Quality characteristics of Sikhye prepared by different ratio of Seomaeyaksuk (Artemisia argyi H) extract (섬애약쑥 추출물의 첨가 비율에 따른 식혜의 품질특성)

  • This study was conducted to increase the functionality of Korean traditional beverage, Sikhye. The Sikhye were prepared by supplementation up to 20% of Seomaeyaksuk extract (SE) and saccharification for five hours (h). During the saccharification, turbidity of SE-added Sikhye (SES) was the highest at two hours of saccharification and then lowered gradually. L vlaue of SES did not show significant difference feduring saccharification, and both a and b value of Sikhye were increased as saccharification time passed and SE addition ratio was increased. The pH before saccharification was not significantly different by SE addition ratio but it was increased to 5.68-5.73 at 5 h saccharification. Soluble solid, total sugar and reducing sugar contents were enhanced as saccharification time and SE addition ratio were increased. The total phenolic compounds contents and DPPH radical scavenging activity showed a similar trend by saccharification time and SE addition. In sensory test, the evaluations of 5% SES and control were not significant different, but 20% SES group showed significant lower evaluation than other groups because strong color and mugwort flavor. From all of these results, physicochemical characteristics and antioxidant activity of SES was improved by SE addition but sensory characteristics was lower. Acceptable addition ratio of SE in Sikhye is determined to be within 15%.

Viscosity and Sensory Characteristics of Cow-soy Milk (콩우유와 우유 혼합유의 점도 및 관능적 특성에의 영향인자 영향)

  • Effect of pH, calcium, sucrose, heating and mixing ratio of soy and cow milk was studied on the viscosity and the sensory characteristics of cow-soy milk. The viscosity of soymilk was significantly affected by pH with showing maximum at 6.0 and the pH effect was decreased as the ratio of cow talk increased. A addition of sucrose or calcium affected little on the viscosity and a negative linear relationship was found be tween viscosity and an increase in cow milk ratio. Sensory characteristics of grassy and beany odor and taste of soymilk were rapidly decreased and nutty flavor and total acceptability were increased during initial 30 min of boiling. A further increase in boiling affected little on tastes and odors of soymilk. The beany odor and taste linearly decreased and milk flavor Increased as the ratio of cow milk increased. The total acceptability of 50 : 50 was found to be maximum for cow and soy mixed milks.

Factors Affecting on Quality Evaluation of Citrus unshiu Produced in Cheju (제주산 온주밀감의 품질평가에 미치는 요인)

  • Soluble solids($^{\circ}$Brix), acid content and edible part ratio of Citrus unshiu collected at sorting Places in south Cheju area wee more lowered, and peel thickness was more thickened with increasing fruit size. Compared to early variety of Citurs unshiu(C. unshiu Miyakawa Mar), peel thickness of medium variety of Citurs unshiu(C. unshiu Hayashi Mar) was more thickened, and edible part ratio was more lowered with increasing fruit size. Soluble solids of medium variety of Citurs unshiu were lowered, and acid contents were increased compared to early variety. Processing properties for pressing concentrated juice was good for early variety of Citurs unshiu, especially on fruit diameter of 50-65mm. Soluble solids, acid contents and juice ratio were decreased with increasing peel thickness. The quality properties for fresh fruit with peel thickness had a good correlation on early variety of Citurs unshiu, and these data are supposed to be applied to the quality evaluation of Citurs unshiu produced in Cheju.

Characteristics of Shrinking and Rehydration of Korean Tea-Leaves (한국산 차엽의 수축 및 복원특성)

  • Major characteristics of shrinking and rehydration of Korean tea-leaves were investigated in the hot-air drying equipment. Experiments were performed with various drying temperature, plucking time, heating method and rolling condition. The values of shrinking raito and rate were the highest at 7$0^{\circ}C$ in the range of 3$0^{\circ}C$ to 9$0^{\circ}C$. The 1st tea-leaves and showed higher values. Shrinking ratio was 16.62 and 19.62% for leaves and stems; shrinking rate was found 0.083 and 0.091cm/hr.cm, respectively. The rehydration characteristics of tea-leaves at the drying temperature of 3$0^{\circ}C$ were fairly satisfactory. The 2nd tea-leaves showed higher value than others, while the natural tea-leaves were lower. Average rehydration ratio and rehydration rate constant were 85.7% and 0.063/min for leaves; 80.1% and 0.032/min for stems, respectively.

Degradation and Preparation of Blend Films Using Natural Polymers Chitosan and Algin (키토산과 알긴을 이용한 블랜드필름의 제조와 분해)

  • Algin and chitosan are known as biodegradable natural polymers. PVA is useful for the production of water soluble packaging, paper, textile sizes. PVA/Algin and PVA/chitosan films were prepared by solution blends method in the weight ratio of chitosan, algin for the purpose of useful biodegradable films. Thermal and mechanical properties of blend films such as DSC, impact strength, tensile strength and morphology by SEM were determined. As a result, The ratio of 10.0wt% PVA/chitosan films were similar to PVA at thermal and mechanical properties. PVA/Algin films were found that phase separation was occured as more than 25wt% increasing the blend ratio of algin. PVA/Algin films were observed to be less partially compatibility than 10wt% increasing the blend ratio of algin by DSC, mechanical properties and SEM. Blend films were completely degraded pH 4.0 better than 7.0, 10.0 in the buffer solution. Also, they were rapidly degraded in the enzyme( glucosidase) solution better than pH solution by enzymolysis.

  • Ultrafiltration (UF) tests performed on traditional soy sauce (kanjang) using UF flat membrane test cell unit with thin film laminar flow similar to the spiral type membrane module in batch operations revealed reduction in permeate flux is proportional to the logarithm values of volume reduction ratio of the retentate kanjang at different feed rate of kanjang. Feed rate of 1.5 L/min was found to be adequate for long-term UF operation of kanjang using the test unit attached with MW cut-off size of 200,000 dalton polyoleffin plastic membrane in batch operation with the least concentration polarization. The higher the feed rate of kanjang, the lower the permeability of total nitrogen and NaCl, resulting in lower optical density at 500 nm and lower permeability of minerals such as Cu, Mn, and Mg. Microbial cells were completely rejected regardless of the feed rate, whereas most free amino acids were not.

Separation of Heme-iron by Dialysis (투석법에 의한 Heme-iron의 분리)

  • A method for separating heme-iron from hemoglobin (Hgb) hydrolysate by dialysis was developed. Recovery of heme-iron increased with increasing Hgb concentration, whereas rejection of peptide and separation effciency expressed by HP ratio (heme-iron/peptide) did not show significant differences. HP ratio increased with increases in the degree of hydrolysis of Hgb and $KH_2PO_4$ concentrations of dialysis solution. Recovery of heme-iron decreased with increase in the pH of dialysis solution due to wash-out of heme-iron across the dialysis membrane caused by increase in solubility of heme-iron. Rejections of peptide were 74.5 and 87.5% (2 and 5 kDa of cut off size, respectively), whereas recovery of heme-iron decreased from 86.5 (2 kDa) to 63.1% (25 kDa). Amounts of heme-iron and peptide of dried heme-iron product were 21.7 and 77.0%, and HP ratio and production yield were 28.2 and 6.5%, respectively.

  • This study was performed to investigate PSL and TL characteristics for the detection of different ratios of gamma-irradiated turmeric. It was possible to determine PSL and TL of 1- and 10-kGy irradiated turmeric. The TL ratios ($TL_1/TL_2$) of non-irradiated samples were lower than 0.001, while those of irradiated samples were higher than 0.355. In the PSL results, blended samples containing irradiated ingredients showed intermediate values for a 1% blending rate. Furthermore, TL analysis of blended samples seems to offer a promising method for irradiation identification by TL glow curve form and temperature range. The 1- and 10-kGy irradiated samples were able to be detected above a 4% blending rate. However, the TL ratio appeared as a threshold value below 0.1 for irradiated samples. Overall, TL analysis identified 4% blended samples containing gamma-irradiated turmeric.

Optimization of Extraction Conditions for Mixture of Camellia sinensis L. and Artemisia argyi by Response Surface Methodology (반응표면분석을 이용한 녹차와 애엽 혼합물의 추출조건 최적화)

  • This study used response surface methodology (RSM) in an effort to optimize the ultrasoundassisted extraction condition of Camellia sinensis L. and Artemisia argyi mixture in order to increase extraction yield in the extract. The effects of three independent variables, $X_1$ (Mixture ratio, 60-80%), $X_2$ (Ratio of water to raw material, 20~100 mL/g), and $X_3$ (Extraction time, 25-145 min), were investigated at three levels using Box-Behnken design (BBD) to obtain the highest extraction efficiency. Y (Extraction yield) was chosen as dependent variable. Our result showed that the coefficient of determination ($R^2$) of the model was 0.9747, with significant at the level of p < 0.002. Furthermore, the predicted values of each variable were similar to the actual values. The optimum extraction conditions were as follows: mixture ratio of 85.86%, ratio of water to raw material of 92.73 mL/g, and extraction time of 56.52 min. At these conditions, predicted extraction yield was 30.03%. The analysis of variance (ANOVA) indicated a high goodness of model fit and the success of the RSM method for optimizing extraction conditions of Camellia sinensis L. and Artemisia argyi mixture.
