Effect of Feeding Mugwort Powder on the Physico-chemical Properties of Pork (쑥 분말의 급여가 돈육의 이화학적 특성에 미치는 영향)

  • This study was conducted to investigate the effect of dietary mugwort powder on the physico-chemical characteristics of pork. Pig was randomly selected based on three dietary treatments: 1) control(commercial feed) 2) T1(commercial feed supplemented with 1% mugwort powder) and 3) T2(commercial feed with 3% mugwort powder). They were fed with the experimental diets for 30 days and slaughtered. Meat samples were wrap packaged and stored at 4${\pm}$1$^{\circ}C$ In the proximate composition, crude fat was slightly low in the T1 and T2(p<0.05). The pH and TBARS of the control were higher than those of the treatment groups(T1, T2). The pH, TBARS, VBN and WHC of all treatments significantly increased during storage period at 4 ${\pm}$ 1$^{\circ}C$(p<0.05). Oleic acid, palmitic acid, linoleic acid and stearic acid were major fatty acids in pork Linoleic acid and linolenic acid contents were higher in treatment groups than in the control.

  • The physico-chemical, sensory and nutritional properties of water extract from bull's bones of Hanwoo, Holstein, and imported breed were investigated to provide scientific information for consumers. The turbidity, viscosity, lightness(L value) and sensory scores were highest for water extract from Hanwoo's bones among three breeds(p<0.05). Total nitrogen and calcium contents, and calories were higher for water extract from the bones of Hanwoo and Holstein than the imported one(p<0.05), but no differences in the water extract were observed between Hanwoo and Holstein. In amino acid compositions, the percentages of methionine were the highest for water extract from Hanwoo's bones. These results indicated that the water extract from the bones of Hanwoo had the most acceptable quality among three breeds.

  • The seeds of Torreya nucifera, which were shown to contain high level of oil, were characterized to evaluate their possible utilization as oil source. Oil was extracted by compression from the seeds and its physico-chemical properties and, total fatty acid composition were determined. The results are summarized as follows: 1. Proximate components of the seeds were shown to be: moisture, 12.3% ; crude protein, 9.46%; crude fat, 54.29 %; fiber, 5.28 %; ash, 2.13%. 2. Physico-chemical characteristics of the seed oil were determined as follows: specific gravity 0.92, refractive index 1.470, iodine value 127, saponification value 182.2, acid value 9.5, ester value 172.7. 3. The major fatty acids of the total lipids were linoleic (46.77%), oleic (31.68%) and palmitic acid (6.92%).

Changes of Physico-chemical Characteristics of Pyunyuk Depending on Cooking Time during Processing (돼지머리편육 제조시 삶는 시간 조건에 따른 제품의 이화학적 특성 변화)

  • Physico-chemical qualities of pyunyuk depending on the cooking time were evaluated to produce high quality and to reduce labor and processing time. Pork headmeat divided into two parts was cooked for 1~4hrs, trimmed and pressed with 110kg/$\textrm{cm}^2$(gauge pressure) for 3.5hrs at 1$0^{\circ}C$. The contents of general nutrients, yield, texture, color, fatty acid composition, gel structure, and sensory evaluation were observed. Deboning time was very dependent on cooking time. Optimum cooking time observed in this study was 2~2.5hrs for efficiency of deboning and yield. Excess cooking time resulted in low yield and working efficiency. Yield variation depending on the cooking time was 14.3~26.0% and it was reduced by increasing the cooking time. The content of moisture was 53.5~54.8% which was not significantly different by cooking time. The content of crude fat was 14.2~26.0% which was decreased by increasing the cooking time. The contents of crude protein(21.1~26.3%) and mineral(1.4~2.7%) were increased by increasing the cooking time. The color of pyunyuk was significantly different by cooking time(p<0.05). In the texture, hardness and chewiness of the pyunyuk cooked for 2hrs were significantly higher than others processed in this study(p<0.05). However cohesiveness and springiness were not different among pyunyuks. With sensory evaluation, hardness was similar among the pyunyuks cooked over 2hrs. The pyunyuk cooked for 1hr showed higher value in juiciness than the pyunyuk cooked for 3~4hrs(p<0.05). The % of saturated fatty acids was decreased by increasing the cooking time, and gel structure of pyunyuk cooked for 2hrs was the most compact among treaments. In conclusion, 2hrs was proper as a cooking time concerned with working efficiency and physico-chemical quality of pyunpyk.

Current research trends for heavy metals of agricultural soils and crop uptake in Korea (우리나라 농경지 중금속 동태 및 작물흡수 연구동향)

  • BACKGROUND: Increase of heavy metals in agricultural ecosystem has become a social issue nationwide as it is related to public health. This review was performed to find out more systematic and integrated future researches on heavy metals using up to date articles published in the Korean journals related to agricultural environment. METHODS AND RESULTS: Researches on heavy metals in agricultural soils and plant uptake were categorized by the establishment of criteria, analytical methods, monitoring, management of source, characteristics and behavior in soil, plant uptake, bioavailability affecting physico -chemical properties in soil, risk assessment and soil remediation. In the early 1990s, the monitoring for heavy metals in soil has been widely performed. Accumulation of heavy metals in contaminated soil and availability to plants has also attracted interests to study the soil remediation using various physico-chemical methods. The phytoavailability and phytotoxicity of heavy metals have been mainly studied to assess the safety of agro-products using risk assessment techniques in the 2000s. CONCLUSION: Future direction of research on heavy metal in agricultural environment must be carried out by ensuring food safety and sustainability. A steady survey and proper management for polluted regions should be continued. Law and regulation must be modified systematically. Furthermore, studies should expand on mitigation of heavy metal uptake by crops and remediation of polluted fields.

Physico-Chemical Characteristics of Municipal Solid Waste Generated from T City and Leaching Characteristics of the Incineration Ash (T시 생활폐기물의 물리화학적 특성 및 소각재 용출특성)

  • This research was conducted to investigate physico-chemical characteristics of municipal solid waste (MSW) generated from T City, Gangwon-do and leaching characteristics of the incineration ash. From the results, bulk density of MSW in T city was $231kg/m^3$. Combustible and incombustible components were in 94.0% and 6.0%, respectively. Food waste and papers in combustible component occupied 32.3% and 41.2%. Water, volatile solids, and ash content were 41.3%, 50.5%, and 8.2%. C, H, O, N, S, and Cl showed 51.4%, 6.3%, 26.7%, 1.1%, 0.2%, 0.5%, respectively. Low heating value (2,704 kcal/kg) of T city was similar to 2,764 kcal/kg of Chuncheon and was 1,000 kcal/kg higher than 1,467~1,584 kcal/kg of the past Kuro-gu and Koyang city. The specification of leaching characteristics of the incineration ash were within the Korean regulation standard.

  • This study is to investigate the quality of superplasticizers in domestic market. Therefore, the physico-chemical characteristics, the fluidity characteristics of fresh cement paste and mortar were tested. Also fresh and hardened properties of mortars and concretes using these superplasticizers were tested. From these results, differences of quality among superplasticizers are checked clearly in low water/cement ratio. And it is concluded that several superplasticizers have better dispersion ability than others in every tests. It has known that all samples are naphtalene sulfornate formaldehede types by the UV(ultra-violet) test.

  • Carious dentin can be classified, on the basis of their clinical characteristics, into three groups; sound, sclerotic and active carious dentin. Active carious dentin differs from sclerotic dentin by its abscence of variable bacteria within tubles and amount of chemical content. But the apatite molecules of active carious dentin are not fully studied. The purpose of this study was to observed the physico-chemical characteristics of deep carious dentin. The samples of sound, sclerotic and active carious dentin were obtained respectively from 300 freshly extracted carious teeth. Bacterial-rich zone of superficial soft dentin layer was removed with hand instruments from all samples in advance. The samples were powdered and sieved (200 mesh) before analyses. Identification and estimation of the crystallinity of the samples were carried with X-ray diffraction and infrared absorption analyses. Measurements were made on a Rigaku Denki (Rigaku, geiger flex III, Japan) X-ray diffractometer with Cu-target at 30 Kv, 30 mA and are traced on a monochromatic tracer. Infrared absorption analysis was made on FT-IR spectrophometer (Nicolet Instrument Co.) using KBr pellets containing the samples and was recorded on data process (Model IR-80. Nicolet Instrument, Co). The following conclusions were as follows; 1. The nature of the main inorganic structure of sound, sclerotic and active carious dentin proved to be hydroxyapatite. 2. It was difficult to determine the identification due to their crystallinity of sound, sclerotic and active carious dentin. But sound dentin was the highest in crystallinity among them. 3. The magnesium whitlockite was to be found in active carious dentin, but not in sound and sclerotic dentin. 4. The carbonate content was highest in sound dentin, but the lowest was in active carious dentin.

Characteristics of Hydrogel Prepared from Microbial Poly($\gamma$-glutamic acid) by Chemical Crosslinker

  • Microbial hydrogel was prepared with poly(${\gamma}$-glutamic acid) produced from Bacillus subtilis BS62 using crosslinking reagent, ethylene glycol diglycidyl ether (EGDE), and its physico-chemical characteristics were examined. Hydrogel which prepared from 10 grams of 10% PGA solution with $600\;{\mu}l$ of EGDE at $50^{\circ}C$ for 17 h swelled 4,320 times its dry weight, and time to reach swelling equilibrium in deionized water at 4 to $45^{\circ}C$ range was about 20 h. Swollen hydrogel shrunk in ionic solutions, and rate of shrinkage was higher in calcium chloride solution than sodium chloride solution. Swelling rate of hydrogel increased 1.3-fold of initial swelling rate for 30 min at $80^{\circ}C$.

  • CMDS (Coal Mine Drainage Sludge) is mainly generated from acid mine drainage during physicochemical treatment or electrical purification. CMDS is well worth considering on recycling possibilities in various areas. This research applies the liner and cover materials using waste disposal landfill generally to treat acid mine drainage sludge. In this Part I of the two parts paper, physico-chemical characteristics of CMDS, bentonite and cement to prepare the liner have been identified using XRD, XRF, FESEM. In addition, combining their physicochemical characteristics, the optimum mixing ratio has been determined to be 1: 0.5: 0.3 for CMDS: bentonite: cement by the batch tests. Initial permeability of CMDS was $7.10{\times}10^{-7}cm/s$. Through the leaching test, it was confirmed that its mixture was environmentally safe. In the Part 2, a large-scale Lysimeter was used to simulate the effects of the layer on the freeze/thaw for evaluation on field applicability and stability.
