Changes in growth performance, carcass characteristics, and meat properties of late fattening Hanwoo steers according to supplementation of rumen protected methionine and lysine

  • This study was conducted to evaluate the effects of rumen-protected methionine and lysine (RPML) on the growth performance, carcass characteristics, and meat properties of Hanwoo steers. Fourteen late fattening steers were randomly assigned to either the control (commercial concentrate + rice straw) or the treatment (commercial concentrate + rice straw + 20 g of RPML/head/day) group. The average daily gain (ADG) and feed conversion ratio (FCR) were not different between the treatment and control group. The rib eye area was slightly but not significantly higher in the treatment group than in the control group. The back fat thickness decreased with the RPML supplementation, although not significantly, and the appearance of yield C grade was lower in the treatment group than in the control group. The marbling score was similar between the control and treatment groups. The supplementation of RPML had no effect on the physicochemical compositions, myoglobin values, Commission Internationale de $l^{\prime}{\acute{E}}clairage$ (CIE) color values, fatty acid composition, and thiobarbituric acid reactive substances (TBARS) values in the longissimus muscle. Thus, the supplementation of RPML does not any negative effects on the growth performance, carcass characteristics, and meat properties of late fattening Hanwoo steers.

Effect of short-term fattening period and castration method on productivity, serum testosterone, and economic efficacy in Hanwoo cattle

  • The purpose of this study was to evaluate the effects of castration method and short-term fattening periods on Hanwoo cattle. Thirty-two Hanwoo calves (average body weight: 148.4 ± 19.8 kg) were used. The calves were randomly assigned in a 2 × 2 factor according to two castration methods (castration or hemi-castration) and two short-term finishing periods (24 months or 26 months). The final body weight increased significantly as the fattening period increased (p < 0.05), and the average daily weight gain was higher in the hemi-castration groups than in the castration groups (p < 0.05). After surgical castration, testosterone concentration was higher in the hemi-castration group than in the castration group during the entire experimental period (p < 0.05). The rib eye area was wider in the hemi-castration group than in the castration group (p < 0.01).An interaction effect was observed between the castration method and short-term fattening period (p < 0.05). Marbling and auction price scores differed between castration methods and were higher in the castration group than in the hemi-castration group (p < 0.01). Gross receipts and net income increased in the castration group compared to the hemi-castration group (p < 0.01) and showed a tendency to increase with the short-term fattening period, but there was no significant difference. Thus, castration to remove both testicles is essential for economic profit through producing high-quality Korean beef meat, and short-term fattening for 26 months, rather than 24 months, can benefit more by increasing carcass weight and meat quality.

B-spline polynomials models for analyzing growth patterns of Guzerat young bulls in field performance tests

  • Objective: The aim of this study was to identify suitable polynomial regression for modeling the average growth trajectory and to estimate the relative development of the rib eye area, scrotal circumference, and morphometric measurements of Guzerat young bulls. Methods: A total of 45 recently weaned males, aged 325.8±28.0 days and weighing 219.9±38.05 kg, were evaluated. The animals were kept on Brachiaria brizantha pastures, received multiple supplementations, and were managed under uniform conditions for 294 days, with evaluations conducted every 56 days. The average growth trajectory was adjusted using ordinary polynomials, Legendre polynomials, and quadratic B-splines. The coefficient of determination, mean absolute deviation, mean square error, the value of the restricted likelihood function, Akaike information criteria, and consistent Akaike information criteria were applied to assess the quality of the fits. For the study of allometric growth, the power model was applied. Results: Ordinary polynomial and Legendre polynomial models of the fifth order provided the best fits. B-splines yielded the best fits in comparing models with the same number of parameters. Based on the restricted likelihood function, Akaike's information criterion, and consistent Akaike's information criterion, the B-splines model with six intervals described the growth trajectory of evaluated animals more smoothly and consistently. In the study of allometric growth, the evaluated traits exhibited negative heterogeneity (b<1) relative to the animals' weight (p<0.01), indicating the precocity of Guzerat cattle for weight gain on pasture. Conclusion: Complementary studies of growth trajectory and allometry can help identify when an animal's weight changes and thus assist in decision-making regarding management practices, nutritional requirements, and genetic selection strategies to optimize growth and animal performance.

Holstein과 교잡종 거세우 및 처녀우의 성장발육, 사료이용성 및 도체특성 비교 연구 (Study on Comparison of Growth Performance, Feed Efficiency and Carcass Characteristics for Holstein and F1(Holstein ♀ x Hanwoo ♂) Steers and Heifers)

  • Holstein 및 교잡종(Holstein♀×한우♂)의 거세우 및 처녀우 각 8두씩 총 32두(평균체중, Holstein 거세우:196.9±25.2kg, Holstein 처녀우:163.4±11.3kg, 교잡종 거세우:169.6±24.9kg, 교잡종 처녀우 156.9±15.6kg)를 대상으로 7개월령부터 24개월령까지 비육시험을 실시한 결과를 요약하면 다음과 같다. 성장단계별 일당증체량은 육성기, 비육전기, 비육중기 및 비육후기에 각각 0.733~1.018(평균 0.869), 0.994~1.255(평균 1.094), 0.947~1.259(평균 1.122) 및 0.736~0.824kg(평균 0.790kg)으로 비육중기>비육전기>육성기>비육후기의 순으로 높았다. 그러나 전 비육기간의 일당증체량은 0.882~1.061kg(평균 0.957kg)으로 순종이 교잡종보다 0.072kg(7.3%), 그리고 성별로는 거세우가 처녀우에 비해 0.106kg(10.5%)이 더 증체되었다. 전 비육기간의 농후사료 급여수준은 체중의 1.9% 내외이고, 볏짚은 농후사료 급여량의 25% 수준이 바람직한 것으로 나타났다. 그리고 1kg 증체에 소요된 농후사료 및 TDN량은 순종이 교잡종보다 4.6%가 많았으며, 처녀우가 거세우보다 7.3%가 많아 순종보다는 교잡종이, 그리고 처녀우보다 거세우의 사료이용성이 높았다. 도체조사 결과, 등지방두께는 순종이 교잡종보다 엷었고, 등심단면적은 순종이 교잡종보다 적었다. 도체중 1kg에 대한 등심단면적은 순종보다 교잡종이, 그리고 거세우보다 처녀우가 넓었다. 그리고 육색은 교잡종보다 순종이 우수하였으나 성별에 따른 뚜렷한 차이는 없었다. 쇠고기의 물리화학적 특성에서 전단력, 가열감량 및 보수력 등과 관능검사 결과의 다즙성, 연도 및 향미 등은 순종보다 교잡종이, 그리고 거세우보다 처녀우가 우수하였다. 이상과 같은 결과들을 종합해 볼 때, 고급육생산은 순종보다 교잡종이, 그리고 거세우보다 처녀우가 유리하고, Holstein 및 교잡종의 거세우 및 처녀우 비육시 농후사료는 체중의 1.9%, 볏짚은 농후사료 량의 25% 수준에서 결정하는 것이 바람직 할 것으로 판단된다.

Association of the A-G Polymorphism in Porcine Adiponectin Gene with Fat Deposition and Carcass Traits

  • The adiponectin gene is known to be involved in the regulation of energy homeostasis involving food intake, carbohydrate and lipid metabolism. Human adiponectin gene polymorphisms have been recently reported to be associated with obesity, insulin sensitivity and the risk of type 2 diabetes. The present study was carried out to investigate the porcine adiponectin gene as a candidate gene for fat deposition and carcass traits. A mutation of A178G of the porcine adiponectin gene that resulted in substitution of the amino acid Isoleucine to Valine was identified. AcyI PCR-RFLP was used to detect the polymorphism of the genotypes in five different pig populations (Large White, Landrace, Duroc, Chinese breeds Meishan and Qingping). The A allele frequency was significantly higher among subjects from Chinsese lard type breeds, while the G allele was the only one present in those from Western lean type breeds. To determine if there was an association of the polymorphism with phenotypic variation, the mutation was tested in 267 pigs of the "Large $White{\times}Meishan$" F2 resource population. The results of association analyses showed significant associations of the genotypes with fat deposition and carcass traits. Allele G was significantly associated with increase in loin eye height, loin eye area and lean meat percentage and bone percentage, and decrease in fat mean percentage, ratio of lean to fat, shoulder fat thickness, 6-7 rib fat thickness, thorax-waist fat thickness and buttock fat thickness. The substitution of A178G (Ile60Val) happened to be located at amino acid 60 in the collagenous domain of porcine adiponectin which might affect the association into higher-order structures, and accordingly affect the posttranslational modifications and optimal biological activity of the multimeric forms. The identified functional polymorphism provides new evidence of adiponectin as an important candidate gene affecting fat deposition and carcass traits in pigs.

Growth, Feed Efficiency, Behaviour, Carcass Characteristics and Meat Quality of Goats Fed Fermented Bagasse Feed

  • The effects of long-term feeding of diets based on bermudagrass hay supplemented with lucerne hay cube (LH) or fermented bagasse feed (FBF) on the growth rate, feed efficiency, behaviour, gut development, carcass characteristics and meat quality of goats were investigated. Six spring-born 8-month-old male crossbred (Japanese Saanen${\times}$Tokara native goats) bucks weighing mean 21.6 kg were allotted to 2 treatment groups (3 animals each) and each animal had ad libitum access to feeds, i.e. bermudagrass hay (basal diet)+LH or FBF throughout the experiment. The FBF was produced by the solid-state fermentation of substrates containing dried sugarcane bagasse mixed with wheat bran in a ratio of 1:3 (w/w DM) with Aspergillus sojae. The live body weight, final weight and average daily gain were not different between treatments. Average basal diet intake of goats fed FBF diet was significantly higher than that fed LH diet (p<0.05), but average dry matter intake (DMI; g/day and g/$W^{0.75}$), feed conversion ratio, digestible crude protein (DCP) and total digestible nutrients (TDN) intake of experimental diets were not significantly different between treatments. Goats fed on LH and FBF diets had similar eating, rumination, resting and drinking behaviours, and blood constituents except for phosphorus content. Slaughter and carcass weights, net meat percentage [(total meat/carcass weight)${\times}$100], loin ratio [(loin/total meat)${\times}$100] and rib-eye area were not different between treatments. However, goats fed FBF diet had lower dressing percentage and higher bone/muscle ratio compared with goats fed LH diet (p<0.01). Empty gut and guts fill of goats fed FBF diet were significantly greater (p<0.05 and p<0.01, respectively) than those fed LH diet. The weights of rumen and abomasum were also significantly heavier in goats fed FBF diet (p<0.05), but the length and density of papillae of rumen in goats were not different between treatments. Although meat composition of loin was not different in both groups, the meat of goats fed FBF diet was superior to that of LH diet in flavor, aroma and overall quality of loin (p<0.01). In conclusion, the nature of the diet consumed voluntarily did not affect subsequent growth, nutrient intake and behaviour of goats but had an influence on carcass traits and sensory evaluation of meat partly, when either of LH or FBF was fed with bermudagrass hay.

Carcass characteristics and meat quality of lambs that are fed diets with palm kernel cake

  • Objective: The aim was to evaluate carcass characteristics, cut yield, and meat quality in lambs that were fed different inclusion levels of palm kernel cake. Methods: Forty-five woolless castrated male Santa $In{\hat{e}}s$ crossbred sheep with an initial average body weight of $23.16{\pm}0.35kg$ were used. The experimental design was a completely randomized design with five treatments, with palm kernel cake in the proportions of 0.0%, 7.5%, 15.0%, 22.5%, and 30.0% with nine replications per treatment. After slaughter, the gastrointestinal tract was weighed when it was full, after which it was then emptied. The heart, liver, kidney, pancreas perirenal fat were also collected and weighed. The carcass was split into two identical longitudinal halves and weighed to determine the quantitative and qualitative characteristics. Results: The empty body weight, carcass weight and yield, and fat thickness decreased linearly (p<0.05) as a function of palm kernel inclusion in the diet. There was no difference (p>0.05) for the rib eye area of animals that were fed palm kernel cake. There was a reduction in the commercial cut weight (p<0.05), except for the neck weight. The weights of the heart, liver, kidney fat, small, and large intestine, and gastrointestinal tract decreased. Nevertheless, the gastrointestinal content was greater for animals that were fed increasing levels of cake. For the other organs and viscera, differences were not verified (p>0.05). The sarcomere length decreased linearly (p<0.05), although an effect of the inclusion of palm kernel cake was not observed in other meat quality variables. It is worth noting that the red staining intensity, indicated as A, had a tendency to decrease (p = 0.050). Conclusion: The inclusion of palm kernel cake up to 30% in the diet does not lead to changes in meat quality characteristics, except for sarcomere length. Nevertheless, carcass quantitative characteristics decrease with the use of palm kernel cake.

Effect of Medicinal Plant By-products Supplementation to Total Mixed Ration on Growth Performance, Carcass Characteristics and Economic Efficacy in the Late Fattening Period of Hanwoo Steers

  • This study was conducted to evaluate the effect of medicinal plant by-products (MPB) supplementation to a total mixed ration (TMR) on growth, carcass characteristics and economic efficacy in the late fattening period of Hanwoo steers. Twenty seven steers (body weight [BW], $573{\pm}57kg$) were assigned to 3 treatment groups so that each treatment based on BW contained 9 animals. All groups received ad libitum TMR throughout the feeding trial until slaughter (from 24 to 30 months of age) and treatments were as follows: control, 1,000 g/kg TMR; treatment 1 (T1), 970 g/kg TMR and 30 g/kg MPB; treatment 2 (T2), 950 g/kg TMR and 50 g/kg MPB. Initial and final BW were not different among treatments. Resultant data were analyzed using general linear models of SAS. Average daily gain and feed efficiency were higher (p<0.05) for T1 than control, but there was no difference between control and T2. Plasma albumin showed low-, intermediate- and high-level (p<0.05) for control, T1 and T2, whereas non-esterified fatty acid was high-, intermediate- and high-level (p<0.05) for control, T1 and T2, respectively. Carcass weight, carcass rate, backfat thickness and rib eye muscle area were not affected by MPB supplementation, whereas quality and yield grades were highest (p<0.05) for T1 and T2, respectively. Daily feed costs were decreased by 0.5% and 0.8% and carcass prices were increased by 18.1% and 7.6% for T1 and T2 compared to control, resulting from substituting TMR with 30 and 50 g/kg MPB, respectively. In conclusion, the substituting TMR by 30 g/kg MPB may be a potential feed supplement approach to improve economic efficacy in the late fattening period of Hanwoo steers.

거세한우 비육후기 농후사료 에너지 수준이 육질 및 경제성에 미치는 영향 (Effects of Energy Level of Concentrate Feed on Meat Quality and Economic Evaluation in Finishing Hanwoo Steers)

  • This study was conducted to evaluate the effects of energy level of concentrate feed in finishing Hanwoo steers for 6 months before slaughter. Feeding trial was done with 2 treatment groups, IDN72 (72% of TDN in concentrate) and TDN74 (74 % of TDN in concentrate). The body weight (from 19 to 24 months) tended to be higher in TDN74 than in TDN72, but was not significant. Average daily gain of TDN74 was higher by 4.4 % in comparison to TDN72. There was no significant differences in concentrate, dry matter and TDN intake per I kg body weight gain between TDN72 and TDN74. And there was a tendency to improve crude protein intake per I kg body weight gain by increasing TDN content from 72 to 74 %. The dressing percentage tended to be higher in TDN74 than in TDN72, but was not significant. Salable meat percentage tended to be lower in TDN74 than in TDN72 because of higher body fat percentage in TDN74 than in TDN72. There were no significant differences in marbling score, meat color, fat color, carcass weight, rib-eye area and back fat thickness between TDN72 and TDN74. Significant differences were not found in shear value, cooking loss, water holding capacity or moisture and protein contents of longissimus dorsi (LD) muscles between TDN72 and TDN74. Fat content of LD muscles tend to be lower in TDN74 than in IDN72 but without any significance. There was a tendency to improve juiciness and taste by feeding IDN74 rather than TDN72. Especially, tenderness of TDN74 was increased by 7.4% in comparison to TDN72 (p < 0.05). Gross income from TDN74 was higher than TDN72 by 5% The results suggested that significant differences were not found in growth performance, feed conversion and carcass characteristics between TDN72 and TDN74. The results also show that more studies are required to clarify the energy level for finishing Hanwoo steers.

Fish Oil의 첨가가 한우 거세우의 육성성적, 배최장근의 지방산 조성 및 도체특성에 미치는 영향 (Effects of Fish Oil Supplementation on Growth Performance, Fatty Acid Composition of Longissimus Muscle and Carcass Characteristics in Hanwoo Steers)

  • 본 연구는 fish oil의 첨가가 한우거세우의 증체, 배최장근의 지방산 조성 및 도체등급에 미치는 영향을 구명하고자 평균체중 440.8±32.4kg의 한우거세우 20두를 공시하여 실시하였다. 시험구 배치는 fish oil을 첨가하지 않는 FO-0구와 fish oil을 3% 첨가하는 FO-3구의 2처리로 하였다. 총 증체량과 일당증체량은 fish oil의 첨가에 관계없이 비슷한 결과를 보였다. Fish oil의 첨가는 배최장근의 단백질, 지방 및 회분 함량에 영향을 미치지 않았다. 배최장근의 isoleucine 및 glycine 함량은 fish oil의 첨가로 감소되었으나(p<0.05), cystein 함량은 증가되었다(p<0.05). Fish oil의 첨가는 배최장근의 myristic acid 및 eicosenoic acid 함량은 감소시켰으나(p<0.05), oleic acid 및 arachidonic acid 함량은 증가시켰다(p<0.05). 또한 배최장근의 EPA 및 DHA 함량은 fish oil의 첨가로 증가되었다(p<0.05). 도체중, 등지방두께, 배최장근단면적, 육량지수 및 육량등급은 fish oil의 첨가에 관계없이 두 처리구간에 유사한 경향을 보였다. 육색은 fish oil의 첨가로 개선되었으며 (p<0.05), 육질 1등급 이상 출현두수는 fish oil의 첨가로 증가하는 결과를 보였다. 따라서 본 연구의 결과에서 한우거세우에 대한 fish oil의 첨가는 쇠고기의 지방산 중에서 풍미 및 기호성에 관여하는 oleic acid 함량, 인간의 건강과 관련이 있는 EPA 및 DHA 함량 및 육질 1등급 이상 출현두수를 증가시키는데 효과적인 것으로 나타났다.
