감자 수확후 온도가 절단괴경의 suberin 및 periderm 형성에 관련된 부패에 미치는 영향 (Effect of Post-harvest Temperature on Potato Piece Rot in Relation to Suberin and Periderm Development)

  • 감자 저장병으로서 중요한 Fusarium solani, F. roscum, F. oxysporum 및 Erwinia carotovora를 분리 동정하고 수확후에 공시품종 Epicure, Irish Cobbler, 및 Superior의 괴경을 절단하여 $4^{\circ},\;14^{\circ},\;24^{\circ},\;및\; 34^{\circ}$ 각 온도의 습실에 1, 3, 5, 및 7일간 예치한 후 suberin 및 periderm 형성을 검경하였다. 그리고 위와 같이 처리한 괴경에 4종의 병원균을 접종하여 9일간 정치한 후 부패도를 조사하였다. 예치온도가 높을수록 또 그 기간이 길어짐에 따라 보호막으로서의 suberin 및 periderm 형성이 증가하였으며 부패는 감소되었다. 공시균종간의 병원성, 품종에 대한 반응, 보호막 형성에도 차이가 있었으나 예치온도 및 기간의 효과가 부패방지에 더 중요하였다. $4^{\circ}C$에서는 7일이내의 예치기간에 보호막은 거의 형성되지 않았으며 부패는 심하였고 $34^{\circ}C$에서는 대체로 이와 반대하였다. 그러므로 절상감자를 바로 $4^{\circ}C$에 냉장함은 피해여야 할 것으로 본다. $24^{\circ}C$에서 3일 $14^{\circ}C$에서 5일이 지나면 부패되지 않았으며 suberin 및 periderm 형성은 중정도였다. 고온에서는 예치, 기간중에 기경이 부패되는 수도 있으므로 그 적온을 피하여 $14^{\circ}C$에 5일 이상 예치한 후에 저장하는 것이 실용적이라 생각된다.

포장재 산소투과도 및 포장량에 따른 큰느타리버섯 신선도 변화 (Changes of freshness in Pleurotus eryngii according to oxygen permeability of packaging film and net weight)

  • 주요 수출버섯인 큰느타리버섯의 신선도유지에 적합한 포장량 및 포장재 산소투과도를 설정하기 위해 저온 저장기간 중 품질변화를 분석한 결과, 포장량 및 포장재 산소투과도에 따른 저장기간 중 중량감모율 변화는 차이없었으며, 갓신장율은 포장량 200 g일 경우 산소투과율이 높을수록 저장기간이 길수록 증가하였으나, 400 g 처리는 산소투과도 3,000 $cc/m^2$, 24 h, atm일 때 가장 낮았다. 포장재 내부의 $O_2$함량은 포장량이 적을수록 산소투과도가 낮을수록 높았으며, $CO_2$함량은 포장량이 많을수록 높았다. 종합적으로 포장량 400 g, 포장재 산소투과도 2,000 $cc/m^2$, 24 h, atm 이하에서 판매가능한 신선도가 35일까지 유지되어 저장기간이 가장 길었다.

전기분해수와 이산화염소수 처리 복분자(Rubus coreanus Miquel)의 살균효과 (Sterilization effect of electrolyzed water and chlorine dioxide on Rubus coreanus Miquel)

  • 본 연구에서는 수도수, 전기분해수, 이산화염소수 처리에 의한 복분자 딸기의 저장온도 및 기간에 따른 품질 변화를 분석하였다. 복분자 딸기를 수도수, 전기분해수와 이산화염소수 농도별 10, 50, 100, 200 ppm으로 각각 30초 동안 침지를 한 후, 상온과 냉장 저장하여 시간에 따른 저장성 효과를 비교하였다. 또한, 외관 품질유지와 갈변저해효과를 탐색하였다. 또한, 복분자로부터 Bacillus cereus와 Micrococcus luteus의 위해미생물을 분리 동정하였다. 살균세척수를 처리한 후 저장 온도별 시간에 따른 미생물 총균수를 측정한 결과, 각 처리구의 미생물 살균력은 전기분해수와 이산화염소수가 수도수 처리보다 증가하였으며 이산화염소수는 고농도일수록 현저하게 증가하였다. 상온에서 저장하는 구보다 냉장 저장한 구에서의 미생물 억제효과가 뛰어났다. 복분자 딸기의 표면에 주사전자현미경으로 관찰한 결과, 전기분해수와 이산화염소수 처리구에서는 미생물이 생존하지 않았다. 효소활성을 측정한 결과, 수도수 처리구보다 살균세척수 처리구에서 함량이 낮아졌으며 시간이 지남에 따라 서서히 증가하였다. 총 폴리페놀 함량은 세척 방법 간 유사한 결과를 나타내었다. 저장일수가 증가할수록 감소하였고 전기분해수와 이산화염소수 처리구의 함량이 수도수 처리보다는 낮았다. 따라서, 복분자 딸기의 전기분해수와 이산화염소수 처리는 미생물 생육을 억제하면서 신선도를 유지하고 품질 유지 및 저장성 향상에 기여할 것으로 사료된다.

마늘 저장병 방제를 위한 경종적, 화학적 접근 (Cultural and chemical approaches for controlling postharvest diseases of garlics)

  • 마늘저장 중 피해실태를 조사하고 경종적 환경적 여러 요인이 마늘 저장 중 부패에 미치는 영향을 구명하여 마늘저장 중 부패를 줄일 수 있는 기술을 개발하기 위하여 수행하였다. 마늘저장 중 피해가 큰 병은 푸른곰팡이병, 마른썩음병 그리고 자주점무늬병(잎마름병) 이었다. 마늘 저장 중 부패는 경종적 요인으로 재배유형 (논, 밭), 연작년수, 수확시기와, 환경요인으로 저장고의 통풍정도, 저장온도 및 습도가 큰 영향을 주는 것으로 나타났다. 마늘은 조기수확할 경우 부패가 심하였고 논재배 마늘보다는 밭재배마늘이 부패가 잘되었다. 그러나 연작년수와 부패율은 무관하였다. 마늘부패에 대한 환경요인의 영향을 조사한 결과, 습도가 증가함에 따라 푸른곰팡이병은 증가하는 것으로 나타났고, 마른썩음병과 잎마름병은 영향을 받지 않았다. 푸른곰팡이병균, 마른썩음병균 및 자주점무늬병균은 $10^{\circ}C$에서 잘 자랐으며, 특히 장기간 (2개월) 배양 할 경우 푸른곰팡이병균 자주점무늬병균은 $-1^{\circ}C$에서 자랐다. 농작업 중 생긴 상처는 마늘부패에 크게 영향을 주는 것으로 나타났다. 병원균을 접종하지 않고 상처를 낼 경우 마늘표면에 상처를 내지 않고 병원균을 접종할 경우보다 부패정도가 더 심하였다. 마늘 저장 부패를 경감하기 위하여, 감자한천배지상에서 세가지 병원균에 대하여 항균성이 높은 7종의 농약을 선발하였다. 이들 농약을 수확전 30일에 살포하고 저장할 경우 tebuconazole과 benomyl/thiram이 부패를 현저히 경감시켰으며, 마늘을 수확한 후 농약현탁액에 침지하여 처리하였을 때 prochloraz, benomyl/thiram, tebuconazole 등이 효과가 우수한 것으로 나타났다. 마늘종구 소독용으로 사용되고 있는 benomyl/thiram을 농가에서 종구용 마늘을 대상으로 분무처리한 경우 방제효과가 매우 우수하였다.

Postharvest technologies for fruits and vegetables in South Asian countries: a review

  • Agricultural systems in South Asian countries are dominated by smallholder farmers. Additionally, these farmers have limited access to pre- and post-harvest technologies due to their high initial cost. The lack of these technologies in postharvest handling is responsible for 20% to 44% of fruit and vegetable losses. These high losses are largely the result of a generally weak basic postharvest infrastructure for the preservation of products, which avoids damage from improper handling, transportation, packaging, and storage. High postharvest losses of products negatively affect food availability, food security, and nutrition, as the producer is able to sell less of the farm yield and the net availability of these food commodities for consumption is reduced. An underlying cause of these postharvest losses is the limited awareness and knowledge bases of stakeholders (researchers, farmers, governments, non-governmental organizations, and merchants) in the traditional supply chains in which these losses occur. The analysis presented in this paper explores the state of postharvest practice in South Asian countries and discusses options for low-cost postharvest technologies in the region that can support small-scale farmers and provide a viable pathway for supply to the market, joining with modern value chains and bringing about individual and regional reduction in postharvest losses of fruits and vegetables. The improvement of basic and simple low-cost technologies through precise research efforts has the potential to prevent such huge losses of products, and help meet the ever-increasing demand for food in South Asian countries.

모의수송 중 진동피로에 의한 복숭아의 손상 (Damage at the Peach Due to Vibrational Stress During Transportation Simulation Test)

  • Post-Harvest processing engineering is a field that studies prevention of the quality change of agricultural products during sorting, packaging, storage, and distribution after harvested. In distribution steps, agricultural products could be damaged by physical force, it is the main reason of low quality and they lost value of commodities. This study was performed to find the vibration characteristics of the peach, and to find the extent of the damage on the peach by fatigue stress. The vibration data was obtained on expressway and the vibration characteristics of peach was used to find the damage on the peach. To analyze the vibration characteristics of peach, the resonance frequency and vibration transmissibility were measured. The resonance frequency of the peach was 167.98 Hz and the transmissibility was 4.06 at resonance point. It was 150 ~ 250 Hz that the transmissibility was more than 1. And the transmissibility in simulated test was measured. When the trasmissibility was more than 1, the range was 15 ~ 65 Hz, and when it was less than 1, the range was 65 ~ 175 Hz. When the transmissibility was about 1, the range was 5 ~ 15 Hz. The damage and the vibration cycle numbers of peaches were compared with input frequency and acceleration. More damage and less cycle number happened in 30 Hz than in 62.5 Hz. The reason was that the transmissibility of 30 Hz was higher and the vibration displacement in lower frequency was more. The more acceleration and cycle number increased, the more the bruising volume of peaches increased. The bruising volume ratio for vibration fatigue was measured according to input acceleration and cycle number. Using measured data, regression models for bruising volume ratio(BVR) was developed as a function of the acceleration(A) and cycle number(CN) as follows. BVR = a * $A^b*$ $(CN)^c$

  • Vietnam is one of a country with an important strategic position in economic development in the Asia Pacific region. In addition, Vietnam has a longtime agricultural more than 70% of agricultural labor. With favorable natural conditions, agricultural growth in Vietnam is'key'to the developing countries. However, Vietnam's agriculture has still encounter many problems due to drought, climatic conditions, natural disasters. The level of development and agricultural production is weak, the process of post-harvest storage is limited and particularly agricultural competitiveness with other countries is obstacles. In fact, the Government of Vietnam decided to cooperate with other countries have highly developed agriculture such as America, Korea, Japan... hoping to get help and promote agricultural development in a sustainable manner. Since 1992, Vietnam and Korea established formal diplomatic relations. During 20 years of cooperation and development, We have been obtained many satisfactory results not only in fields invest infrastructure, technological science but also exchange experience especially in the agricultural sector. From the Korea ODA project, Vietnam's agriculture in general has made significant progress. With vision, ODA projects continues to support the Central Highlands region in which the Da Lat city, Lam Dong province. Pass the cooperation between Dongguk University and Da Lat University has many positive results. Hopefully in the near future, the relationship between Vietnam and Korea in general will continue to grow strongly, the Korea ODA project will be continue to support Vietnam's agriculture in general and in particularly for the Central Highlands which in Da Lat City, Lam Dong province.

Isolation and Identification of Fungal Species from the Insect Pest Tribolium castaneum in Rice Processing Complexes in Korea

  • The red flour beetle, Tribolium castaneum, is one of the most common and economically important pests of stored cereal products worldwide. Furthermore, these beetles can act as vectors for several fungal post-harvest diseases. In this study, we collected T. castaneum from 49 rice processing complexes (RPCs) nationwide during 2016-2017 and identified contaminating fungal species on the surface of the beetles. Five beetles from each region were placed on potato dextrose agar media or Fusarium selection media after wet processing with 100% relative humidity at $27^{\circ}C$ for one week. A total of 142 fungal isolates were thus collected. By sequence analysis of the internal transcribed spacer region, 23 fungal genera including one unidentified taxon were found to be associated with T. castaneum. The genus Aspergillus spp. (28.9%) was the most frequently present, followed by Cladosporium spp. (12.0%), Hyphopichia burtonii (9.2%), Penicillium spp. (8.5%), Mucor spp. (6.3%), Rhizopus spp. (5.6%), Cephaliophora spp. (3.5%), Alternaria alternata (2.8%) and Monascus sp. (2.8%). Less commonly identified were genera Fusarium, Nigrospora, Beauveria, Chaetomium, Coprinellus, Irpex, Lichtheimia, Trichoderma, Byssochlamys, Cochliobolus, Cunninghamella, Mortierella, Polyporales, Rhizomucor and Talaromyces. Among the isolates, two known mycotoxin-producing fungi, Aspergillus flavus and Fusarium spp. were also identified. This result is consistent with previous studies that surveyed fungal and mycotoxin contamination in rice from RPCs. Our study indicates that the storage pest, T. castaneum, would play an important role in spreading fungal contaminants and consequently increasing mycotoxin contamination in stored rice.

문화와 과학의 융합적 관점에서 본 전통음식의 역사 및 미래 (Traditional Foods: Historical Perspectives and Future Prospects)

  • Traditional cuisine reflects cooking traditions shaped by political, economic, social, cultural, and environmental conditions characterized by authenticity and uniqueness. Traditional food is not only a part of our cultural heritage but also a knowledge resource. Application of food science and technology in Korean traditional foods was reviewed from six points of view, including food preservation, fermentation, changes in food materials, utilization of food functionality, and packaging and development of cooking appliances. Books from disparate times were chosen in order to cover a wide range of materials from the past to the present. Food preservation and fermentation techniques were applied to various food materials. Combination of science and skills contributes to the accessibility of diverse food materials and better quality foods. Koreans use assorted and resilient plants, which have an abundance of functional substances such as food materials. Among cooking appliances, microwave oven and refrigerator are the most innovative products with huge influences on food eating patterns as well as lifestyle. Packaging effectively reduces post-harvest preservation losses, and better packaging has technical improvements for storage and distribution. Kimchi was chosen as an example in order to study technology from the past to the present. Availability of Kimchi cabbage, enrichment of functional ingredients, identification of useful microbial species, standardization of recipe for commercialization, prevention of texture softening, introduction of salted Kimchi cabbage and Kimchi refrigerators, and packaging were reviewed. The future of traditional foods in the market will be competitive. First, traditional foods market should be maintained to protect the diversity of food materials. Secondly, tailored foods for individuals should be considered using foods with functional properties. Information on health benefits would provide insights into health and traditional food products. Third, speedy transfer of new technology to the traditional food industry is needed to ensure food quality production and new opportunities in the market. Fourth, safety of traditional foods should be ensured without sacrificing the essential characteristics of culturally important foods. Improvement of logistics, distribution, and facility should be carried out. As demand for convenience foods increases, traditional foods should be developed into products.

양잠산물 생산·판매 구조와 산업분야별 개선과제 (The Status of the Sericulture Industry and the Development Strategy)

  • 최근 국내 양잠산업은 의류중심의 전통적인 양잠산업에서 기능성 양잠산업으로 변화를 꾀하고 있다. 이런 여건변화에 대응하기 위해 2009년에 "기능성 양잠산업 육성 및 지원에 관한 법률"이 시행되어 기능성 양잠산업 종합계획 수립 근거가 마련되었다. 기능성 양잠산업 발전을 위한 종합계획을 수립하기 위해서는 현재 양잠산업의 실태와 문제점 파악이 선결되어야 할 것이다. 본 논문의 목적은 양잠산물의 생산 판매구조와 산업 분야별 애로요인 및 개선사항에 제시하는데 초점이 맞추어져 있다. 본 연구의 주요 연구 내용은 양잠산물 단위당 생산액, 생산 및 소비형태, 가공업체의 원료구매 및 제품 판매구조, 양잠산물 유형별 부가가치 발생 크기, 분야별 애로요인 및 개선사항으로 구성되어 있다.
