The Effects of an After-School Cooking Program on the Eating Habits and Sociality of Children (방과후학교 요리교실이 아동의 식습관과 사회성에 미치는 영향)

  • The purpose of this study was to investigate the effects of an after-school cooking program on the eating habits and sociality of children. Thirty five children from the 3rd to the 6th grade of G Elementary School participated in this program comprising 12 periods of cooking activities, from May to August 2013. The content of the after-school cooking program included japchae, topokki, jajangmyeon, oi sobagi, cake, snack wrap, vegetable fried rice, sticky noodle, sushi, pizza, rice muffin, and sandwiches. Before and after learning, the participants' eating habits and sociality were investigated. The study analyzed the mean, standard deviation, and Wilcoxon Matched-Pairs Signed-Ranks Test results for a comparison between the pre- and post-test results. On the basis of the research findings and discussions, the study reached the following conclusions. First, the after-school cooking program was analyzed as being helpful and useful in categorizing the eating habits of children as sanitary dietary life, well-mannered dietary life, and healthy dietary life. Further, more girls than boys fostered effective eating habits. Second, the after-school cooking program was analyzed as being helpful and useful in determining sociality and more girls than boys fostered effective sociality. Third, cooking is an appropriate topic for the after-school program of Korean elementary schools, and the cooking program has expanded in G Elementary School after the abovementioned experiment.

  • 본 연구는 오징어, 쌀가루 및 탈지콩가루를 혼합하여, 압출성형 공정을 이용하여, 새로운 스낵제품을 만들고자 수행하였다. 실험실용 single-screw extruder를 이용하여 제품의 낮은 전단력과 높은 팽화율을 목적으로 수 차례 실험한 결과, 15.7%의 혼합물수분과 16$0^{\circ}C$의 조리 오도가 비교적 좋은 제품 생산조건으로 나타났다. 이 조건에서 냉동 건조 오징어가루나 아주 곱게 갈은 생 오징어를 다른 재료들과 혼합하여 최종 제품들을 만들었다. 전단력은 두 오징어 첨가제품간에 유의성 있는 차이는 없었으나, 팽화율의 경우는 생 오징어를 첨가하여 만든 제품이 냉동 건조시킨 오징어를 첨가하여 만든 제품에 비해 유의적으로 높았다. 소비자 관능검사 결과 생 오징어로 만든 제품이 냉동 건조시킨 오징어로 만든 제품에 비해 유의적으로 높았다. 소비자 관능검사 결과 생 오징어로 만든 제품이 냉동 건조시킨 오징어로 만든 제품에 비해 외관, 맛, 향, 그리고 전체적 면에서 선호도가 높았다. 결론적으로 본 연구는 단백질이 풍부한 오징어와 탈지 코가루를 쌀가루에 첨가하여 비교적 팽창이 잘된 스낵제품을 생산할 수 있는 조건을 제시하였으며, 이 결과는 차후 제품개발의 기반으로 사용할 수 있을 것이라고 본다.

Snacking Behaviors and Depression in Middle School students in Jeonnam Area (전남지역 중학생의 간식섭취와 우울에 관한 연구)

  • The purpose of this study was to investigate the relationships among snacking behaviors and depression in middle school students. A survey was conducted on 777 middle school students (491 boys and 286 girls). Using a self-reporting method, the participants took 20 minutes to complete the questionnaires. Our data revealed that the height and weight of boys were 172.66 cm and 63.48 kg, respectively, whereas those of girls were 159.86 cm and 51.62 kg, respectively. Sleep durations of boys and girls were 6.44 and 6.41 hours, respectively. Boys ate more rice cake than girls, whereas girls ate more biscuits than boys. The average B.D.I (Beck Depression inventory) scores for boys and girls were 9.73 and 11.49, respectively. Degree of depression was significantly higher in girls compared to boys. We also observed significant correlations between depression and snacking (rice cake, biscuits, chocolate, and fried potato). This study may provide basic information on snacking behaviors and depression in middle school students, and the findings suggest that proper control of emotions is required to maintain desirable eating behaviors in middle school students.

Effect of Moisture Content and Temperature on Physical Properties of Instant Puffed Rice Snacks (수분함량과 온도에 따른 즉석팽화 쌀 스낵의 물리적 특성)

  • The physical properties of instant puffed rice snacks with non-glutinous, glutinous, and steamed non-glutinous rice were evaluated at different moisture content and puffing temperatures. Raw materials were tempered to 9%, 12%, 15%, and 18% moisture content and puffed at $200^{\circ}C$, $210^{\circ}C$ and $220^{\circ}C$. With the increase in moisture content and puffing temperature, puffed snacks were less bulky. As the moisture content decreased and puffing temperature increased, the whiteness (L) value of puffed snacks decreased, while the redness (a) and yellowness (b) values increased. WSI and WAI were higher with an increase in moisture content and puffing temperature. Instant puffed rice snacks made from non-glutinous, glutinous, and steamed non-glutinous rice showed differences in bulk density, WSI, and WAI, while no difference was found in color values. When the moisture content increased from 9% to 15%, the cells within the products became more uniform and smaller. The instant puffed rice snacks made from glutinous rice showed the smallest and most uniform cell structure.

  • This study investigated the food habits of the elementary school children according to obesity index. The subjects included 1,307 elementary school children classified into four groups according to their individual obesity indices: underweight, normal weight, overweight, and obesity. The distribution of subjects by BMI was 51.5% underweight, 32.9% normal weight, 7.3% overweight, and 8.3% obese. Of these children, 62.6% ate breakfast everyday, and common weight control methods were exercise and diet. Lack of appetite was the most common reason for skipping breakfast(75.3%). Most students(74.7%) had Korean traditional cooked rice and side dishes for breakfast, and 69.6% of students responded that their meal speed was $10{\sim}30$ minutes. In conclusion, the food habits influencing obesity were eating speed, snack intake after dinner, and the number of snacks, while the size of meals did not influence obesity.

A Study on the Survey for Lunch of the College Stedent in Seoul (대학생의 점심섭취 실태에 관한 연구 -서울 시내를 중심으로-)

  • The survey was conducted through circulating questionares to three hundred sampled college students in Seoul. the findings are as follows. 1. 52% of MS (Male Students) and 25% of FS(Female Students) brought home-made lunches with them, while 39.2% of MS and 51.6% of FS used food services in campus. 2. Contents of home-made lunches were steamed rice(57%) or steamed ricebarley mix(24%) as a major diet, and Kimchi (Korean style pickled vegetable), fried eggs, soy-sauced sardins as side-dish. The favorite eating places for the students with home-made lunches were found to be campus dining hall for MS, classrooms for FS. 3. The primary reason for not having home-made lunches are the difficulties for handing. 4. The preference for the food served in campus dining hall was the traditional Korean food for MS and western style Snack (bakery and soft drinks) for the FS. 5. Costs spent for lunches were in the range of 200~600 won. 6. Followings are the comparison table for each ingredient compared with recommended daily requirement (RDR).

A Study for Eating Behavior of University Students(I) (남녀 대학생의 식행동에 관한 연구(I))

  • The aim of this study was to determine what kinds of foods university students have, how often they eat out and the regularity and quantity of food they consume. A questionnaire surrey was conducted on 597 university students. The main results are as follows : The average weight of the participants was 68.24kg(male) and 53.12kg(female) with average height 174.50cm(male) and 162.48cm(female). Many students ate irregularly (breakfast 73.5%, lunch 54.4%. dinner 57.1%). The percentage students who had a meal with the average amounts of food were 32.2%(breakfast), 61.1%(lunch), 39.2%(dinner). Male students ate out than female (lunch>dinner>breakfast). Male students usually ate rice, meat, fish, soybean and seaweeds, Female students ate bread, fruits and milk products. Male students consumed carbonated beverages drinks and alcohol more often than females-who consumed many types of-snack More female students preferred fast food than males.

A Study on the Meal Pattern of Liberal High School Students in Inchon (인천지역 인문계 고교생의 식사형태에 관한 연구)

  • This study is carried out to investigate the actual meal pattern of liberal high school students, who usually spend most of their time outside their homes preparing for the college entrance examination. The result of which tells the urgent need of extension and improvement in the school provision system. We select a total of 611 liberal high students in the city of Incheon, both males and females, of the first, second, and the third graders. The results are as follows; Only 39.6% of the students have breakfast and 14.7% of the students answer they always skip over breakfast. At lunch time, most of, i.e. 89.9% of the students have lunch and 80.4% of them usually carry lunch with themselves. Seniors show a tendency to have lunch quite earlier than the school-stated time, which signifies that many of seniors should bring more than one lunch to school in order not to lack enough calories. 45.8% of the students among those who do not dispense with supper take supper in the form of lunch. Many other students substitute Ra-myon for rice meal at supper time. As we can induce, the students need between-meal refreshments. 48.8% answer they have a snack more often than not, and 40.2% of them say they need a snack because of hunger. 82.1% of the students usually stay at school almost for 12 hours a day, and they mostly depend on lunch for their two meals. But lunch cannot provide balanced nutrition for them because of its restricted choice of nutrutional elements. The data above make it sure that the extension of the school provision system is really demanded. 86.6% of the students answer they feel the urgency of its operation.

A Study on Beverage Consumption of Elementary School Students in Chungnam (충남 일부 지역 초등학생의 음료 섭취 실태 조사 연구)

  • The purpose of this study was to estimate beverage consumption frequency and determine related problems of elementary school students in Chungnam. The survey was conducted with 488 students(boys=230, girls=258) using a questionnaire. The average age of the students was 10.1 years old, thir average height and weight were 145.1 cm and 39.5 kg, respectively and the obesity index was -1.3%. The frequencies for breakfast, lunch and dinner were 5.8 times/week, 6.7 times/week and 6.4 times/week, respectively. Regarding the frequency of snacks, high response rates for 'once/day'(38.3%) and 'none' (30.5%) were observed. Nutrition label on beverages were identified rarely(39.1%), nearly never(19.7%), and never(12.9%). The choice factors in selecting beverage were taste, nutrition, and price. For the type of snack most often consumed, fruit or juice was 25.8%, snack items were 25.2%, bread was 24.8%, dairy products were 7.6%, beverages were 7.0%, noddles were 6.2%, and rice cakes were 3.5%. The kinds of favorite beverages were carbonated drinks(30.3%), functional drinks (24.4%) and milk and yoghurt(23.8%), and main reason for the choice of beverage was "it tastes good". For the point of time that students wanted to drink a beverage, "when I feel thirsty" appeared most often for dairy products and beverages and the next most frequent answer was "after exercise". Therefore it may be necessary to administer systematic nutritional education on perception on nutrition fact label of beverage. And it is thought that plan for proper beverage consumption in elementary school students may be established.

A Comparative Study on the Physiological Activities of Puffed Snack using Miscellaneous Cereals and Grain Crops (곡류 및 잡곡류를 이용한 팽화과자의 생리 활성 비교연구)

  • This study was performed to compare the physiological effects of puffed snack on diabetic and geriatric diseases using miscellaneous cereals and grain crops. The puffed snacks were prepared with different amounts of miscellaneous cereals and grain crops (in ratios of 10%, 20%, and 30% of brown rice). Changes in the water soluble index, water absorption index, color, antioxidant activity, total polyphenol content acidity, ${\alpha}$-glucosidase inhibition activity, and sensory evaluation were also determined. As the cereal and crop contents increased, the value of the water soluble index increased while the water absorption index decreased, with the exception of glutinous foxtail and barnyard millets. With respect to color, lightness and yellowness decreased in concert with increases in the cereal and crop contents, whereas redness increased. Furthermore, the antioxidant activity and total polyphenol content as well as ${\alpha}$-glucosidase inhibition activity increased remarkably with increasing concentrations of sorghum. There was no significant difference in the physiological activities depending on the addition of millet, barley and barnyard millets. In sensory evaluation, the puffed snacks containing sorghum, millet, and glutinous foxtail millet received higher values than other samples. Altogether, our results indicate that puffed snacks containing 10~20% sorghum could be suitable as ingredients for improving sensory and physiological activities in diabetic and geriatric diseases.
