Rapid Discoloration of Aged Beef Muscles after Short-Term/Extreme Temperature Abuse during Retail Display

  • The objective of this study was to evaluate the effects of a short-term/extreme temperature abuse (STA) on color characteristics and oxidative stability of aged beef muscles during simulated retail display. Two beef muscles (longissimus lumborum, LL and semitendinosus, ST) were aged for 7 (A7), 14 (A14), 21 (A21), and 28 d (A28), and further displayed at 2℃ for 7 d. The STA was induced by placing steak samples at 20℃ for 1 h on the 4th d of display. Instrumental and visual color evaluations, ferric ion reducing capacity (FRC) and 2-thiobarbituric acid reactive substances (TBARS) assay were performed. Initially, redness, yellowness and hue angle of all beef muscles were similar, regardless of aging time before display (p>0.05). An increase in postmortem aging time increased lipid oxidation and caused a rapid discoloration after STA during display (p<0.05). ST muscle was more sharply discolored and oxidized after STA, when compared to LL muscle (p<0.05). The FRC value of beef muscles was decreased after 7 d of display (p<0.05). The results from the current study indicate adverse impacts of postmortem aging on color and oxidative stabilities of beef muscles, particularly under temperature abusing conditions during retail display. Thus, developing a specific post-harvest strategy to control quality attributes in retail levels for different muscle types and aging conditions would be required.

  • The current GPS constellation consists of 32 Block IIA/IIR/IIR-M satellites including 12 Block IIA satellites on service over 15 years. The satellites in poor space conditions may suffer from anomalies, especially influenced by aging atomic clocks which are of importance positioning and timing. Recently, the IGS Ultra-rapid predicted products have not shown acceptably high quality prediction performance because the Block IIA cesium clocks may be easily affected by various factors such as temperature and environment. The anomalies of aging clocks involve lower performance of positioning in the GPS applications. We, thus, describe satellite clock behaviors and anomalies induced by aging clocks and their detection technologies to avoid such anomalies.

A Comparative Study on Aging Characteristics in Metropolitan Area New Towns of Korea and Japan Specifically on Bundang and Tama New Town (한일 수도권 교외 신도시 고령화 특성 비교 연구 - 분당신도시와 다마뉴타운을 중심으로)

  • This study conducted a survey on the time serial change in the aging ratio and population structure in new towns and their housing complex of Korea and Japan, and revealed the differences in the factors that affect the aging ratio in new towns of Korea and Japan through a comparison of the housing provision of housing complex with a high aging ratio. Rapid aging is underway around the housing complexes that were developed in the beginning of Tama new town in Japan. Agingtends to increase in proportion to the opening time of the housing complex. Rental housing residents of early migration households showed rapid aging because they had generation separation early due to narrow housing. On the other hand, Bundang new town maintains a lower aging ratio and speed than Seoul and Seoul metropolitan area due to the constant influx of student population. On the other hand, aging is more likely to increase in large houses due to the depression of the real estate market.

  • Use of a phenomenological model, developed far prediction of catalytic deactivation, is demonstrated in comparing harshness of different driving cycles that are currently used to rapidly age catalytic converters on engine test benches. The model shows that seemingly equivalent driving cycles cause the catalytic converters to reach significantly different levels of deactivation. The comparison of the model prediction with the limited vehicle data seems encouraging despite the simplicity of the model at the current stage of its infancy.

A Study on Analysis of Industrial Injury Characteristics of Aging Workers in Agriculture

  • Objective:This study aims to devise industrial injury prevention measures by analyzing industrial injury characteristics including the status of industrial injuries, source of industrial injury and accident type in order to prevent aging workers' industrial injuries that account for more than half in the workplaces in agriculture. Background: Continuous migration from farm to city takes place among young people in rural areas in Korea, a traditionally agricultural country due to rapid industrialization and economic development. The aging rate in rural areas in 2013 was 37.3%, about three times higher than the total aging rate of 12.2% in Korea. According to industrial injury statistics of the Ministry of Employment and Labor, the number of industrial injuries in agriculture shows an uptrend and the industrial injuries of aging workers account for more than 50% each year. Method: Of the 2,970 industrial injury cases occurred in the workplaces in agriculture for five years during 2008 and 2012 offered by a national agency related to health and safety, this study analyzed 1,767 industrial injury cases of aging workers. Results: As a result of an analysis on aging workers' industrial injuries by company size in agriculture, 89.8% of the total number of industrial injuries were analyzed to occur in small scale company. According to aging workers' industrial injuries by source of industrial injury and accident type, the outdoor floor and a fall were analyzed to be the highest at 16.5% and 26.1%, respectively. Conclusion: This study analyzed aging workers' industrial injuries by company size, age, job duration, accident severity, gender, nationality, the source of industrial injury and accident type in order to identify industrial injury characteristics in agriculture. Application: The identification of industrial injury characteristics of aging workers in agriculture is judged to be helpful to devising effective measures to prevent industrial injuries.

  • Due to the rapid increasing in the aged population, it calls for social countermeasures urgently. Especially, there are increasing needs of space environment to support physical and spiritual characteristics of elderly. When designing space environment including house, there are growing consideration for elderly and extending appreciation of aging. The purpose of this study is to investigate the perception on environment planning for the seniors among university students who majoring in Housing & Interior Design and who visited the Aging Simulation Center located in Seoul. The Aging Simulation Center gives a chance of space design to support the elderly based on the experiences of daily living for the designers who design environment for elderly. Questionnaire survey was conducted to obtain data from 93 university students in their 20s majoring in housing and interior design who visited the Aging Simulation Center. The research findings showed that the recognition for design elements of residential environment for the elderly of respondents was changed toward positive way after visiting the Aging Simulation Center. The Aging Simulation Center was an effective educational environment for the preliminary designers to understand aging and the importance of appropriate design for users' needs. That is, aging simulation space can improve recognition of necessity of universally designed environment to support the elderly. Handrails around bathtub and wash basin, stair slope, electric auto-level controlled kitchen counter and kitchen cabinet were especially perceived for the respondents as very essential design elements to support the aged.

The Investigation on Thermal Aging Characteristics of Oil-Paper Insulation in Bushing

  • Bushing is the key link to connect outer and inner insulating systems and also the essential electric accessory in electric power system, especially in the high voltage engineering (AC 1000kV, DC 800kV). This paper presented the experimental research of thermal aging characteristic of oil-paper insulation used in bushing. A thermally accelerated aging experiment at 90℃ was performed. The bushing models containing five layers of paper were sealed into the aging vessels and further aged for 250 days. Then several important parameters associated with the aging were observed and evaluated. The results showed that the degree of polymerization (DP) of papers gradually decreased. The DP values of outermost layer and middle layer fit well into the second-order kinematic model and first-order kinematic model, respectively. Less deterioration speed of the inter-layer paper than outer layer was confirmed by the variation of DP. Hydrolysis was considered as the main cause to this phenomenon. In addition, the logarithm of the furfural concentrations in insulation oil was found to have good linear relationship with DP of papers. Interestingly, when the aging time is about 250 days and DP is 419, the aging process reaches an inflection point at which the DP approaches the leveling off degree of polymerization (LODP) value. Both tanδ and acid number of oils increased, while surface and volume resistivity of papers decreased. The obtained results demonstrated that thermal aging and moisture absorbed in papers brought great influence to the degradation of insulating paper, leading to rapid decrease of DP and increase of the tanδ. Thus, the bushing should be avoided from damp and real-time monitoring to the variation of tanδ and DP values of paper is an effective way to evaluate the insulation status of bushing.

Public Perception and Countermeasures on an 'Aging Society' - A Content Analysis of Newspaper Articles - ('고령화 사회(Aging society)'에 관한 인식과 대책 - 신문기사를 통해 본 동향 분석 -)

  • This study explored the tendencies of public perception and countermeasures on an aging society by the content analysis of Korea's four major daily newspapers since 2000. Results showed distinguishing growth of the public interest on an aging society. Articles were categorized into five domains - demographic structure, family and individual domain, health domain, economic and financial domain, and social domain. Economic and financial aspects occupied the highest frequency in the total number of articles. The analysis of public perception revealed both negative and positive perspectives on an aging society. In addition, the analysis of the newspaper articles identified particular phenomenon of Korean aging society as distinct rapid aging population, declining fertility rates caused by higher educational expenses, national security problems. Consequently, when we prepare for the alternatives of the aging society, we should pay attention to more various aspects of society based on the understanding of practical problems and needs. Furthermore, researches and discussions focusing on a particular phenomenon of Korea would be required.
