Ethanol fermentation of chemically gelatinized starch and uncooked raw starch was nested with various starchy materials. Starches were gelatinized by 5.4% NaOH and neutralized by sulfuric acid. The patterns of $CO_2$ evolving and the ethanol yield for the chemically gelatinized starch resemble those obtained with thermally gelatinized starch. The alcoholic fermentation of raw starch was carried out by the simultanous saccharification-fermentation using a commercial glucoamylase and yeast. Ethanol yield from uncooked rice starch fermentation was highly comparable to that from cooked one. $CO_2$ evolving rates of the uncooked starches of corn, barley, tapioca and sweet potato were lower than those of the cooked starches. However, the final ethanol yields were similar or slightly lower, depending on the types of starch.
Starch is a mixture of amylose (AMY) and amylopectin (AMP) which are different in physical properties such as molar mass (M), rms radius ($R_g$) and hydrodynamic diameter ($d_H$). The rheological and functional properties of starch are influenced by various factors including the molecular size, molar mass distribution (MD) and the concentration ratio of AMY and AMP. It is also important to analyze proteinaceous material in starch as they affect the flavor and texture of food to which starch is added. In this study, asymmetrical flow field-flow fractionation (AF4) was employed for separation and quantitation of AMY and AMP in starches (Amaranth, potato, taros and quinoa). AF4 was coupled with a multi-angle light scattering (MALS) and a refractive index (RI) detector for determination of the absolute M, MD and molecular structure. It was found that AMP has the M and $R_g$ ranging $3.7{\times}10^7{\sim}6.5{\times}10^8g/mol$ and 84 ~ 250 nm, respectively. Also the existence of branch was confirmed in higher M. In addition, proteinaceous material in starch was analyzed by AF4 coupled with a fluorescence detector (FS) after fluorescence-labeling. AF4-FS with fluorescence-labelling showed a potential for investigation on existence of proteinaceous material and the interaction between proteinaceous material and polysaccharide in starch.
The effects of mugwort juice on the gel properties of corn starch (CS), mung bean starch (MS), and potato starch (PS) were investigated. Water holding capacities of three starches were increased with addition of the juice. Solubilities of CS and MS were also increased. Swelling power was increased in CS but decreased in MS. Viscoamylogram showed that 5% addition of the juice lowered the initial gelatinization temperatures of CS and MS, but raised the temperature of PS. While peak viscosities of CS and MS pastes were decreased a little, the viscosity of PS paste was decreased remarkably from 2,280 BU to 845 BU. Addition of mugwort juice did not affect significantly the hardness of starch gels during 7 days of storage at $25^{\circ}C\;and\;4^{\circ}C$. Degrees of gelatinization of the starch gels were affected by addition of the juice, especially in PS, during storage. Freeze-thaw stabilities of three gels were not changed by addition of the juice. The starch gels added with the mugwort juice had smooth surface visually because the crude fibrous materials of mugwort were removed during juice preparation.
Kojis were prepared from the different starch raw materials such as glutinous rice, barley rice, wheat flour and sweet potato, and were tested in an effort to reduce production cost and to improve quality of Kochuzang(red pepper paste). During the starting period of Koji preparation, there were less significant changes in pH; however, pH decreased somehow in the case of sweet potato, whereas it increased for the other Kojis. In general, the highest acidity was obtained after 72 hours of Koji preparation. Total nitrogen, soluble nitrogen and amino-nitrogen content increased in order of wheat flour, barley rice, and glutinous rice; Kojis they were markedly produced between 72 and 96 hours of Koji preparation. The maximum amount of reducing sugar was observed between 48 and 72 hours of Koji preparation during this period the reducing sugar content varied widely depending on starch source. Sweet potato Koji produced the highest level of ethyl alcohol content after 72 hours of Koji preparation; for the other Koji the same trends were observed after 24 hours. The starch liquefying activities have reached the highest level after 96 hours and for glutinous rice and barley rice; however, they kept on increasing until 120 hours for wheat flour and sweet potato. Koji Starch liquefying and saccharogenic amylase activities tended to increase in order of sweet potato, glutinous rice, barley rice and wheat flour. Kojis Various protease activities were measu-red during the Koji preparation, and they increased in order of alkali, neutral and acidic protease.

This study examined the dietary fiber content of potato and physicochemical characteristics of potato starch isolated from various cultivars. The total dietary fiber content of the Arirang1ho cultivar was 6.30%, which was higher than that of other cultivars. The amylose content ranged from 36.76-55.75%, with Sooseon having the highest amylose content. Analysis of the degree of amylopectin polymerization revealed that all cultivars had a high proportion of DP (degree of polymerization) 13-24. The phosphate content ranged from 45.90-84.23 mg/100 g, with Arirang1ho having the highest and Eunseon having the lowest phosphate content. The resistant starch content ranged from 58.94-79.87%. Geumseon showed the highest breakdown in the range of 587.45-1,129.72 RVU (rapid viscosity unit). Sooseon had the lowest gelatinization enthalpy value for potato starch in the range of 5.54-7.64 J/g. These results provide basic data for the use of potatoes in industrial applications.
During two years, four samples per year were collected in Vietnam from rice bran, cassava residue, brewer's grain, tofu residue, soybean meal, coconut cake, sweet potato vines and water spinach for chemical analysis and assessment of water holding capacity (WHC). The selected feedstuffs represent fibre-rich plant sources and agro-industry co-products commonly used in pig feeding in Vietnam. The content (g/kg DM) of crude protein (CP), ether extract (EE) and non-starch polysaccharides (NSP) varied between feedstuffs and ranged from 21 to 506 for CP, from 14 to 118 for EE and from 197 to 572 for NSP. Cassava residue had a high starch content of 563 g/kg DM, while sweet potato vines, water spinach, coconut cake and soybean meal had a high content of sugars (63-71 g/kg DM). The content of individual neutral sugars varied between feed ingredients, with the highest content of arabinose, galactose and glucose in tofu residue, the highest content of xylose in brewer's grain and the highest content of mannose in coconut cake. The content of uronic acid was high for cassava residue, tofu residue, sweet potato vines and water spinach (57-88 g/kg DM). The content of soluble non-cellulosic polysaccharides (S-NCP) was positively correlated ($r^2$ = 0.82) to the WHC. The content (g/kg DM) of CP, NDF, neutral sugars, total NSP, total NCP, S-NCP and total dietary fibre in tofu residue, water spinach and coconut cake varied (p<0.05) between years. In conclusion, diet formulation to pigs can be improved if the variation in chemical composition of the fibre fraction and in WHC between potential feed ingredients is taken into account.

Electrophoretic method was utilized to classify 100 varieties of sweet potato germplasm maintained at the National Crop Experiment Station of Korea in 1993. The esterase isozyme patterns in the leaves were classified into 14 different types. Type Ⅸ included the most of the varieties (46) tested and Ⅶ, I, III, Ⅷ, II and V types of all included 47 varieties in order. The other 7 varieties had different band pattern with each other. Type I having many kind of band pattern included Shinyulmi, Beniastma and High starch which had the dry type of tuberous roots varieties. The esterase isozymes pattern in the tuberous roots were classified with 18 kinds of types. The C type included 22 varieties and B, K, A, E, I and N in order. The proteins pattern in the tuberous roots were classified with 7 kinds of types. I type included 36 varieties, and IV type included 27 varieties and II, III, Ⅶ and Ⅵ types in order.
The primary alcohol groups of four kinds of polysaccharides (com starch, rice starch, sweet potato starch, and cellulose), with different structures and water solubilities, were oxidized to carboxyl groups using 2,2,6,6-tetramethyl-1-piperidine oxoammonium ion (TEMPO) at $25^{\circ}C$. The optimum pH, TEMPO content, and NaBr content for the TEMPO/hypobromite-catalyzed oxidation of the polysaccharides were $10.5{\sim}11.0$, 10 mmol/mol primary alcohol, and 0.49 mmol/mol primary alcohol, respectively. The oxidation degree for the primary alcohol group was more than 90% for all four kinds of the polysaccharides. The oxidation process greatly increased the water solubility of the polysaccharides. Water-insoluble polysaccharide such as cellulose became water-soluble to the extent of 8.42% (w/v). And also, the polysaccharides with very low water solubility (less than 0.10% (w/v)) such as com starch, rice starch, and sweet potato starch had high water solubility of approximately 45%(w/v). The gel-forming abilities with calcium ion were determined. The oxidized polysaccharides are new anionic polymers with unique structures that could have application as gums, gels, and films.
Background: A protective effect of resistant starch (RS) containing foods on carcinogenesis has been shown from several lines of experimental evidence for gastrointestinal cancers. Therefore, we aimed to investigate the association between RS contained foods and breast cancer (BC) risk in a hospital-based, age- and origin-matched, case-control study. Materials and Methods: A validated, semi-quantitative, food frequency questionnaire (FFQ) was completed by 306 women newly diagnosed with BC aged 25 to 65 years, and 309 healthy women as matched controls. Odds ratios (ORs) and 95% confidence intervals (95%CI) were estimated using conditional logistic regression models. Results: Reduced BC risk was associated with the highest tertile of whole-wheat bread and boiled potato consumption with adjusted ORs at 0.34 (95%CI: 0.19-0.59) and 0.61 (95%CI: 0.37-0.99), respectively. Among consumers of whole-wheat bread, the protective role of cereals remained relatively apparent at higher intakes level of fiber rich breads at adjusted models (OR=0.53, 95%CI: 0.28-1.01). Moreover, high intake of legumes was found out to be a significant protective dietary factor against risk of BC development with an OR of 0.01 (95%CI: 0.03-0.13). However, consumption of white bread and biscuits was positively related to BC risk. Conclusions: Our results show that certain RS containing foods, in particular whole wheat bread, legumes and boiled potato may reduce BC risk, whereas higher intake of white bread and biscuits may be related to increased BC risk.
The physicochemical properties and characteristics of potato starches which were isolated from the six varieties were investigated. The ash content of starch prepared from the Arkula showed lower than that of the other five samples. The shapes of starch granules were oval and round, and the average diameters were in the range of $25{\sim}26.9$ microns. The main constituents of the inorganic components of each starch sample were found to be phosphorus and potassium. The amylose contents of starches were between $27.2{\sim}32%$, and blue value, alkali numbers were in the range of $0.42{\sim}0.45$ and $5.8{\sim}7.7$, respectively. Amylograph data revealed that Nook Sack had the highest viscosity at all reference points. The swelling power and solubility patterns were negligible until $50^{\circ}C$, thereafter it increased rapidly.
