볶음처리에 의한 인삼의 이화학적 특성변화 (Changes in the Physicochemical Properties of Ginseng by Roasting)

  • Physicochemival properties of ginseng roasted at 170 to $250^{\circ}C$ were investigated. Soluble solid contents in roast ginseng increased until $200^{\circ}C$, but decreased at higher temperature than $200^{\circ}C$. Contents of reducing sugar and protein were decreased and pH values were dropped, while optical density, acidic polysaccharide contents, precursor of brown pigments and hydrogen donating activities by DPPH were increased according to increasing in roast temperatures. The color distribution of roast ginseng expressed as Hunter L, a and b values demonstrated that lower L values and higher a values were observed according to higher temperature, but b values were almost not changed.

향끽미종 연초의 한국, 그리스간 생태비교 연구 (II) 건조엽의 화학 성분 (ECOLOGICAL STUDY OF AROMATIC TOBACCO IN KOREA AND GREECE II. CHEMICAL COMPOSITION OF CURED LEAVES)

  • KA 101 and Xanthi-Basma were cultivated in Korea and Greece to compare the respective responses to environments on their leaf composition during 1984 and 1985. Cured leaves cultivated in Greece had brighter and greenish color with 2-4 times higher total chlorophyll and carotenoids showing higher contents of total nitrogen, nicotine, petroleum ether extract, volatile acids and neutrals, but crude ash and pH of leaves at top stalk position were lower than in Korean cultured leaves. Xanthi-Basma showed higher contents of nicotine and total nitrogen, but lower contents of reducing sugar than KA 101. There were no difference in crude ash, petroleum ether extract contents and pH of leaves. Among stalk positions, the upper stalk leaves in Greece had higher contents of total nitrogen, protein nitrogen, nicotine, petroleum ether extract and volatile acids but lower contents of reducing sugar than lower ones., whereas the supper stalk leaves in Korea had much higher contents of total nitrogen, protein nitrogen, pH, crude ash, but not higher contents of petroleum ether extract and volatile acid contents than lower stalk position. It suggest that in chemical criteria the better quality leaves are on the upper stalk position in Greece but not the same in Korea probably due to the rainy weather conditions during the later growth stage in Korea.

Comparison of reducing sugar content, sensory traits, and fatty acids and volatile compound profiles of the longissimus thoracis among Korean cattle, Holsteins, and Angus steers

  • Objective: This study was performed to compare fat content, reducing sugar contents, sensory traits, and fatty acid (FA) and volatile compound profiles in longissimus thoracis (LT) among Korean cattle (KC), Holstein (HO), and Angus (AN) steers. Methods: Twelve LT samples (about 500 g each) of KC with an average age of $31{\pm}0.42months$, an average carcass weight of $431{\pm}12.5kg$, and a quality grade (QG) of 1+ were obtained from the joint livestock products market. Twelve LT samples of HO cattle with an average age of $24{\pm}0.54months$, an average carcass weight of $402{\pm}7.81kg$, and a QG of 2 were also obtained from the same market. Twelve LT samples of AN steers with an average age of about 20 months and a QG of choice were purchased from a beef delivery company. After slaughter, samples were kept at $4^{\circ}C$ for 42 days and prepared for immediate analysis or stored at appropriate conditions. The chemical composition, color, pH, shear force, collagen content, reducing sugars, sensory evaluation, FA composition, and volatile compound content for each LT sample were analyzed. Results: The LT of KC had the highest (p<0.05) fat content, the highest reducing sugar content, and the highest scores in the sensory evaluation (flavor, tenderness, juiciness, and overall acceptance). All the sensory traits were positively correlated (p<0.001) with intramuscular fat and reducing sugar content. Several FAs and volatile compound profiles varied among the breeds. KC LT had the highest (p<0.05) concentrations of acetaldehyde, 3-methyl butanal, and 3-hydroxy-2-butanone, and these volatile compounds were positively correlated (p<0.05) with all the sensory traits. Conclusion: Variations in fat content and reducing sugar contents and FA and volatile compound profiles may contribute to differences in the sensory quality of LT among breeds.

효모의 종류에 따른 탁주의 품질특성 변화 (Quality Characteristics of Takju by Yeast Strain Type)

  • Investigation of the quality characteristics of Takju brewing mashes prepared with several different yeasts was carried out during the 42-day brewing process, including examination of titratable acidity, amino acid content, sugar contents, alcohol contents, pH, reducing sugar, yeast population, lactic acid bacteria, and sensory evaluation. Fermivin yielded the highest titratable acidity, while la parisienne had the lowest. Fermivin also had the highest value of amino acid content (14.33%), while other yeasts shows period tended to increase over exclude Instaferm and Song chun. The amount of sugars in instaferm ($11.33^{\circ}Bx$) and instaferm red ($10.53^{\circ}Bx$) were higher than those in La parisienne red and Song chun ($9.57^{\circ}Bx$). The alcohol contents of instaferm was the highest value (15.20%) while the alchol content of the other yeasts tended to increase the fementation period. Fermivin had the highest pH at $12^{th}$ day among the yeasts(4.02), Instaferm red had the lowest pH among the yeasts (3.87) while safbrew wb-06 had the highest reducing sugar content(117.60 mg/mL). Instaferm obtained the highest preference in the sensory evaluation for all items.

원료콩의 파종시기와 산지에 따른 재래식 간장의 품질 특성 비교 (Comparisons of the Physicochemical Characteristics of Korean Traditional Soy Sauce with Varying Soybean Seeding Periods and Regions of Production)

  • The objective of this study was to investigate the physicochemical properties of Korean traditional soy sauces made with soybeans sown in different producing regions(Hadong, Paju) and in different seeding periods(late-May, mid-June, late-June). The total acidity, salt content, chromaticity, browning, amino nitrogen content and the reducing sugar content of the soy sauce samples were compared. It was found that the total acidity level and the amino nitrogen contents were significantly lower in the soy sauce made with mid-June soybeans, and that these properties increased as the sauce aged. Salt content increased with the aging period regardless of the region of production. The reducing sugar content of Paju soy sauce was the highest in late -June, and for the Hadong region, highest in late-May. The sauce made with Hadong soy beans showed an increase in reducing sugar content positively correlated with the aging period. Reducing sugar content in the samples of Paju soy sauce decreased up to 60 days of aging, but increased after this point. In Paju soy sauce, the brightness(L value) was significantly higher in mid-June, and the Hadong variant it was higher in late -May. The yellowness(b value) at the beginning of the aging process was high in late -June for Hadong soy sauce, but overall it was higher in the mid-June period. The more matured soy sauce samples were darker and showed both higher a and b values. The browning was the lowest in the mid -June regardless of the regions and it increased with the aging period regardless of the production regions. The salt, amino nitrogen contents, browning and yellowness showed significant correlations among the samples. In conclusion, the seeding period of soy beans may affect the characteristics of produced soy sauce alongside the aging conditions.

홍고추 생육시기별 기상여건과 내적품질과의 상관관계 (Correlationship between Climatic Elements and Internal Characteristics of Red Pepper Fruit in Different Growing Periods)

  • 한국 고추 주산지에서 '금탑', '부강' 품종을 1998년과 1999년에 재배하여 4회에 걸쳐 홍고추를 수확하였다. 과실 내적품질로 환원당, capsaicinoids, 비타민C 함량을 측정하여 고추 성장기간의 온도, 강우량, 일조시간의 기상여건과 상관을 살펴보았다. 고추의 환원당 함량은 늦게 수확할수록 높아지는 경향을 보이고 있다. Capsaicinoids 함량은 수확시기별, 년도별 편차가 심하게 나타났으며. 비타민 C의 함량은 품종보다 기상여건에 더 많은 영향을 받았다. 기상여건과의 고추 성분별 상관은 환원당 함량에서는 수확 전 강우량과 음의 상관을, 일조시간과는 높은 양의 상관이 있었다. Capsaicinoids와 비타민 C 함량은 수확 전 강우와 음의 상관이 나타냈는데, 비타민 C의 경우 두 품종 모두 비교적 높은 결정계수($R^{2}$ 값)를 보였다.

숙성처리에 따른 지황 슬러리의 환원당 및 카탈폴 변화 (Changes in Reducing Sugar and Catalpol Contents of Rehmannia Root Slurry with Aging Treatments)

  • Rehmannia glutinosa root (R. root) has been used as an traditional medicine, and is important resource for natural medicines and functional foods. However, R. root contains catalpol which is bitter, and undigested sugars, including stachyose and raffinose, which can cause diarrhea. Therefore, this study was performed to identify the changes in reducing sugar from undigested sugars and in catalpol contents in R. root slurry induced by aging treatments. R. root slurry was treated at $10{\sim}70^{\circ}C$ for up to 72 hr; and extracted with a 50% ethanol solution. The catalpol content was analyzed using HPLC-UVD. Reducing sugar content generated from undigested sugars was measured by the Nelson-Somogyi methods, and the reaction rates were calculated from their variation according to aging time and temperature. During the aging treatment, reducing sugar increased and catalpol decreased. Their formation and degradation rates were highest at $50^{\circ}C$ and $30{\sim}40^{\circ}C$, and their rates were $2.05mg/g{\cdot}hr$ and 23.09 to 23.33%/hr, respectively. These results indicated that aging treatment can positively affect the sweetness and digestibility of R. root slurry. Therefore, an aging treatment could be considered for improving the taste and digestibility of R. root.

  • 품질이 좋은 인삼의 생산을 위한 재배지포장의 토양 및 영양관리를 위한 기초자료를 얻기 위하여, 인삼재배지토양의 화학성과 인삼근 중의 전당, 환원당, 유리당류, ginsenoside 및 saponin들의 상관관계를 조사하여, 인삼근의 품질에 미치는 영향을 조사하였다. 토양 중 $NO_3-N$함량은 인삼근 중의 전당 및 환원당의 함량과 고도의 부의 상관이 인정되었다. 토양 중 유기물함량은 인삼근 중의 당류와 ginsenoside계 성분들의 함량과 정의 상관이 인정되었으나, 토양 중 유효인산 및 치환성 양이온들의 함량은 부의 상관이 인정되었다.

호박술에 관한 연구 (Studies on a Pumpkin Wine)

  • In order to develop a pumpkin wine, the brewing conditions and sensory evalution of the wine were studied. The pumpkin can be made into wine by ethanol fermentation with Saccharomyces cerevisae. When the mash was adjusted 15aA pumpkin and 25% sugar and fermented for 15 days, the product was highly evaluted in color, flavor and taste. Contents of the refined pumpkin wine were 80mg/ml of total sugar, 70mg/ml of reducing sugar, 2.1 of acidity and 12% of ethanol, and it's pH was 3.6.

양념류를 첨가한 전통고추장의 숙성중 이화학적 특성 변화 (Effect of Condiments on the Physicochemical Characteristics of Traditional Kochujang during Fermentation)

  • 전통 고추장의 품질개선과 기호성 향상을 위하여 마늘과 양파를 $0{\sim}6%$ 첨가하여 고추장을 제조하고 22주간 숙성시키면서 이화학적 변화를 검토하였다. 고추장의 수분은 숙성 중에 증가하고 총질소는 감소하였다. 고추장의 pH와 적정산도의 변화는 마늘 또는 양파 첨가로 적었다. 고추장의 총당은 숙성 $2{\sim}4$주 사이에 급격히 감소하였으며, 환원당은 숙성 2주 경에 높았고 마늘 첨가량이 높을수록 숙성 후기에 환원당의 감소는 적었다. 알콜은 숙성이 진행되면서 증가하였고, 양파 첨가량이 증가할수록 증가하였다. 아미노태와 암모니아태 질소는 숙성 6주까지 증가하였으며, 마늘이나 양파의 첨가 농도가 증가할수록 아미노태 질소는 증가하였고 암모니아태 질소는 감소하였다. 고추장의 Aw는 숙성중에 근소하게 감소하였으나 점조성은 숙성 18주까지 증가하였다. Aw와 점조성은 양념류 첨가의 영향이 적었으나 색도는 이들의 첨가로 L값이 낮아지고 a 와 b 값이 높아 색상이 진해졌다. 22주간 숙성시킨 고추장의 종합적인 관능치는 마늘$2{\sim}4%$ 첨가가 양호하였다.
