고추와 가바쌀을 첨가한 기능성 마카롱 개발에 관한 연구 (Development of Macaronè with Korean Red Peppers (Capsicum annuum L.) and GABA rice and Evaluation of Physiological Characteristics)

  • The aims of this study were to develop $macaron{\grave{e}}$ with Korean red pepper (Capsicum annuum L.) and GABA (${\gamma}$-aminobutyric acid) rice powder and analyze their physico-chemical and physiological characteristics. Korean red pepper (Capsicum annuum L.) was added to $macaron{\grave{e}}$ at a weight percentage of 0, 2.5 and 4.5%. Color values (L-value, redness, and yellowness), total sugar content, total phenolics, total carotenoids, ABTS radical scavenging activity, textures, and sensory characteristics with varying various Korean red pepper were measured. As the ratio of the powders in the $macaron{\grave{e}}s$ increased, total phenolic content, total carotenoid content, and radical scavenging activity increased. There were significant differences in total phenolic and total carotenoid content of $macaron{\grave{e}}s$ (p<0.05). Sensory evaluation indicated significant differences (p<0.05) in color, sweetness, texture, and overall acceptability depending on the addition of Korean red pepper. KR30 $macaron{\grave{e}}$, showed higher overall acceptability, as compared to other $macaron{\grave{e}}$.

Plant Regeneration via Organogenesis from Seed Explants in Red Pepper (Capsicum annuum L.)

  • Efficient plant regeneration has been achieved via organogenesis in the red pepper plant (Capsicum annum L.). Shoots were induced from seed explants of cultivar 'Friendship' on Murashige and Skoog's (MS) basal medium supplemetned with; NAA or IAA, and BAP or zeatin. Seed explants on the medium supplemented with 0.1-0.3 mg/L IAA and 2-5 mg/L zeatin for 2 weeks vigorously formed normal shoots in more than 90% of the explants. When these were transferred to MS medium containing 0.5-1.0 mg/L GA, 90-100% of the shoots have elongated within 1-2 weeks. The elongated shoots rooted in media supplemented with 0.3 mg/L NAA. It was revealed that this method is very rapid and efficient regeneration system for red pepper and regenerated plants can be obtained after only 5-6 weeks of culture.

기능성 고추 초콜릿 개발 및 생리활성 특성 분석 (Development of Value-Added Chocolate with Korean Red Peppers (Capsicum annuum L.) and Evaluation of Their Physiological Properties)

  • This study was conducted to investigate the effect of Korean red pepper extracts on physiological and sensory characteristics. The Korean red pepper extracts were added to chocolate at weight percentages of 0, 2, 4, and 6%. The sensory characteristics made with various Korean red pepper concentrations of the additives were measured as follows: color values (L-value, redness, and yellowness), total phenol, total capsaicinoid, total carotenoid, and ABTS radical scavenging activity. In sensory evaluation, significant differences (p<0.05 and p<0.01) were shown in taste, spiciness, and overall acceptability depending on the addition of pepper extracts. However, there were no significant differences in the properties of aroma and bitterness for chocolate.

Allelopathic effects of red pepper (Capsicum annuum L.) and coriander (Coriandrum sativum L.) on early seedling growth of wheat (Triticum aestivum L.)

  • A pot experiment was conducted to assess the effects of red pepper (Capsicum annuum) and coriander (Coriandrum sativum) on seedling growth of wheat (Triticum aestivum). The aqueous extracts treatment of red pepper and coriander showed a significant (p < 0.05) reduction in root, shoot and seedling length, number of leaves and seedling dry weight of wheat (T. aestivum) as compared to control. The inhibitory different effect on growth of wheat (T. aestivum) was directly proportional to the increasing concentration (1, 2, 3, 4 and 5%) of aqueous extracts of red pepper and coriander as compared to control treatment (0%). The root, shoot, seedling length and number of leaves of T. aestivum significantly p < 0.05 decreased at 5% concentration of red pepper as compared to control. The root, shoot and seedling growth of T. aestivum was also significantly reduced at 1, 2, 3, 4 and 5% concentration of coriander as compared to control. The root, shoot and leaves dry weight of T. aestivum at 5% coriander extract treatment concentration decreased as compared to control. The tolerance in seedlings of T. aestivum to red pepper and coriander extract treatment was dose dependent as compared to control. The seedlings of T. aestivum showed low percentage of tolerance to pepper extract treatment than coriander extract treatment.

  • To improve the iron content of red pepper, we have transferred the entire coding sequence of the ferritin gene(Fpl) into Capsicum annuum (L. cv. Chungyang and Bukang) by Agrobacterium mediated transformation. Transformants were found to contain the Fp1 gene at up to three loci, increased distinct iron content changes. In transgenic plants, iron content was as much as 7-fold to 8-folds greater than that of their untransformed counterparts. Furthermore, the Rl progenies from transformant(A7, A8) co-segregated into a 15:1 ratio for both Kanamycin resistance and genotype of high iron.

Effect of Chemical Fertilizer and Compost on Soil Physicochemical Properties, Leaf Mineral Content, Yield and Fruit Quality of Red Pepper (Capsicum annuum L.) in Open Field

  • Nowadays, sustainable and environment-friendly agriculture has become an important issue all around the world, and repeated applications of mineral and/or organic fertilizer will probably affect mineral nutrient dynamics in soil in the long term but only a limited number of observations are available. This study was carried out to investigate whether there is any influence of different fertilizer management for red pepper (Capsicum annuum L.) cultivation on soil physicochemical properties, leaf mineral content, yield and fruit quality in the aspect of long-term practice in open field condition. NPK, NPK+compost, compost only, and unfertilized control plot were included in the treatments. The application of chemical fertilizer and/or compost repeated annually for 17 years from 1994 to 2011. Soil organic matter content was higher in compost treatments than in no-manure treatments. Available phosphate and the yield of red pepper were highest in NPK+compost treatment followed by NPK (chemical fertilizer), compost, and control. The results indicate that in the long term, nitrogen supply is still needed for increasing red pepper yield, but reduction in the use of chemical fertilizer could be also possible with the proper application of compost.

반건조 고추(Capsicum Annuum L.)의 건조조건에 따른 품질 특성 (Quality Characteristics of Semi-Dried Red Pepper (Capsicum Annuum L.) Using Hot-Air drying)

  • 고추의 건조 중 발생하는 품질저하를 억제시키고 사용편의성을 증대시키기 위하여 열풍건조기를 이용한 반건조고추를 제조하였다. 반건조 고추는 통고추, 2단세절 고추, 4단세절 고추로 제조한 후 $65^{\circ}C$에서 연속건조를 실시하여 표면색도, ASTA 값, 비타민 C, capsanthin, capsaicinoids 및 유리당 함량을 조사하였다. 생홍고추의 수분함량은 85% 수준이었고, 대조구로서 건조고추의 수분함량은 15%내외로 제조하였다. 통고추에 비하여 2단세절 고추, 4단세절 고추 및 8단세절 고추의 경우 건조시간이 약 66.7%, 79.2%, 80.8% 감소되었다. 표면색도와 ASTA 값의 경우 건조시간이 증가할수록 ASTA 값이 낮아지는 경향을 나타내었으며, 표면색도 중 L 값은 높아지고, a 및 b 값은 낮아지는 경향을 나타내었다. 제조 방법별 반건조고추와 건조고추를 비교한 결과 비타민 C 함량, capsanthin 함량, capsaicinoids 함량, 유리당 함량에서 모두 반건조 고추가 높은 것으로 나타났다. capsaicin 함량의 경우 반건조고추가 건조고추에 비하여 약 8% 높은 것으로 나타났으며, dihydrocapsaicin 함량은 약 $13{\sim}17%$ 증가하였다. capsanthin 함량의 경우 2단세절 및 4단세절 반건조 고추가 건조고추에 비하여 약 $12{\sim}16%$ 증가하였으며, 유리당 함량은 건조시간이 증가할수록 그 함량은 낮아지는 경향이었으나, 4단세절 반건조고추의 glucose 함량의 경우에는 초기값과 유의적인 차이를 나타내지 않았다. 비타민 C 함량을 측정한 결과, 2단세절 및 4단세절 반건조 고추가 건조고추에 비하여 약 $40{\sim}76%$ 높게 유지되는 것으로 나타났다. 따라서 반건조고추는 건조 고추에 비하여 우수한 품질특성을 가지는 것으로 판단되며, 특히 반건조고추 제조 시 4단세절로 절단 후 수분함량 50% 내외 수준으로 제조하는 것이 적절할 것으로 판단된다.

  • This study was conducted to evaluate the effect of phosphorus acid (H3PO3) addition to the horticultural bed soil on the initial growth of red pepper (Capsicum annuum L. cv.), cucumber (Cucumis sativus L. cv.), and kimchi cabbage (Brassica campestris L. ssp. pekinensis (Lour.) Rupr. cv.). The stem heights of red pepper and cucumber were 46.1% and 23.0% greater in the 50 mg/L of phosphorus acid treatment than the untreated (control). Further, the stem diameter of pepper and cucumber were 48.7% and 23.0% greater in the 50 mg/L of phosphorus acid treatment than the control. In addition, the number of kimchi cabbage leaves was 47.5% greater in the 50 mg/L of phosphorus acid treatment than the control. The dry weights of red pepper, cucumber and kimchi cabbage were 72.9%, 16.5%, and 30.4% heavier in the 50 mg/L than the control, respectively. Cations (K, Ca, and Mg) and total phosphorus (T - P) were quantitatively analyzed for these three horticultural crops. The concentrations of K, Ca, and Mg, and T - P were higher in the 50 mg/L of phosphorus acid than the control, respectively. Based on the results obtained in this study, it appears that treatment of phosphorus acid in horticultural bed soil enhanced the growth of red pepper, cucumber and Kimchi cabbage.

PHYSICAL PROPERTIES OF FRESH RED PEPPER

  • Geometrical characteristics of fresh red pepper(Capsicum annuum L.) were measured and indexed to define some important geometrical characteristics, and malformation of body and fruit stalk which are necessary for the design of the equipments for cutting, spreading and alignment of red pepper in developing a fruit stalk remover of fresh red pepper. The effects of bending of body and fruit stalk on the equipments of cutting, spreading and alignment were studied. The maximum lengths of some parts of fresh red pepper were found to be 180 mm, 125 mm, 144 mm, 67 mm and 76 mm for the body, the bent part of body, the fruit stalk, the bent part and the straight part of fruit stalk, respectively. The fresh red pepper with bending indices more than 0.4 and 0.3 for the body and the fruit stalk, respectively, was defined to be malformed based on the result of cutting rate using cutting unit; while the other ones to be normal in shape. Based on this, among the total fresh red peppers tested, 47%, 40% and 20% were found malformed for the body, the fruit stalk, and for both of the body and the fruit stalk. Malformed red peppers were poorer in spreading and alignment than normal ones, and the processed quantity was decreased with increased feed rate. The required time for the malformed peppers to pass on the alignment plate inclined at 30 increased rapidly at 8.3 Hz with increased feed rate. For the fresh red peppers with average moisture content of 85%,w.b., the maximum tensile strength between fruit stalk and body was 88.1 N; the maximum cutting resistances were 92.1 N and 94.9 N for the fruit stalk-calyx joint and body, respectively. Average coefficients of static friction were 0.99, 0.62, 0.59 and OJ, respectively, for the surfaces of rubber, galvanized iron, acryl and plywood.

  • 꽃고추(Capsicum annuum var. abbreviatum)는 Capsicum annuum 속의 변이종으로 열매 성숙과정에 따라 고추의 색이 초록색, 보라색, 노란색, 주황색, 빨간색 및 검은색으로 변하여 오색고추라고도 명명한다. 현재 꽃고추는 화려한 색 때문에 관상용으로 다량 재배되고 있지만, 꽃고추의 생리활성 및 생리활성 물질 분석에 관한 연구들은 전무후무하다. 따라서 본 연구에서는 현재 관상용으로만 재배되는 꽃고추의 기능성에 관하여 알아보기 위하여 꽃고추와 국내에서 식용으로 가장 많이 유통되고 소비되는 2종(Capsicum annuum, 홍고추; Capsicum annuum var. angulosum, 홍피망)의 폴리페놀 함량 및 항산화 활성에 관하여 비교해 보았다. 천연물 항산화력의 지표물질인 총 폴리페놀 및 플라보노이드 함량이 꽃고추가 국내에서 식용으로 널리 알려진 고추 2종보다 더욱 높게 측정되었다. 또한 꽃고추가 DPPH와 ABTS 라디칼 소거능 및 환원력 평가에서도 다른 2종보다 더 높은 항산화 활성을 나타냈다. 이는 현재 관상용으로만 재배되는 꽃고추가 천연 항산화 소재로 개발될 가능성이 충분함을 보여주고 있다.
