저항전분이 흰쥐의 에너지 영양소 이용효율에 미치는 영향 (Effect of Resistant Starch on Availability of Energy Nutrients in Rats)

  • The purpose of this study was to compare the nutritional effects of resistant starch, cellulose and pectin on growth rate, metabolic energy and apparent digestibility in rats. Forty eight male Sprague-Dawley rats were randomly assigned to six dietary treatments, Rats were fed, ad libitum one of six experimental diets: 5% of resistant starch (RS), 5% of cellulose (CE), 5% of pection(PT), 2.5% resistant starch and 2.5% cellulose(RS+CE), 2.5% resistant starch and 2.5% pectin(RS+PT), and 2.5% cellulose and 2.5% pectin (CE+PT) during 4 weeks. The results obtained were as follows: body weight gain were higher in groups RS and CE, compared with that in the group PT, where other groups such as RS+CE, RS+PT and CE+PT showed no significant differences to the RS group. Food intake and food efficiency into showed the same patterns. Metabolic energy were similar in the RS and CE, and was the lowest the metabolic energy in the group CE+PT was significantly low. Apparent digestibility of protein was significantly higher in the group RS, compared with the groups CE and PT. Apparent digestibility of mixed dietary fiber groups such as the RS+CE, RS+PT and CE+PT group were also higher compared with the group PT. Apparent digestibility of lipid were significantly higher in the groups RS, CE and PT. Apparent digestibility of lipid in the mixed pectin groups such as the RS+PT and CE+PT growth rate, metabolic energy and apparent digestibility of lipid in the mixed pectin groups such as the RS+PT and CE+PT recorded the lowest, while that of the group RS+CE was significantly high. From above results, following was concluded: The growth rate, metabolic energy and apparent digestibility of protein and lipid of group RS were significantly higher in comparision with the group PT, while availability of energy nutrients of group CE was similar to that of the group RS. Also resistant starch fed with pectin(RS+PT) seemed to have increased the growth rate and the apparent digestibility of protein compared with those of the group PT fed with pectin(PT) alone, however RS+PT scemed to have the apparent digestibility of lipid.

The Influence of the Annealing of Corn Starch on the formation and Characteristics of Enzyme-resistant Starch

  • The Physical properties of corn starch were investigated by scanning electron microscopy, X-ray diffractometry and differential scanning calorimetry during the formation of enzyme-resistant starch(RS). Samples were studied in their native states and after annealing at 50, 55, 60 and 65℃ in excess water(starch : water=1:3) for 48hr. Starch granules became smaller and more rounded after annealing than in their native state. Annealing did not change the X-ray profile of native corn starch. After autoclaving-cooling cycles, native starch lost most of its crystallinity but annealed ones showed some of their crystallinity left as diffuse or poor B-type, which didn't relate to increasing Rs yields. During formation of RS, however, both native and annealed starches changed their X-ray profile from A-type to poor B-type of retrograded amylose. Annealing caused an increase in gelatinization temperature and enthalpy, but a narrowing of gelatinization temperature range. Only starch annealed at 65℃, however, showed a decrease in enthalpy even though its gelatinization temperature increased, which appeared to be due to the partial gelatinization in the amorphous region during annealing. Peak height index(PHI), the ratio of ΔH to Ti-To, increased by annealing. PHI values, therefore, showed the possibility as an indicator to predict RS yield which cannot be differentiated by differential scanning calorimetry and X-ray diffraction data.

Annealing 처리가 가교결합 옥수수전분의 저항전분 수율에 미치는 영향 (The Effects of Annealing on Resistant Starch Contents of Cross-linked Maize Starches)

  • 보통 옥수수 전분을 이용하여 저항전분을 제조할 때 저항 전분의 수율을 높일 수 있는 방법을 개발하기 위한 목적으로 가교결합 전분을 제조하고 annealing처리를 병행하였다. Annealing은 $40{\sim}60^{\circ}C$ 범위에서 실시하였고, 이와 비교하기 위하여 $70^{\circ}C$$100^{\circ}C$에서 열처리한 후 가교결합 전분을 제조하였다. RS 분석방법으로는 pancreain-gravimetric법(P/G법)을 사용하였다. 보통 옥수수전분과 고아밀로오스 옥수수전분으로 annealing하지 않고 가교결합 전분을 제조했을 때의 RS수율은 각각 14.7, 45.3%였고, annealing 한 후 가교결합 전분을 제조했을 때 28.0, 63.4%까지 증가하였다. 가교결합 전분의 팽윤력은 annealing 처리에 의해 영향받지 않았으나, 보통 옥수수전분으로 제조한 시료의 경우는 호화온도이상에서 열처리했을 때 팽윤력이 2배이상 증가하였다. 두가지 전분으로부터 제조된 가교결합 전분의 X-선 회절도와 주사전자현미경에 의한 특성 역시 annealing에 의해 영향받지 않았다.

Effects of Transglutaminase on the Physical Properties of Resistant Starch-added Wheat Flour Doughs and Baguettes

  • Effects of transglutaminase (TG) on physicochemical properties of dough prepared with 20% resistant starch (RS)-added wheat flour were investigated. RS levels of wheat flours added with native wheat starch (NS), Hi-maize (RS2), retrograded (RS3), and cross-linked (RS4) wheat starches were 2.97, 11.88, 5.79, and 9.09%, respectively. Peak viscosity of NS-added flour was higher, whereas setback was lower, than those added with other resistant starches. TG had no effect on pasting behaviors of RS-added flours. Water absorption ranged from 66.5 to 79.0%, and development time increased with RS addition. TG increased tensile strength of dough after fermentation and bread volume, due to well-developed gluten network resulting from cross-linking facilitated by TG Addition of TG decreased hardness of baguettes, with RS2-added baguette showing lowest value. These results indicate addition of TG enhanced eating quality of RS-added breads.

  • 저선량의 감마선 조사(0-9.1 kGy)에 의하여 옥수수녹말의 고유 점도는 감소, 겉보기 아밀로오스 함량, 물 결합능력, 팽윤력과 용해도는 증가하였다. RVA 또는 아밀로그래프 점도는 조사선량이 증가함에 따라 감소하였으나 DSC에 의한 흡열 전이에는 큰 영향이 없었다. 감마선 조사한 옥수수 전분을 이용한 저항전분 생성은 효과가 없었다.

  • The objective of this study was to evaluate the effects of processing parameters of co-rotating twin screw extruder and dry methods on the level of resistant starch (RS) and the properties of extrudate prepared from normal maize starch. The processing parameters were used 90, 110, 130$^{\circ}C$ in temperature, 25.0~30.0% in moisture content, 150, 200, 250 rpm in screw speed and hot and cool air drying and drying after refrigerating in drying methods. The barrel temperature and drying methods had affected the level of resistant starch of extrudate. RS levels of extrudates were ranged from 2.4 to 15.5% by AOAC method. The extrudates, extruded at 110$^{\circ}C$ and then stored at 4$^{\circ}C$, showed the highest level of RS level (15.5%). Water absorption index increased with increasing moisture content and peak temperatures and viscosities of extudates decreased compare to that of raw starch from 94$^{\circ}C$ to 50~65$^{\circ}C$ and from 220 to 46~98 RVU, respectively. Extudates treated in 90$^{\circ}C$ and 110$^{\circ}C$ showed strong peak at $2{\theta}=6.7{\sim}17.0^{\circ}$ by X-ray diffractometry and had ~150$^{\circ}C$ endotherm like as that of RS3 starch by differential scanning calorimetry. In case of 130$^{\circ}C$, extrudates showed strong peak at $2{\theta}=20.0^{\circ}$ and had 106$^{\circ}C$ endotherm.

녹말 나노 입자의 연구 현황 (Current research trends on starch nanoparticles (SNPs))

  • In recent years, starch nanoparticles (SNPs) have been received much attention due to their unique characteristics different from native starch. Also, SNPs have economic and environmental advantages because they are prepared from starch, a cheap and safe natural polymer. It can be used in various industrial applications such as food additives, drug carriers, etc. SNPs have been prepared using different methods and their physiochemical, functional properties and possible industrial applications have been reported. Based on these studies, SNPs are expected to be the promising food materials and expand their utilization in many industries in the future. This review covered the overall researches on SNPs, including preparation, physicochemical and functional properties, and discussed their current and future applications including resistant starch materials.

Evaluation of Molecular Weight Distribution, Pasting and Functional Properties, and Enzyme Resistant Starch Content of Acid-modified Corn Starches

  • The aim of this study was to produce resistant starch preparations from acid-modified com starches prepared at various hydrolysis levels (0.5-4.0 hr). Effect of autoclaving cycles on resistant starch (RS) formation was investigated. Molecular weight distribution, pasting and functional properties of acid-modified com starches were determined. For RS formation native and acid-modified starch samples were gelatinized and autoclaved (1 or 2 cycles). While native and acid-modified starches did not contain any RS, the levels increased to 9.0-13.5% as a result of storage at $95^{\circ}C$ after first autoclaving cycle. Second autoclaving cycle together with storage at $95^{\circ}C$ brought final RS contents of the samples incubated at 4 and $95^{\circ}C$ after the first cycle to comparable level. As acid modification level increased, the amount of high molecular weight fractions decreased, resulting in significant decreases in viscosities (p<0.05). The samples produced in this study had low emulsion stability and capacity values.

효소 저항성 전분의 첨가가 옥수수빵의 텍스쳐 특성에 미치는 영향 (Effect of Addition of Enzyme-Resistent Starch on Texture Characterstics of Corn Bread)

  • 옥수수빵(CON)과 그 구성 성분중 옥수수 전분을 Amylomaize Vll starch로 대체한 제품(AMZ)을 제조하였다 또한 AMZ의 구성 성분중 지방의 일부를 RS 로 대체한 제품(지방의 15%대체시 RSl5, 30%대체 RS30)을 제조하여 총 네 가지 제품에 있어서 품질 특성을 살펴본 결과는 다음과 같다. 1. Sievert and Pomeranz의 방법에 따라 열처리-냉각 과정을 3번 반복하여 제조한 시료에서 분리된 RS의 수율은 28.96%였다. 2.옥수수빵의 텍스쳐 특성 표현어를 Szczesniak의 방법에 따라 분류한 결과 가장 많이 언급된 항목은 시료의 수분 함량에 관련된 촉촉하다였으며 깨짐성 및 검성에 관련된 표현어로서 푸석푸석하다, 부슬부슬하다 및 입자 크기와 관련된 용어로서 부드럽다, 꺼끌꺼 끌하다, 모래같다 등이었다 3. 관능검사 결과 기공의 크기는 지방을 RS로 대체 한 경우 유의적으로 증가하였고 CON에 비해 AMZ, RSl5및 RS30의 견고성이 유의적으로 증가하고 탄성은 유의적으로 감소되는 것을 알 수 있었다. 4. Texture analyser를 이용하여 deformation 30%로 기계적 texture를 관찰한 결과 견고성은 시간이 경과함에 따라 유의적으로 차이가 없거나 증가하는 경향을 보였으며 응집성은 변화가 없거나 감소하였고 탄성은 CON이 AMZ, RSl5 및 RS3O과 비교하여 항상유의적으로 높은 값을 보여 관능검사 결과와 일치하였다. 5. 50% 변형시킨 경우에도 30% 변형시킨 경우와 비슷한 경향을 보였으며 특히 지방의 30%를 RS로 치환했을 경우 물성에 유의적인 변화를 가져온다는 것을 알 수 있었다.

RS-3형태의 저항전분 첨가가 제빵 및 빵의 품질에 미치는 영향 (Effects of RS-3 type resistant starches on breadmaking and quality of white pan bread)

  • 고아밀로오스와 보통 아밀로오스 옥수수 전분으로 가열-냉각과정을 거쳐 RS-3 형태의 저항전분을 제조하고 RS함량이 5%가 되도록 첨가하여 만든 식빵의 제빵특성과 품질을 밀가루 반죽특성과 제빵특성, 빵의 텍스쳐 및 관능검사를 실시하여 비교하였다. Farinograph로 측정한 반죽특성은 RS첨가시 수분흡수력과 반죽형성시간은 증가하고 안정성은 감소하였다. 생전분이나 AVII-RS첨가시 빵의 총부피와 비용적은 무첨가빵보다 향상되었으나 NMS-RS 첨가시 감소하였다. 빵을 저장했을 때, 무첨가 빵은 저장시간에 따라 수분함량이 감소하였으나 RS를 첨가한 빵은 수분함량이 유지되었고, 빵의 견고성은 저장에 따라 모두 증가하였다. 초등학교 학생을 대상으로 기호도 조사를 실시한 결과, RS를 첨가한 빵의 전체적인 기호도는 무첨가 식빵보다 좋은 결과를 보였다.
