커피전문점 서비스품질이 지각된 가치와 행동의도에 미치는 영향에 관한 연구 - 부산지역 대학생을 중심으로 - (A Study on the Effect of Coffee Shop Service Quality on Perceived Value and Behavioral Intention - Focusing on Busan-Area College Students -)

  • 본 연구는 커피전문점 서비스품질이 지각된 가치와 행동의도에 미치는 영향 관계를 파악하기 위하여 통계프로그램 SPSSS 18.0을 이용하여 부산지역 대학생 237명을 대상으로 빈도분석, 요인 및 신뢰도 분석, 상관관계분석, 회귀분석을 실시하였다. 가설검정을 위한 다중회귀분석에서는 서비스품질 4개요인 중 종사원의 신뢰감, 커피의 본원적 특성은 심미적 가치에 유의한 영향을 미치지 않는 것으로 나타났고, 커피이외의 메뉴특성(${\beta}$=.293, p<.001)과 물리적 환경(${\beta}$=.293, p<.001)은 유의하게 분석되어 연구가설은 부분 채택되었다. 그리고 서비스품질이 실용적 가치에 미치는 영향에서는 종업원 신뢰감은 (${\beta}$=.264 p<.001), 커피의 본원적 특성은 (${\beta}$=.463, p<.001), 커피이외의 메뉴특성(${\beta}$=.139, p<.05)과 물리적 환경(${\beta}$=.110, p<.05) 모두 유의하게 분석되어 연구가설은 채택되었다. 그리고 서비스품질이 행동의도에 미치는 영향에서는 종업원의 신뢰감은 (${\beta}$=.262 p<.001), 커피의 본원적 특성은 (${\beta}$=.411, p<.001), 커피이외의 메뉴특성(${\beta}$=.157, p<.01)과 물리적 환경(${\beta}$=.137, p<.05) 모두 유의하게 분석되어 연구가설이 채택되었다. 또한 지각된 가치가 행동의도에 미치는 영향에서는 심미적 가치(${\beta}$=.265 p<.001), 실용적 가치(${\beta}$=.536, p<.001), 모두 유의하게 분석되어 행동의도와의 인과관계를 확인할 수 있었다.

서울·경기지역 외식·조리전공 대학생의 중요 대학서비스에 대한 만족도(IPA) 분석 (The Importance-Performance Analysis (IPA) on the University Services of Students Who Majored in Catering Cooling in Seoul and Gyeonggi Provinces)

  • The purpose of this study is to measure the priority items according to attributes and analyze the differences between the importance and satisfaction rates through the IPA for the university service. The results in the study are as follow: First, from the result of the factorial analysis, 5 factors are included First, the possibilities for development of universities, universities' physical environment, Universities' administrative (employee) services, majors' educational services, and majors' laboratory environment. Second, as the total average value for important attributes of the universities is 3.50 and the average value of satisfaction is 2.91, there were significant differences (p<0.001). Third, in the analytical result of IPA, the 1st quadrant includes faster developments than other universities, departments' characterization, etc. The 2nd quadrant includes the convenience to issue all kinds of certificates, kindness of administrative staffs, etc. The 3rd quadrant includes convenience of the procedure to improve unsatisfactory services, development efforts to benchmark advanced universities, etc. Finally, the 4th quadrant includes heavy investments in education and environment, efforts to reflect students' demands, and needs, etc. Even though the importance of research subjects related to university services for these attributes is high, they are not fully satisfied, and there are plenty of dissatisfied students. Therefore, urgent supplementations to increase students' satisfaction rates are important. Form the results of the study, it has been found that urgent efforts to improve satisfaction rates of university students who major in catering cooking in the university services are essential and special plans to build competitive systems which can provide high-quality services are also necessary.

국내 한식당의 서비스 품질에 대한 고찰 II: 한식당의 인지된 서비스 품질이 만족도에 미치는 영향 - 내외국인의 조절 효과를 중심으로 (A Comprehensive Study of Customers' Perceived Service Quality of Korean Restaurants II: The Effects of Perceived Service Quality in Korean Restaurants upon Customer Satisfaction - The Moderating Effect of Foreigners and Koreans)

  • The purposes of this study were to understand the influence of perceived service quality in Korean restaurants on customer satisfaction and to empirically analyze whether or not nationality (foreigner vs. Korean) plays a moderating role in the relationship between perceived service quality and customer satisfaction. Based on a total of 2,812 samples obtained from empirical research, the hypothesized relationships in the model were tested simultaneously using a structural equation model (SEM). The SEM results showed that menu quality, value & price, employee service, and physical environment among customers' perceived service quality had significant positive effects on customer satisfaction. In addition, the effect of perceived service quality in Korean restaurants on customer satisfaction was found to be partially moderated by nationality (foreigner and Korean). Limitations and future research directions are also discussed.

국내 한식당의 서비스 품질에 대한 고찰 I : 한식당의 서비스 품질에 대한 국가별 인식 차이 연구 (Comprehensive Study of Customers' Perceived Service Quality of Korean Restaurants I : Cross-Cultural Perception on Service Quality of Korean Restaurants by Nationality)

  • The purpose of this study was to measure customers' perception of the service quality of Korean restaurants and then compare differences in perceived service quality according to customer nationality. Self-administered questionnaires were completed by 2812 subjects, and data were analyzed by frequency, chi-square, t-test, one-way ANOVA, factor, reliability, cluster, and discriminant analysis. Results of the study were as follows. The factor analysis of perceived service quality produced four factors, employee service (5 variables), menu quality (4 variables), price & value (4 variables), and physical environment (4 variables). Cronbach's alpha values for reliability were over 0.8 for all factors. Further, a significant difference was observed in service quality, which was perceived according to customer nationality. A higher mean value of perceived service quality was held by foreigners when compared to Koreans. Especially, the mean value of perceived service quality was significantly low for all items for Japanese compared to foreigners. Cluster analysis divided subjects into two groups based on attitude toward service quality of Korean restaurants: an unfavorable group and favorable group. These two groups differed from each other in general characteristics as well. Limitations and future research directions are also discussed.

The Five Sense Factors in Korean Dessert Café and Consumer Behaviors

  • The bakery cafe and dessert industry in Korea is expanding, but it requires continuous innovation to remain competitive and adaptable. Therefore, this study aims to examine the effect of five sense factors on customer satisfaction and relationship continuance intention in Korean dessert cafes. A survey was conducted among 200 consumers who had visited a Korean dessert cafe in Seoul and Gyeonggi Province. Regression analysis was conducted for hypothesis testing, and the research results are as follows. First, among the five sensory factors in Korean dessert cafes, gustatory, visual, and olfactory factors positively impacted customer satisfaction and relationship continuance intention. These results suggest that the taste and presentation of Korean desserts in cafes and the aroma of both the desserts and the café are essential. However, auditory and tactile factors did not impact customer satisfaction and intention to continue the relationship. Second, customer satisfaction improved the intention to continue the relationship. This finding suggests that improving customer satisfaction in Korean dessert cafes positively impacts maintaining customer loyalty. Therefore, operators of Korean dessert cafes should consider gustatory, visual, and olfactory aspects when developing dessert menus and planning the physical environment of their restaurants.

관광호텔 식음료상품 마케팅믹스에 관한 연구 (Food and Beverage Marketing Mix in The Hotels)

  • Today, the hotel industry in a whole are facing serious problems with a number of reasons. To overcome this situation, Customer-Oriented Marketing is considered to be a solution for the hotel F & B management, due to the potential of F & B department. The main purpose of this study was to present the Food and Beverage Marketing Mix Strategies suitable for the market characteristics. To achieve the purpose of this study, theoretical and empirical approaches were used. In review of theoritical background, basic concepts and characteristics of hotel F & B, hotel F & B marketing environment, and hotel F & B marketing mix were studied. Based on the theoritical studies and previous studies, F & B marketing mix sub-components were chosen. In this research, F & B 5P's and 1I marketing mix are discussed, they are Product, Price, Promotion, People, Physical evidence and Image. Through the survey, a number of important segment markets are emerged, which lead to essential segment markets ; business, conference and leisure market. F & B marketing mix strategies as follows. First, for the physical evidence mix, to build up the position as deluxe hotels, it is necessary to matte an investment in technical and decorative components. Second, for the people mix, to assure the service quality, the education and training programs for employee are required. Third, for the image mix, to ensure the image of hotel brand strength, the consideration for public area layout, restaurant and bar ambience, and green policy are required. Fourth, for the product and price mix, to differentiate the F & B, it is necessary to offer thorned and ethnic cuisine, and signature restaurants. Fifth, for the promotion mix, to attract more cumstomers, creative and various promotion activities, and long-term investment in customer-oriented marketing are required. There were some limitations in this study. That is, most of hotels don't operate the concrete and effective F & B marketing, have difficulty in getting data base for F & B customer. Despite their limitations, this study add some values to hotel F & B management in that it introduce the service marketing mix strategies to hotel F & B marketing.

  • 본 연구는 레스토랑 산업에 널리 적용할 수 있는 외식 서비스 품질 측정을 위한 다문항 척도를 개발하였다. 척도 개발을 위해 Kelly Repertory Grid 방법을 이용하여 중요하게 생각하는 레스토랑 품질 속성을 파악한 후 전문가 토론을 수차례 거쳐 유사 중복 항목을 통합하고, 핵심 차원별 주요 속성을 도출하였다. 척도 정제를 위해 신뢰도 분석과 탐색적 요인 분석을 실시하였으며, 이후 각 구성 개념에 대한 중복성 여부를 확인하기 위하여 3차 확인 요인 분석을 실시하였다. 본 연구에서는 Brady & Cronin(2001)이 제안한 위계적 서비스 품질 모형을 바탕으로 외식 서비스 품질 척도를 개발하였다. 본 연구의 위계적 외식 서비스 품질 모형은 외식 서비스 품질 차원 및 측정 요인을 물리적 환경 품질, 상호 작용 품질, 음식 품질이라는 핵심 차원으로 설명함으로써 요인간의 중복성 완화, 결과와 과정 품질의 균형적 고려, 세 가지 핵심 차원별 관리포인트 명확화, 위계적 모형에 의한 핵심 차원과 하위 차원의 구분 등 이론적 기여 측면에서 뿐만 아니라 관리적 시사점 도출 측면에서도 우위성을 갖는다고 할 수 있다.

  • Management of kitchen is consist of various management factor, for instance, physical resources, financial resources, information resources, and human resources. Because these kind of resources determine efficiency of kitchen management, human resource management is important aspect of kitchen operation. In this paper of view, recently human resource management has been considered by kitchen manager. Kitchen Managers who are interested in human resource, focus on efficiency. Also human resource management underlined not only efficiency, but interrelationship of emplyee. Today, considering with the environment of management, operation of kitchen is important section on hotel management in relation to the profit of it. In the future, therefore kitchen will be strategic profit center on hotels. According to in this tendency, as profit business center kitchen assumed a aspect of efficiency mechanism. This thesis aimcs to point out the actual status of human resource management in the hotels, and suggests the improvement there of by analyzing the system. This research is organized into five sections. section one introduces its objectives. scope and mothodology. Section two provides the theory of human resource management on the kitchen of hotels. And section these analyzed about the factors of human resource management. Section four, suggests the alternatives of the improvement on human resource management, section Five describes the conclusion of this thesis. Today, importance of human resource is viewed multipoint aspects in relation to efficiency of organization and interrelationship of employee, especially the arrangement of human resource is fairly handle and allocation of the human resource and personal appraisal. On the other hand, human resource managers have to be responsible for the cost control and customer's attraction by developing human resources. In order to advance human resource management on kitchen of hotels, following alternatives are considered with efficiency of management and interrelation of employee. The first, the manager of hotels has to consider the passive support of development of human resource. The second, the manager of hotels should develop the various training program for the extonsive ability of employee. The third, in order to improvement of human resource management, manager should establish the system for human resource management view of efficiency and employee's interrelationship.

친환경 레스토랑의 서비스스케이프가 소비자의 지각된 가치, 태도 및 행동의도에 미치는 영향 (The Effect of Servicescape of an Eco-friendly Restaurant on Customer Perceived Value, Attitude and Behavior Intention)

  • 본 연구에서는 친환경 레스토랑의 서비스스케이프에 대한 고객의 인식을 조사하고, 분석하여 친환경 레스토랑의 물리적 환경을 고찰하기 위한 기초 자료를 확보하는데 그 목적이 있고, 친환경 레스토랑의 서비스스케이프와 소비자의 지각된 가치, 태도 및 행동의도에 유기적인 인과관계를 검증하고자 한다. 실증분석 대상자는 서울 경기 지역에 거주하고, 친환경 레스토랑 또는 그린 레스토랑에서 한 달에 1회 이상 방문해 본 경험이 있는 20세 이상 고객을 표본으로 선정하여, 2012년 4월 2일부터 2012년 4월 15일까지 14일간 본 조사를 위하여 설문지 총 300부를 배포하여 결과 응답치의 편중성향이 너무 강하거나 결측 값이 발견된 일부 설문지를 제외하고, 총 264부(88.0%)의 설문자료를 최종 통계 분석 자료로 사용하였다. 본 연구의 분석 결과를 보면 고객이 친환경 레스토랑의 서비스스케이프를 호의적으로 인지 하게 되면, 유 무형적인 지각된 가치를 통해서 소비자는 지각된 가치를 결정하는데 있어서 서비스스케이프가 중요한 역할을 하는 것으로 판단할 수 있으며, 소비자의 지각된 가치는 태도와 행동의도에 긍정적인 영향을 미치기 때문에 고객은 해당 친환경 레스토랑을 만족하면 행동의도에 영향을 미치는 것으로 판단되고, 긍정적인 태도는 행동의도에 영향을 미치는 것으로 사료된다. 따라서, 이러한 심층분석 결과를 바탕으로 경영자 입장에서 높은 수준의 서비스스케이프를 유지하고 제공하는 것이 외식 기업들의 가시적인 성과 도출에 직접적인 영향을 준다는 사실을 고찰하였다.

호텔 뷔페 레스토랑의 서비스 품질과 고객의 감정반응, 추천의도 및 이탈의도에 관한 연구 (A Study on the Hotel Buffet Restaurant's Service Quality, Emotional Reaction, Recommendation Intention, and Defection Intention of Customer)

  • This study investigated the hotel buffet restaurant's service quality, emotional reaction of customer, recommendation intention, and defection intention. The survey was conducted from January 3 to February 7 in 2011, and 400 respondents were used in the data analysis. As a results of this study, the hotel buffet restaurant's service quality was classified by the interaction, outcome, and physical environment quality. The emotional reaction of hotel buffet restaurant's customer was classified by the positive and negative emotion. The all factors of hotel buffet restaurant's service quality had a positive impact on positive emotion, while it had a negative impact on negative emotion. The positive emotion reaction of hotel buffet restaurant's customer had a positive impact on the recommendation intention, while the negative emotion had a negative impact on the recommendation intention. And the negative emotion had a positive impact on the defection intention in hotel buffet restaurants. In addition, there were partially differences in the service quality and emotional reaction by general characteristics. There were significant differences in the recommendation intention by marriage status and monthly income. Therefore, the hotel buffet restaurants have to design a strategy of service for increasing customer's positive emotion and recommendation intention.
