The mean shortest days of domestic varieties were longer than the mean shortest days of introduced varieties. 5. The days from planting to blooming was shortest when a variety was grown during early August through middle September (with 12.5~13.5 hrs day length and 22~$27^{\circ}C$ temperature), and the days from blooming to ripening were also shortest when a variety was matured within same duration. These were true for the varieties of both groups.

  • This experiment was conducted to investigate the propagation system by seed to check growth, flowering, and making seed of three-year-old cactus of potted Mammillaria goldii. M. theresae, and M. pseudopeclinata. Plant height and width of them was 2.5~2.8 cm, and 2.8~3.1 cm, and seed formation of Mammillaria goldii and M. theresae had internal body taking130 to 135 days to ripening seeds, however, M. pseudopectinata had externals taking just 26 days to ripening seeds. The mean seeded pod from April to June of M. goldii was 50.0% and the number of seeds in a pod was 25.3. In M. theresae, the mean seeded pod from April to June was 57.3% and the number of seeds in a pod was 35.0. However, the highest rate of seeded pod on May of M. pseudopectinata was 75.0% and the number of seed in a pod was 66.0. The sib crossing was much more ripening seed fertilization than that of self cross ing in the Mammillaria. The self crossing was formed from 12.0% to 20.0% of seeded pod, from 12.0 to 16.0 number of seed in a pod. However, sib crossing obtained 58.0% of seeded pod, 30 seeds in a pod of M. goldii, 65.0% seeded pods and 40 seeds in a pod of M. theresae, and 75.0% seeded pod, 68 seeds in a pod of M. pseudopectinala as the highest of them.

  • This study was conducted in order to evaluate the quality characteristics of Gouda cheeses supplemented with fruit liquor (Prunusmume or Cornus officinalis). Fruit liquor was supplemented to Gouda cheeses during preparation. Changes in chemical composition, lactic acid bacterial population, pH, water-soluble nitrogen, sensory characteristics, and proteolysis were monitored in the prepared ripened cheese. The electrophoresis patterns of cheese proteins, fruit liquor functional component concentrations, and the flavonoid content of the cheeses were also determined. The addition of fruit liquor did not affect (p> 0.05) the appearance or sensory characteristics of the cheeses. Higher amounts of crude ash, mineral, and flavonoids (p< 0.05) were observed in the liquor supplemented cheese than in the control cheese. Findings from this study suggest that wine supplemented Gouda could provide additional nutrients while maintaining flavor and quality.

  • This paper describes the purification and partial characteristics of aminopeptidase from Microccus sp. LL3 to utilize the microorganism as a potential agent for industrial application for the purpose of shortening ripening period of cheddar cheese. The optimal temperature and pH for enzyme activity were $35^{\circ}C$ and 7.0, respectively for L-leucine-p-nitroanilide as substrate. The enzyme remained stable for 10 minutes up to $50^{\circ}C$. The activity of aminopeptidase was stimulated by $Mg^{++}$ ion but strongly inhibited by $Hg^{++}$, metal complexing reagents, ethylenediaminetetraacetate (EDTA) and 1,10-phenanthroline. The enzyme was thought to be metallopeptidase. This enzyme had a broad substrate specificity, but was inactive on peptide with arginine as N-terminal amino acid. An intracellular aminopeptidase from Micrococcu sp. LL3 was purified by chromatography on DEAE-Sephacel and filtration on Sepacryl S-300. The enzyme has a molecular weight of 43,500.

  • In this study, significant factors influencing on the quality and stability of fermented sausage, such as materials, processing conditions, and microbiological characteristics as well as topography during ripening, were documented. Since most fermented sausages are not heated during manufacture or before consumption, a strict control of the growth of pathogens and the selection of favourable conditions that encourage the specific growth and development of desirable microflora are particularly important. With respect to microbiological safety, hurdles, i.e., preservations(nitrite), redox potential, competitive flora, acidity(pH), and water activity($a_{w}$) are matters of importance to prevent proliferation of bacterial pathogens. Today, for ensuring the safety and quality of the final product, the application of starter cultures in combination with the proper processing is subsequently used in practice. For improving the efficiency of microbiological utility in the production of fermented sausages, the understanding of their topography is essential. The documented different points must be taken into account when HACCP systems set up for the manufacture of fermented sausages. There are continuous researches concerning desirable improvements to sausage fermentation with health enhancing properties.
