본 시험은 사료의 에너지 및 단백질수준이 육계의 생산성 및 복강지방 축적에 미치는 영향을 구명하기 위하여 대사에너지 3수준(2,800, 3,000 및 3,200kcal/kg)과 단백질 3수준(16, 18 및 20%)을 조합한 9개 처리를 두었으며, 처리당 암수 각 39수씩 총 702수를 공시하여 1990년 7월 10일부터 9월 4일까지 8주간에 걸쳐 시험을 실시하였던 바 그 결과를 요약하면 다음과 같다. 1. 증체양은 대사에너지수준이 증가할수록 점차 증가하는 경향을 보여 통계적인 유의성이 인정되었으나 (P<0.05), 대사에너지 2,800kcal/kg과 3,000kcal/kg 또는 3,000kcal/kg과 3,200kcal/kg 수준간에는 유의차가 없었으며, 단백질수준간에도 유의적인 차이를 보이지 않았다. 2. 사료섭취량은 대사에너지 및 단백질수준이 증가할 수록 점차 감소하는 경향을 보였으나 통계적인 유의성은 인정되지 않았다. 3. 사료요구율은 대사에너지수준이 증가할수록 현저히 개선되어 고도의 유의성이 인정되었으며(P<0.01), 단백질수준이 증가할수록 점차 개선되는 경향을 보였으나(P<0.05), 단백질 18%와 20% 수준간에는 유의차가 없었다. 4. 도체율은 대사에너지 및 단백질수준간에 일정한 경향이나 통계적인 유의차를 보이지 않았다. 5. 복강지방 축적률은 대사에너지수준이 증가할수록 현저히 증가하는 경상을 보였으나(P<0.01), 대사에너지 2,800㎉/kg과 3,000kcal/kg 또는 3,000kcal/kg과 3,200kcal/kg 수준간에는 유의차가 없었으며, 단백질 15% 18% 수준간에는 유의적인 차이를 보이지 않았으나 단백질 20%수준에서는 현저히 감소하여 고도의 유의성이 인정되었다. (P<0.01). 6. kg증체당 사료비는 대사에너지수준이 증가할수록 점차 감소하는 경향이었고, 단백질 16% 및 20% 수준에 비해 18%수준에서 약간 감소하는 경향이었으나, 대사에너지 및 단백질 수준간에 통계적인 유의성은 인정되지 않았다.
Although flounder is one of the most important marine fish for aquaculture in Korea, feeding the flounder in commercial farms depends mainly on moist pellet in which over 70% frozen fishes (e.g. frozen horse mackerel) are incorporated in its formulation. Therefore, for further expansion of flounder farming, it is essential to employ practical formulated feeds that can support reasonable growth. Development of nutritionally balanced and cost-effective feeds is dependant on the information about nutritional requirement and feed utilization of the species. Nutrient and energy source in feed are needed for the growth and maintenance of fish. Protein is probably the most important nutrient affecting fish growth and feed cost. Therefore, it is essential to determine the optimum dietary protein level for the growth of fish, both its high proportion in the feed and because it is the main factor in determining feed cost. Dietary energy level is also critical because protein source in the feed is utilized as an energy source when the feed deficient in energy is fed to fish, whereas when the feed excess in energy is fed to fish, feed consumption decreased and resulted in growth reduction due to lack of other necessary nutrients for normal growth. Improper dietary protein, energy levels and/or their ratio will lead to an increase of fish production cost and deterioration of water quality resulting from wasted feed; thus, they are important in formulating commercial feed. Dietary lipids play important roles in providing energy and essential fatty acid for normal growth and survival of fish. Although carbohydrates are not essential nutrients for carnivorous fish, these compounds play important roles as a low-cost energy source for protein sparing and also as a feed binder. Nutrition researches for flounder have identified its requirements of protein, lipid and essential fatty acid, vitamin, and minerals for normal growth. Other studies have also been carried out to investigate the utilization of the protein, lipid and carbohydrate sources. Based on these nutritional information obtained, practical feed formulations have been studied for improve aquaculture production of flounder. The results of the researches on utilization of dietary protein, lipid and carbohydrate by flounder are discussed in this review.

The objective of this research was to determine the effects of synchronizing the rate of dietary energy and nitrogen release on: ruminal fermentation, microbial protein synthesis, blood urea nitrogen, and nutrient digestibility in beef cattle. Four, two-and-a-half year old Brahman-Thai native crossbred steers were selected for the project. Each steer was fitted with a rumen cannula and proximal duodenal cannula. The steers were then randomly assigned in a $4{\times}4$ Latin square design to receive four dietary treatments. Prior to formulation of the dietary treatments, feed ingredients were analyzed for chemical composition and a nylon bag technique was used to analyze the treatments various ingredients for degradability. The treatments were organized in four levels of a synchrony index (0.39, 0.50, 0.62 and 0.74). The results showed that dry matter digestibility trend to be increased (p<0.06), organic matter and acid detergent fiber digestibility increased linearly (p<0.05), while crude protein and neutral detergent fiber digestibility were not significantly different (p>0.05). Higher concentration and fluctuation of ruminal ammonia and blood urea were observed in the animal that received the lower synchrony index diets. As the levels of the synchrony index increased, the concentrations of ruminal ammonia nitrogen and blood urea nitrogen, at the 4 h post feeding, decreased linearly (p<0.05). Total volatile fatty acid and bacteria populations at the 4 h post feeding increased linearly (p<0.05). Microbial protein synthesis trend to be increase (p<0.08). The results of this research indicate that synchronizing the rate of degradation of dietary energy and nitrogen release improves ruminal fermentation, microbial protein synthesis and feed utilization.

Among Italian buffalo farmers, it is widely held that administering diets with high energy and protein concentrations is an effective way to increase milk production. In order to assess the validity of this opinion, we verified milk yield and physico-chemical characteristics from buffaloes that, from the $5^{th}$ month of lactation, were fed two total mixed rations (TMRs) which, given the same intake, should have led to satisfaction of protein requirements though with a slight energy deficit (diet A) or excessive amounts of energy and protein (diet B). Estimate of the energy and protein value of the diets and that of the corresponding requirements was carried out both by using two software programs derived from the Cornell Net Carbohydrate and Protein System (1992), and with the method set up by INRA researchers (1988). The results obtained show that the two diets administered did not result in significant changes to the quantity of milk produced. However, with Diet B the protein concentration in the milk was significantly (p<0.01) higher, although this was partly offset by the higher concentration (p<0.05) of non-protein nitrogen (NNP). The Group B buffaloes also showed significantly higher blood urea levels (p<0.01), with concentrations exceeding those considered physiological for lactating buffaloes. Finally, while administering Diet A the Body Condition Score (BCS) was close to 6.5 (Wagner et al., 1988), whereas in buffaloes which used Diet B it sometimes increased by over 0.5 points. As regards which of the two methods compared is more suitable for expressing dietary energy and protein value and corresponding requirements, we feel that due to the high variability in the Italian Mediterranean buffalo's milk production aptitude, it would be premature to express a judgement on methods which rest on a common scientific base and do not differ substantially.
A study was conducted to investigate nitrogen balance and to estimate daily nitrogen requirement in 43 Korean female college students students maintaining their usual diet and activity levels. Nitrogen intake and excretion were measured in two separate peroids about one month apart, each period lasting for 3 days. Nitrogen intake was assessed by duplicate portion analysis of diet, and N excretion in faces and urine were measured during the study period. Mean daily nitrogen intake level was 129.3mg/kg B.W and the apparent digestibility of nitrogen was 76%. Mean daily urinary nitrogen excretion was 113.5mg/kg BW. 895 of total nitrogen intake. Mean daily nitrogen balance of subjects was -14.5mg/kg BW. Mean daily requirements of nitrogen for 0 balance, calculated by regression analysis of N balance and energy-adjusted N intake. were 1) 197.mg/kg B.W with the present energy intake level of the study subjects. 2) 157mg/kg B.W when energy intake is sufficient to maintain energy balance, and 30 130mg/kg B.W. when energy intake is Korean RDA level for moderate activity. When energy intake level is sufficient to meet their requirement, daily protein requirement for 0 balance is about 1.0g/kg B.W. The results of this study indicate that nitrogen intake level of young female college students is not sufficient to meet their requirements, and they should increase protein intake together with increase in energy intake.

Background: Dietary protein requirements are dependent on a variety of factors and water temperature is one of the most important abiotic factors affecting protein requirement of fish. This study was, therefore, conducted to investigate effects of water temperature on dietary protein requirement of fry Heteropneustes fossilis which has high demand in most of the Asian markets. Methods: Quadruplicate groups of 30 fish per treatment (2.97 ± 0.65 cm; 5.11 ± 0.34 g) were fed seven isoenergetic diets (17.9 kJ g-1 gross energy; 14.99 kJ g-1 digestible energy) containing dietary protein levels ranging from 28 to 52% at two water temperatures (18 and 26 ℃). Experimental diets were fed to apparent satiation as semi-moist cakes thrice daily at 17:00, 12:00, and 17:30 h for 12 weeks. For precise information, various growth parameters, protein deposition, hematological parameters, metabolic enzymes, and stress response were analyzed, and effects of water temperature on dietary protein requirement was recommended on the basis of response from above parameters. Results: Groups held at 26 ℃ attained best growth, feed conversion, and protein deposition at 44% dietary protein indicating that temperature affected dietary protein requirement for optimum growth of H. fossilis fry and protein requirement seems to be satisfied with 44% dietary protein. Interestingly, interactive effects of both dietary protein levels and temperature were not found (P > 0.05). Fish reared at 18 ℃ had comparatively higher values for aspartate and alanine transferases than those reared at 26 ℃ water temperature which exhibited normal physiological value for these enzymes indicating that body metabolism was normal at this temperature. Hematological parameters also followed same pattern. Furthermore, fish reared at 26 ℃ water temperature exhibited more resistant to thermal stress (P < 0.05). The 95% maximum plateau of protein deposition data using second-degree polynomial regression analyses exhibited dietary protein requirement of fry H. fossilis between 40.8 and 41.8% of diet at 26 ℃ water temperature. The recommended range of dietary protein level and protein/digestible energy ratio for fry H. fossilis is 40.8-41.8% and 27.21-27.88 mg protein kJ-1 digestible energy, respectively. Conclusions: Information developed is of high significance for optimizing growth potential by making better utilization of nutrient at 26 ℃ and, to develop effective management strategies for mass culture of this highly preferred fish species.
The effects of chromium (Cr), dietary crude protein (CP) level, and potential interactions of these two factors were investigated in term of energy metabolism in lambs. Forty-eight 9-week-old weaned lambs (Dorper${\times}$Small-tail Han sheep, male, mean initial body weight = 22.96 kg${\pm}$2.60 kg) were used in a 2${\times}$3 factorial arrangement of supplemental Cr (0 ${\mu}g$/kg, 400 $\mu{g}$/kg or 800 ${\mu}g$/kg from chromium yeast) and protein levels (low protein: 157 g/d to 171 g/d for each animal, or high protein: 189 g/d to 209 g/d for each animal). Blood samples were collected at the beginning and end of the feeding trial. The lambs were then sacrificed and tissue samples were frozen for further analysis. Chromium at 400 ${\mu}g$/kg decreased fasting insulin level and the ratio of plasma insulin to glucagon, but these differences were not statistically significant; in contrast, chromium at 800 ${\mu}g$/kg increased the ratio significantly (p<0.05). Protein at the high level increased plasma tumor necrosis factor $\alpha$ (TNF-$\alpha$) level (p = 0.060). Liver glycogen content was increased significantly by Cr (p<0.05), which also increased liver glucose-6-phosphatase (G-6-Pase) and adipose hormone-sensitive lipase (HSL) activity. At 400 ${\mu}g$/kg, Cr increased muscle hexokinase (HK) activity. High protein significantly increased G-6-Pase activities in both the liver (p<0.05) and the kidney (p<0.05), but significantly decreased fatty acid synthase (FAS) activity in subcutaneous adipose tissue (p<0.05). For HSL activity in adipose tissue, a Cr${\times}$CP interaction (p<0.05) was observed. Overall, Cr improved energy metabolism, primarily by promoting the glycolytic rate and lipolytic processes, and these regulations were implemented mainly through the modulation by Cr of the insulin signal transduction system. High protein improved gluconeogenesis in both liver and kidney. The interaction of Cr${\times}$CP indicated that 400 $\mu{g}$/kg Cr could reduce energy consumption in situations where energy was being conserved, but could improve energy utilization when metabolic rate was increased.
This study investigated the nutritional status of 33 hemodialysis patients. Their weight, height, triceps and mid-arm circumference were measured and their dietary intake and blood profiles evaluated. The subjects were 57.1$\pm$11.9 years old. The energy intakes of men and women were 61% and 68% of RDA, respectively. The men and women's intake of protein was 0.93g/IBWkg/d and 0.99g/IBWkg/d, respectively. According to the distribution of BMI, 22.2% of the men and 73.3% of the women were underweight. A total of 5.6% of the men were overweight, versus none of the women. The serum albumin levels of the men and women were 3.56 and 3.52g/dl, respectively. The serum cholesterol levels of the men and women were 134.1 and 148.5mg/dl, respectively. The subjects were divided into three groups according to the level of albumin, and their intakes of nutrients were compared with one another. The group with high levels of albumin did not show higher energy and protein intake than the other groups but the serum total protein level was significantly higher. When the nutritional status of the patients was evaluated by weight and serum albumin level, 6.0% of them showed kwashiorkor-type malnutrition and 75.8% of them showed mild malnutrition.
To investigate the nutritional quality of packaged meals produced by packaged meal manufactures, a nutritional evaluation was conduced. Samples examined in this study were 95 Products which composed of 86 Doraks, 7 Kimplabs and 2 Yubuchopabs Produced in packaged meal manufactures in Seoul City and Kungki-do province The distribution of food groups showed that amounts of animal foods were abound, but amounts of green vegetables, limited in Dosirak comparing to one meal RDA levels. Amounts of meats, fishes and shells are increased more than amounts of egged and legumina with increase of price of Dosirak. The total kinds of food and the amounts of certain food in Kimpab and Yubuchopab were lower than Dosirak. The energy and protein contents of Dosirak were found to be higher than one meal RDA levels, with exception of protein content in Dosirak of the price 1000 won. The contents of energy and protein in Kimpab and Yubuchopab are less than one meal RDA levels. Calcium and iron contents in Dosirak, and calcium content in Yubuchopab were present in excess compared to the one meal RDA. However, In Kimpab, calcium and iron contents were lower than the one meal RDA. On the whole, vitamin contents of Dosirak were sufficient whereas vitamin contents of Kimpab and Yubuchopab were lower than the one meal RDA. Number of side dishes used in Dosirak were 6-23 items depending on prices. Guidelines were suggested for effective nutritional quality control of packaged meals.
