The present study investigated the rheological properties and adjuvant activity of IgG production of ι-Carrageenan prepared using two different methods . incubation at 37.4$^{\circ}C$ after either being heated or not being heated int 6$0^{\circ}C$ for 10 minutes. The carrageenan exhibited plastic flow with thixotropy in both cases, but the viscosity of the sample that had been heated was significantly higher. C57BL/6 mice were then immunized intraperitoneally with either of the carrageenans containing protein antigens. The maximum adjuvant effect was found when using the nonheated carrageenan, especially in term of IgG2a, IgG2b, and IgG3 production. In contrast, IgG1 antibody production was the same far both types of carrageenan. furthermore, when administered oral1y, neither type of carrageenan resulted in the production of any antibodies.
This paper presents property of the squeeze mode type mount using Magneto-Rheological fluid (MR fluid). The mount can isolate multi-directional vibrations, and also effectively reduce the vibrations in a wide range of disturbance frequency by controling the applied magnetic field. The shape of the mount is the same that of squeeze film damper. In the present work, the performance of this mount was experimentally investigated according to changing the magnetic field strength. This paper presents response property of the squeeze mode type mount using Magneto-Rheological fluid (MR fluid) . The MR mount for the isolation of multi-directional vibrations was constructed in this study. Both the mechanism and shape of the mount are the same as squeeze film dampers for a rotor system. In the present work, the performance of the mount was experimentally Investigated according to the magnetic field strength. The experimental results present that the MR mount can effectively reduce the vibration in a wide range of frequency by controlling the applied electromagnetic filed strength. Viscous damping and stiffness coefficients of the MR mount tend to be changed according to the variation of the applied currents In this study.

The stability of gel structured emulsion and the effect of polyols on it have been studied by rheological property and interfacial tension. In this paper, three types of gel structured emulsions were prepared by using three polyols respectively(glycerine for sample 1, 1.3 BG for sample 2, PG for sample 3). And both complex modulus($G^*$) and loss angle[$\delta$ = tan-1(G"/G')] of samples were investigated against oscillating shear stress and frequency($\omega$). The results show sample 1 is most highly consistent with oscillating shear stress. And the results were compared with those of accelerated tests concerning storage stability of gel structured emulsion. To correlate consistency of rheological property with storage stability, interfacial tension from which adsorption efficiency of surfactant(Octyldodecyl Ether) could be known was measured. Sample 1 showed the largest value of [$d{\gamma}/dIn_{Cconc. of surfactant}$] in Gibbs equation. In summary, the prediction of stability could be correctly made by the consistency of rheological property(G*,$\gamma$) of gel structured emulsion against oscillating shear stress and it could be supported by measuring interfacial tension. And polyol affected the value of [$d{\gamma}/dIn_{Cconc. of surfactant}$], consequently affected the stability.lity.
The purposes of this study were to produce polysaccharides from red pepper stems using different extraction methods and evaluate their chemical composition, in vitro biological capacities, and rheological properties. Two polysaccharides were extracted from red pepper stems using an autoclave and alkali treatments, and the extracts were named PAU and PAL, respectively. The contents of total phenolics and flavonoids were significantly higher in PAU than those in PAL. PAU exhibited greater scavenging activities on 2,2-diphenyl-1-picrylhydrazyl radicals, 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt radicals, superoxide radicals, and nitrite compared to PAL, suggesting that PAU served as better antioxidants. Similarly, in vitro inhibitory abilities against carbohydrate hydrolyzing enzymes of PAU were higher than those of PAL. Steady shear rheological analysis demonstrated that PAU showed higher psuedoplastic shear-thinning behavior compared to PAL. Based on the results from dynamic shear rheological properties, it was found that both samples had predominantly viscous behavior rather than elastic behavior.
Flow and dynamic rheological properties of thickened waters prepared with commercial food thickeners were investigated at different pH levels (3, 4, 5, 6, and 7). The commercial xanthan gum (XG)-based thickener (thickener A) and starch-based thickener (thickener B), which have been commonly used in a domestic hospital and nursing home for patients with swallowing difficulty (dysphagia) in Korea, were selected in this study. Thickened samples with both thickeners at different pH levels showed high shear-thinning flow behaviors (n=0.08~0.22). Thickened samples at pH 3 showed higher n values and lower consistency index (K) values when compared to those at other pH levels. The K values of thickener A increased with an increase in pH level, while the n values decreased, showing that the flow properties greatly depended on pH. There were no noticeable changes in the K values of thickener B between pH 4 and 7. At pH 3, the thickened water with thickener A showed a higher storage modulus (G') value, while that with thickener B showed a lower G'. These rheological parameters exhibited differences in rheological behaviors between XG-based and starch-based thickeners, indicating that the rheological properties of thickened waters appear to be greatly influenced by the acidic condition and the type of food thickener. Appropriately selecting a commercial food thickener seems to be greatly important for the preparation of thickened acidic fluids with desirable rheological properties for safe swallowing.
Rheological properties of thickened fluids used for consumption by people with dysphagia (swallowing difficulty) are very sensitive to several factors, such as thickener type, temperature, pH, sugar, protein, and NaCl. In this study, steady and dynamic rheological properties of thickened water samples mixed with five commercial xanthan gum-based food thickeners (A~E) were studied in the presence of NaCl at different concentrations (0.3%, 0.6%, 0.9%, and 1.2%). The magnitudes of apparent viscosity (${\eta}_{a,50}$), consistency index (K), yield stress (${\sigma}_{oc}$), and dynamic moduli (G' and G") showed significant differences in rheological behaviors between thickened samples with various NaCl concentrations. Dynamic moduli values of all thickened samples, except for samples with thickener C, were much higher than those of the control (0% NaCl). All rheological parameter values (K, G', and G") in a thickener A were much higher than those in other thickeners. These results suggest that rheological properties of thickened samples containing NaCl are strongly affected by xanthan gum-NaCl interaction and depended on the type of thickener.
Flow and dynamic rheological properties of hot thickened soups for consumption by the elderly people with swallowing difficulty (dysphagia) were investigated at a serving temperature of $60^{\circ}C$. In this study, sea mustard soup (SMS) and dried pollock soup (DPS), which have been widely known as favorable hot soups provided in a domestic hospitals and nursing homes for dysphagic patients, were thickened with four commercial xanthan gum (XG)-based food thickeners (coded A~D) marketed in Korea. Thickened soups prepared with different thickeners showed high shear-thinning flow behaviors (n=0.15~0.21). Apparent viscosity (${\eta}_{a,50}$), consistency index (K), storage modulus (G'), and loss modulus (G") demonstrated differences in rheological behaviors between the XG-based thickeners. The magnitudes of (G') were much higher than those of (G") over the entire range of frequency (${\omega}$) with the high dependence on ${\omega}$, showing the rheological behavior similar to a weak gel. In general, all rheological parameter values of thickened DPS samples were higher when compared to the thickened SMS samples. These results indicate that flow and dynamic rheological properties of hot thickened soups containing commercial XG-based thickeners are strongly dependent on the type of thickener and soup.
The effects of storage time (0, 1, and 2 month) and temperature (5, 15, and $25^{\circ}C$) on the dynamic rheological properties of hot pepper-soybean paste (HPSP) mixed with acetylated starches (AS) were studied by small-deformation oscillatory measurements. Dynamic moduli (G', G", and $\eta^*$) values of HPSP-AS mixtures increased with an increase in storage time and also decreased with increasing storage temperature. However, dynamic moduli values of the control (no added AS) were independent on storage time and temperature. Tan $\delta$ values (ratio of G"/G') in all HPSP samples did not change much with an increase in storage time and temperature. After 2 months of storage, the dynamic moduli of the HPSP-AS mixture samples were much lower than those of the control, indicating that the addition of AS can inhibit the retrogradation that developed over a long period of storage. Structural and rheological properties of HPSP samples seem to be stabilized by the presence of AS.
The TEA complex polymeric sol was prepared by the alkoxide sol-gel method. The purpsoe of this experiment was to vefity the particle shape in the sol from the investigation of the rheological properties. TEA retarded hydrolysis rate by the reaction with alkoxide enough to make a stable transparent sol in the wide range of composition. From the results of the viscosity change with time, the optimum mole ratio for spinning was selected as 0.5 mole of TEA, 3 mole of H2O and the optimum viscosity was 104 cPs. The rheological behavior of the sol showed that the particle shape in the sol was linear, which was adequate for fiber drawing.
