Quality characteristics and antioxidant activities of pan-fried Hwajeon added with curcuma as a functional ingredient (강황을 첨가한 팬 프라잉 화전의 품질 특성과 산화방지활성)

  • Curcuma powder, having a significantly higher electron donating ability than glutinous rice flour (p<0.001), was added into hwajeon at 0-5% concentrations. There was no significant difference in the moisture content of hwajeon depending on the curcuma content, which was attributed to a similar water-holding capacity of curcuma powder and glutinous rice flour when subjected to hot water. As the curcuma content increased, the redness of dough and hwajeon increased, and the lightness of hwajeon decreased to a higher degree than that of dough. With the addition of curcuma, hardness of hwajeon increased and its adhesiveness decreased, presumably due to the increased content of amylose relative to amylopectin. Sensory evaluation revealed that the strong flavor of curcuma was a negative determinant of the preference for hwajeon. Nevertheless, total reducing capacity and 2.2'-diphenyl-1-picrylhydrazyl radical scavenging activity increased in proportion to the curcuma content in hwajeon (p<0.001).

Quality Characteristics of Daechu Injeolmi Prepared by Addition of Jujube Powder (대추가루 첨가량을 달리한 대추인절미의 품질 특성)

  • This study aimed to find optimum addition of jujube powder to glutinous rice in the preparation of daechu injeolmi (rice cake). The daechu injeolmi added with 10% jujube powder gave the highest moisture content of 52.9% among treatments. Higher amount of jujube powder up to 14% resulted in lower 'L' and higher 'a' values of the cake. Hardness of the cake showed the lowest value for the 10% jujbe-added cake during the storage of 24 hours, while it was so for 14% jujube-added cake after 36 hour storage. Little change was observed with time in the cohesiveness for the cake added with jujube powder in more than in the 8% level. 10% addition of the jujube powder was found to be the best recipe based on the sensory qualities of softness, chewiness, moistness and overall acceptability, which were also well correlated with physical properties.

Quality Attributes of Gukhwa-Byung at Different Storage Temperatures and Times (저장온도와 시간에 따른 국화병의 품질특성)

  • The quality of physical characteristics were measured, using sensory evaluation and mechanical characteristics where different storing temperature and period on Gukhwa-Byung, which is made of different percentages of Gukhwa (0%, Gukhwa powder:1%, 3% and 5%, and Gukhwa flower:1%, 3% and 5%) were added to rice flour, to promote the use of and liking for rice cakes that are a kind of korean traditional foods. The sensory evaluation showed that it is generally fine right after being made. Especially group F3 was evaluated the best for color, feeling after-swallow and overall-quality. As for color alone, it fumed out to be most distinctive in group F3 after storing 24 hours at 4$^{\circ}C$, in group F1 after 24 hours at 10$^{\circ}C$, in group F1 and F3 after 24 hours at 30$^{\circ}C$ and in group F1 after 48 hours at 30$^{\circ}C$, Gukhwa-Byung added with Gukhwa flower takes the higher degree of preference than the one with Gukhwa powder. Moisture decreased and overall-quality deteriorated as the storing time passed. The value of lightness in the color of Gukhwa-Byung, reduced as Gukhwa content increased and storing temperature rose. The values of red color and yellow color increased as Gukhwa content increased. In a mechanical texture measurement, springiness was high in group P5 right after being made. And it was high after storing 72 hours at 4$^{\circ}C$ and after 96 hours at 10$^{\circ}C$, and there was a significant difference according to Gukhwa content (p<.05). Springiness remained unchanged after storing, 24 hours at 30$^{\circ}C$. Cohesiveness was high in every group of P1, P3 and P5, in which Gukhwa powder was added, right after being made, but as temperature rose and time passed, it heightened in group F3, in which 3% of Gukhwa flower was added. In all the samples, hardness gradually increased as the storing time at each temperature passed, and decreased as Gukhwa content increased. Chewiness was getting high as the storing time passed and temperature lowered. Color in sensory evaluation and the value of lightness in mechanical measurement showed a positive correlation at storing temperature 4$^{\circ}C$ and 10$^{\circ}C$ (p<.01). Softness and the value of lightness showed a negative correlation (p<.05). In sensory evaluation, softness and moisture showed a negative correlation with the value of lightness when storing at 30$^{\circ}C$.

Antioxidant Activity and Quality Characteristics of Rice Cookies added Kalopanax pictus Leaf Powder (음나무 잎 분말을 첨가한 쌀쿠키의 항산화 활성 및 품질 특성)

  • In this study, we assessed the antioxidant activity and quality characteristics of cookies containing various concentrations (0, 1, 3 and 5%) of Kalopanax pictus leaf powder. Antioxidant activity was estimated by DPPH free radical scavenging activity, reducing power, and total phenolic compound content in Kalopanax pictus leaf powder and cookies. The quality characteristics of Kalopanax pictus leaf cookies were estimated as spread factor, loss rate, leavening rate, color, texture and sensory evaluations. The moisture contents, spread factor, total phenolic acid content, DPPH free radical scavenging activity and reducing power of cookies significantly increased with increasing Kalopanax pictus leaf powder content, whereas the pH of the dough, hardness, and color values of cookies significantly decreased with increasing Kalopanax pictus leaf powder content. In the sensory evaluation, the scores for color, flavor and crispiness were high in cookies with 3% Kalopanax pictus leaf powder.

Effect of Ginseng Powder on Quality Characteristics of Instant Rice Cake (Baekseolgi) (즉석 백설기 제조시 인삼분말 첨가가 백설기의 품질에 미치는 영향)

  • This study was to investigate the quality characteristics of instant rice cake (Baekseolgi) with different concentrations of ginseng powder by molecular press dehydration (MPD) method. Baekseolgi was cooked using microwave oven, which is a useful cooking method because of reduced cooking time, even though it quickly takes moisture from food surface and lowers food quality. The result indicated that moisture content of Baekseolgi without ginseng powder was decreased; however, there was no significant difference in the Baekseolgi with ginseng powder with increased storage time for 24 hrs. The L value was decreased and a color value was increased with increasing concentrations of ginseng powder (p<0.05). There was no significant difference in the color values within the storage time. The hardness, gumminess, and chewiness of Baekseolgi without ginseng powder significantly changed as the storage time increased; in contrast, those of Baekseolgi with ginseng powder did not show such a significant change. The result of sensory evaluation showed that Baekseolgi with ginseng powder has higher scores in terms of color, flavor, taste, and overall acceptability than Baekseolgi without ginseng powder. Results of this study indicate the addition of ginseng powder to Baekseolgi improves moisture content, color value, and texture properties as well as sensory characteristics.

Quality Characteristics of Rice Cookies Prepared with Yacon (Smallanthus Sonchifolius) Powder (야콘 가루를 첨가한 쌀쿠키의 이화학적 품질 특성)

  • This study investigates the characteristics of cookies added with yacon. The addition of yacon powder did not affect the density of the cookies and decreased pH level. The moisture content was the highest in the cookies with 12% of yacon. Spread ratio was the highest in the cookies containing yacon powder. The loss rate and leavening rate of the cookies decreased with increasing amounts of yacon powder. Lightness and yellowness decreased significantly while redness increased significantly with a high content of yacon powder in the formulation. The hardness of the control group was higher than that of the cookies prepared with different levels of yacon powder. The antioxidant activity was estimated by DPPH free radical scavenging activity and the total phenolic acid content in yacon powder and cookies. The consumer acceptability score for the 6% yacon cookie group ranked significantly higher than the other groups in overall preference, appearance, flavor, taste and color. Through this experiment, this study exhibited both the functional and health based benefits of yacon when it is added to cookies and confirmed the development feasibility of yacon cookies considering consumer satisfaction.

Development of Sulgidduk with Queso Blanco Cheese (카이소 블랑코 치즈를 첨가한 설기떡의 개발)

  • Sulgidduk samples were prepared with substitutions of 5, 10, 15, and 20% Queso blanco cheese powder (QBCP) to rice flour basic formulation, along with a control, were then compared in terms of quality characteristics including moisture content, external surface appearance, color, textural characteristics, and sensory analysis, in order to determine the optimal ratio of formulation. Moisture contents were not significantly different among the Sulgidduk samples. For external surface appearance, as QBCP content increased, darkness and yellowness increased. With regard to color, lightness decreased with increasing QBCP content, while redness and yellowness increased. In terms of textural characteristics, hardness, gumminess, and springiness increased as QBCP content increased. The control group had significantly higher fracturability than the QBCP samples. Adhesiveness was highest at the 5% QBCP substitution level, while lowest at the 20% level. Cohesiveness was minimal the 10% QBCP sample, not significantly different among the QBCP samples. Chewiness and resilience were not significantly different among the QBCP samples. In sensory evaluation, color, flavor, and overall acceptability decreased, while softness not significantly different among the QBCP samples. Cheese flavor, saltness, milk fat taste, moistness and off-flavor increased with increasing QBCP content.

Effect of Varous Factors on Emergence and Control of Sagittaria pygmaea Miquel (올미의 출아(出芽) 및 방제(防除)에 미치는 환경요인(環境要人)의 영향(影響))

  • This study was carried out to investigate the effect of environmental factors affecting emergence and control of Sagittaria pygmaea Miquel in greenhouse. Emergence of S. pygmaea delayed as the amount of rice straw increased. When the tuber was sowned at 5 to 7㎝ soil depth the emergence of S. pygmaea delayed more in the hard condition of soil than that of the soft condition the large size tuber of S. pygmaea showed less control rate than the small size one at the rate of 2 to 3㎏ prod/10a of butachlor-naproanilide mixtures. The tubers of S. pygmaea seeded at the deeper soil depth decreased weeding efficicy of this mixture. Butachlor-naproanilide mikture showed higher weeding effects at the high temperature and at 2 to 4cm depths of water management than those of the low temperature and at 0cm and 6cm water depths. Weed control rate increased as the rate of butachlor-naproanilide mixture increased. The rate of 4㎏ (prod.)/10a showed good weed effect regardless of application times till 7.5 leaf stage of S. pygmaea. Tuber production of S. pygmea increased as the application time of mixture delayed.

Effect of heating on the quality characteristics and antioxidant activities of Baekseolgi made with arrowroot flour (열처리가 칡가루 및 이를 첨가한 백설기의 품질 특성과 산화방지활성에 미치는 영향)

  • Baekseolgi made with arrowroot flour (AF, 0 to 15% of rice flour) was steamed to examine the effect of heating on its antioxidant activity and physicochemical properties. Despite the presence of abundant dietary fiber and superior water-holding capacity of AF, moisture in baekseolgi was not significantly increased. This could partly be attributed to AF having 50% less moisture content than rice flour. Hence, hardness of baekseolgi was also not significantly altered. Total reducing capacity and flavonoid content of baekseolgi increased proportionally with the increase in AF addition. However, these values were lower than the predicted values calculated from the antioxidant activities of heated AF, which was more apparent in total reducing capacity. This indicated that the stability of non-phenolic reducing compounds in AF was lower than that of the phenolic compounds. Thermally processed baekseolgi made with 9% AF exhibited antioxidant activity without noticeable loss in the quality of the product.

Quality Characteristics of Seolgiddok added with Aloe Powder during Storage (알로에가루 첨가 설기떡의 저장기간에 따른 품질특성)

  • This study investigated the effects on the quality characteristics of the korean steamed rice cake, Seolgiddok of the addition of aloe powder at 0%, 1.5%, 3.0%, 4.5% and 6.0% and 4-days storage. The moisture content of the control 0% aloe, steamed rice cake was 47.76%, and steadily decreased with increasing powder addition to the lowest of 37.38% for the cake with 6.0% added. The moisture content was decreased with extending storage time in both the control and powder-added groups. The cohesiveness, springiness, adhesiveness, gumminess and chewiness of the cake tended to decrease with increasing powder content, while the hardness increased with both increasing powder content and extending storage time. The Hunter color value L in the chromaticity of the cake was significantly decreased with increasing powder addition. The a value of the control, 0% aloe steamed cake was -0.86, but became positive with red color with increasing powder content, The b value was significantly increased with increasing powder content. The powder addition inhibited the increase in bacteria number. The sensory characteristics of the cake. such as color, aloe flavor and taste, and bitterness were increased with increasing powder content, while the moist and soft feeling of the cake were more highly evaluated at lower powder content. The overall taste was judged to be best for the sample with 3% added powder. Accordingly, it was expected that a highly functional and healthy product with improved quality might be developed by the addition of aloe powder to the Korean steamed cake, Seolgiddok.
