This study was performed to investigate the quality characteristics of noodles made from four different potato varieties: Atlantic, Go-un, Sae-bong, Jin-sun, and wheat flour. Quality characteristics of five noodles were analyzed by general components analysis, cooking quality (rate of water absorption, cooking loss, and volume increase), and mechanical textural properties. Some variations existed in wheat- or potato-based noodles for the general components analysis, but no clear trend was observed. Higher values in the rates of water absorption, cooking loss, and volume increase were observed for the wheat flour noodle, while some variations were observed for potato noodles depending on the variety. The wheat flour noodles exhibited higher values of textural characteristics obtained from the texture profile analysis, except for adhesiveness. Higher gluten contents as well as lower ash contents in the wheat flour noodles compared to the potato noodles are thought to be the two key factors contributing to this finding.
The property of deep frying oil is one of the important factors in fried food quality. The purpose of this study is to identify the quality of deep frying oil in continuous usages for 4 days by two types of fryers: traditional deep-fat fryer and modified oil-water fryer. After frying pork cutlets, the frying oil was kept not only for several physical analyses such as color, viscosity, and water content but also for the quality analyses of frying oil, such as free fatty acid, double bond changes and oxidative rancidity formation. The oil fried in a traditional deep-fat fryer was significantly increased in terms of physical values including moisture content, viscosity, and color, compared to those of the modified fryer, continuously for 4 days. The oil fried by a traditional deep-fat fryer exhibited a significant increase in its free fatty acid content compared to that fried by a modified oil-water fryer, while the iodine value was significantly decreased in the oil fried by a traditional deep-fat fryer when compared to control oil and oil fried by the modified oil-water fryer. In the peroxide value as an indicator of primary oxidation products, the oil fried by both fryers was significantly increased till the second day but decreased in value after the third day because of unstable hydroperoxide decomposition. The p-anicidine value is used as an indicator of secondary oxidation products, the oil fried in a traditional deep-fat fryer was significantly increased in value compared to that of a modified oil-water fryer.

Post-harvest handling and hygienic level of aquatic products significantly affect the quality and level of safety. Cold chain control is one of the determining factors for the quality of fish and the bacterial community that grows on the fish. Identification of spoilage bacteria and pathogens in aquatic products must be made because it will determine the physical and chemical quality. A molecular identification method with high sensitivity is the solution. This study aims to identify the quality of fish and bacterial communities that grow. The research procedures included sample collection, pH measurement, drip loss measurement, transportation and cold storage treatment, DNA extraction, DNA sequencing, sequence analysis, and bioinformatics analysis. The conclusion obtained from this study is that the simulation of the cold chain system applied to eastern little tuna does not significantly affect changes in the water activity value, pH, and drip loss. The insignificant change indicates that the eastern little tuna samples are still in good quality. The bioinformatics analysis showed the highest diversity and abundance of the bacterial community came from the Gammaproteobacterial class.
During the last two decades, many industrial complexes for heavy and chemical industries have been established along the Korean coastline, thereby increasing the pollution materials burden on the coastal environment of seawater. Masan Bay is one of the most polluted coastal areas in Korea and the main soures of pollutants are domestic and industrial wastewater from Masan, Changwon. This study was aimed to evaluate relationships among the physicochemical parameters in the bottom water of Masan bay and to examine environmental factors affecting to pollutions of seawater by factor analysis. 'rife factor loading, 1 is showed higher increasing inclination after 1989 year in station 1. The variance of pollutant materials is showed 43.7% in which the coastal inflow water is indicated external loadings(factor 1 : NO3--N, TN, factor 4 : SiO2-Si) corresponded to domestic sewage, industrial wastewater, and earth-sands in the bottom water of Masan bay And the internal loadings(factor 2 : SS, salinity, factor 3 . W.T., DO) are explained 33.8%'corresponded the phenomena of sedimentary layer and oxygen concentration. Therefore, The external loadings are explained by the higher factor pollutantal variance in Masan bay.
Background and objective: If the Nelumbo nucifera spreads in a wetland at a high density, it can have considerable positive and negative ecological effects on habitats. For this reason, it is necessary to precisely investigate the impacts of its rapid proliferation. This study was conducted to propose the distribution and management of N. nucifera, which can cause the degradation of wildlife habitats due to the rapid spread of internal and external environmental factors that may affect the Junam wetland ecosystem. Methods: For the investigation and analysis of physical and ecological characteristics, factors of the abiotic environment such as general weather conditions, topography and water depth structure, and soil and water quality analysis, and bioenvironment characteristics such as changes in the N. nucifera community distribution were evaluated. To assess whether the differences in the soil depth and physicochemical characteristics between the N. nucifera community and the aquatic plant community are statistically significant, a One-way ANOVA was executed. Results: N. nucifera was presumably introduced in approximately 2007 and observed at a prevalence of only 0.8% in 2009, but had expanded to 11.1% in 2014. After that, the area was increased to 19.3% in 2015 and 40.0% in 2017, about twice that of the previous survey year. The rapid diffusion of an N. nucifera colony can have adverse effects on wildlife habitats and biodiversity at Junam Wetland. To solve these problems, four management methods can be proposed; water level management, mowing management, installation of posts and removal of lotus roots. Control of the N. nucifera community using these methods was judged to be suitable for cutting and water level management when considering expansion rate, water level variation, and wildlife habitat impacts. Conclusion: As the biotic and abiotic environmental factors are different for each wetland, it is necessary to determine the timing and method of management through a detailed investigation.
The distribution of benthic macroinvertebrates in Daecheon stream, an urban stream of Busan, was investigated to analyze the community structure of benthic macroinvertebrates. The collection was performed monthly at five(A~E) sites divided into three parts, upper, middle and lower, of stream from January to November, 2004. In physicochemical analysis of environmental factors, water quality parameters such as BOD, COD, conductivity and ABS were relatively increased in sites B and C. Whereas sites A, D and E showed little variations with good water quality parameters. However, water quality parameters in all surveyed sites showed gradual decrease with time toward improvement of water quality. A total of 8,226 individuals including 4 phyla, 6 classes, 9 orders, 302 families and 44 species were identified from five sites. The most dominant group was insect(class Insecta), and order Ephemeroptera and Diptera among insect was the largest member in species(30.6%) and individuals(75.0%) of benthic macroinvertebrates, respectively. The primary dominant species were Gammarus sp. and Ephemera strigata in site A, whereas Chironomus sp. and Brenchiura sowerbyi were dominated commonly in the other sites. In community analysis of benthic macroinvertebrates of Daecheon stream diversity index showed relatively low values, whereas dominance index was significantly high. Diversity index was the highest in site A, whereas the dominance index was the highest in site B. However, diversity index showed gradual increase with time showing adverse mode in dominance index. From these results, it can be suggested that long-term ecological monitoring of benthic macroinvertebrate fauna is needed for sustainable management of Daecheon stream.
This study was performed to evaluate the effects of various levels of mungbean flour (MF) (0-2.4%) on the quality characteristics of pork model sausages (PMS) in experiment 1 and also select the optimum level of MF to enhance the water retention and gelling properties of low-salt PMS (LSPMS) with or without microbial transglutaminase (MTGase) in experiment 2. In experiment 1, the addition of MF did not affect pH, chemical compositions (fat and moisture contents), color values, and functional properties (expressible moisture, EM (%) and cooking yield, CY (%)) of PMS. However, the addition of MF increased the chewiness of PMS and hardness if the mungbean flour at the level of more than 1.2% was incorporated. Since the interaction between the microbial transglutaminase (MTGase) treatment and MF level was not significant (p>0.05), data were pooled by different factors (MTGase treatment and MF level) in experiment 2. MF improved the water binding ability and textural springiness of LSPMS. On the other hand, MTGase treatment decreased the pH and cooking yield (%) of LSPMS, but increased most textural properties. In conclusion, the addition of MF could enhance the water retention and textural properties of PMS and LSPMS, regardless of MTGase, when it was added to over 1.2%. Based on these results, mungbean protein may interact with MTGase on the low-salt comminuted meat systems. Therefore, further study might be needed to understand the mechanisms of interaction between MTGase and functional components induced from MF.
본 연구에서는 J 하수 처리장의 최종 방류수를 대상으로 종속영양세균의 증식과 수중 물리, 화학적 영향인자와의 관계를 고찰하였다. 하수 중의 용존 유기물질 농도는 종속영양세균의 성장과 가장 밀접한 관계를 보였다. 미생물의 영양원인 단백질, 지방, 전분, 섬유소, 팩틴의 분해 세균 분포를 파악한 결과 하수 중 단백질 및 지방세균의 비율은 전체의 81%로 가장 높았다. 종속영양세균은 연중 8월에 가장 높은 수치를 나타냈다. 하수 방류수에 대해 10 mg/L의 유리염소를 주입하여 15 min간 접촉시 THMs의 농도는 $71{\mu}/L$ (< $100{\mu}/L$- 먹는 물 수질기준)의 값을 나타내어 높지 않았다.
본 연구는 1998년 5월부터 11월까지 대청호의 2개 정점 표ㆍ중ㆍ저층에서 수질과 일차생산을 나타내는 식물플랑크톤 현존량과의 관계를 규명하기 위하여 물리ㆍ화학적 환경요인(수온, 용존산소량, pH, 투명도, 총질소, 질산염, 아질산염, 암모니아, 총인, 인산염, 용존총인, 총유기탄소, 부유물질), 식물플랑크톤 현존량, chlorophyll-a의 농도를 조사하였다. 영양염류(아질산염, 질산염, 암모니아 및 인산염)가 과거에 비하여 증가되었으며, 총질소, 총인,chlorophyll-a 및 투명도는 부영양화의 기준치를 초과하여 대청호의 수질은 심한 부영양화 수역으로 판명되었다. 식물플랑크톤 현존량은 7월과 8월의 정점 1을 제외하고 년중 대발생을 유지하고 있었으며, 봄철 대발생은 아질산염, 질산염 및 인산염의 영향이 큰 것으로 판명되었다. Chlorophyll-a의 농도는 식물플랑크톤 현존량의 월별 변동과 대부분 같은 경향으로 변화하였다. 여름철에 높은 부유물질은 장마기의 강우에 따른 것으로 판단되며, 특히 8월의 많은 종속영양 세균수는 높은 수온과 장마시 주변 수역으로부터 유입된 각종 유기영양염류의 유입에 따른 대량증식으로 추정된다.
지하수 세균 군집에 미치는 환경요인의 영향을 분석하기 위하여, 서울 시내에서 음용수로 사용하는 2개 정점과 음용수외 생활용수로 사용하고 있는 8개 정점을 대상으로 조사하였다. 물리.화학적 환경요인과 중금속의 농도, 및 세균 군집의 분포 등 40개 변수를 분석한 결과, 음용수로 사용하는 정점을 제외한 나머지 정점에서 질산성 질소와 암모니아가 용수목적별 수질기준의 기준치 이상으로 측정되었다. 총세균은 5.1~41.4$\times$$10^{5}$cells/ml 범주로, 종속영양세균과 기능성 세균군집은 0.01~29.6$\times$$10^4$cfu/ml의 범주로 조사되었다. 세포외 효소의 활성도는 0.005~11.3$\mu$M/l/hr 의 범주로 나타났고, lipase, phophatase, $\beta$-glucosidase, cellulase, chitinase, amylase 순으로 활성도가 나타났다. 정점별로 조사된 세균 군집에 미치는 환경요인의 상호관계는 대응분석(correspondence analysis)과 다차원 척도법 분석(multidimensional scaling; MDS)으로 하였으며, 그 결과 4개의 집단으로 구분되었으며, 세균 군집에 미치는 주요한 환경요인은 정점별 잠재오염원과 일치하는 양상을 보였다.다.
