단체급식소에서 제공되는 국류의 적정온도에 관한 연구 (A Study on Desirable Serving Temperatures of Soups for Foodservice Establishment)

  • This study was conducted to assess the acceptability of the desirable serving temperatures of soups by evaluating the sensory characteristics of Radish Clear Beef Soup, Meat Pot Stew, and Chinese Cabbage Beanpaste Soup used in the Foodservice Establishment. 1. Taste revealed a better acceptability under a high temperature than that under a low temperature in three soups. 2. The aroma of Meat Pot Stew, Chinese Cabbage Beanpaste Soup showed a significant difference for each temperature, and especially, Chinese Cabbage Beanpaste Soup showed a better sabory aroma at $80^{\circ}C{\sim}85^{\circ}C$. 3. Meat Pot Stew showed little significant differences in color and in its change among three soups. Chinese Cabbage Beanpaste Soup did not make any change of color at both $35^{\circ}C{\sim}40^{\circ}C\;and\;50^{\circ}C{\sim}55^{\circ}C$. 4. In a Meat Pot Stew case, appearance conspicuously changed at $35^{\circ}C{\sim}40^{\circ}C$, which resulted in losing appetite. Three soups showed a good response above at $65^{\circ}C$ and a very poor response at below $55^{\circ}C$. 5. Radish Clear Beef Soup, Meat Pot Stew, Chinese Cabbage Beanpaste Soup showed a tender texture at above $80^{\circ}C,\;65^{\circ}C\;and\;50^{\circ}C$. 6. Chewiness showed a good acceptability from $50^{\circ}C\;to\;80^{\circ}C$ in Radish Clear Beef Soup, Chinese Cabbage Beanpaste Soup cases, but only in the case of Meat Pot Stew showed good response at $80^{\circ}C{\sim}85^{\circ}C$. 7. In cases of Radish Clear Beef soup, Meat Pot Stew, bland and stinking aroma, and aftertaste were increased remarkably in proportion as temperature was lowered. In case of Meat Pot Stew, especially, it turned out to be almost impossible to eat at $35^{\circ}C{\sim}40^{\circ}C$. 8. In cases of Radish Clear Beef Soup, Chinese Cabbage Heanpaste Soup, overall acceptability at $65^{\circ}C$ was comparatively good but aroma and taste at below $65^{\circ}C$ was so bad that there was the eminent tendency to avoid tasting.

생분해성 PLA-PBAT 블렌드 필름을 이용한 친환경 포트의 특성 연구 (Study on Properties of Eco-friendly Pot with Biodegradable PLA/PBAT Blend Film)

  • Since single-use disposable plastic usage has steadily been increasing, recent trends in polymeric research point to increasing demand for eco-friend materials which reduce plastic waste. A huge amount of non-degradable polypropylene (PP)-based pots for seedling culture are discarded for transplantation. The purpose of this study is to investigate an eco-friendly biodegradable material as a possible substitute for PP pot. The blend of poly(lactic acid) (PLA) with poly(butylene adipate-co-terephthalate) (PBAT) was used because of its good mechanical and flexible properties as well as biodegradation. After landfill, various properties of the blend pot were investigated by UTM, SEM, NMR and TGA. The results showed the tensile strength of the blend film rapidly decreased after 5 weeks of landfill due to degradation. From NMR data after landfill, the composition of PLA in the blend was decreased. These results indicate that the biodegradation of the blend preferentially occurs in PLA component. To investigate the effect of holes in pot bottom and side on root growth, a plant in the pot was grown. Some roots came out through holes as landfill period increases. These results indicate that the eco-friendly pot can be directly planted without the removal of pot.

  • K-bentonite를 K포화용액에서 이온교환법에 의해 제조했다. 모래땅, 황토, 산흙에서 K-bentonite 완효성의 효과를 비교 시험했는데, 특히 모래땅에서 그 효과가 컸다. 알타리무우 및 상치를 이용한 모래땅 재배에서 KCl시용구. 보다 K-bentonite구는 상치의 지상부의 생육과 알타리무우의 근부신장을 월등히 촉진 시켰다. 그러나 적정량을 관수하면서 모래, 산흙, 황토를 이용한 온실내 pot시험에서는 생육차를 발견할 수 없었다. K-bentonite는 무우 및 상치의 Vitamin C, Nitrate, Thiocyanate, Dry wt 등의 함량변화에 영향을 미치지 않았다. K-bentonite 실제 생산에 있어 문제점에 대해 논의하였다.

서양 심비디움 양액재배에서의 무기물 흡수 (Mineral Absorption by Cymbidium Jungfrau in the Solution Culture)

  • 양액 재배에서 서양 심비디움(Cymbidium Jungfrau)의 질소와 인 흡수 및 재분배양상을 조사하였고 양액 재배와 관행인 화분 재배간의 심비디움의 생육, 광합성, 엽록소함량, 무기물 함량을 비교하였다. 질소$(^{15}N)$의 흡수는 자연광의 60% 광도에서 보다 자연광에서 많았고, 인$(^{32}P)$의 흡수는 이와 반대의 경향을 나타냈다. 흡수된 질소$(^{15}N)$는 벌브에 가장 많이 존재하였고 인$(^{32}P)$은 뿌리와 벌브에 많이 있었으며 잎으로 재분배된 양은 10% 정도였다. 2년생 어미주보다는 0.5 또는 1년생 새끼 주에서 질소$(^{15}N)$와 인$(^{32}P)$의 흡수가 더 많았다. 심비디움의 인 흡수율은 보리의 경우 보다 약 350배 정도 낮았다. 심비디움의 초장, 벌브크기, 생체증가율, 광합성 능, 엽록소 함량은 바크 또는 입상 암면을 배지로 이용하는 양액 재배가 일반 관행재배보다 더 높았다. 특히 양액 재배에서 사용된 바크와 입상 암면간에 생육과 무기물함량이 차이를 보이지 않았다. 또한, 질소, 인, 칼륨, 마그네슘의 함량은 양액 재배에서 높았으나 칼슘은 관행과 차이가 없었고 무기물의 흡수는 주로 영양생장기간 동안에 이루어졌다.

  • Well-balanced meal is very important in its quantity and quality. Especially on the quantity field it becomes difficult for a foodservice operation to decide proper portion for individuals uniformly. These study was focused to setting up a proper portion by each food service operation. The results obtained were: 1. Individual consumption size from dormitory food service of college: cooked rice 282 g, soups 161 g, pot stewes 162 g, stir fries 53 g, stews 32 g, kimchies 47 g, fresh and boiled salads 43 g, one course dishies 477 g, pan broiles 44 g, meunieres 124 g. Individual consumption size from industry foodservice (white collar worker): cooked rices 228 g, soups 205 g, pot stewes 251 g, stir fries 20 g, stewes 76 g, kimchies 57 g, fresh and boiled salads 36 g, one course dishies 423 g, pan broiles 63 g, meunieres 38 g. 2. Proper portion of meal based on a statistical data is as follows: at college foodservice - cooked rices $280{\sim}290$ g, soups $155{\sim}170$ g, pot stewes 170 g, stir fries 60 g, stewes 35 g, kimchies $40{\sim}60$ g, fresh and boiled salads 50 g, one course dishies 480 g, pan broiles 50 g, meunieres 130 g and at industry foodservice (white collar worker) - cooked rices $220{\sim}250$ g, soups 210 g, pot stewes 250 g, stir fries 20 g, stewes 80 g, kimchies 60 g, fresh and boiled salads 40 g, one course dishies 430 g, pan broiles 70 g, meunieres 40 g.

영남지방의 무속(巫俗)과 불교(佛敎) 제의(祭儀)에 나타난 음식문화 연구 (A Study on the Food Culture Manifested in the Memorial Rites of the Shamanism and Buddhism in the Young-nam Area)

  • This paper is intended to survey the literature about Shamanistic and Buddhistic memorial services and to examine the food culture manifested in them. In Shamanistic rituals, fish and meat were not prohibited except in special cases whereas Buddhism Prohibited fish and meat. For Shamanistic rituals, rice cake, cooked rice, liquor and the walleye pollack were commonly used. Besides there were such important offerings as a boiled pork head, chestnuts, jujube and persimmons (dried persimmons) . For Buddhistic memorial services, such foods as cooked rice, soup, cooked pot-herbs, saute, rice cake, confectionary (or candies), chestnuts and jujubes, were dedicated such offerings as cooked rice, rice cake, cooked pot-herbs and fruits were commonly used for both Shamanistic and Buddhistic memorial rites. Particular fruits were not prohibited in either case. Buddhistic rites in particular offered such foreign fruits as pineapples, kiwi and oranges, which showed that the foods of Buddhistic memorial services reflected the popular foods of the day more than those of Shamanistic ones. Water (Jung-hwa-su) brought from the well at daybreak for Buddistic memorial rites came from Shamanism, where as oil-and-honey pastry (Yu-gwa) used for Shamanistic rites came from Buddhism, which showed that the offerings of Buddhistic memorial services and Shamanistic ones were influenced by each other.

온실재배 토마토에서 관개시기 진단지표로 경직경 변화를 이용한 관개 자동화 효과 (Effect of Irrigation Automation Using Stem Diameter Variation as an Indicator of Irrigation Timing in Greenhouse Tomato)

  • 본 논문에서는 온실재배 토마토에서 수분 상태를 고려한 정밀한 관개를 위하여 경직경의 변화에 근거한 자동관개 시스템을 구현하고자 하였으며 이와 같은 작물적 지표에 의한 관개제어시스템을 포트재배(closed feeding system) 조건과 포장재배 조건의 재배에 적용하여 토마토의 수량과 과실의 품질에 대하여 그 적합도를 평가하였다. 작물적 지표에 의한 관개 자동화를 위하여 경직경 측정 센서를 이용하여 측정한 경직경 일증가량(DI)를 관개 개시점의 결정에 이용하고, 동시에 이때의 관개량을 결정하기 위하여 토마토 증산모델을 적용한 마이크로 컴퓨터 자동관개 시스템을 구현하고 그 성능을 평가하였는데, 이 자동 관개 시스템을 이용하여 관개처리한 결과 포트재배에서는 토양수분에 의한 관개방식보다 수량 및 과실의 당도가 증가하였으나 포장조건에서는 관개방법간에 큰 차이가 없었다. 따라서 경직경 증가에 근거한 관개 개시점을 판단하고 관계량을 결정하는 증산모델을 사용하는 컴퓨터 시스템은 특히 closed feeding System에서 유용하며 토양조건에서는 토양의 상태, 작물의 반응 등을 고려하여 적용하여야 할 것으로 판단되었다.

남부 도서지역에서 황칠나무의 파종기에 따른 주요 형질변이 (The effect of Sowing Dates on Major Agronomic Characteristics of Dendropanax morbifera $L_{EV}$ in Southern Area of Korea)

  • 우리나라 황칠나무 주요 자생지인 남부도서지역의 완도지방에서 황칠나무의 적정 파종기를 구명하여 자생지 보호와 농가의 재배면적 확대 그리고 관상가치가 높은 실생 파종묘의 재배법을 체계적으로 확립 하고자 본시험을 실시한 결과는 다음과 같다. 1. 비닐하우스를 이용하여 황칠나무의 종자를 포트에 파종할 경우 3월 중순 파종이 출현율이 높고, 초기생육이 양호하여 알맞은 파종기로 판단된다. 2. 노지에 황칠나무 종자를 직파할 경우 4월 상순 파종이 종자의 출현율이 높고, 생육이 양호하여 알맞은 파종기로 생각된다. 3. 황칠나무의 적정 파종방법으로는 포트파종이 노지 파종보다 발아율이 높고, 묘목의 수고와 경직경이 커서 초기생육이 양호하여 알맞은 파종방법으로 생각된다.

Use of Dactylaria brochopaga, a Predacious Fungus, for Managing Root-Knot Disease of Wheat (Triticum aestivum) Caused by Meloidogyne graminicola

  • A laboratory experiment was conducted to study the induction of constricting rings and test predation of Dactylaria brochopaga isolates against second stage juveniles (J2s) of Meloidogyne graminicola. Among the five fungal isolates, isolate D showed the greatest number of predatory rings and, consequently, trapped the maximum number of M. graminicola J2s in dual cultures. Another pot experiment was conducted to study the effect of D. brochopaga (isolate D) on the management of wheat root-knot disease. Applying a mass culture (10 g/pot) and a spore suspension of the fungus with and without cow dung manure to soil infested with 2,000 M. graminicola juveniles significantly improved plant height, root length, weights of shoots, roots, panicles and grains per hill compared to those in the control. Moreover, the fungus significantly reduced the number of root-knots, the number of egg masses, juveniles, and females per hill compared to those in the control. Bio-efficacy of the fungus was heightened when the mass culture and a spore suspensions were used in combination with cow dung manure to improve the plant growth parameters and reduce the number of root-knot and reproductive factors. Further investigations should be conducted to identify the impact of this fungus in the field.
