여주분말을 첨가한 머핀의 품질특성 (Quality Characteristics of Muffin Added with Bitter Melon (Momordica charantia L.) Powder)

  • The purpose of this study was to examine the qualities of muffins with 0, 3, 6, 9, and 12% bitter melon powder. The specific gravity of muffins prepared by adding bitter melon powder was higher than that of the control group. The height of the control group was higher than that of the samples with bitter melon powder. The weight of muffins was not significantly different between all sample groups. The volume and specific loaf volume of muffins were decreased by the addition of bitter melon powder. The baking loss rate of muffins was not significantly different between all sample groups. The moisture content of the samples with bitter melon powder was higher but the pH of muffins was lower than those of the control group. DPPH radical scavenging activity of the control group was 26.86%, whereas the samples with bitter melon powder ranged from 41.35~74.91%. In crumb color, the L value was decreased, but a and b value were increased significantly by the addition of bitter melon powder. The hardness, springiness, cohesiveness, chewiness and brittleness of textural properties of muffins were significantly decreased by the addition of bitter melon powder. Sensory evaluation scores in terms of appearance, flavor, taste, texture and overall preference of groups with 3% and 6% of bitter melon powder did not show any significant difference when compared to the control group. Based on the above results, using less than 6% of the bitter melon powder would be proper to make muffins.

수용성 키토산 첨가에 따른 스폰지 케이크의 저장 중 품질 특성 (Effects of High Molecular Weight Water-Soluble Chitosan On Storage Characteristics and Quality Attributes of Sponge Cake)

  • 본 연구에서는 키토산 첨가가 스폰지 케이크의 품질에 미치는 영향을 위하여 키토산을 세 가지 농도(1,000, 2,000, 3,000 ppm)로 첨가하여 제조한 스폰지 케이크를 $5^{\circ}C$, $15^{\circ}C$$25^{\circ}C$에 5일간 저장하여 저장 중 일어나는 품질변화, 노화도, 색도 변화 및 관능평가를 측정하여 품질 특성에 대하여 조사하였다. Hardness는 키토산 첨가한 시료가 대조구에 비해 조직이 부드러웠고, gumminess와 chewiness도 대조구에 비해 낮은 값을 나타내고, 키토산을 첨가한 시료들간의 차이는 나타나지 않았다. 키토산을 함유한 스폰지 케이크의 노화도는 대조구에 비해 상대적으로 높은 것으로 나타났으며, 그 값은 키토산의 첨가농도 및 저장조건에 관계없이 약 30% 이내로 작게 나타났다. 저장온도에 대한 노화 진행 정도를 속도론적 관점에서 분석한 결과 키토산을 함유한 시료의 경우 대조구에 비해 느리게 노화가 진행되어 상대적으로 저장온도의 영향을 작게 받는 것으로 분석되었다. 키토산을 함유한 시료군들의 명도(lightness, a value)는 대조구에 비하여 높은 값을 보였으며, 2,000ppm과 3000 ppm 농도로 첨가한 시료군들의 명도는 유의적으로 증가하여 대조구의 71.49에 비해 높은 74.23 및 73.57의 값을 나타내었다. 적색도(redness, a value)의 경우는 키토산을 첨가한 시료군들의 값이 대조구에 비해 감소하는 것으로 나타났으며, 키토산을 1,000 ppm 수준으로 첨가한 시료가 가장 낮은 -4.88의 값을 나타내었다. 그리고 황색도(yellowness, b value)는 키토산의 첨가농도에 따라 일정한 경향을 보이지 않았다. 키토산을 첨가한 시료군들과 대조구와의 색차(Total color difference, E)의 경우 키토산의 첨가농도에 따른 색차의 값은 유의차가 없는 것으로 나타났다. 전체적인 선호도를 살펴보면, 키토산은 2,000 ppm의 농도까지 첨가하여 제조한 스폰지 케이크는 대조구와 유의적 차이를 보이지 않았다.

측정오차가 공정평균 관리도의 경제적 설계에 미치는 영향 (Effect of Measurement Error on the Economic Design of Control Charts for Controlling Process Means)

  • Past studies on economic control charts for controlling process means assumed that the measures of a quality characteristic do not have measurement error. In practice, however, this assumption is frequently violated. In this paper, the economic design models of three control charts(Xbar control chart, Xbar control chart with warning limits, and CUSUM control chart) for controlling process means are developed on the assumption that the measures can have measurement error. The effects of measurement error on the process control cost and design parameters of three economic control charts are examined. According to the experiments done in this study, when measurement error exists, the economic CUSUM control chart has lower process control cost in comparison with two other control charts. When measurement error becomes larger, both the sample size and the sampling interval increase while the control limits decrease.

동남아산 피시소스를 이용하여 제조한 김치의 품질 특성 (Quality Characteristics of Kimchi made with South-East Asian Fish Sauce)

  • Salt-fermented fish and fish sauce are very important materials to make Kimchi. They provide good taste and plenty of nutrition to Kimchi during fermentation. However, it is difficult to purchase Korean salt-fermented fish or fish sauce out of Korea. Therefore, to generalize Kimchi for other countries, this research carefully compared the quality differences between Kimchi made with South East Asian fish sauce, which is fairly similar to traditional Korean salt-fermented anchovy extract (Aekjeot) in terms of taste and ingredients, and that made with traditional Korean salt-fermented anchovy extract. To determine quality differences among traditional Korean Kimchies made with different sauces, Korean-made salt-fermented shrimp, salt-fermented shrimp extract, salt-fermented anchovy and salt-fermented anchovy extract were used. Of the four Kimchis, the one made with salt-fermented anchovy extract was chosen as a control sample and compared with those made with three different South-East Asian fish sauces. In the sensory evaluation for acceptance of fish sauces, characteristics of taste, texture and overall acceptance showed significant differences. In the sensory evaluation for differences, characteristics of fish odor and crunchiness showed visible differences. For umami taste, all fish sauces received higher points than Korean salt-fermented anchovy extract (control sample), although the difference was not significant. Sensory evaluation and research results show that Kimchi can become a highly likable food overseas and Kimchi can substitute easily bought South-East Asian fish sauces for Korean salt-fermented fish sauces (Jeotkal).

보리순 가루를 첨가한 머핀의 품질 특성 (Quality Characteristics of Muffins by the Addition of Dried Barley Sprout Powder)

  • To evaluate the effect of dried barley sprout powder on muffins, muffins were made after they had been supplemented with barley sprout powder (0, 10, 20 and 30%(all w/w)). The moisture content, crude protein and crude lipid were reduced with an increase in barley sprout powder. The content of crude ash and crude fiber in the control group was significantly lower than those of the samples with barley sprout powder. The pH in the sample with barley sprout powder was lower than that of the control group. The highest specific gravity in the group with 30% of barley sprout powder was 0.84. No significant weight and baking loss rate changes were observed. The sample with no barley sprout powder showed the highest volume. The sample with 30% of barley sprout powder showed the highest uniformity. In color, the L-value and a-value of the control group were significantly higher than those of the other groups. Hardness, gumminess and chewiness of the control group showed the lowest value rather than the other groups. Springness and cohesiveness of the control group were significantly higher than those of the other groups. Crumb color, grass odor and bitter taste showed significant difference among groups. Acceptance of appearance, flavor, taste and total acceptability of groups with 10% and 20% of barley sprout powder did not show any significant difference when compared to the control group. Based on the above results, less than 20% of barley sprout powder would be proper to make muffins.

붓스트랩에 기초하여 조정한 관리한계를 사용하는 CCC-r 관리도의 성능 (Performance of CCC-r charts with bootstrap adjusted control limits)

  • CCC-r 관리도는 불량률이 매우 낮은 고품질 공정을 관리하는 데 효율적이라고 알려져 있다. 대부분의 공정에서 공정 모수의 값은 알려져 있지 않기 때문에 제1국면에서 이를 추정해야 하는데, 표본의 크기가 충분히 크지 않은 경우 추정 오차가 발생하여 원하는 관리상태에서의 성능을 만족하지 못하는 경우가 발생한다. 뿐만 아니라 제1국면에서 추출하는 표본에 따른 산포로 인하여 관리상태일 때의 성능의 산포 또한 커지게 된다. 이러한 문제를 해결하기 위해 이 논문에서는 관리상태일 때 신호까지의 평균관측개수가 사전에 정한 확률로 목표하는 값보다 큰 값을 갖도록, 붓스트랩 알고리즘을 사용하여 CCC-r 관리도의 관리한계를 조정하는 절차를 제안하였다. 이때 고품질 공정에 적용하기 위하여 최대우도추정량 대신 베이즈추정량을 사용하여 불량률을 추정하였다. 다양한 상황에 대해 모의실험을 수행한 결과, 제안된 절차는 CCC-r 관리도의 관리상태 성능을 크게 향상시킴을 알 수 있었다.

효소 처리에 따른 야생복숭아(Prunus persica L.) 당절임액의 품질 특성 및 항산화 효과 (Quality Characteristics and Antioxidant Effect of Sugar Preserved Wild Peach (Prunus persica L.) Juice by Enzymatic Treatment)

  • This study was to investigate the effects of enzyme on quality characteristics and antioxidant activities of wild peach (Prunus persica L.) juice. pH levels and S.S (soluble solid) values in all samples ranged from 3.86 to 4.13 and from 48.0 to $55.0^{\circ}Brix$, respectively. The TA (total acidity) values of control (not treatment enzyme) were higher than those of the others. The highest 'L', 'a' and 'b' values were observed on PWP (preserved wild peach (Prunus persica L.) juice of cellulase/pectinase (1:1, w/w) sample. Glucose (26.65 g/100 g) and fructose (17.42 g/100 g) in PWP product were determined, however sucrose and maltose were not detected. The predominating organic acid components analyzed in PWP sample were tartaric (32.36 g/100 g) and lactc acids (209.34 g/100 g), whereas citric acid, acetic acid and malic acid were not detected. Higher scores for taste, flavor, color and overall acceptance were found for PWP products compared to other samples. The total phenolic content (13.31 mg GAE/mg dry weight) analyzed using Folin-Ciocalteu's reagent, of PWP sample was higher than those of the others and the total flavonoid concentrations were also 10.95 mg CE/mg dry weight. The DPPH radical scavenging and ABTS radical scavenging activities in all samples ranged from 55.16 to 74.29% and from 39.59 to 82.79%, respectively. The antioxidant activities were affected by addition of enzyme. These results indicate that the use of the mixture of cellulase and pectinase could increase the quality, and antioxidant potentials of sugar preserved wild peach (Prunus persica L.) juice by enzymatic treatment.

와이블 고장모형 하에서 경고한계를 고려한 $\bar{X}$ 관리도의 경제적 설계 (Economic Design of $\bar{X}$-Control Charts with Warning Limits under Weibull Failure Model)

  • Since Duncan(1956) first proposed an economic design of $\bar{X}$-control charts, most of the succeeding works on economic design of control charts assumed the exponential failure model like Duncan. Hu(1984), however, assumed a more versatile Weibull failure model to develop an economic design of $\bar{X}$-control charts and Banerjee and Rahim(1988) further improved Hu's design by changing the assumption of fixed-length sampling intervals to variable-length ones. In this article we follow the approach of Banerjee and Rahim(1988) but include a pair of warning limits inside the control limits in order to search for a failure without stopping the process when the sample mean falls between warning and control limits. The computational results indicate that the proposed model gives a lower cost than Banerjee and Rahim's model unless the early failure probability of a Weibull distribution is relatively large. The reduction in cost is shown to become larger as the cost of production loss outweighs the cost of searches for a failure.

원유 세균수 검사장비의 정도관리를 위한 표준시료의 개발 및 평가 (Development and evaluation of standard samples for quality control of automated total bacterial counter in raw milk)

  • Standard samples were prepared for this study, and applied for BactoScanTM and BactoCountTM in order for quality control evaluation for total bacterial count in raw milk. Accordingly, the preparation of two lots of standard samples for quality control were lyophilized, which contain Lactobacillus lactis. The standard samples were prepared into three different levels of bacterial counts, those were Low 30,000~40,000, Medium 70,000~90,000, High 150,000~220,000 CFU/mL, respectively. Then, the proficiency tests were performed in total 19 laboratories for measuring total bacterial counts. The total bacterial counts in the standard samples showed 37~42, 82~105, 214~240 CFU/mL in the first lot, and it showed 30~36, 67~75, 131~163 CFU/mL in the second lot in low, medium and high levels, respectively. Based on these results, the absolute values of z-scores of six standard samples in 18 laboratories were ≤2, which means the samples are satisfactory. However, z-score in one laboratory was ≤3, which means the sample is questionable. Using two standard samples, the correlation between BactoScanTM and BactoCountTM was 0.9982, which means the results of total bacterial count measurement of both equipment were equivalent. Therefore, the standard samples manufactured in this study for quality control of total bacterial count using BactoScanTM and BactoCountTM in the raw milk could be applied to proficiency tests.

참마분말을 첨가한 백설기의 품질 특성 (The Quality Characteristics of Backsulgi Prepared with Yam(Dioscorea japonica) Powder)

  • Yam($Dioscorea$ $japonica$) has been used in oriental medicine to modulate physiology, and it is considered as a potential functional food. So far, however, limited efforts has been performed to use yam for food processing and development. Thus, in this study, rice cakes called 'Backsulgi' containing 3%, 6% and 9% yam powder were prepared and the quality characteristics were evaluated. The results of this study showed that adding yam powder reduced the moisture content of Backsulgi, which led to a decrease in the strength of textural characteristics such as hardness, adhesiveness, cohesiveness, gumminess, chewiness, and springiness. In contrast, the quality characteristics of the sample containing 3% yam powder were not significantly different from those of the control in moisture content, texture, and overall acceptability. Consequently, adding 3% yam powder could improve the biofunctionality and quality characteristics of Backsulgi in the case of adjusting moisture content.
