The change in physicochemical and sensory properties and bioactive compounds of Campbell grape juice has been investigated for 30 days at $-5^{\circ}C$. The pH and sugar/acid ratio of the cold stabilized juice increased, while titratable acidity and soluble solids decreased as cold stabilization period is prolonged. Juice samples became lighter, yellowish to brownish and lesser red in color as can be observed with the increasing $L^*$ and $b^*$ values, and decreasing $a^*$ value, respectively. The juice cold stabilized for a shorter period of time showed higher levels of bioactive compounds and radical scavenging activity, and was more preferred by the panelists than the juice cold stabilized for a longer period of time. These results suggest that cold stabilization period affected the quality characteristics of grape juice.
The purpose of this research is to develop bellflower (Platycodon grandiflorum) root and lotus (Nelumbo nucifera) root Jeonggwa as a health food. The quality characteristics of Jeonggwa to which 0-8% (w/w) of Omija (Schizandra chinensis Baillon) water extract was added were investigated. The moisture contents of bellflower root Jeonggwa were 14.9-18.0%, where as that of lotus root Jeonggwa was 6.9-8.4%. The acidity of bellflower root Jeonggwa was 0.477-0.585% and that of lotus root Jeonggwa was 0.513-0.572%; values increasing levels of Omija extract. The lightness (L) and yellowness (b) values of bellflower root Jeonggwa decreased with increasing amounts of Omija extract, and the lightness (L), redness (a) and yellowness (b) values of lotus root Jeonggwa decreased with increasing Omija extract concentration (p<0.05). In mechanical tests with bellflower root Jeonggwa, the highest values of hardness and strength were seen at 2% (w/w) extract, of cohesiveness were seen with 4-8%, of springiness with 2-6%, of gumminess with 6-8%, and of brittleness with 4-6% (all p<0.01). In mechanical tests with lotus root Jeonggwa, the highest values of hardness and springiness were at 0 and 6% extract, respectively, whereas strength, gumminess and brittleness were at 6-8% Omija extract (all p<0.01). In sensory evaluation, the highest acceptability of bellflower root Jeonggwa was seen with 4% extract and that of lotus root Jeonggwa was seen with 2% extract.
Grapefruit seed extract powder (GFSEP), which was made with grapefruit seed extract and calcium carbonate, was investigated to retard the fermentation rate. The mixing ratios of GFSEP to salted Chinese cabbage were 0.1, 0.3 and 0.5%. Quality characteristics of kimchi such as pH, titratable acidity, reducing sugar content and microbial loads were measured during fermentation at 10$^{\circ}C$. pH and reducing sugar content of control and kimchi sample with 0.1% GFSEP showed decreases until 10 days, and then attained to stabilized levels. Kimchi samples with 0.3% and 0.5% GFSEP maintained a higher pH and reducing sugar content, while microbial load was lower than others. Based on the pH and tit ratable acidity, kimchi samples with GFSEP prolong the shelf life about 3~10 days.
‘Fuji’ apples were treated by gamma irradiation (0 - 3 kGy) or methyl bromide fumigation at commercial conditions (MeBr, 26 g/kg, 4 hr) for quarantine purposes at two different treatment timing after harvest and stored under air at 0$^{\circ}C$ for 4 months. Associated with the treatment timing of irradiation or fumigation, after 40 days of storage at 0$^{\circ}C$ following harvest was more adequate than immediately after harvest in keeping qualities of stored apples. However, more than 2 kGy irradiation and MeBr fumigation were detrimental to physiological and chemical qualities of the fruits. These results show that less than 1 kGy irradiation at the delayed timing has a possibility to be applied as a quarantine procedure without significant changes in the quality of apples.
Bell pepper was packed with several plastic films, and investigated the quality Characteristics such as gas composition, weight loss, microbial load, soluble solid content, ascorbic acid and color during storage at 10$^{\circ}C$. Cast polypropylene (CPP), low density Polyethylene (LDPE), Polyolefin (MPD, PD961) and linear low density polyethylene (LLDPE) were used for this purpose. Oxygen concentration inside packages generally showed a 10∼14% after 1∼2 weeks, but package with CPP maintained above 15% throughout the storage. Carbon dioxide concentration of CPP was above 2%, but other treatments showed below 2%. Weight loss of all treatments was below 3.0% after 5 weeks. Total microbial count showed a similar pattern compared to yeast and mold, and CPP maintained the highest microbial load after 3 weeks. Yellowness (b value) of bell pepper was generally increased throughout the storage, and MPD and PD961 were higher than other treatments.
Quality changes of citrus tangor(Citrus kiyomi) during storage by chitosan and calcium treatment and storage warehouse were investigated. Citrus fruits were treated with 2000-folds diluted iminoctadime-triacetate solution, and 1.5% chitosan with 0.5% CaC1$_2$solution, and were at 30$^{\circ}C$ for 24 hr before storage. The citrus fruits of about 12 kg/26 L plastic container were stored at 4$^{\circ}C$ with 87% relative humidity. Decay ratio of citrus with precise temperature and humidity control were lower than the others during storage. Weight loss, moisture content of peel and flesh were decreased slowly during storage. 15 ∼ 18% of acid content were decreased on 120 days' storage. Vitamin C content were decreased rapidly during storage. 23 free amino acids were detected. Isoleucine and leucine were not detected, but alanine was detected only on stored citrus. Citrus fruits was kept well on its commodity quality for 3 month at 4$^{\circ}C$ with 87% relative humidity.
This study was conducted to promote the utilization of fish paste with 0, 2, 3, and 4% added Curcuma aromatica powder. The moisture, crude protein, crude lipid, and crude ash contents of the used Curcuma aromatica powder were 11.15, 6.25, 2.36, and 9.98%, respectively. For the Hunter color values, the L, a values of the fish paste decreased with increasing concentrations of Curcuma aromatica powder, while the b values appreciated. In the folding test, whose results reveal the flexibility of the fish paste, all the test samples showed AA results. In the texture meter test, the hardness, cohesiveness, and springiness increased with increasing concentrations of Curcuma aromatica powder, but the gumminess and brittleness of the fish paste were reduced. In the sensory evaluation, the color and taste of the fish paste with 3% added Curcuma aromatica powder were preferred over those of the other fish pastes. These results suggest that Curcuma aromatica powder can be applied to fish paste to achieve high quality and functionality.
Ripened Rubus coreanus Miquel harvested at Gochang was stored for 8 months at $-20{\pm}2^{\circ}C$, and quality changes were investigated at intervals of 2-3 months. Soluble solid concentration increased slightly, but acidity fell during frozen storage. The lightness (L value) and red color index (a value) of ripened R. coreanus Miquel decreased during storage. The vitamin C and ellagic acid contents were 30.79 mg/100 g and $155.12\;{\mu}g/100\;mg$ mg before storage, respectively, but fell to 17.03 mg/100g and $140.11\;{\mu}g/100\;mg$ after 8 months of storage. However, the total anthocyanin content was 39.45 mg/100 g before storage, and this remained unchanged from 2 to 8 months of storage.
The objective of the present study was to investigate differences in quality of kimchi products produced in Korea, Japan, and China. Kimchi products from kimchi-producing countries with high consumer consumption such as Japan and China along with local products from Korea, where exporting has not yet started, were collected. Product pH, acidity, salinity, package pressure, gas production were assessed, and microbiological analyses and sensory evaluations were performed on kimchi products that were stored at either $4^{\circ}C$ for 63 d or $15^{\circ}C$ for 20 d. The pH and acidity results showed that as Japanese and Chinese kimchi had higher pH and lower acidity than that of Korean kimchi, which was determined to be indicative of insufficient microbial fermentation following kimchi production. Japanese kimchi had different microbial properties than those of Korean kimchi, which is due to differences in their manufacturing processes. Overall preferences derived from sensory evaluations were: Korean kimchi>Chinese kimchi>Japanese kimchi. The results of this study demonstrate the sensory superiority of Korean kimchi and may be useful when predicting consumers' acceptance level of Korean kimchi exported to other countries.

Objectives: The aim of this study is to find out the effects of dance movement therapy(DMT) on anxiety, depression, and life quality by applying DMT program to climacteric women. Methods: The subjects of the research are climacteric women between the ages of 45 and 55 who located in the city of oo in Chollabukdo. The program was conducted with the subjects of a total of 27 women less than one year after menopause, 14 in the experiment group and 13 in the comparison group, 90 minutes a session, once a week, for 15 weeks. Results: The results show that the points of anxiety and depression decreased significantly in the experiment group which participated in the DMT program (p<0.05). The points of life increased significantly in physical & mental wellbeing, competence, and stability (p<0.05). Vitality points increased, but not significantly. Conclusions: This means that DMT decreases anxiety and depression of climacteric women, has positive effects on life quality related to health, and can help increase physical, mental, and emotional wellbeing of climacteric women.
