Study on the Effect of Fineness and Substitution Rate of Natural Zeolites on Chemical Reaction and Physical Properties of Cement Mortar (천연 제올라이트의 분말도와 치환율이 시멘트모르타르의 화학반응 및 물리적 특성에 미치는 영향에 관한 연구)

  • As a basic study for the application of natural zeolite as a concrete admixture, the compressive strength, activity factor, Ca(OH)2 quantitative analysis and XRD experiments were investigated. It is thought that SiO2, which is abundant in natural zeolite, affects the strength development by reacting with the hydration product of cement in all specimens in which natural zeolite was added according to powder level and substitution rate. As the substitution rate increases, the compressive strength decreases, which is considered to be due to the decrease in the amount of C3S and C2S minerals in the clinker, which affects the strength expression compared to the cement content of the reference mortar. The XRD crystal structure did not show a significant difference from the reference mortar, and it was confirmed that the Z2-10 (Blaine: 15,600㎠ / g) specimen with 10% substitution of natural zeolite was the best among the experimental levels. Substitution amount for use as concrete admixture is 10% substitution is most ideally seen.

Formulation Optimization of Salad Dressing Added with Bokbunja (Rubus coreanum Miquel) Juice (복분자(Rubus coreanum Miquel) 즙을 이용한 드레싱 제조의 재료 혼합 비율의 최적화)

  • This study was conducted for the optimization of ingredients in salad dressing using Bokbunja (Rubus coreanum Miquel) juice. The experiment was designed according to the D-optimal design of mixture design, which included 14 experimental points with 4 replicates for three independent variables (Bokbunja juice $15.70\sim47.10%$, oil $23.50\sim39.20%$, vinegar $3.90\sim19.60%$). The compositional and functional properties of the prepared products were measured, and these values were applied to the mathematical models. A canonical form and trace plot showed the influence of each variable on the quality attribute of final mixture product. By the use of F-test, viscosity, color values (L, a, and b), emulsion stability and sensory characteristics (color) were expressed by a linear model, while the color values (L) and sensory characteristics (smell, taste, and overall acceptance) were by a quadratic model. The optimum formulations by numerical and graphical method were analogous: Bokbunja juice, oil and vinegar of 36.02%, 26.48%, and 12.00% by numerical method, respectively; those of 36.00%, 26.44%, and 12.06% by graphical method, respectively.

Effect of heating on the quality characteristics and antioxidant activities of Baekseolgi made with arrowroot flour (열처리가 칡가루 및 이를 첨가한 백설기의 품질 특성과 산화방지활성에 미치는 영향)

  • Baekseolgi made with arrowroot flour (AF, 0 to 15% of rice flour) was steamed to examine the effect of heating on its antioxidant activity and physicochemical properties. Despite the presence of abundant dietary fiber and superior water-holding capacity of AF, moisture in baekseolgi was not significantly increased. This could partly be attributed to AF having 50% less moisture content than rice flour. Hence, hardness of baekseolgi was also not significantly altered. Total reducing capacity and flavonoid content of baekseolgi increased proportionally with the increase in AF addition. However, these values were lower than the predicted values calculated from the antioxidant activities of heated AF, which was more apparent in total reducing capacity. This indicated that the stability of non-phenolic reducing compounds in AF was lower than that of the phenolic compounds. Thermally processed baekseolgi made with 9% AF exhibited antioxidant activity without noticeable loss in the quality of the product.

Effect of xylitol on the taste and fermentation of Dongchimi (자일리톨 첨가가 동치미의 맛과 발효숙성에 미치는 영향)

  • The effect of xylitol on the Dongchimi fermentation was investigated by measuring the sensory, physicochemical and microbiological properties during fermentation of up to 30 days. Dongchimi with 0, 1, 2, 3 and 4% w/v xylitol was fermented at 10$^{\circ}C$. The addition of 1% xylitol gave the highest scores in terms of the overall acceptability, texture, ripeness, sweet taste and smell. During the fermentation, the total acidity increased, while the pH gradually decreased. The reducing sugars showed the highest content with the addition of 1% xylitol. The vitamin C was increased in the early stage of fermentation, but reduced gradually after 5 days. The vitamin C content of the Dongchimi with 2% xylitol addition was shown to be the highest. The total viable cells and lactic acid bacteria increased between 2 and 5 days of fermentation, but were gradually reduced thereafter. The numbers of lactic acid bacteria with 1% xylitol addition were more numerous than with the other percentage additions. The current study showed that the application of 1% xylitol to the fermentation of Dongchimi enhanced the sensory values of the fermented product.

Effects of Dietary Fiber Extracts from Brewer's Spent Grain on Quality Characteristics of Chicken Patties Cooked in Convective Oven

  • Brewer's spent grain (BSG) is a by-product of beer manufacturing. This study was conducted to evaluate the effect of dietary fiber extracts from brewer's spent grain on quality characteristics of chicken patties. The total fiber content of BSG dietary fiber extracts after extraction increased from 58.11% to 68.57%, and the extracted dietary fiber extracts were added to chicken patties at 0, 1, 2, 3, and 4%, respectively. The effects of the BSG dietary fiber extracts on pH, color, cooking loss, reduction in patty diameter, salt-soluble protein solubility, texture, and sensory characteristics of chicken patties were evaluated. The addition of BSG dietary fiber extracts decreased pH and lightness values, and increased redness and yellowness. Chicken patties formulated with 3-4% BSG dietary fiber extracts had the lowest cooking loss among all treatments (p<0.05). The diameter of chicken patties was not affected by the addition of BSG dietary fiber extracts. Additionally, no significant difference was observed in salt-soluble protein solubility after adding 3% BSG dietary fiber extracts compared to that in the control. Textural and sensory properties were different among the chicken patties, and the 3% BSG dietary fiber-added chicken patty had the highest acceptability. Our results indicate that 3% BSG dietary fiber extract can be used as a good source of dietary fiber for improving the quality characteristics of chicken patties.

Effect of Organic Fertilizer Application on the Growth and Yield of Leaf Lettuce and Garland Crysanthemum (유기질비료(有機質肥料)(Bio-com)시용(施用)이 상치와 쑥갓의 생육(生育) 및 수량(收量)에 미치는 영향)

  • Effect of microbiological product manure (Bio-com) on the growth and yield of vegetables and on physico-chemical properties of soil. Leaf lettuce and Garland Chrysanthemum were taken for test plants. A Jungdong (Series) silty loam soil was used for pot experiments. The results are summarized as following: 1. Treatment with Bio-com stimulated plant growth that were increased in the number of leaf, leaf area, plant height and root length both for Leaf lettuce and Garland Cyrysanthemum. 2. Yield increase of 123-1170% was obtained from Bio-com treatments compared to N.P.K.+manure treatment. Application of 2250 kg/10a of Bio-com gave the highest yield. 3. Fertilizer effect of Bio-com appeared much earlier than that of manure. 4. Plant content of $K_2O$ was highest when treated with Bio-com. Plants absorbed considerably more N, $P_2O_5$ and MgO. 5. Content of N, $P_2O_5$ in Garland Chrysanthemum were higher when treated with Bio-com. 6. Content of $P_2O_5$ in soil was at the highest level. Soil pH, content of exchangeable soil Ca and Mg were also high with Bio-com fertilization.

Effects of Drying Methods on the Quality and Physiological Activities of Blueberry(Vaccinium ashei) (건조방법에 따른 블루베리의 품질 및 생리활성)

  • This study was performed to determine the effects of drying methods on the quality and physiological activities of blueberry. Blueberries(Vaccinium ashei) were dried by hot-air ($60^{\circ}C$), cyclic low pressure ($50^{\circ}C$), and freeze drying methods. They contained high properties of carbohydrates(68.48~80.00%), crude protein(1.63~5.41%), crude fat(0.58~1.25%), and ash(0.71~1.11%) regardless of the drying methods. There were no differences in pH according to the drying methods. Browning index increased as the drying temperature increased. The L, a values of the freeze-dried sample were higher than those of the other dried samples, whereas the b value of the cyclic low pressure dried sample was higher than that of the other samples. The free sugar contents of the hot-air sample were higher than those of the other samples. Vitamin C content of the freeze dried sample was higher than that of either the hot-air or cyclic low pressure dried sample. The contents of total polyphenols and anthocyanins were higher in the freeze dried sample. The DPPH radical scavenging activity of freeze drying sample was higher than that of either the hot-air or cyclic low pressure dried sample. The result indicated that there were no differences in product quality depending on the freeze-drying and cyclic low pressure drying methods.

Influence of pre-slaughter fasting time on weight loss, meat quality and carcass contamination in broilers

  • Objective: An experiment was conducted to determine the appropriate fasting time prior to slaughter for broilers in floor-feed and scatter-feed mode. Methods: On 21 d since hatching, 120 Arbor Acres broilers were divided into floor-feed and scatter-feed groups, chicks from each group were further assigned to feed withdrawal treatments for 0, 4, 6, 8, and 10 h. Some resultant indicators such as carcass contamination, body weight loss, meat quality of 54-day-old broilers were measured. Results: It appears that longer feed withdrawal increased weight loss, lightness, drop loss of meat but reduced pH. A significant higher weight loss and lightness for both floor-feed and scatter-feed chicks coincided after 6 to 10 h feed withdrawal (p<0.05). pH for breast muscle at 45 min postmortem reduced when chicks of scatter-feed were fasted 6 and 10 h, while the reduction of floor-feed group occurred only in 10 h (p<0.05). A noticeable effect of feed withdrawal on drop loss occurred after 10 h fasting in scatter-feed of which drop loss were significantly higher than that for other groups including control (p<0.05). The change of contamination propensity revealed that 6 to 10 h fasting significantly reduced the likelihood of carcass contamination under both floor-feed and scatter-feed (p<0.05). Net weights of intestinal contents for gizzard were significantly reduced after feed deprived for 10 h in floor-feed and 6 and 10 h in scatter-feed (p<0.05). The decrease for whole intestine occurred after floor-feed broilers have been without feed for more than 4 h, scatter-feed broilers for more than 8 h (p<0.05). Conclusion: On the premise that poultry product properties and welfare were not significantly damaged, proper fasting time could reduce carcass contamination. Current data implied that 6 h fasting was recommendable for both floor and scatter feed pre-slaughter broilers.

  • Cement has been used as a main material in the modern construction industry. However, it has been pointed out as a main cause of global warming due to carbon dioxide generated during manufactured. Recently, research that replacing cement substitute to industrial by-products such as Blast Furnace Slag which is by-producted in steelworks. When Blast Furnace Slag is used as a cement substitute, it shows a problem of lower initial strength, which is caused by glassy membrane on the particle surface. In this study, we used Electrolysis Alkaline Aqueous to improve the usability and problem of lower initial strength. As a result of the experiment, cement matrix using Blast Furnace Slag and Alkaline Aqueous showed initial strength and hydrate product were developed than that using general mixing water. Also, as a result of porosity analysis, It was confirmed that cement matrix using Alkaline Aqueous and Blast Furnace Slag has a tighter structure in internal porosity and porosity distribution than using general mixing water.

Implementation of a Mixing-Ratio Control System for Two-Component Liquid Silicone Mixture (이액형 액상실리콘 재료의 혼합비율 제어 시스템 개발)

  • The mixture ratio of two-component liquid silicone is important for the inherent physical characteristics of the finished product. Therefore, it is necessary to uniformly control the ratio of the main material and the sub-material. In this paper, a mixing-ratio control system was designed, which consists of a digital flow meter and a flow control system to measure the flow rate of the raw materials and a pumping system to maintain constant pressure and transfer of the raw materials. In addition, a program was developed to control the organic interlocking and mixing ratio. For the verification of the developed system, we compared the actual weight of raw material with the value measured by the flow meter during pumping, and we measured the physical properties of the mixed material by making test samples with and without the application of the mixing-ratio improvement algorithm. The measured value was close to the reference value with a hardness range of 46-47 and tensile strength of 9.3-9.5 MPa. These results show that the mixing ratio of the liquid silicone is controlled within an error range of ${\pm}0.5%$.
