This study was carried out to evaluate the physicochemical characteristics of Pimpinella brachycarpa Nakai with treatments methods. Pimpinella brachycarpa Nakai was prepared with washing, blanching, and steaming. Pimpinella brachycarpa Nakai samples were analysed proximate compositions, ${\beta}$-carotene, folic acid, minerals, polyphenol and flavonoid content, and antioxidant activity. Crude protein, lipid, ash and fiber content of raw Pimpinella brachycarpa Nakai were 24.43, 9.02, 17.74, and 33.50%, respectively. pH ranged from 6.49 in blanched Pimpinella brachycarpa Nakai to 5.99 in steamed Pimpinella brachycarpa Nakai. The Hunter L value was decreased with heat treatment and a- value showed that the green color was higher in steamed Pimpinella brachycarpa Nakai. ${\beta}$-Carotene content was increased to 18% in washed Pimpinella brachycarpa Nakai, 54% in blanched Pimpinella brachycarpa Nakai, and 10% in steamed Pimpinella brachycarpa Nakai. Folic acid content of washed, raw, steamed, and blanched Pimpinella brachycarpa Nakai were 848.87, 772.16, 271.54, and 260.74 mg/100 g, respectively. Major minerals were K, Ca, Na, and Mg, and K content had the highest value of 93.13~244.38 mg/100 g with treatment. Total polyphenol and flavonoid content, and antioxidant activity were higher in the order of blanched, steamed, washed, and raw Pimpinella brachycarpa Nakai.
This study investigates the physicochemical quality characteristics of tomato sauce added with different kinds of pimpinella brachycarpa. The results are as follows. The pH of tomato sauce added with freeze-dried pimpinella brachycarpa, in contrast to the tomato sauce with raw pimpinella brachycarpa, decreased as the addition quantity of the sample increased. As for sugar content, PBP0 with Pimpinella brachycarpa contained was shown to be the highest with 10.83. For chromaticity, all values (e.g, L, A and B) of tomato sauce added with pimpinella brachycarpa and with freeze-dried pimpinella brachycarpa decreased showing significant differences among the samples as the addition quantity of the samples increased. With increased addition quantity of the sample with freeze-dried Pimpinella brachycarpa, its water content decreased. PBP4, addition group with 4% of freeze-dried Pimpinella brachycarpa, was shown to be the highest DPPH free radical scavenging activity as 29.58. When adding Pimpinella brachycarpa to tomato sauce, a total number of micro-organisms decreased. In case of adding raw Pimpinella brachycarpa rather than freeze-dried Pimpinella brachycarpa, it created a further effect on an inhibitive action of growing and developing micro-organisms. In the preference of tomato sauce with Pimpinella brachycarpa, PBF2 with 2% of Pimpinella brachycarpa had the highest score as 5.1 for the color. For taste, 3.7, the lowest taste score, was shown in PBF1with 1% of Pimpinella brachycarpa. The overall preference revealed that PBF2 was the highest scoring 5.8.. PBF3 was scored highest with 5.9 for overall preference. From the comprehensive findings, 2~3% of the addition ratio between raw Pimpinella brachycarpa and freeze-dried Pimpinella brachycarpa in the production of tomato sauce is considered the most preferable.
This study was conducted to maintain the productivity of forest production and byproducts production of natural forest. Distribution of wild edible herb species and correlations between wild edible herb species and forest-type, and site factors were surveyed on national forest in Changjeon-ni, Pyungchang-gun, Kang-won-do. Ligularia fischeri was distributed mainly on cutting sites or meadow or Quercus mongolica forest, Pimpinella brachycarpa did on broadleaved mixed forest, and Synurus deltoides did cutting sites or meadow. On conifer plantations major wild edible herb species were not distributed. Pimpinella brachycarpa and Ligularia fischera were distributed mainly on the site of wet soil-moisture condition, Codonopsis lanceolata, Saussurea grandifolia and Synurus deltoides were distributed randomly. The distribution of Ligularia fischeri and Pimpinella brachycarpa were significantly different between slope directions, but those of Codonopsis lanceolata, Saussurea grandifolia and Synurus deltoides were not significant. Ligularia fischeri and Pimpinella brachycarpa were distributed more frequently in north directed slope than the other. Highly positive correlations were proved Ligularia fischeri and Pimpinella brachycarpa, Aconitum jaluense and Veratrum patulum; Pimpinella brachycarpa and Smilacina japonica, Aconitum jaluense and Veratrum patulum.
The volatile flavor compounds of wild and cultivated chamnamul (Pimpinella brachycarpa), an aromatic medicinal plant, were isolated via the simultaneous distillation extraction method and analyzed by GC and GC-MSD. From the oils of the wild chamnamul, 56 volatile flavor compounds were identified, and the major constituents were found to be sabinene (58.37 ppm) and germacrene-D (45.73 ppm). From the oils of cultivated chamnamul, 36 volatile flavor compounds were identified--the major constituents were identified as $\beta$-selinene (38.41 ppm) and myrcene (12.76 ppm).
Pimpinella brachycarpa, a summer-green perennial herb, is narrowly distributed in the moist forest floors. We investigated environmental characteristics and growth patterns of Pimpinella brachycarpa depending on the microenvironment in Mt. Jeombong located in the central part of Korea. P. brachycarpa populations were located at an altitude of 978~1016 m and the average atmospheric humidity hovered at 80 percent. Also, it was found that the soil moisture content was remarkably high, 26.7%, in the populations; organic matter 11.1~11.7%; the nitrate nitrogen 0.60%; available phosphorus 19.5~39.0 ppm; CEC $20.8{\sim}21.3cmolckg^{-1}$; soil pH 4.7~4.8 respectively. In case of growth pattern, the shoot length of individuals under the improved light condition in the sunny forest was statistically longer than in the dense forest. Therefore, we presumed that high humidity and ample soil moisture are abiotic factors of the growth of P. brachycarpa and that the amount of light affects the relative growth rate of individuals.
This study was performed to make new products rising Pimpinella brachycarpa N., one of the Korean aromatic medicinal plant called chamnamul, which is a perennial plant of the Umbelliferae family. New products were natural chamnamul spice, chamnamul soup, chamnamul tea, and chamnamul mook as functional foods. The masking effect of Pimpinella brachvcarpa N., on fishy and meaty odor were investigated to test the usefulness of chamnamul as a natural spice. It could be concluded that the effect of added amounts of chamnamul on the cream soup increases the taste and appearance, and improves the flavor and color by the sensory evaluation. The chamnamul tea prepared by a filtration method is better than that by a leaching method on the preference test. In the texture properties of chamnamul mooks by a texture analyzer (XT-RA, Texturometer), the cohessiveness of them was higher than that of the white one.
Volatile flavor components of fresh, shady air dried, and presteamed shady air dried Chamnamul (Pimpinella brachycarpa) were collected by simultaneous steam distillation-extraction method, and essential oils were analyzed by gas chromatography-mass spectrometry (GC/MS). Twenty five, 17 and 23 volatile flavor components were identified in essential oils extracted from the fresh, shady air dried, and presteamed shady air dried Chamnamul samples, respectively; however, the kinds of individual components and its percent content of the total volatiles were varied depending on samples. The principal components of Chamnamul were isobutanal, trans caryophyllene, trans ${\beta}$-farnesene, and ${\alpha}$-selinene. Terpenoid compounds reached 44.11%, 33.91% and 72.63% respectively in fresh, shady air dried, and presteamed shady air dried Chamnamul.
The masking effect of Chamnamul (Pimpinella brachycarpa) on meaty and fishy flavor was measured by sensory evaluation to investigate the usefulness of Chamnamul as a natural spice or herb. Shady air dried Chamnamul was utilized for sensory analysis. By the use of Chamnamul, the meaty flavor was significantly reduced in beef and pork. Chamnamul also showed a similar effect as black pepper on reducing meaty flavor. The use of Chamnamul also significantly reduced the fishy flavor of anchovy soup. When Chamnamul was added to rice gruel, rice odor was reduced but grassy odor remained strong.

This study was carried out to analyze major chemical components of dried Pimpinella brachycarpa leaves. Proximate compositions of the dried Pimpinella brachycarpa were 8.96% moisture content, 28.73% crude protein, 2.66% lipids, 19.14% ash, and 40.50% carbohydrates. Major components of the free sugars and disaccharides were glucose and maltose. A total of 15 kinds of amino acids were isolated from Pimpinella brachycarpa. Essential amino acids accounted for 49.13% of the total amino acids and non-essential amino acids accounted for 50.87%. A major fatty acid was linolenic acid. A ratio of polyunsaturated fatty acids to saturated fatty acids (P/S ratio) was 2.18. Oxalic acid was a major organic acid. The contents of the vitamins A and E were 9.23 mg% and 0.26 mg%, respectively. Among the minerals in the dried Pimpinella brachycarpa, the content of calcium was the highest (765.13 mg%) and those of magnesium and sodium were also comparatively high (303.00 mg%, 96.21 mg%).
