To find the optimum proportion of Hydrangea serrata Seringe(HSS) powder, rice cakes were prepared with different quantities of Hydrangea serrata Seringe powder instead of sugar. Technical and sensory examinations were then conducted. The proximate components of the HSS leaves were 3.48% crude protein, 6.45% crude lipid, 7.98% crude fiber and 9.32% crude ash. The pH values of samples which replaced 25%, 50%, 75% and 100% of sugar with the HSS powder were significantly decreased(p<0.05). The groups with HSS powder showed a lower L value(lightness) and a value(redness) than that of the control group. The B value(yellowness) of the Sulgidduk containing the HSS powder was higher than that of the control group. The hardness of HS2 and HS3 was increased by the addition of the HSS powder. The adhesiveness of Sulgidduk groups with the HSS powder was higher than that of the control group. Springiness was not changed by adding the HSS powder. The cohesiveness of the Sulgidduk was significantly reduced by adding the HSS powder(p<0.001). The groups with no sugar showed the highest gumminess and chewiness. The added HSS powder caused both a darker color and a stronger odor, but the sweetness of the Sulgidduk which replaced the sugar with the HSS powder was decreased compared to the control group. The moisture content and the hardness was not affected by the addition of the HSS powder. The preference of color and taste was not changed by adding the HSS powder. The preference of flavor of the Sulgidduk with the HSS powder showed higher than that of the control. Overall acceptability of the Sulgidduk did not show any significant differences. As a result, Sulgidduk can be replaced 25% and 50% of sugar with the Hydrangea serrata Seringe powder.
The purpose of this study was to investigate the stress and effects of stress on dietary habits, food preferences and food frequencies of young children in Kyungbuk province. The study subjects were 271 children, aged $3\sim5$, and attending child care centers within the Kyungbuk area. The general characteristics, dietary habits, stress, food preferences, and food frequencies of the young children were assessed, as were the general characteristics of their parents. The results were analyzed using $\chi^2-or$ t-tests employing the SPSS program package. The subjects were classified into two groups according their level of stress. One hundred and nine of the subjects had high stress(HS) and 162 had low stress(LS). The male HS group ate breakfast more regularly, skipped meals more frequently and ate protein-containing foods everyday compared to the male LS group. The female HS caught colds more easily and were more constipated than the female LS group. The preferences for chicken and hamburgers were higher in the male HS group than LS group; whereas, those for noodles and soybean milk were lower in the male HS than LS group. The preferences for soybean milk was higher in the female HS than LS group. The frequencies for stir-fried foods and spinach were higher in the male HS than LS group; whereas, those for curried rice, noodles, apples and soybean milk were higher in the male LS than HS group. The frequency for kimbab was higher in the female HS than LS group; whereas, those for steamed foods, shells and mushrooms were lower in the female HS than LS group. Therefore, our results suggest that young children, as well as their parents, need better dietary habits and strategies for actively coping with stress to maintain health.
This study was carried out to analyse the physicochemical characteristics of soybean pastes with the sword beans and general soybean pastes. There was no difference in contents of general component (moisture contents, crude ash, crude fiber, crude fat) among the soybean pastes, but contents of crude protein was higher in J1, J2 compared to the others. Amylase activity was higher in J3, J4 adding the rice, and protease activity was higher in J1, J2 that has higher soybean contents than the others. Reducing sugar contents was higher in J3, J4 that has high amlyase activity with value of 8.53${\pm}$0.45% and 8.36${\pm}$1.05%, and amino-type nitrogen contents was higher in commercial soybean paste K5, K6 than other soybean pastes with value of 668.34${\pm}$4.11 mg% and 642.64${\pm}$2.05 mg% respectively.

An endo-${\beta}$-1,4-glucanase gene, cel5L, was cloned using the shot-gun method from Bacillus sp.. The gene, which contained a predicted signal peptide, encoded a protein of 496 amino acid residues, and the molecular mass of the mature Cel5L was estimated to be 51.8 kDa. Cel5L contained a catalytic domain of glycoside hydrolase (GH) family 5 and a carbohydrate-binding module family 3 (CBM_3). Chromatography using HiTrap Q and CHT-II resulted in the isolation of two truncated forms corresponding to 50 (Cel5L-p50) and 35 kDa (Cel5L-p35, CBM_3-deleted form). Both enzymes were optimally active at pH 4.5 and $55^{\circ}C$, but had different half-lives of 4.0 and 22.8 min, respectively, at $70^{\circ}C$. The relative activities of Cel5L-p50 and Cel5L-p35 for barley ${\beta}$-glucan were 377.0 and 246.7%, respectively, compared to those for carboxymethyl-cellulose. The affinity and hydrolysis rate of pNPC by Cel5L-p35 were 1.7 and 3.3 times higher, respectively, than those by Cel5L-p50. Additions of each to a commercial enzyme set increased saccharification of pretreated rice straw powder by 17.5 and 21.0%, respectively. These results suggest CBM_3 is significantly contributing to thermostability, and to affinity and substrate specificity for small substrates, and that these two enzymes could be used as additives to enhance enzymatic saccharification.
Objective: This study was conducted to investigate the correlation between blood components and carcass traits, and to find the biomarkers related to meat quality and quantity in Hanwoo steers. Methods: One hundred twenty-six Hanwoo steers (8 to 9 months of age, body weight of $185.6{\pm}24.38kg$) were used to find the correlation between blood compositions and carcass traits. The steers were fed concentrate and rice straw (30 steers) or total mixed rations (96 steers) during the whole experimental period. Blood samples were collected from the jugular vein at the growing (8 to 12 months), fattening (13 to 23 months) and finishing phases (24 to 30 months). Steers were slaughtered at 30 to 31 months of age (body weight of $701.6{\pm}60.45kg$) and the carcass traits were evaluated. Blood metabolites and hormones were analyzed and the correlation coefficients and regression equations with carcass traits were determined. Results: Average concentrations of retinol, leptin and insulin were 1.10 IU, 30.34 ng, and 35.35 ng per mL of blood plasma, respectively. Retinol has negative correlations (p<0.01) with insulin and leptin. Blood insulin and total protein decreased with the age of steers, but retinol, aspartic acid transaminase (AST), glucose, cholesterol and triglyceride increased. In the finishing phase, significant (p<0.01) negative correlations occurred between blood retinol content and marbling score, and between blood AST content and longissimus muscle area of 13th rib, and the following regression equations were obtained: Marbling score $(1-9)=-0.009{\times}retinol(IU/100mL)+9.125$ ($R^2=0.643$), Longissimus muscle area $(cm^2)=-0.250{\times}AST(U/L)+112.498$ ($R^2=0.450$). Conclusion: It is possible to make highly marbled beef by controlling the blood retinol content during the fattening and finishing phases of Hanwoo steers. Accordingly, blood retinol and AST could be biomarkers for determining beef quality and quantity, respectively, prior to slaughter.
This study was carried out to investigate the effects of seeding dates on the yield and feed value of whole-crop barley cultivated in paddy soil. The field experiment was conceived as a randomized block design performed in triplicate with seeding dates of Oct. 19 (T1 as treatment 1), Oct. 26 (T2 as treatment 2), Nov. 2 (T3 as treatment 3), Nov. 9 (T4 as treatment 4), and Nov. 16 (T5 as treatment 5) as treatments. The barley grown in all treatments was harvested on May 21 of the following year. Plant length, fresh yield, dry matter yield, and total digestible nutrient (TDN) yield were higher (p < 0.05) in barley with early seeding dates, whereas crude protein and ether extract were higher (p < 0.05) with late seeding dates. Crude fiber and neutral detergent fiber were highest in the T3 treatment and lowest in the T1 treatment. There was no significant difference between acid detergent fiber and TDN among the different seeding dates. Total mineral contents were higher in the order T1 > T2 > T3 > T4 > T5 (p < 0.05), whereas the total amino acid content increased significantly (p < 0.05) with a delay in seeding date. Free sugar contents (fructose, glucose, and sucrose) were higher with early seeding dates (p < 0.05). Collectively, the results obtained in this study indicate that it is favorable to seed soon after harvesting rice to increase dry matter and TDN yields and mineral and free sugar contents of whole-crop barley in the midlands of Korea.

Objective: This study was conducted to investigate the effects of supplementation with rumen-protected γ-aminobutyric acid (GABA) on carcass characteristics and meat quality of Hanwoo steers. Methods: Eighteen Hanwoo steers with an average initial weight of 644.83±12.91 kg were randomly allocated into three different groups. Each group consisted of 6 animals that were treated with different diets formulated based on the animals' body weights. The control (C) group was fed a basal diet consisting of concentrate and rice straw with 74% total digestible nutrients (TDNs) and 12% crude protein (CP). The two other groups were treatment groups; one group was fed a basal diet (74% TDNs and 12% CP) supplemented with rumen-protected GABA at a dose of 150 mg/kg feed, and the other group was fed a basal diet (74% TDNs and 12% CP) supplemented with GABA at a dose of 300 mg/kg feed. Results: The GABA supplementation significantly contributed to better growth performance (p<0.05), especially the weight gain and average daily gain. It also contributed to the lower cooking loss (p<0.05), improvements in essential antioxidant enzymes and stable regulation of antioxidant activities in the longissimus lumborum of Hanwoo steers, as represented by the lower formation of malondialdehyde content within the meat, the inhibition of myoglobin oxidation indicated by the retention of the oxymyoglobin percentage, and the suppression of metmyoglobin percentage during cold storage (p<0.05). Conclusion: Higher doses of GABA may not significantly promote better animal performance and meat quality, suggesting that dietary supplementation with GABA at a dose of 100 ppm is sufficient to improve the meat quality of Hanwoo steers.
The ginsenoside compound K (C-K) is widely used in traditional medicines, nutritional supplements, and cosmetics owing to its diverse pharmacological activities. Although many studies on C-K production have been conducted, fermentation is reported to produce C-K with low concentration and productivity. In the present study, addition of an inducer and optimization of the carbon and nitrogen sources in the medium were performed using response surface methodology to increase the C-K production via fermentation by Aspergillus tubingensis, a generally recognized as safe fungus. The optimized inducer and carbon and nitrogen sources were 2 g/l rice straw, 10 g/l sucrose, and 10 g/l soy protein concentrate, respectively, and they resulted in a 3.1-fold increase in the concentration and productivity of C-K (0.22 g/l and 1.52 mg/l/h, respectively) compared to those used before optimization without inducer (0.071 g/l and 0.49 mg/l/h, respectively). The feeding methods of American ginseng extract (AGE), including feeding timing, feeding concentration, and feeding frequency, were also optimized. Under the optimized conditions, A. tubingensis produced 3.96 mM (2.47 g/l) C-K at 144 h by feeding two times with 8 g/l AGE at 48 and 60 h, with a productivity of 17.1 mg/l/h. The concentration and productivity of C-K after optimization of feeding methods were 11-fold higher than those before the optimization (0.22 g/l and 1.52 mg/l/h, respectively). Thus, the optimization for the feeding methods of ginseng extract is an efficient strategy to increase C-K production. To our knowledge, this is the highest reported C-K concentration and productivity via fermentation reported so far.
Physicochemical and antioxidant properties of the three different calorie types of HMR curry rice using fermented turmeric were analyzed in this study. The general tumeric added sample groups showed significantly higher carbohydrate content than the fermented turmeric sample group. In all sample groups, the ratio of protein, fat, and carbohydrate was found to be appropriate according to the nutritional composition ratio as one meal recommended by the Ministry of Health and Welfare. The brightness L value of the general turmeric-added sample group was measured to be significantly brighter than the fermented turmeric-added sample group. The fermented turmeric sample group showed a slightly lower pH value than the general sample group due to organic acids generated during fermentation. As a result of analyzing the radical scavenging activity of ABTS, LFTC, MFTC, and HFTC of the fermented turmeric group were 40.20, 40.46, and 36.16%, respectively, compared to those 32.41, 37.75, and 36.16% of LNTC, MNTC and FNTC of the general sample groups, respectively, consistently indicating that more free radicals were generated in the fermented sample group (p<0.01). Relatively unstable to heat and acid, DPPH scavenged radicals showed similar results to those of ABTS radical scavenging activity in terms of activity. Similar results were also shown in the measurement of total flavonoid and phenol content, which are known to have antioxidant antiviral and anticancer effects. Thus we could conclude that pilot products of the high quality varied calorie levels of HMR Bibimbap set with tumeric, which is helpful for antioxidant action have been developed to meet various customer needs.
Bamboo leaf powder was added to Jeolpyun to increase the neutraceutical effects and storage period. The bamboo leaf powder was added to rice flour at ratios of 0, 4, 6, 8, and 10% (w/w), and they were treated with aqueous malt extract to extend storage. The Jeolpyun was stored at $20^{\circ}C$ for 72 hr, and the physical and sensory characteristics were evaluated. As a result, the crude fat, crude protein, moisture, crude ash and total dietary fiber contents in bamboo leaf powder were 4.36, 11.29, 3.37, 7.33, and 65.57%, respectively. The Hunters L, a, and b values decreased significantly as the amount of bamboo leaf powder increased; however, the a and b values increased during storage. The paste property setback values decreased with the malt extract treatment and with increasing amounts of bamboo leaf powder. In a sensory analysis, hard texture strength in the malt extract and bamboo leaf powder treatment groups was less than that in the control during storage. The Jeolpyun prepared with malt extract and no bamboo leaf powder was the most accepted by consumers. Although adding bamboo leaf powder resulted in less consumer acceptance except for the flavor attribute, adding 4% and 8% bamboo leaf powder resulted in better consumer acceptance for texture, taste, and overall acceptance than that of the control. In a microbial analysis, adding bamboo leaf powder resulted in fewer mold colonies. In conclusion, adding 4% bamboo leaf powder and malt extract to Jeolpyun improved its storage properties.
