  • This study was conducted to develop an effective probiotic dairy product to normalize the microbial flora in Korean infants. A total of 2,200 colonies were isolated from 25 Korean neonates, and 16S rRNA of 348 isolates was analyzed. Approximately 40% of the lactic-acid producing bacterial isolates were Enterococcus faecalis, and 34.2% of them were strains similar to XR7 in the GenBank database. The fastest growing strain in MRS broth was registered as 91532 by the KACC. The selected strain was freeze-dried and utilized to ferment a milk-containing rice soup, tarakjuk. Microbiological, physico-chemical, and sensory characteristics of the fermented tarakjuk were compared with fermented milk and tarakjuk. E. faecalis KACC 91532 increased from $6.14{\pm}0.19$ to $7.36{\pm}0.13$ Log CFU/mL, and can be useful as a probiotic, as described in the Standards for Functional Health Foods.

  • The physico-chemical factors, the distribution of chlorophyll and the primary production of the lakes Hwajinpo, Yongrangho, Chunchonho, Uiamho, Soyangho and Changjamot have been studied in order to make ecological comparison among these lakes during summer stagnation period of August to September of 1973. On the basis of the characteristics of these lakes, the lake types have been discussed. Thermocline is observed at 3-4m zone in the lake Changjamot and 4-5m zone in the lake Yongrangho. In the case of lake Hwajinpo and impoundments, the distinct thermal stratification is not observed at the summer stagnation period. As to vertical distribution of dissolved oxygen, a positive heterograde curve is obtained in the lakes Hwajinpo and Yongrangho. In the lake Changjamot the typical clinograde curve and the oxygen depletion in hypolimnion are observed. In the case of impoundments, however, the orthograde curve is observed in the lakes Chunchonho and Uiamho. While in the lake Soyangho, any stratification of the disssolved oxygen is not found. In the brackish lakes, such as lakes Hwajinpo and Yongragho, the salinity of hypolimnion is found to be much higher than that of epilimnion. In the lake Hwajinpo, the salinity of hypolimnion is exhibited 32.7$\textperthousand$, which is nearly the same as sea water. The distribution of nitrogenous compounds and phosphates is found to be high in the lake Changjmot. The silicate is also found in high concentration in the lake Chunchonho, and the distribution of nutrients in the brackish lakes is generally low. As to the vertical distribution of chlorophyll level, the lake Changjamot shows a stratum type and the brackish lakes L-type stratification. In the impoundments, lakes Chunchonho and Uiamho appear to be homogeneous type. Seasonal variation of chlorophyll level in the lake Changjamot is examined from January to September 1973. The vertical distribution of chlorophyll during the period of circulation from January to April is homogeneous type and is stratum type thereafter. The maximum chlorophyll level is 277.4mg/$m^2$ on June 23 and the pattern of seasonal variation of chlorophyll level is comparable to the type of eutrophy. The horizontal distribution of chlorophyll level is studied in the brackish lakes, Hwajinpo and Yongrangho. The pattern of distribution is found to be an irregular type. On the basis of measurements of primary production by means of the carbon-14 method and the distribution of chlorophyll level, it is concluded that the interior part of the lake Hwajinpo and Changjamot are eutrophic and the exterior part of the lake Hwajinpo, lake Yongrangho and the impoundments, lake Uiambo and Soyangho are mesotrophic.

  • Sponge cakes were prepared by replacing wheat flour with rice flour ranging from 10-40% and their physico-chemical, textural and sensory properties were examined. Rice flour addition decreased the moisture content and increased the total sugar and protein contents of the sponge cake. The viscosity and specific volume of batter increased with rice flour addition. 'L' values of crumb of sponge cakes with 20% or more rice flour were lower, whereas corresponding 'a' values were higher than those of the control. Textural hardness was increased, and textural cohesiveness and springiness were decreased with the addition of 30% or 40% rice flour. perceived that sponge cake with 20% or more rice flour had a weaker sweet flavor than the others. With the addition of 30% or 40% rice flour, sponge cake showed a stronger roasted and weaker greasy flavor, and less softness and cohesiveness than the other sponge cakes. The sensory did not find my significant difference in overall acceptability between the control and rice flour-added sponge cakes. Therefore, wheat flour could be replaced by rice flour up to 40% without reducing acceptability.

  • This study was conducted to investigate the influence of dietary activated carbon(0.9%) and fish oil(0, 1, 2, 4%) addition on the feed efficiency, blood-cholesterol, proximate composition, pH and minerals in breast and thigh of chicken meat. Broilers were randomly assigned to one of the five dietary treatment: 1) Control (commercial feed) 2) T1(commercial feed supplemented with 0.9% activated carbon) 3) T2 (commercial feed with 0.9% activated carbon and 1% fish oil) 4) T3 (commercial feed with 0.9% activated carbon and 2% fish oil) 5) T4 (commercial feed with 0.9% activated carbon and 4% fish oil). They were fed with one of the experimental diets for five weeks and slaughtered. After that, the meat samples were vacuum packaged and stored over a period of 10 days at 4$\pm$1$\^{C}$. When broilers were fed with dietary activated carbon and fish oil, the feed efficiency of birds were higher compared with that of control diet. The blood cholesterol was tended to decrease in dietary activated carbon and fish oil(p<0.05). However, effects of diets containing graded levels of activated carbon and fish oil on proximate composition were not found(p>0.05). The pH of all treatments significantly increased during the storage periods. The activated carbon and fish oil diet increased the calcium, potassium and sodium content of chicken meat, and tended to increase total mineral contents.

  • A total of 40 domestic-fed imported beef cattle were used to determine meat quality traits. Sirloin was taken from each 10 of Hereford, Angus, Hurray Grey(MG), Cross breed(Hereford$\times$Angus) and objective and subjective meat quality were assessed after a 7 days ageing(0$\pm$1$\^{C}$). Results showed that ultimate pH and fat hardness was not affected by breeds. MG showed a higher water holding capacity and consequently a lower cooking loss(%) than the other breeds(p<0.05). Angus sirloin was shown to be the toughest meat(assessed by WB-shear force), Hereford and MG resulted in the most tender meat(p<0.05). Objective meat color and sensory properties did not differ between the breeds. The current study indicated that the breeds had a similar characteristics in meat quality. However, further research on consumer preference including Hanwoo needs to be undertaken.

  • Studies have been carried out to design a suitable consumer size package from flexible packaging material to hold 100 grams of Chilli powder and 250 grams of whole chilli which are moisture and color sensitive. 1. Sorption characteristics of the chilli powder has revealed that moisture sorption is rapid above 55 per cent R.H., and the product is fairly hygroscopic. Further, an equilibrium moisture content of about 15 per cent at 70 per cent R.H., appears to be critical from the point of microbial spoilage of chilli powder. 2. Studies on the colour (Capsanthin) changes of chilli powder equilibriated to different moisture content, have revealed that colour changes during storage is greatly influenced by the moisture content and temperature decreases the capsanthin content of chilli during storage. 3. From the studies, it can be inferred that the sunlight exhibits pronounced effect in bleaching of colour and brings about maximum discolouration of the red pigment in chilli. 4. From the packaging and storage studies of chilli powder in different flexible films, it can be concluded that for long-term storage, the aluminium foil laminate is unique in offering maximum protection from various physico-chemical changes. For short-term storage and for fairly good moisture and colour protection, amber or black polyethylene, high-density polyethylene and Saran/Cello/Saran poly laminate pouches appear to be suitable alternatives.
