The relationship between adolescents peer victimization and friendship quality (청소년의 또래 괴롭힘과 우정의 질과의 관계)

  • The purpose of this study was to investigate the relationship between adolescents peer victimization and friendship quality. The 679 subjects were selected from the fifth and sixth graders of elementary schools and the first and second graders of middle schools. The instruments of measurement were peer victimization scale, friendship quality scale, friendship nominations measure. The main findings of this study were as follows : 1) The type of peer victimization has significant difference according to gender and grade. There was no significant grade difference in prosocial behavior. 2) The type of friendship quality has significant difference according to gender and grade. There were no significant grade difference in positive friendship and negative friendship. 3) There was significant correlation between adolescents peer victimization and friendship quality.

Quality of steak restructured from beef trimmings containing microbial transglutaminase and impacted by freezing and grading by fat level

  • Objective: The objective of this research was to evaluate the physico-chemical, microbiological and sensorial qualities of restructured steaks processed from beef trimmings (grade I and II) and frozen beef (fresh beef as control and frozen beef). Methods: Beef trimmings from commercial butcher were collected, designated into 4 treatments differing in beef trimmings grade and freezing, processed into restructured steaks with 1% microbial transglutaminase and then analyzed for product quality. Results: The results showed that all meat from different groups could be tightly bound together via cross-linking of myosin heavy chain and actin as observed by sodium dodecyl sulfate-polyacrylamide gel electrophoresis. Microbial counts of psychrotrophic and mesophilic bacteria were not affected by treatments (p>0.05), and no detectable of thermophilic bacteria were found. Regarding effect of beef trimmings grade, steaks made from beef trimmings grade II (16.03% fat) showed some superior sensorial qualities including higher tenderness score (p<0.05) and tendency for higher scores of juiciness and overall acceptability (p<0.07) than those made from beef trimmings grade I (2.15% fat). Moreover, a hardness value from texture profile analysis was lower in steaks processed from beef trimmings grade II than those made from grade I (p<0.05). Although some inferior qualities in terms of cooking loss and discoloration after cooking were higher in steaks made from beef trimmings grade II than those made from beef trimmings grade I (p<0.05), these differences did not affect the sensory evaluation. Frozen beef improved the soft texture and resulted in effective meat binding as considered by higher cohesiveness and springiness of the raw restructured product as compared to fresh beef (p<0.05). Conclusion: The results indicated the most suitable raw beef for producing restructured steaks without detrimental effect on product quality was beef trimmings grade II containing up to 17% fat which positively affected the sensory quality and that frozen beef trimmings increased tenderness and meat binding of restructured beef steaks.

A study on the changes of carcass muscle distribution in the high quality meat production of Hanwoo steers in Kyungnam (경남지역 거세한우의 고급육 생산을 위한 도체 근육부위별 분포도 차이에 대한 연구)

  • A grading system is implemented to evaluate the meat quality of Hanwoo. In the grading system, grade 1++A is the highest grade. Livestock farms breed Hanwoo with good quality feed in order to obtain the highest grade. In this process, the content ratios of muscles in individual regions can be changed. To find out the muscle distribution ratios of Hanwoo steers, grade 1A, 1+A, and 1++A Hanwoo steers were compared with grade 1+A Hanwoo female. Grade 1A Hanwoo steers had higher ratios of shank (SK), brisket and flank (BF), neck chain (NC), and inside skirt (IS) meats and a lower ratio of striploin (SL) meat compared to grade 1+A Hanwoo feamle. Grade 1++A Hanwoo steers had higher ratios of neck (NK) and loin (LN) meats and lower ratios of inside skirt (IS), tenderloin (TL), top round (TR), eye round (ER), bottom round (BR), bottom sirloin triangle (BST), and knuckle (K) meats compared to grade 1+A Hanwoo steers. In comparison between grade 1A and 1++A Hanwoo steers, the ratio of shank (SK) was significantly lower in higher quality meats. If the changes are continuously studied to improve the process so that the ratios of partial meats of the regions highly preferred by consumers can increase, it will contribute to increases in the incomes of livestock farms and enable Hanwoo to grow into a global brand.

Warner-Bratzler Shear Force, Sarcomere Length, Total Collagen Contents and Sensory Characteristics of Hanwoo Beef (Korean Native Cattle) Quality Grade (한우육의 육질등급에 따른 부위별 전단력, 근절길이, 콜라겐의 함량 및 관능 특성)

  • This study was conducted to investigate the Warner-Bratzler shear force (WBS), sarcomere length, total collagen contents and consumer tests of different cuts of Hanwoo beef based on quality grade. Five cuts [Cheggt (striploin), Dngsim (loin), Moksim (chuck roll), Udoon (top round), Yanggi (brisket)] were obtained from Hanwoo beef (bulls and steers, 24-30 months old) and grouped by their quality grades ($1^{++}$, $1^+$, 1, 2 and 3). The WBS values of chuck cut in $1^{++}$, $1^+$ and 1 quality grade groups were 5.47 (kg/0.5 $inch^2$), 5.46 (kg/0.5 $inch^2$) and 6.54 (kg/0.5 $inch^2$), respectively, which were significantly lower than those of chuck in quality grade 3, which was 8.41 (kg/0.5 $inch^2$) (p<0.05). The sarcomere length of the quality grade groups were significantly longer for brisket (3.72 ${\mu}m$) of $1^{++}$ quality grade than for that of 3 quality grade brisket (p<0.05). Brisket of $1^{++}$ and 2 quality grade had significantly greater sarcomere lengths than strip loin and top round in the same quality grade (p<0.05). The total collagen contents of strip loins in the $1^{++}$, $1^+$, and 1 quality grade groups (1.17, 1.18 and 1.14 g/100 g, respectively) were significantly lower than those of the 3 quality grade group (1.63 g/100 g) (p<0.05). The overall sensory scores of tenderness and juiciness for the five cuts of $1^{++}$ quality grade were significantly higher than those of the other quality grade (p<0.05). Among the five cuts, loin had the highest tenderness and juiciness scores (p<0.05), whereas top round had the lowest tenderness and juiciness scores (p<0.05). Overall, there were significant differences in the WBS and sensory properties among quality grades and cuts (p<0.05). However, the sarcomere length and total collagen contents of chuck roll, top round and loin did not differ among quality grades.

Comparison of Chemical Composition, Physico-chemical Properties and Fatty Acid Composition of Horse Meat by Different Grade and Cuts (말고기의 육질 등급에 따른 부위별 일반성분, 이화학적 특성 및 지방산 성분 비교)

  • The objective of this study was to investigate the physical and chemical composition, fatty acid profile and sensory property of horse meat according to meat quality grade (1 and 2) and cuts (loin, chuck roll and top round). The lipid content of loin was significantly higher (p<0.05) in grade 1 (4.65%) compared with grade 2 (2.31%), whereas moisture content was lower (p<0.05) in grade 1 than in grade 2. The pH value was significantly lower (p<0.05) in loin than in other cuts regardless of meat quality grade. Shear force value of loin was significantly different (p<0.05) between grades 1 (5.87 $kg/cm^2$) and 2 (10.86 $kg/cm^2$). Water-holding capacity values of loin, chuck roll and top round were not different (p>0.05) between grades 1 and 2. Meat color values ($L^*$, $a^*$ and $b^*$) of loin, chuck roll and top round were not different (p>0.05) between grades 1 and 2. Palmitoleic acid of loin in grade 1 (11.39%) was higher (p<0.05) than that in grade 2 (5.36%). Stearic acid of loin in grade 1(3.58%) was lower (p<0.05) than that in grade 2 (7.02%). Overall palatability of loin, chuck roll and top round did not differ (p>0.05) between grades 1 and 2. Therefore, meat quality grade had mainly affected lipid and moisture contents, shear force, palmitoleic acid and stearic acid of horse loin; and horse loin of grade 2 had lower pH and higher $L^*$, $a^*$ and $b^*$ than the other cuts.

Quality Characteristics of High and Low Grade Hanwoo Beef During Storage at $1^{\circ}C$ (고급 및 저급 한우육의 저장중 품질 특성)

  • Quality changes of first grade Hanwoo beef were compared with those of third grade Hanwoo beef to investigate effect of initial raw meat quality on maintenance of meat quality during storage for 28 days at $1\;{\pm}\;1^{\circ}C$. Crude fat content of first grade meat was higher, whereas water content was lower, than those of third grade meat. Total bacterial counts of first and third grade beef packaged with polyethylene for 21 days storage at $1\;{\pm}\;1^{\circ}C$ were 106 and $108\;CFU/cm^2$, respectively. Volatile basic nitrogen (VBN) value of first grade meats was lower than that of third grade meat during storage for 28 days at $1\;{\pm}\;1^{\circ}C$. Drip loss percents of first and third grade meats were 4.19 and 6.06% during 14 days storage at $1^{\circ}C$, respectively. L, a, and b values decreased gradually during storage regardless of meat grade, with a value of first grade meat being higher than that of third grade meat at early stage of storage at $1^{\circ}C$.

Attachment to Fathers and Mothers and Self-Perceived Competence about Friendship Quality in Elementary School Children (친구관계의 질에 영향을 주는 부/모애착과 자기역량지각)

  • This study investigated the relations between children's self-perceived competence and friendship quality by grade, sex and father/mother attachment, and the relative importance of father/mother attachment and self-perceived competence on quality of children's friendships. There was a mean difference in self-perceived competence by grade and father/mother attachment. While both 3rd graders and 5th graders showed high levels of father/mother attachment and self-perceived competence, 5th graders showed higher self-perceived competence than 3rd graders. There was a mean difference in friendship quality by grade, sex and father/mother attachment : 5th graders showed higher friendship quality than the 3rd graders, and girls showed higher friendship quality then boys. In conclusion, children's friendship quality was influenced by father/mother attachment and social acceptance.

  • Concerning the water quality management plan about Buk-stream, Ohsip-stream and Gagok-stream water systems in this research, which objectives of abstract is as follows. The result of cleanness degree evaluation of water quality in this research, the first grade was 91% shared in Buk-stream water system. The most point of the middle and upper stream of Buk-stream was maintain extremely clean water quality. Among the researched water system, the first grade of water quality in Ohsip-stream water system was most poor, its first garde rate was 68%. In all water quality check point of Gagog-stream water system was accomplished extremely clean water quality condition of first grade of BOD. The calculation result of pollutant loading density, which were 8.2, 21.5, 4.0kg/day.$\textrm{km}^2$. respectively and basin of Buk-stream and Gagok-Stream have high development potentiality.

Effects of Black Sugar® and Mineral® Supplementation on Growth performance and Meat Quality of Hamwoo Steers in Fattening Period

  • This study was carried out investigate the effects of dietary addition of mineral and sugar on the dry matter intake, daily gain, yield grade and quality grade of Hanwoo (Bos taurus coreanae) steers. Three diets fed to steers included a control diet (concentrate mix and rice straw : C) and two treatments diet (control diet + black sugar 100 g + mineral 100 g : T1, and control diet + black sugar 150 g + mineral 50 g : T2). The results are summarized as follows; total feeding intake, body weight gain and daily gain did not show significant differences among the three treatments. Cold carcass weight was significantly (p<0.05) higher in T2 than in the other two treatments (C and T1). There was no significant difference in yield traits of back fat thickness, longissimus muscle area and yield grade among the three treatments (C, T1 and T2). Marbling score showed significantly (p<0.05) higher in order of T2 (5.67) > T1 (4.67) > C (3.67). Meat color, fat color, texture and maturity were no significant difference. Quality grade was higher in T2 than in the other two treatments (C and T1), but there was no significant difference. The results show that marbling score and quality grade of Hanwoo can be increased by high dry matter intake with feeding addition of mineral and sugar.

Influences of Grading and Grade Shape in Aggregates on the Strength and Absorption of Cement Mortar Products (골재의 입도 및 입형이 제품용 시멘트 모르타르의 강도 및 흡수율에 미치는 영향)

  • The quality of cement mortar products largely depends on various work conditions, specially on the grading and grade shape of aggregates. However, the effect of grading and grade shape on the quality is not considered by both KS codes and production processes, resulting in the increase of the possibility of quality degradation. The objective of this study was to investigate the effect of grading and grade shape on the strength and absorption characteristics of cement mortar products. Flexural and compressive strength increased with the increase of fineness modulus and W/C. The strength increase was measured larger with river sand than with crushed sand. Absorption tended to decrease with the increase of fineness modulus and W/C, but did not affected by the source of sand.
