Analysis of Traditional Process for Yukwa Making, a Korean Puffed Rice Snack (I): Steeping and Punching Processes (전통 유과가공공정의 분석(I): 수침 및 꽈리치기 공정)

  • The analysis of traditional process for a Korean puffed rice snack (Yukwa) is needed to develop an advanced process for Yukwa-making. Steeping and punching (Koarichigi) processes, consume time and labor in Yukwa-making, were analyzed on this study. Steeping of waxy rice at $15^{\circ}C$ for 3 days was required to equilibrate moisture absorption in waxy rice kernel. However, steeping for more than 6 days was required soft texture and small air cell distribution of Yukwa. Protein content at pericarp on endosperm of waxy rice kernel was decreased and starch granule was damaged during steeping. RVA paste viscosity was the highest at 6 day steeping after than decreased. Expansion ratio of Yukwa was increased with the increase in steeping time. Air bubbles in dough after punching were uniformly distributed and kneading energy input was decreased with the increase in steeping time. Soft texture, unique texture of Yukwa could be controlled by controlling steeping time and kneading energy input during punching process.

Quality Characteristics of the Traditional Korean Snack, Yut-gang-jung with Perilla and Changes During Storage (들깨 엿 강정의 품질 특성 및 저장 중 변화)

  • The quality characteristics of the traditional Korean snack Yut-gang-jung with Perilla, and the changes that occur during storage were investigated. The water and protein content of a fresh sample were 9.67% and 10.83%, respectively. The water content in the sample stored at 20$^{\circ}C$ changed slightly, but that of the sample stored at 60$^{\circ}C$ showed larger changes from 9.33 % to 4.33%. The acidity of the sample stored for 8 days was significantly higher. The hardness of the sample stored at 60$^{\circ}C$ for 4 days was increased significantly. Results of the sensory evaluation indicated the sample stored at 60$^{\circ}C$ had a significantly decreased roasted perilla flavor. The rancid flavor of the sample stored at 20$^{\circ}C$ increased slightly, while that of the sample stored at 60$^{\circ}C$ showed a drastic increase during storage. Therefore, a one week storage of the Yut-gang-jung with Perilla at room temperature is recommended for a product to have a shelf-life with similar physicochemical and sensory properties to fresh samples.

A Study on the Relationship between Dietary Intakes and the Obesity of Middle School Studients in Seoul (서울시내 중학생들의 식품섭취실태와 비만과의 상관관계 연구)

  • The study was designed to investigate the relationship between dietary intakes and the obesity of 400 students who were the third grade in middle school in some areas of Seoul. The survey conducted from March 3 to 13 , 1993. The results obtained were summarized as follows :The average height and weight of surveyed subject were similar to that of standard ( the third grade students in middle school in Seoul, 1991) . Compared to the standard weight/height ratio, subject who belonged to overweight and obese group were 16.4% of male students, 16.1% of female students respectively. Female subjects showed higher ratio than male subjects in skipping meals, frequency of snack per day and concern about a dieting . In case of subjects who belonged to weight /height ratio was high, their speed of dining was fast and they have more concern about a dieting. Compared to the amount of the nutritional intakes of RDA, calcium intakes of male and female subjects were deficient. Especially iron intakes of female subjects were deficient. In takes of Calorie (p<0.01) protein(p<0.05) and fat 9p<0.01) of obese group were higher those of non-obese group. Obese group showed good appetite and overeating also . Correlation analysis showed that obese group seemed to the closely associated with relative body weight of parents, family income, frequency of meals per day, frequency of meals per day, frequency of snack per day, speed of dining and overeating .

STUDIES ON THE UTILIZATION OF ANTARCTIC KRILL 2. Processing of Paste Food, Protein Concentrate, Seasoned Dried Product, Powdered Seasoning, Meat Ball, and Snack (남대양산 크릴의 이용에 관한 연구)

  • Processing conditions of the krill products such as paste food, krill protein concentrate, seasoned dried krill, powdered seasoning, meat ball, and snack have been examined and the quality was evaluated chemically and organoleptically. In the processing of paste food, krill juice was yielded $71\%$ and krill scrap $29\%$. The yields of paste and broth from the krill juice showed $53\%$ and $43\%$, respectively. In amino acid composition of the krill paste, proline, glutamic acid, aspartic acid, lysine, and leucine were abundant, while histidine, methionine, tyrosine, serine and threonine were poor. The optimum condition for solvent extraction in the processing of krill protein concentrate was the 5 times repetitive extraction using isopropyl alcohol at $80^{\circ}C$ for 5 mins. The yield of krill protein concentrate when used fresh frozen materials was $10.2\%$ in isopropyl alcohol solvent and $8.8\% in ethyl alcohol, and when used preboiled frozen materials, the yield was $13.0\%$ in isopropyl alcohol and $11.8\%$ in ethyl alcohol. Amino acid composition of krill protein concentrate showed a resemblance to that of fresh frozen krill meat. In quality comparison of the seasoned dried krill, hot air dried krill was excellent as raw materials and sun dried krill was slightly inferior to hot air dried krill, but preboiled frozen krill showed the poorest quality. The result of quality evaluation for seasoning made by combination of dried powdered krill, parched powdered sesame, salt, powdered beef extract, monosodium glutamate, powdered red pepper and ground pepper showed that the hot air dried krill was good in color and sundried krill was favorable in flavor. When krill meat ball was prepared using wheat flour, monosodium glutamate and salt as side materials, the quality of the products added up to $52\%$ of krill meat was good and the difference in quality upon the results of the organoleptic test for raw materials was not recognizable between fresh frozen and preboiled frozen krill. In the experiment for determining the proper amount of materials such as dried Powdered krill, $\alpha-starch$, sweet potato starch, sugar, salt, monosodium glutamate, glycine, potassium tartarate, ammonium bicarbonate, and sodium bicarbonate in processing krill snack, sample B(containing $7.7\%$ of dried powdered krill) and sampleC (containing $10.8\%$ of dried powdered krill) showed the most palatable taste from the view point of organoleptic test. Sweet potato starch in testing side materials was good in the comparison of suitability for processing krill snack. Corn starch and kudzu starch were slightly inferior to sweet potato starch, while wheat flour was not proper for processing the snack. In the experiment on frying method, oil frying showed better effect than salt frying and the suitable range of frying temperature was $210-215^{\circ}C$.

  • With the object of the study id every possible correlation between daily food intake and growth rate of primary school students, aged eleven years old, the author distributed prepared questionnaires through 200 children of 5th grade in both sexes in K private primary school, Seoul. Specific object of this study were included following three points: such as daily food intake records for six days. daily food intake records for six days. school records of sample children at the end of 4th grade. physical growth index calculated by means of weight and height of sample children at the first part of the 5th grade. CR. t. F. test as well as percentage calculations were included for statistical analysis. The result of this study were as follows: 1. For the living circumstances a) Average numbers of brother and sister in sampled family were two to three. b) Approximately 50%of the children were brought up by mother's milk at their infants and about 35% of children were weaned at the age of 7 to 12 months. c) Thirty to forty percent of the respondents revealed irregulity in their meal time due to early school time in the morning. d) Monthly average expenditure for daily food reached 20 to 29% out of total income. e) The most favorit foods reflect as follows: The most favorit main dish is boiled rice mixed with other careals and side dish beaf. Fruits and juice are more popular snack among whole children. 2. Nutrition survey a) The calcium and thiamine were the most limited factors out of daily nutrients consumption. b) The total calory intake were composed of carbohydrate 63%, protein 16% and fat 21% respectively. c) The total food intake were composed of 20 to 24% of animal source of foods and 76 to 80% of plant source of foods (vegetables, grains, fruits) d) The total protein intake were composed of 46% of animal protein and 54% of others. e) The grain stuffs consumed in the largest quantity at the level of 50% out whole food groups. f) Twenty four percent of total food intake came from snack between meal time. 3. The result of statistical analysis were as follows: a) The correlation between the calory intake and plysical growth index revealed statistical significancy at the level of p<0.001. b) The correlation between the protein intake and physical growth index revealed statistical significancy at the level of p<0.001. c) The correlation between the meal time and physical growth index revealed statistical significancy at the level of 0.02

  • Quality stability and utilization of sardine protein concentrates were investigated. pH, water activity and amino-nitrogen contents of autoclaved and boiled products were little changed during the storage of 60 days. Available lysine contents of the both products at the initial stage of storage were 5.58g/16g-N and 5.69g/16g-N, respectively. But the available lysine contents and digestibility of the both products decreased slightly with increasing of storage time. Lipophilic and hydrophilic brown pigment formation of the both products increased during storage of 60 days, but peroxide value(POV) and thiobarbituric acid(TBA) value decreased. Total amino acid contents of the both products were in the range of $88.99{\~}89.90g/16g-N$, and the predominant ones were glutamic acid, aspartic acid, leucine and lysine. From the sensory scores of model snack, it is concluded that the sardine protein concentrate can be used as a source material for snack.

  • The purpose of this study was to develop a kelp (Laminaria japonica) product with optimal sensory and nutritional properties for eating as a snack by investigating its physicochemical properties and conducting sensory evaluation. A preliminary study using tripolypolyphosphate solution found that it was good for removing the fishy smell and for making it soft. We soaked the kelp in 0.3-0.4% sodium tripolyphosphate buffer and tested with or without baking. In searching for the optimal polyphosphate dilution concentration, soaking in 0.3-0.4% sodium tripolyphosphate resulted in the best texture and flavor. As kelp separates into thick or thin samples, thick kelp was best when soaked in 0.4% sodium tripolyphosphate buffer and thin soaked in 0.3%. The kelp snack made from the thick one (over 221 mm thickness) was better than the thin one. Baking improved the moisture, texture and feel of the kelp snack. Tripolyphosphate treatment affected protein contents and texture softening. The differences by baking and tripolyphosphate treatment were shown with electromicroscopic image. Kelp snacks with added sweet and hot taste were preferred to sour taste. In conclusion, in making kelp snacks, it is advisable to use a thick kelp, 0.3-0.4% sodium tripolyphosphate, and baking treatment for better texture and feel. This kelp snack has low fishy smell, better taste and soft feel. Further research is needed to support sea food's importance, and usefulness of the kelp snack to help prevent goiter in inland province citizens.

Survey Study on the Packed-lunch Boxes for Elementary School Children in Daejeon City (도시지역(都市地域)(대전(大田))일부 국민학교(國民學校) 아동(兒童)의 도시락 실태조사연구(實態調査硏究))

  • The present study is concerned with nutritional status and palatability of the packed-lunch in elementary school children in Daejeon city. Rice and side dishes in the lunch box were weighed and the contained nutrients were analyzed by the Food Composition Table. The result of survey is as follows; 1) The means of nutritional values of 523 lunch boxes were calorie 562.48 Cal. percentage of the recommended dietary allowances.(79.11%), protein 19.16gr. (88.43%), animal protein 6.03gr. (83.50%), calcium 110.75mg (48.15%), iron 2.20mg. (56.15%), Vitamin A 328.16 I.U.. (49.22%), Vitamin $B_1$ 0.22mg. (59.45%), Vitamin $B_2$ 0.14mg (32.56%), Niacin 3.20mg. (68.08%), Vitamin C 9.79mg. (73.44%). All the nutrients are under the recommended dietary allowances. 2) The correlation between the boys and girls in the intake of protein, calcium, iron, Vitamin A, Vitamin $B_1$, Niacin index revealed statistical significancy at the level of P<0.01. 3) According to the intake of calorie, the ratio of carbohydrates, protein and fat is 78 : 14 : 8, which is excessive meal of carbohydrate. 4) Among the total intake of the protein consists of 30.20% for the boys and 32.90% for the girls. 5) The most favorite food for boys and girls from the packed-lunch is kimchi, egg, ham, sausage, cuttle-fish, laver and beef, and pork and pickles are most undesirable items. 6) The most favorite snack is bread, cake, ice cream, chocolate, fruits and milk. 7) Both boys and girls like Kimchi, fried and saute foods but dislike Namul (seasoned green vegetables) the most. 8. The side dishes of the packed·lunch lack in variety of cooking method.

A Survey on Nutrient Intake of University Students by Alcohol Intake (알코올 섭취에 따른 남녀 대학생의 영양소 섭취 실태에 관한 조사)

  • This study was carried to investigate the effects of alcohol intake on the dietary behaviors and nutrient intakes of students in university and was observed characteristics of alcohol drinking, smoking, dietary behaviors, and nutrient intakes of students. The mean of alcohol consumption was 25.7$\pm$21.7g/day and 47.5$\pm$25.8g/day, most high of high alcohol group in the male student than other groups. Smoking were high by increasing of alcohol intake. Most students had dietary problems as skipping meals, eating snack after dinner, high frequency of eating fast and instant food, and eating meals at watching TV or video. The dietary behavior problems in the high alcohol groups showed higher in the female students than the male students. Nutritional knowledge scores was no significantly different by sex and alcohol intake. The intakes of calorie, protein, phosphorous, iron, and niacin in the male students was significantly higher than those of female students. Except for calcium, vitamin $B_2$ and vitamin C, nutrients were satisfied to the level of Recommended Dietary Allowances(RDA). Nutrient intakes was not affected by alcohol intake. But intakes of calorie, protein, phosphorous, and iron were affected by sex and vitamin C intake was affected by sex and alcohol intake.

Evaluation of Nutrient Intake and Meal Variety with Breakfast Eating in Korean Adolescents: Analysis of Data from the 2008~2009 National Health and Nutrition Survey (청소년의 아침식사 여부에 따른 영양소 섭취 상태 및 식사의 다양성 평가 : 2008~2009 국민건강영양조사 자료 분석)

  • The purpose of this study was to evaluate nutrient intake and meal variety with breakfast eating in Korean adolescents using data from the 2008-2009 National Health and Nutrition Examination Survey. The analysis included 1245 adolescents aged 12 to 18 years. The subjects were divided into two groups according to breakfast skipping (BS: breakfast skipping, n = 235, BE: breakfast eating, n = 1110). The BS group was significantly higher in its frequency of eating soda drinks, instant noodle, and ice cream than the BE group. The BS group consumed significantly lower quantities of plant calcium and plant protein per 1,000 kcal compared to the BE group. Also the intake of cereal and vegetables in the BS group was significantly lower than those in the BE group, however, the intake of beverage in the BS group was significantly higher than that in the BE group. The average number of foods of the BE and BS groups were 29.50 and 25.85, respectively and revealed a statistical significance (p < 0.0001). The snack intake and % energy from snack intake of the BS group were significantly higher than those of the BE group. Also, the fasting blood glucose concentrations were significantly higher in the BS group compared to the BE group. In conclusion, adolescents who skip breakfast may have lower meal variety and higher blood glucose concentrations. Therefore, in support of proper dietary management, it is necessary to promote and encourage breakfast eating.
